Indian Desi Food
Hello Guys
Hope you are fine.
Is there anyone who does not love Indian or Desi food ?
I am so sure that the answer from most of you would be
no because we all love Indian and Desi Food.
I have started this thread for all Indian and Desi Food lovers
around the world. You will find lots of delicious Indian and Desi
recipes in this thread.
Pav Bhaji
Preparation and cook time: 30 Minutes
Serves: 2-4 Persons
Ingredients:
Potatoes - 2 (cubed)
Mixed Vegetables - about 2 cups
(You can use whatever vegetables that you have on hand. The vegetables may include carrots, cauliflower, cabbage, beetroot, brinjal, capsicum, zucchini, beans etc.)
Green Peas 1/4 cup
Onion 1 (chopped)
Tomatoes 3 or 4 (crushed)
Green Chillies 2
Ginger garlic paste 1 tea spoon
Pav Bhaji Masala 2 table spoon
Lemon Juice 1 table spoon
Butter 3-4 table spoon
Cilantro for garnish
Onion 1/2 (chopped for garnish)
Lemon Wedges for garnish
Method:
Take a large pan, add onions, potatoes, mixed vegetables, green peas, green chilies, about 1/2 cup water and salt.
Cover the pan and cook on low flame till tender then mash the vegetable mixture with a wooden spoon.
Heat the butter in a flat wide pan and add the ginger garlic paste to it. Add the tomatoes and let it cook for 8-10 minutes.
Add the pav bhaji masala, the mashed up vegetables and the lemon juice.
Let it cook till it becomes very thick gravy.
Garnish with chopped onions, lemon wedges, a blob of butter or cilantro.
Serve piping hot with toasted pav buns, burger buns, hot dog buns or white bread.

Vadas with Coconut Chutney
Hello
Love Vadas ?
I came up with this delicious Vadas recipe for all the Indian and Desi food lovers.
You can eat Vadas with Coconut Chutney or any chutney of your choice.
Ingredients
For Vadas:
Urad dal 1 cup washed and soaked for 2 hours
Green chilies 3 finely chopped
Onion 1 finely chopped
Salt to taste
Cumin seeds 1/2 tea spoon
Oil for frying
For Chutney:
Grated coconut 1/2 cup
Peanuts 1/4th cup
Green chilies 2
Tamarind paste 1/2 tea spoon
Salt to taste
Method:
Soak washed Urad Dal for a couple of hours.
Grind it to a fine thick paste in a high power blender or a stone grinder.
The paste should be thick.
Add salt chopped onion, cumin seeds and green chilies and mix thoroughly.
Heat oil in a wok or karahi.
Wet your hands with water, carefully shape a Vada on one palm, poke a hole in it with a wet finger and slide it in hot oil, fry the Vadas on low heat until golden brown and drain on paper towels.
For chutney grind all ingredients together with a little bit of water in a blender and serve with hot Vadas.
Some tips:
It is easier to shape Vadas with a simple Vada press you can get at your local south-Indian or Sri Lankan store.

Spicy-homemade Hummus
Hello friends.
Here I am telling you about delicious Hummus recipe.
You can prepare this delicious spicy Hummus at home
quickly and easily.
Spicy-homemade Hummus
Preparation and cooking time: 10 Minutes
Serves: 4 to 6 Persons
Ingredients
Boiled chickpeas 1 can
Red chili pickle 1 large piece
Lemon juice 1 table spoon
Salt to taste
Method
Drain a can of chickpeas and rinse under water.
Add chickpeas with all other ingredients to a blender and grind.
Serve with your favorite chips or nachos.

Hello Friends,
Today i will tell you how to make round crispy medu vadas in minutes.
Tips to make crispy & perfectly shaped medu vadas:
#1. Soak urad dal for minimum 2 hours before grinding it in the mixer grinder.
#2. Then while grinding add little water every 2-3 spins & keep wiping the sides of grinder with a spatula.
#3. Don't add salt while grinding. You should add the salt just before frying the vada.
#4. Make sure that vada batter should be hard enough to hold because if the batter is too light, vada will absorb more oil.
#5. To make them super crispy add add rice flour or semolina flour (rava) to the batter.
#6. To check the vada formation just drop a small spoonful batter in a bowl of water. It should float to some extent.
#7. For beginners , shaping the vadas on the greased plastic cover is the easiest. Grease a plastic sheet with oil.
#8. Take a bowl of water wet your hands and place a portion of dough on plastic.
#9. Now make a hole in centre and shape it in form of round wada.
#10. Transfer wada on your wet palm and slide wada carefully in oil as oil may splash.
#11. Deep fry till both the sides are brown.

a) Put medu vada batter (after step #6 above) inside the medu vada maker container.
b) Press the knob while holding it over hot oil in the kadai.
c) The batter falls with the hole in the centre just like a perfectly shaped medu vada.
