btw i tried cucumber raita.. nalla vanduchu.. but enakku oru doubt.. These green chillies are not getting finely ground.. Oru one or two thana poduvom raita la..
i didnt know what to do , and i added the tomato i had and ground it in mixie.. color total change... How to grind chillies??
Sorry makkale.. still in pre.kg..
Also i got paneer this weekend.. storing right now in freezer (anga dana store pannanum????!!) Will try the paneer tikka recipe..!

Also thanks for trying out many recipes, that will make Kugan very happy.
Sangeetha, Kugan is from a kutoo kudumbam.
There are 11 members in her family, plus her driver makes it a dozen.
Even though they have maids, it is a tradition in their family that, cooking is done by the lady of the house.
No one comes to their house during lunch time or dinner time , goes without eating.
That is a strict rule of their late father-in-law.
So Kugan cooks a variety daily, rasam, tayir, a kulambu and about 3 side dishes.
Kugan is from India, married into a Malaysian family.
She lived like a princess in her home without doing any work.
Kugan knows nothing to knots in cooking.
Her mother- in-law trained her to become a super cook.
Now she can cook even for 100 people with ease.
Kugan is a super woman, she takes care of the house, children, and also the accountant to her companies.
We are all very proud of our Kugan.
Sangeetha please go through all the threads, you will find lots of recipes to cook.
So you can cook daily variety in your house.
Please I am sure you too will have some special recipes.
Please post it for us to follow.

Bengal Eggplant Subji
season mustard and broken red chillies in oil, add 1 chopped med size onion add little salt and sugar and nicely caramelize the onion after that add round slices (1/2 cm thickness) of 2 lengthy egg plant (chinese). grind 2 green chillies 1 inch ginger and 2 tbs kasa kasa to a smooth paste with water. add this paste to brinjals add turmeric salt fry nicely add 1/2 cup water mix and close lid for 3 mins by this time ur brinjal and masala will be cooked. now grind one tomato and add to the subji nicely fry continuously for 2 mins garnish with coriander leaves. this is the hurry method but if u have time u can cook everything in low med heat and soak the kasa kasa for 1 hr and grind. the taste will be same but the consitancy will be better for the later. really yummy and different one. learnt it from a bengal friend.

priyasri may be grind with little curd which has to used in raita. i am not sure. or do u have a dink chik dink chik which vahchef uses.

Priya, have you seen the small pestle and motar.
You can find it in the Korean supermarkets.
Like a small kutti ural, you can pound the green chillie in the motar.
Like this one in the picture.
As for the tomato, you do not grind the tomato, just cut it into small cubes (seeds and pulp removed)
Then add to the raitha before serving.
I always store my panner in the fridge, not the freezer.
Seekiram oodi paarungga, panner eppadi irrukku.

A simple banana bread. Meerra
BANANA BREAD
Ingredients:
1 cup sugar
2 cups all purpose flour
¾ tsp baking powder
¾ tsp salt
¼ cup melted butter
1/3 cup plain yogurt
2 tbs flaxseed powder , mixed with 6 tbs water
1 ½ cups pureed bananas
1 tsp vanilla essence
1 tbs orange zest
¼ tsp cinnamon powder
Method:
Preheat oven to 350 degrees F.
Grease a loaf pan and keep aside.
Mix the flour, sugar, baking powder and salt in a container, keep aside.
In a bowl, add, add in the butter, yogurt, flaxseed powder,
pureed bananas, vanilla essence, orange zest, and the cinnamon powder.
Use a whisk and whisk everything well.
Now, fold in the flour using a spatula and mix till well incorporated.
Pour into the prepared greased loaf pan.
Bake for about an hour or until a cake tester inserted in the centre,
comes out clean. Remove and let it cool before removing.
Serve it with jam, butter or peanut butter.
Or you can eat it as it is.
NOTE: You can add little fresh milk if you find your better too thick.

tried veg pizza by Kugan very nice . its was very easy. i dont know but only this forum gave me confidence to try new things. mainly its all converted to indian taste buds. thanks for all the contributors.

PS Thamby I made ur marmite pasta and liked it a lot. Added saute veges. husband without even trying told i dont like marmite :banghead: (sud have told later) but he had no other option at home so finished it off and said a different kind of nice (nice only..)

My friend brought this spinach rice for lunch.
I got the recipe from her. Try it Meerra
SPINACH RICE
Ingredients:
1 cup basmathi rice soaked for 20 minutes
2 tbs ghee or oil
1 inch cinnamon stick
1 bay leaf
2 cloves
2 cardamom pods
1 tsp aniseeds
1 medium onion sliced
1 tsp ginger garlic paste
1 tsp red chillie powder
½ cup grated carrots
2 cups packed spinach leaves
1 tbs fresh yogurt
2 cups water
Salt to taste
Method:
Soak and drain the rice.
Heat a pot with the ghee. Add in all the seasonings.
Let them crackle, add in the onions and ginger garlic paste.
Let the onion brown a little.
Add in the red chillie powder, carrots and spinach.
Give a good stir, add in the yogurt, water and salt.
Add in the drained rice, stir nicely, close with a tight lid.
Put the flame on low sim, and let the rice cook.
Once all the water is absorbed, and the rice is cooked,
Off the flame and let it cook on its on steam.
Let the rice sit for few minutes, later fluff up the rice.
Serve with cucumber raitha, or roast potatoes.

I have one more doubt - to all senior folks in the forum..
This is about the types of rice..
1) In US shops i have seen brown rice, which is fully brown in color, and there are varieties in that also - basmati, parboiled etc
2) In india, i have seen sigaparisi (i have seen kerala rose matta rice in indian groceries in US), and its only one variety..
Which is good for health.. When ppl say eat brown rice, which rice should we have?
What is jeeraga samba rice?? i have heard my friend say its very flavorful.. and she uses it instead of basmati rice..

Imm, regarding the rice matter, during my grandma's time we all ate parboiled rice.
Now they have the brown rice and so on, brown rice is not so palatable.
For health reasons every one now consumes brown rice.
You can try different types of brown rice, and choose that suits you.
I use ponni raw rice to make thosai and idli.
Basmathi when I cook, biryani and pulao.
We consume cracked wheat instead of rice, daily.
As for seeraga samba rice, your friend is correct. It is very flavorful.
I have heard that you can get it in US. Try the Indian stores and see.
Kugan gets it from India, I brought back some when I visited her last year.

many varieties. Seeraga muthu and seeraga samba, both of which are
aromatic rices, are the most available varieties in the United States.
The tiny-grained seeraga samba gets its name from its resemblance to
cumin, which is known as seeragam or seera in Tamil Nadu, and is the
most expensive rice grown in that southern India state. Seeraga samba
is an ingredient in biriyani, a traditional Indian dish. When cooked
properly, seerage samba rice grains are fluffy and loose.

Dear Priyasri, I usually mix brown rice and white rice (ponni or basmati) 50:50. Brown rice by itself is an acquired taste, mixing it with white rice makes it better to eat with south Indian dishes. I just buy brown rice from the grocery store.

one stupid basic question. can any one tell me how to make the road side tea shops chai. the nair ones (kerala shops with small mini bakery every where in taminadu). i really like those type of chai. spl chai has elachi and ginger and the simple ones i need both.

Why don't you drain out the water after the rice is cooked.?
Brown rice takes longer time to cook than our normal rice.

A simple orange cake
EGGLESS ORANGE CAKE
Ingredients:
2 ½ cups all purpose flour
2 tsp baking powder
1 tsp baking soda
1 cup orange juice
1 cup melted butter
1 ¼ cup condensed milk
2 tsp vanilla essence
½ tsp orange zest
½ cup milk, use if needed
Method:
Sieve the baking powder, soda and flour, twice.
Put the flour in a bowl, make a well in the centre of the flour.
Pour all wet ingredients, except the milk into the flour.
Mix well without lumps. The consistency should be drooping.
If not add the milk little by little till you get a drooping consistency.
Preheat the oven to 175 degrees C.
Grease and line a cake tin with parchment paper.
Pour the mixed ingredients into the greased tin.
Now place the cake tin in the middle rack and bake for about 40 minutes.
Or till a toothpick inserted into the centre of the cake, comes out clean.
Allow to cool on a rack. Cut into slices.
Or you can ice the cake with orange butter icing.

Dear Priya, you do not need stainless vessels from India.
I have a pot which I bought in "Bed Bath And Beyond"
I can cook 2 cups of rice in that pot.
The brand name is "Cuisinart"
The cover has holes and you just need to hold the pot handle and cover tightly.
You can drain it in your sink, very easy.
You can see the picture of the pot, why take in unnecessary carbs.
Glad that you are making fresh ginger and garlic paste.
You can smash the garlic if a recipe needs, smashed garlic.
I also pound the ingredients for rasam in this motar.

Priyasri, I put both in the rice cooker, add 2 and 1/2 cups water for 1 cup of both rices mixed and let the rice cooker do its job!

Priyasri you can also google for spaghetti strainer pot and cook ur rice in it. i use them and its so handy. the old method of straining the starch is more healthy than the pressure cooker.

Thanks for your fast response.. Actually i checked in BBB yday evening, couldnt find this model, but saw in Amazon and ordered it already. Its 3 Qt.. That size should be fine right or would it be too small?
Also i found samba rice in indian grocery, a 4 LB pack, bought it to try out..

I checked the link you sent, all pasta pots are minimum 8 Qt.. I just compared it to 8L cooker.. Isn't it big to handle??

I'm enjoying with the mortar & pestle so far.. tried out pepper also.. Its sooo easy n we get fine pepper.. Pepper mill is also easy, but we need to keep turning turning forever to get enough pepper for rasam.. And this M&P is so versatile.. so many things it can be used for.. Thanks guys, i like the purchase :)

O.K what have you all been cooking for Valetine's day?
Well my children surprised me, this morning with a bunch of roses, card and a chocolate.
Since I am working from home today, I decided to cook something special for them,
and surprise them when they come home from school.
I made, ghee rice, mock chicken curry, mock chicken varuval.
tofu sambal, fried beans, scrambled tofu ommlet, mysore bonda,
agar2 and a chocolate cake.

முதல் நாள் சோற்றில் நீரூற்றி, மறுநாள் சாப்பிடும் இந்த பழைய சாதத்தில் தான் பி6, பி12 ஏராளமாக இருக்கிறது என்கிறார் அமெரிக்காவில் இருக்கும் ஒரு மருத்துவர். தவிரவும் உடலுக்கு, குறிப்பாக சிறு குடலுக்கு நன்மை செய்யும் 'ட்ரில்லியன்ஸ் ஆஃப் பாக்டீரியாஸ்' (Probiotic bacteria) (கவனியுங்கள்: 'மில்லியன்' அல்ல 'ட்ரில்லியன்') பெருகி நம் உணவுப் பாதையையே ஆரோக்கியமாக வைத்திருக்கிறதாம்!
கூடவே இரண்டு சிறிய வெங்காயம் சேரும்போது, நோய் எதிர்ப்பு சக்தி அபரிமிதமாக பெருகுகிறதாம். அப்புறம் பன்றிக் காய்ச்சல் என்ன, எந்தக் காய்ச்சலும் நம்மை அணுகாது!
பழைய சாதத்தின் மகத்துவத்தைப் பற்றி அமெரிக்காவில் வசிக்கும் நம் இந்திய விஞ்ஞானி ப்ரதீப் கூறியதில் இருந்து சில:
1. "காலையில் சிற்றுண்டியாக இந்த பழைய சாதத்தைக் குடிப்பதால், உடல் லேசாகவும், அதே சமயம் சுறுசுறுப்பாகவும் இருக்கிறது.
2. இரவே தண்ணீர் ஊற்றி மூடி வைப்பதால் இலட்சக்கணக்கான நல்ல பாக்டீரியாக்கள் இதில் உருவாகிறது.
3. மறுநாள் இதை குடிக்கும் போது உடல் சூட்டைத் தணிப்பதோடு குடல்புண், வயிற்று வலி போன்றவற்றையும் குணப்படுத்தும்.
4. அதுமட்டுமில்லாமல் இதிலிருக்கும் நார்ச்சத்து, மலச்சிக்கல் இல்லாமல் உடலை சீராக இயங்கச் செய்கிறது.
5. இந்தப் பழைய சாதம் உணவு முறையை சில நாள் தொடர்ந்து நான் சாப்பிட்டதில் நல்ல வித்தியாசம் தெரிந்தது. இரத்த அழுத்தம் கட்டுக்குள் வந்துவிட்டதோடு, உடல் எடையும் குறைந்தது." என்கிறார்.
6. மிகவும் முக்கியமான விஷயம் என்னவென்றால் உடலுக்கு அதிகமான சக்தியை தந்து நாள் முழுக்க சோர்வின்றி வேலை செய்ய உதவியாக இருக்கிறது.
7. அலர்ஜி, அரிப்பு போன்றவை கூட சட்டென்று சரியாகி விடும்.
8. அல்சர் உள்ளவர்களுக்கு இதைக் கொடுத்து வர, ஆச்சரியப்படும் அளவிற்குப் பலன் கிடைக்கும்.
9. எல்லாவற்றிற்கும் மேலாக நோய் எதிர்ப்பு சக்தி அதிகளவில் கிடைப்பதால், எந்த நோயும் அருகில்கூட வராது.
10. ஆரோக்கியமாக அதே சமயம் இளமையாகவும் இருக்கலாம்".

பழைய சாதத்தை எப்படி செய்வது:
பழைய சாதத்திற்கு மிகவும் சிறந்தது பிரெளன் ரைஸ் என்று அழைக்கப்படும் கைக்குத்தல் அரிசிதான்.
ஒரு கல் சட்டி அல்லது மண் சட்டியில் சிறிது சாதத்தைப் போட்டு, சுத்தமான தண்ணீரை நிறைய ஊற்றவும்.
மறுநாள் சாதத்தை நன்கு பிசைந்து, மோர் சிறிது சேர்த்து, சின்னவெங்காயம் சேர்த்துக் குடிக்க 'ஜில்'லென்று இருக்கும் (மிகவும் சூடாக இருக்கும் சாதத்தில் தண்ணீரை ஊற்றக் கூடாது.)
மதிய உணவு நேரம் வரை டீ, காபி கேக்காது வயிறு!

Dear Guys, our dear friend Ramrish has posted a Panner Tikka Masala recipe in her blog.
I tried it out and it came out awesome. Thanks Ramrish for the recipe.

PANNER TIKKA MASALA by RAMRISH
Ingredients:
Paneer - 10 ,1-inch cubes
Tomato - 2 medium(fully ripe).Puree it in a blender.
Bell pepper - 2 cut into inch cubes
Onion - 1 medium diced
Coriander powder - 1 tsp
Chili powder - 1 tsp
Turmeric Powder - 1/2 tsp
Ginger garlic paste - 1tsp
Kasoori methi - 1 tsp
Cumin seeds - 1 tsp
Garam Masala Powder - 1tsp
Oil - 6 tablespoon
Yogurt - 3 tablespoon
Salt - to taste
Method:
For the marinade :
Combine paneer,yogurt,salt,kasoori methi,chillipowder and allow to marinate in a airtight box in the refrigerator for 1 hr.
After 1 hr ,in a pan with 1 tsp oil,saute the marinated paneer pieces till slightly brown and drain them in paper towels.Keep aside
In the same pan,heat oil.When hot,add the cumin seeds.When it splutters,add the onion and allow to brown a little.
Now add ginger-garlic paste and saute till raw smell goes off.Add the turmeric powder ,chili powder and a little bit of salt.Add the capsicum pieces and saute for 2 minutes.
Add the tomato puree,garam masala and saute till oil oozes from the masala.Add 1 1/2 cups of water and allow to boil.Then add the paneer pieces,boil on medium heat till the paneer gets soft and absorbs the masala.Check for salt and garnish with coriander leaves.

That's what my grandmother used to tell us.
he lived long with a healthy life.

in villages, they soak it in water for two days ( water to be changed daily ) மாற்றி எடுத்த நீரை உப்பு போட்டு குடிச்சிடலாம். Third day put the rice in a clean cloth and press it to remove water content. Season with mustard seeds, urad dal and mor milagai vatral. நல்லா அழுத்தி அழுத்தி பிசைந்து மோர் மிளகாயை வறுத்து நொறுக்கிப் போடணும். செம்ம டேஸ்டா இருக்கும்.

I wanted to post this receipe for long time, here it is...
Spinach Curry:
1 bunch of spinach
Garlic pods - 6 or 7
Toor dal - 1 cup
Onion - 1
Red chillies - 3
Raw Peanuts - 1/2 cup
Tumeric powder
Chilli powder - half tsp
Corianer powder - 1 tsp
Salt
For Tempering:
Mustard Seeds
Urad dal
Jeera
Method:
Cut spinach leaves. Slice Garlic Pods. Take a bowl, add toor dal, add water till toor dal submerges well.
Cook the toor dal for about 15 mins. Then, add spinach leaves(it will look like as if it is occupying the full bowl space, add little water and leave for 5 mins it will shrink),
garlic pods to toor dal and cook till toor dal is slightly mashable.
Then, keep it aside to cool down.
In a wok, add oil, add mustard seeds, as usual, let is splutter, add urad dal, jeer, red chillies, peanuts. Now, add finely chopped onion, fry till it turns transparent...
Add turmeric powder, chilli powder, coriander powder and fry for a minute
Meanwhile, grind the spinach+toor dal+garlic mixture, no need to grind it to fine paste, just one round of grinding is enough.
Add the ground spinach mix to wok and mix well. Cook for about 10 mins.
Thats it yummy spinach curry is ready. Server with hot rice.

Guys, here is a simple pasta recipe for every one.

LINGUINE PASTA WITH VEGETABLES IN SAUCE
Ingredients:
2 tsp olive oil
50 grms mushrooms sliced
50 grms red capsicum sliced
50 grms yellow capsicum sliced
50 grms green capsicum sliced
2 tsp olive oil
2 tbs chopped onions
1 tbs chopped garlic
1 tbs red chillie paste
75ml cooking cream
300 ml warm water
1 pkt of Linguine pasta boiled and drained
80 grms spinach
2 tsp basil leaves shredded
Salt to taste
White pepper powder to taste
40 grms parmesan cheese
Method:
Heat the olive oil, sauté vegetables, and set it aside.
Heat the other 2 tsp of olive oil, add in the chopped garlic and onions.
Sauté well, add in the red chillie paste, stir till oil seperates.
Add in the cooking cream and the water, mix nicely.
Add in the boiled linguine pasta, the sautéed vegetables,
Spinach and basil. Add salt and pepper to taste.
Toss till combined, arrange on a plate and sprinkle with parmesan cheese.
Serve warm.

Guys, I have a very good news.
Kugan called me to say that, she will be home by the 26th.
Well we have a wedding in Kuala Lumpur, our dear niece is getting married.
Well it is a sad story, she got engaged on the 2nd of December 2012.
Her father passed away on the 5th of December.
I heard Kugan told me, how the happy atmosphere suddenly turned to grieve.
The wedding is on as planned, on the 2nd of March, in the Maha Mariamman Temple, K.L
Kugan wants me to come to the wedding to give moral support to the family.
So guys, I have to make the preparations.
So please excuse me if I am not around.

Guys, I have a very good news.
Kugan called me to say that, she will be home by the 26th.
Well we have a wedding in Kuala Lumpur, our dear niece is getting married.
Well it is a sad story, she got engaged on the 2nd of December 2012.
Her father passed away on the 5th of December.
I heard Kugan told me, how the happy atmosphere suddenly turned to grieve.
The wedding is on as planned, on the 2nd of March, in the Maha Mariamman Temple, K.L
Kugan wants me to come to the wedding to give moral support to the family.
So guys, I have to make the preparations.
So please excuse me if I am not around.

thanks Madhu Sree for the welcome. Have you heard of blood group diet? Just google abt it. I am O+ so according to the diet i sud be on low carb which i cant as i love carbs being a vegetarian. if that diet is true then it will be tough for me to reduce. we can do daily attendance whether we did exercise wat do u say? but may be other members will not be happy to do this here.

I am having it with chinna vengayam. sometime i also did this, i made ragi kuzh afternoon and mixed the cooked rice and fermented both together and had it the next day. my thatha used to have like this every morning. thanks to PS thamby for pointing the nutirents of the fermentation process.

Kugan and myself came in different flights to two different airports today.
Disaster was waiting in form of shocking news for Kugan.
Kugan's 40 year old first cousin died instantly in an car accident,
while returning from the airport with his wife, after sending off an relative.
his wife is in a very critical position in the hospital.
they have two kids who are 10 and 11 years old. The funeral is tomorrow.
Kugan is very shocked and is in a dilemma.
I do not think that she can come to the forum for few weeks.
I will be leaving on sunday after the wedding on saturday.
I am up to my neck with my work.

thanks PS Thamby for all the inputs. It is very useful for me. I would exercise rather to diet. I cant diet so I exercise. i definetly exercise 3 days a week but want to do 6 days a week.

tried dev's Drumstick leaves Curry :: Murungai keerai kulambu it was good but though added coconut the taste was bitter. dont know if its due to the leaves. i separate the drumstick leaves and roughly chop them. does the chopping gives the bitterness? should we chop or not chop the drumstick leaves?

Murungai leaves are an excellent source of Iron and Zinc. My Mum chops the leaves and makes sambal with it :slurp: . BTW avoid coconut and coconut milk, only tender coconut(Ilaneer) is good for you the rest is highly fattening!

Do Chinese also use them in some way ? because i buy from a chinese market in USA and see them pick up a bunch. Wondering how to do a chinese dish.
Tried kugan thai fried rice with Basil Leaves was very yummy and so simple and easy to make. the recipe just called for three flavors basil leaves, crushed red pepper, soy sauce. but taste was very nice.
PS Thamby did not know coconut is fattening. love every thing which has coconut or coconut milk, except in sweets. what do u think of blood group diet? will it be true?

This is why when Dr prescribe you drugs, they tell you to take it with warm water, as it helps the digestion!
The Blood group diet is something I am hearing for the first time, I guess it must be true given the fact every living organism has a unique DNA. It is more difficult for ladies to loose weight than men, simply becuse the hormones found in females (estrogen) burns less fat compared to the hormone (testerone) found in men. Thermal Flask ?? It is better to add few drops lemon juice to Luke warm better, than just normal warm water, as the citric acid content in the lemon will cut down fat deposit in your body :)

Naan unga parama visiri. I am so busy now breaking the rental lease and shifting to another apt. So have to find some one at my current place so that I will not lose money. OK friends, let me start with a sweet.
I had this in a friend's house, while I was away, something like keseri, but not keseri:roll:
She kindly gave me the recipe. Kugan
RAVA SYRUP CAKE
Ingredients:
(A)
2 ½ cups rava
½ cup all purpose flour
1 ½ tbs baking powder
1 tbs icing sugar
½ cup grated fresh coconut
¼ cup roasted chopped cashew nuts or pistachio.
1 cup melted butter
3/4 cup of well beaten fresh curds
1 tsp rose essence
1 ½ cups sugar
1 cup water
1 tsp rose essence
Method:
Preheat the oven to 150 degrees C.
Grease a 8 inch cake tin.
In a bowl mix well all the ingredients in (A).
Now add in the butter, curds and essence.
Mix well and bring every thing together.
Now place the dough inside the greased tin.
Press it to level the surface.
Use a knife and cut it into neat squares.
Bake for about 40 minutes or until the top is golden brown.
Meanwhile boil the 1 ½ cups of sugar with the essence.
Let it boil for about 3 minutes.
Remove the rava cake from the oven.
Pour the hot boiling syrup on the hot cake, set it aside.
The cake will slowly absorb the syrup. Let it cool.
Cut along the lines, remove and serve.

Oh! NOV anneh agar agar kondu vanthaaraa?
O.K Sudha, a simple dessert with the strands.
Take about 10 grms of the agar agar strands.
Soak them in water for about 30 minutes.
Squeeze out the water, in a pot add the soaked strands.
add about 700 ml of water, boil in medium flame till the strands are dissolved.
add in about 3/4 cup of sugar, stir till dissolved.
Then you can add little colour, and essence.
Like red colour and rose essence, or green colour and lemon essence.
The colour and essence are only examples. you can add what you like.
Then rinse a container like a tray and pour the contents into it.
let it rest for about 30 minutes.
The mixture would have become solid by now.
Cut it into shapes that you like.
Put it in the fridge to cool.
Apuram intha heatukku saapitaal, ada ada thaan:mrgreen:
Sudha this simple agar agar can be transformed into sooo many delicious desserts.

A simple vegetarian soup, after reading it in a magazine.
Made some changes here and there.
It was nice, Kugan
SOYA AND MIXED VEGE SOUP
Ingredients:
(A)
1 cup soya chunks
2 pips garlic smashed
1 small piece of ginger smashed
1 small piece of cinnamon stick
Water as needed
(B)
3 tbs corn flour
½ tsp dried oregano
½ tsp dried basil
½ tsp garlic powder
½ tsp onion powder
½ tsp pepper powder
½ tsp chillie powder
Little salt.
1 tbs oil
2 pips garlic smashed well
½ cup onions sliced
½ cup tomatoes chopped
½ cup capsicum chopped
½ cup cabbage thinly sliced
½ cup celery chopped
4 cups of vegetable broth
1 cube vegetable seasoning
1 tbs hot sauce
1 tbs tomato sauce
1 tbs light soy sauce
Salt as needed
Method:
Boil all the ingredients in (A) for about 20 minutes.
Let it cool, wash and squeeze out the water from the chunks.
Discard the garlic, ginger and cinnamon stick.
Now toss the squeezed soya chunks in the (B) mixture.
Sprinkle little water if needed. Let it marinate for about 20 minutes.
Heat a big non stick pot with little oil.
Sauté the soya chunks until they are evenly browned. Remove and set aside.
In the same pot add in the 1 tbs of oil.
Add in the smashed garlic, let it brown, add in the onions and sauté well.
Add in all the other vegetables and sauté for a minute.
Add in the vegetable broth, and the vegetable seasoning.
Let it come to a boil, add in the sauces and salt.
Add in the soya chunks, taste for seasonings.
Let it come to a boil and remove. The veges should not be over cooked.
Serve piping hot.

when I gave the agar agar to Sudha, Madhu and Senthil, I did mention to them to check out this thread :D
needless to say Sudha was singing pugazhaaram on K and her recipes :lol:
The recipe given above by K is the basic method. Do not stop at that... there are many additions that can make it better. Do check out her earlier recipes.
And Sudha, there is NO chance that your son & hubby won't like this dessert. :D
You can add milk for better taste - try evaporated milk mixed with water.

Dear Sudha, here I am giving you the explanation for evaporated milk.
I am sure you can get it in your super markets there.
Definition: Evaporated milk is a milk product, usually sold in cans, that is made by removing about 60 percent of the water from ordinary milk.
Evaporated milk can be made from both whole milk or skim milk. In either case, the milk is homogenized and then the water is removed by gently heating it. The evaporated milk product is sealed in cans which are then heated to kill any bacteria in the milk. Thus evaporated milk is actually sterile, which, combined with the fact that it is stored in airtight cans, gives it an extremely long shelf life.
Canned evaporated milk can be stored for at least a year, although you should always check the use-by date printed on the can. Also, don't use any cans that are rusted, dented or bulging. Once you open the can, you should store the milk in the refrigerator, preferably not in the original can but in a glass container, and use it within seven days.
Evaporated milk is enriched with vitamin D. The process of heating the evaporated milk in the cans imparts a slightly sweet flavor to the milk, and it's also just a bit darker in color than ordinary milk. Note that evaporated milk is not the same thing as condensed milk. Condensed milk is also reduced by 60 percent, but it is heavily sweetened and usually used in baking and desserts.
Evaporated milk can be used as a substitute for milk or cream, like in coffee and tea or poured over cereal. I used to do this watermelon agar agar with egg white.
The texture would be just like the watermelon.
Nowadays I do not do it because of the egg.

Chana Aloo Chaat

Ingredients:
Chickpeas - 1 cup, soaked overnight and boiled (if using canned chickpeas drain the liquid)
Potato - 2, cut into small squares
Chilli Powder - 1/2 tsp
Cumin Powder - 1/2 tsp
Chaat Masala - 1 tsp
Lemon Juice - 1 tsp
Coriander Leaves - handful, chopped
Salt as per taste
Oil as required
Method:
1. Heat oil in a pan.
2. Fry the potato squares till golden brown and remove.
3. Mix the chickpeas, potato, chilli powder, chaat masala, lemon juice, cumin powder and salt.
4. Combine all the ingredients thoroughly.
5. Transfer to a serving plate and garnish with chopped coriander leaves.
6. Serve.

My dear friends, I have seen many methods, for making this pull apart bread.
The fillings too, are many types. I used what I had to make the fillings.
Here is the recipe. Kugan
PULL APART BREAD
Ingredients:
1 tsp sugar
2 tsp active dry yeast
¼ cup warm water
3 cups all purpose flour
½ tsp salt
1 tsp garlic powder
1 tbs chillie flakes
2 tbs melted butter
1 cup warm milk
3 tsp vegetable oil for greasing
FILLINGS:
2 tbs melted butter
¼ cup tomato sauce
2 tbs finely chopped onions
2 tbs grated carrots
2 tsp mixed dry herbs
¼ cup grated cheese
Method:
Pre heat a oven to 180 degrees C.
Grease a loaf tin with oil.
In a small bowl, add in the sugar, yeast and warm water and keep aside to become frothy.
In a big bowl, add in the flour, salt, garlic powder and chillie flakes.
Mix well and keep aside.
Once the yeast becomes frothy, make a well in the flour and add in the yeast mixture.
Now add in the melted butter and the cup of warm milk.
Now start to mix the flour and knead by pushing the dough with your palm.
Knead well till the dough becomes springy to your touch.
Now grease another bowl with the 3 tsp of oil. Place the dough and smear the top with oil.
Cover with a damp cloth and let it rest for about an hour.
After an hour, punch the dough to release the air, and knead again for few minutes.
Let it rest for half an hour and rise again.
Now take the dough, and roll it on a working surface to make a big square.
Spread the butter all over the square, followed by the tomato sauce, onions, carrots,
herbs and the grated cheese. Press down the filling a bit.
Now cut the square with a knife into 4 equal strips.
Stack the strips one above the other with the filling facing upwards.
Once again cut the stacked strips into 5 equal slices starting from the top and cutting straight down to the bottom layer.
Arrange all the cut slices into the loaf tin with the cut side facing the inside of the pan.
Brush the top with milk, sprinkle some herbs and grated cheese on top.
Cover with a damp cloth and let it rest once again for an hour.
After the hour, bake it in the oven for about 50 minutes or till browned on top.
Let it cool before removing and enjoy your pull apart bread.

Friends, I am sure we prepare Fish curry at home but Fish Molee is something common to Kerala. Prepared Fish Molee with Appam last weekend and it turned pretty good. Here is the recipe. Recipe shared by ammu paati.
Ingredient
Fish - 2 ( I used Tilapia Fillet)
Ginger and Garlic - crushed and smashed - 1tbsp
Salt
Pepper
turmeric pwder - 1 tbsp
Coconut Milk - Thick and Thin - 1/2 cup each
Green chillies - 8 - Yes eight coz there is minimal chilly powder incorporation in this recipe
Chilly pwder - 1 tsp or less
Fenugreek Seeds - 1/2 tsp
Curry leaves - Few Spring
Coconut Oil - 1tbsp
Mustard seeds - 1 tsp
Onions - chopped or Sliced - Bases on preference
Tomato - 2 - Cut into quarters or Round Slices
Method:
1) Wash the fish with turmeric and pat dry . Now Marinate the fish with salt, pepper and turmeric powder. Keep it aside or keep in fridge. You can shallow fry it after around 30 minutes of marination, but dint do it as my tilapia fillet were too fresh and soft
2) Heat coconut oil in a kadai, add the seasoning ingredients - Mustard, curry leaves and vendhayam
3) When the mustard seeds splutter add the sliced onions followed by ginger and garlic whish crushed and smashed well using a mortar and pestle.
4) When the raw smell of ginger and garlic is just about to disappear add the greenchillies slit pieces.
5) Now add thin turmeric powder, chilly pwder and some salt, followed by thin coconut milk
6) Let the thin coconut milk blend well in the gravy which is when we need to add fish pieces and some water - around 1/4 cup
7) Wait for around 5 minutes and add the thick coconut milk. Also Now add the quartered or round slices of tomato pieces
8) Wait no more than 4 minutes. Season with some more fresh springs of curry leaves
and tasty Fish Molee is ready.
Goes very well with Dosa and Bread too. Tastes very mild with Rice but you can try.

I used to this fish moolee curry, while we were non-vegetarians.
So far I have not tried with mock fish or anything.
I might try it with tofu and see.

What do you do, when you have a potato, drumstick and few brinjals?
Well do a mix with them. Here is the recipe. Kugan
DRUMSTICK BRINJAL MIX
Ingredients:
1 tbs oil
1 tsp mustard seeds
1 sprig curry leaves
1 onion sliced
1 tsp ginger paste
1 tsp garlic paste
1 medium tomato chopped
3 medium brinjals , cut into thin wedges
1 long drumstick cut into 2 inches in length
1 half boiled potato , cut into small cubes
¼ tsp tumeric powder
2 tsp chillie powder
1 tsp coriander powder
Salt to taste
Little coriander leaves for garnish
Method:
Heat oil in a wok, add in the mustard seeds, let them crackle.
Add in the onions and saute them well.
Add in the ginger, garlic paste, and stir well.
Lastly add in the tomatoes and cook till mushy.
Now add in the brinjal, drumstick pieces and the potatoes.
Saute them nicely, for a minute. Add in all the spice powders and salt.
Mix well, slow the flame , cover and let them cook for 10 minutes.
Cook till oil seprates, add in the cut coriander leaves and remove.

kugan, i will try ur version of mix veges.
we cook veges like drumstick, brinjal, potato, broad beans with chilli pdr, turmeric and salt . then we give tadka with rai, urad dhal and some onions, then we throw this veges mix it nicely then garnish with grated coconut .

we cook veges like drumstick, brinjal, potato, broad beans with chilli pdr, turmeric and salt . then we give tadka with rai, urad dhal and some onions, then we throw this veges mix it nicely then garnish with grated coconut .

My old aunt who came for my niece's wedding from India, taught us,
this mouth melting mysore pak. Try it friends. Kugan
SOFT MYSORE PAK
Ingredients:
2 cups besan flour
1 tbs ghee
2 ½ cup of melted ghee, not very hot.
2 cups sugar
½ cup of water
A pinch of cardamom powder
A tray greased with ghee
Method:
In a pan add the tbs of ghee and fry the besan till the raw smell goes.
When cool, sieve the roasted flour to remove the lumps.
Now add the sieved besan flour to the melted ghee.
Mix it well to make a solution and keep aside.
Now in a non stick pan add the sugar and water.
Add also the cardamom powder. Cook till it reaches a single string consistency.
Now slow the flame and add in the ghee, besan solution.
Stir continuously so that no lumps are formed.
Stir till the mixture leaves from the pan, and it froths a little.
Immediately pour it into the greased tray. It will look soft.
After about 10 minutes, you can cut it into pieces.
Let it cool before removing, enjoy soft mouth melting mysore pak.

3. drumstick, potato, sponge guard
4. drumstick, potato, brinjal and jack fruit seeds
5. with all the above combinations with banana
6. yam and long beans
7. yam, long beans and black channa
8. sweet potato alone
9. sweet potato , broad beans
10. sweet potato, broad beans and brinjal
all the above combinations are very tasty. we can have with sambar , more kulambu, rasam or kootu.

Madhu anneh, my famous old aunt came to Malaysia for my niece's wedding.
Normally she would make lightning visits to Malaysia. (Such a busy woman, 85 years old )
This time she was forced to stay for a week because of all the happenings in our family.
She gave us tips on even simple cookings, that made the dish so delicious.
Today I will post a simple keerai dish that was so delicious.

Madhu anneh a simple recipe with the agar agar. Kugan
MILK JELLY
Ingredients:
25 grms agar-agar strands (china grass)
1000 ml water
400 ml evaporated milk
150 grms sugar (more if you like)
Few drops of pink colour
Little rose essence
Method:
Soak the strands of agar-agar in cold water for an hour.
Drain the agar-agar, put them in a pot.
Add 1000ml of water and stir constantly, while bringing
to the boil.
Add the sugar and keep stirring and simmering until all the strands
are completely dissolved.
Add in the colour , milk and essence.let it boil once.
Remove and pour into a tray that has been rinsed in cold water.
Allow to set, cut into diamond shapes.
This will be a firm jelly.

Well here is a China grass with lychee.
10 grms china grass powder
700 ml water
300 ml juice from the lychee fruit.
200 grms or less sugar to taste, as syrup has sugar.
cut the lychee fruits into long strips.
Boil the mixture, pour it into moulds or tray.
Scatter the lychee fruits, let it set.
Chill and cut into pieces.
You can do this method with any fruits.

LAYERED AGAR AGAR
Ingredients:
Brown layer:
25 grms agar - agar strands soaked for 2 hours
1 litre water
300 grms palm sugar.
Milk layer:
300 ml thick coconut milk from 1 coconut
A pinch of salt.
Method:
Crush the palm sugar, add ½ cup of water, melt the sugar
and strain it, keep aside.
Squeeze out the water from the soaked agar - agar.
Put it in a pot, add the 1 litre of water.
Slow boil till the agar – agar dissolves.
Add in the palm sugar and let it boil once.
Now add in the thick coconut milk with the salt.
Off the fire, do not stir.
Immediately pour it in to a wet tray.
Do not disturb it till it sets. Chill in the fridge.
Cut it into any shape that you like.

WHITE AND BROWN AGAR AGAR
Ingredients:
The White Layer:
1 tbs agar agar powder
400 ml water
¼ cup condensed milk
The Brown Layer:
3 tbs agar agar powder
1200 ml water
230 grms palm sugar or light brown sugar
Method:
Cook the white layer, pour the water in a pan.
Add in the agar agar powder, stir till it dissolves.
Add in the condensed milk, mix well.
Pour it into a small tray and let it cool.
When set, remove and cut into rectangles.
Heat the water for the brown layer, add all the ingredients.
Boil till all the ingredients are dissolved well.
Pass through a sieve.
Now arrange the white agar agar in a tray.
Wait till the brown layer cools a bit.
Pour it over the white layer. Let it cool.
Put it in a fridge, cut the slices as you like.
Note: the white layer can be cut into any shapes as you please

We make poriyal, kadayal or kutoo with keerai.
My aunt showed me a simple keerai gravy that was so yummy. Kugan
MOONG DAL KEERAI
Ingredients:
1 tbs oil
¼ tsp mustard seeds
¼ tsp fenugreek seeds
¼ tsp cumin seeds
2 shallots sliced fine
Little asafetida powder
To Grind:
4 shallots
1 tsp cumin seeds
2 tsp chillie powder
½ tsp turmeric powder
2 tsp tamarind paste
2 tbs grated coconut
4 cups of spinach, chopped with their stalks
½ cup moong dal, cooked in 2 cups of water till mushy.
Salt to taste
Method:
Heat a pot with the oil, add in all the seasonings.
Sauté well, add in the ground ingredients, sauté well again.
Now add in the cut spinach, mix well and let it cook for few minutes.
Lastly add in the cooked moong da, add water if necessary.
Add in salt and let it simmer for few minutes.
Remove and serve on steaming rice with a dollop of ghee

I did not know what evaporated milk was. K, has given a nice explanation. see page 218.
I will also try the first one, pink colour.

Madhu Anneh, you can try with fresh milk. Just boil the cow ' milk, little sunda, sunda.
Strain the milk , then add it to the agar agar mixture.
Condensed milk will be very sweet:-D

I AM BACK. Settled at new place very soon than I could expect. So from today again KKs recipes.
Have never heard of the pull apart break looks yummy. But I have not reached that level of folding and baking. I will start from simple ones when it comes to baking.:( Keerai looks simple will try it tomorrow as I have all the ingredients mentioned except shallots.
Want to make avial and ladies finger today so will browse for those two recipes here cook them and will post the feedback.

mmm lot of yummy recipes meanwhile..
cooking is going fine akka.. edo unga puniyathla :) tried some new dishes.. they came well..
I'm getting used to planning n cooking also..

You are right, hot sauce means siracha, the only sauce made in US:-D
I have tried hot and sour soup, but cleara illaiyanu thaan teriyalai.
Let me check it out first.

Simple village style valakaai poriyal by my aunt.
Kugan.
SIMPLE VALAKAAI PORIYAL
Ingredients:
1 tbs oil
1 tsp mustard seeds
1 tsp urad dal
!/2 tsp aniseeds
1 sprig of curry leaves
2 green valakaai
2 tsp chillie powder
½ tsp turmeric powder
Salt to taste
Method:
Peel and chop the valakaai into small cubes.
Add in the chillie, turmeric and salt.
Rub all over nicely and keep aside.
Heat a non - stick pot with the oil.
Add in the mustard seeds, urad dal , aniseeds and curry leaves.
Let the mustard seeds crackle.
Now add in the seasoned valakaai cubes.
Slow the flame, and stir fry nicely.
Sprinkle little water if needed and stir fry till cooked and crispy.
Remove and serve with rasam, sambar or curd rice.

valakaai poriyal looks so tempting. Though it's not urgent it would be nice to search in that blog. my bookmark for kugan kitchen is too long so hard to find . but let dev take her own time. not urgent as i am still able to search and find.
Yesterday I struggled to find out the Avial recipe from here then used aviyal spelling and got the recipe. so i did devs kerala aviyal without shallots as i did not have turned out great and also dev had given chef damu vendakai and capsicum fry. both turned out great. my tounge and my stomach was so happy after 3 weeks. today will search for sambar ur latest keerai and egg recipes. i know there are too many sambar recipes here :confused2: will be breaking my head.

i did the village sambar the smell came till downstairs. i was so tempted of the SB sambar but since it is for tiffin just added the gram dal from that sambar. egg i did the arachuvita egg curry yummy.
can any one clear my doubt , i am in usa so when I visit costco i always get confused of one thing. the organic frozen broccoli and beans will be of the same price as non organic (pesticide/conventional) broccoli and beans. i also see ads like as soon as the vegetables are harvested they are frozen to preserve the maximum nutrients. but i always like organic so buy it. Please share your suggestions. PS Thamby please share ur views too. frozen organic or fresh non oraganic?

Sangeetha oh, you buy from costco, you have to buy things in bulk if you buy from there.
My my the parking problems there, but they compensate by giving lot of sample foods:-D
Well according to me, in general, organic, local, fresh is best, followed by frozen, then canned. This is not an absolute rule; frozen produce can be a better choice if it was frozen shortly after picking compared to fresh produce that traveled 3,000 miles to your grocery store – and then sat in your fridge for several days before you ate it. Lets see what others say. I too buy organic.

That is because it is frozen, anything frozen is (since it is not fresh) is slightly cheaper than fresh groceries.

Here in UK as well, they say that, but no one knows the truth, we just take their word for it.
PS Thamby please share ur views too. frozen organic or fresh non oraganic?
The best option is to buy fresh organic ones, wash them and freeze it. Once in the freezer, try and use it within 3-5 days.

Romba nalla vandhudhu. I made two variation, one with milk and one without milk
so one was thick and other was glossy. I dont know to put picture here.
May be Nov can help.
I used the normal packet milk.
Alavu theriyadhadhal I used the full quantity. I should have used half and kept
half for another variation.

i cut the whole perungayam into pieces and stored them in small glass bottle now all the pieces stuck together and its very difficult to pull them apart. any ideas on how to take it out and store them

Dear Sangeetha, I do not think you can pull the pieces apart.
I always, cut them when I want to use.
May be you can try, dry roasting them in a wok lightly before storing.
