[tscii]This is how I make my own chillie sauce.
Economical, clean and tasty.
HOMEMADE CHILLIE SAUCE
Ingredients:
100 grms of dried red chillies
3 small shallots chopped
1 red tomato chopped
2 pips garlic chopped
1 small piece of ginger chopped
2 tbs oil
Sugar to taste
Salt to taste
Enough vinegar
Method:
Cut the red chillies and soak them for ½ an hour.
Wash nicely , removing seeds as much as you can.
Now in a blender add the red chillie, shallots, tomatoes,
garlic and ginger.
Using some water grind everything to a smooth paste.
In a deep pan add in the oil and the ground chillie paste.
Add ½ cup of water, on a low flame sauté the chillie paste
till the raw smell goes. You can add more water if you feel
the sauce is very thick.
Now add in enough sugar, salt and vinegar.
Stir nicely, let the sugar melt and mix nicely with the chillie.
Taste for salt, sugar and sourness of the vinegar.
Remove cool and bottle when cold.
This sauce goes well with fried meats, chapattis,
pakoras or any thing that needs chillie sauce.

Mushroom using KMP:
Clean & tear 1 pkt sippi kalaan(oyster mushroom) into strips... Add some water & cook till 3/4th done... Add salt,KMP & turmeric pwd & cook till done... make sure u have some water left even after all the cooking... eat it on its own...
This is best done with wild mushrooms tht we find in the farms after rain... next best alternative is oyster mushroom aka sippi kaalan...
kugan,
thanks for ur suggestion, i will try out ur sprial.
want to try after pongal.
selvi
dev,
thanks for the mushroom receipe with kmp. nowadays in my cooking, i am using kmp. definitely it gives a nice and different taste. sambar is the best.
selvi
dev,
thanks for the wishes and wishing u the same.

Another recipe using bread... would say it's very yummy...but definitely better than eating plain bread...
Bread toast(Recipe courtesy:Menu Rani Chellam)
mix curd, chilly pwd, garam masala,gin-gar paste,salt... Butter the bread slices... dip it in the batter & imme toast it on a well oiled tava till golden on both sides adding oil as required... take care to cook on low-medium heat...
Selvi, thanks a lot for the wishes...
glad kmp has found a strong place in ur kitchen...:)
Dev, thanks for your mushroom and bread recipes.
Very simple and easy to try.
Dev, wild mushrooms brought back sweet memories of my childhood.
My grandmother had a very big garden or "kaadu" as they call.
After a heavy rain with thunder, she will always ask s to go the next day to the garden, to collect the wild mushrooms.
sure enough you can see a blanket of mushrooms all buds grown in the garden. How is this possible?
Thanks Dev, Kugan98
Selviem give a try to the chillie sauce once.
you can make with 50 grms of chillie first for trial.
I am sure you will like it.
I do not buy chillie sauce now.
Kugan98

Thats good dev.
Suvai nga do not be scared, the chillie sauce is not hot.
You will be removing the seeds while you wash the soaked chillie.
You are also adding tomatoes so it will not be hot.
Commercially made chillie sauces use stabiliser and edible gum.
I have no idea for what to use instead of vinegar.
I do not know if lemon juice will be o.k
I have not tried Suvai nga.
Thanks. Kugan98
Sudha ellameh healthy foods
I love the kambu kool
Enjoy Sudha. Kugan98
Aarthii, thanks for all the nice posts.
If possible take some snaps and send.
Thanks ma, enjoy the ponggal.

Kugan...I think using fresh red chillies would give us the effect of the original chillie sauce from the supermarket....however, its a matter of taste. :D Thanks for the recipe... :2thumbsup:Quote:

kugan,
today i made ur peerkangai kootu and peerakangai skin vadagam thogayal . both are awesome. my elder son enjoyed the thogayal. It is very tasty than the other version u posted earlier. very very super. he enjoyed with steam rice.
thanks kugan
Suvai,
i will post the pongal kulambu receipe at the earliest.
Aarthi,
here no great celebrations for pongal. coz it is coming on weekdays, i cant invite friends. just distribute to builing friends.
selvi
sudhaka,
enjoy the pongal celebrations in kovai on behalf of us.
happy pongal
Sonu thanks for your tips.
You can use the fresh red chillie, if you are using the edible gum to make the chillie sauce.
If you visit a sauce making factory, you will never ever use the sauce again.
Are you celebrating ponggal?
I wish you a very happy ponggal.
Do come often to the thread. Thanks. Kugan98
Selviem, I am glad your son liked the vadagam chutney.
I will be doing the ponggal to morrow to distribute.
I will post the ponggal kulambu picture tomorrow.
Thanks Selviem take care. Kugan98
