KUNG PAU NOODLES ( Kugan )
Another dish that I tasted in Singapore.
KUNG PAU NOODLES
Ingredients:
2 tbs vegetable oil
2 pips garlic minced
1 big onion chopped
1 green chillie sliced
¼ cup sliced mushrooms
¼ cup snow peas
1 ½ cups of cooked spaghetti noodles
2 firm tofu, cubed and fried
¼ cup of bean sprouts
Kung Pau Sauce:
3 tbs of water
2 tbs soy sauce
2 tbs dark soy sauce
2 tbs rice vinegar
1 tsp sugar
½ tsp red chillie flakes
1 tsp corn flour
2 tbs of roasted peanuts
Little lime juice (optional )
Method:
Fry the tofu and keep aside. Mix the kung pau sauce and keep aside.
Heat the 2 tbs of oil in a wok,add in the garlic, let it brown with a nice aroma.
Add in the onions and the green chillies. Stir fry nicely.
Add in the snow peas and the mushrooms, stir fry again.
Now add in the cooked spaghetti, beans sprout and the fried tofu.
On high heat stir fry, till the oil mixes with the noodles.
Now add in the kung pau sauce and stir fry till the sauce mixes nicely with the noodles.
The noodles should not be very dry, add in the lime juice.
Garnish with the roasted peanuts, and serve steaming hot.

CHAKKA PUZUHUKKA ( kugan )
Here is the chakka puzuhukku. Kugan
CHAKKA PUZHUKKU
Ingredients
(A)
300 grms young raw jack fruit, pitted and roughly chopped
¼ tsp tumeric powder
2 tsp chillie powder
Little salt
Enough water to boil till well cooked
(B)
To Grind To A coarse Paste:
2 tbs coconut
½ tsp cumin seeds
5 shallots
(C)
3 pips garlic crushed
(D)
2 tsp coconut oil
½ tsp mustard seeds
1 sprig curry leaves
1 long dry red chillie cut into pieces
Method:
In a pan add all ingredients in (A). Cook till they are mushy.
You can smash it with the back of a spoon.
Now add in the ground ingredients in (B).
Add also the crushed garlic, cook for about 4 minutes.
Finally in a pan temper the ingredients in (D) and add to the chakka puzhukku
Serve it with Vishu Kanji.

PUSINI RASAVANGI ( Kugan )

anyway let me do my duty. This is a very old recipe.

PUSINI RAAVANGI
Ingredients:
2 cups of pusini cut into 1 inch cubes
¼ tsp tumeric powder
1 sprig curry leaves
Salt as needed
Water to just cover the veges
1 tbs thick tamarind juice
To dry roast and coarserly powder:
1 tbs coriander seeds
1 ½ tbs urad dal
5 red chillies
¼ tsp asafoetida powder
2 tbs grated coconut ground to a fine paste
2 tsp coconut oil
½ tsp mustard seeds
½ tsp urad dal
1 sprig curry leaves
Method:
In a pot, add in the pusini cubes, tumeric powder, curry leaves,
salt as needed and enough water to cover the vege.
Cook till soft, add in the tamarind juice, cook for a minute.
Now add in the coarsely ground spice powder. Boil it for a minute.
Now add in the finely ground coconut paste.
Boil again for a minute, now temper the ingredients in a separate pan.
Pour it over the pusini, give a good stir.
Remove and serve with rice or roti.
