Diwali celebs supera pochu, I made murukku, jamun and basundhi. Edho enaku therinjadhu ka...

Yea do try out with a veggie.
I made kollu kolambu yday ka.. very yummy. Everyone enjoyed.

Paprika rice is next on my list. I am afraid where to get the leaves though

Dear Nithi, you have made a super spread for Diwali.
Glad every one liked the kollu kulambu.


Nithi, if you cannot get the limau perut leaves, try lime leaves,
though the fragrance would not be the same.

k, remember the poondu saadha podi I once was crazy abt?... Few days back I found garlic powder in the stores... I used it instead of fresh garlic pods to make the poondu podi(ur recipe-using pottukadalai) and it came out exactly like the store bought ones... Super satisfied...:)

K, I am looking for a podi recipe- one that has peanuts and sesame seeds in it...can be had with rice...very yummy and it's a speciality Andhra podi... recipe irundhaal post pannunga pls...I tried frw from other sites but not fully satisfied...


Dear Dev, I asked my aunt and she gave me the recipe.
She says, there are so many ways to do this podi.
Some add curry leaves, cumin, vellam and so on.
She told me that you can add these ingredients if you like.
She has given me the type she usually does.

PEANUT SESAME PODI

Ingredients:
1 cup peanuts
¼ cup white sesame seeds
6 red chillies (more if you like hot )
2 garlic pips
1 tsp tamarind paste
1 pinch of asafetida powder
Salt to taste

¼ cup dry coconut (optional )
2 tsp channa dal (optional )

Method:

Dry roast peanuts , remove the skin.
Dry roast the sesame seeds.
Also dry roast channa dal if using.

Dry roast the garlic and the red chillies, let it cool.
Once all the ingredients are cool enough to handle,
Grind them to a little coarse powder.
Goes well with dosa, idli or steaming white rice with some ghee.

Another simple tofu recipe, for tofu lovers.
Kugan

SOFT TOFU WITH MUSHROOM

Ingredients:

2 tbs vegetable oil
3 pips of garlic minced
3 shallots sliced
3 red chillies sliced finely
10 button mushrooms sliced
1 to 2 tbs light soy sauce

1 packet silken tofu cut into 1 ½ inch cubes. Drain the excess liquid.
2 to 3 tbs vegetarian oyster sauce
1 tsp sesame oil
2 spring onions sliced finely.

Method:

Heat the oil in a non-stick wok.
Add in the garlic and sauté for a minute, add in the sliced shallots.
Sauté again well, now add in the sliced red chillies.
Stir fry well, add in the sliced mushrooms, stir fry well.
Add in the light soy sauce and stir fry.

Now add in the soft tofu and the oyster sauce.
Mix well, see that you do not break the tofu in the process.
Cook until the tofu is heated through.
Add in the sesame oil and spring onions.
Remove and serve immediately with rice.

Yes K...I found garlic powder here in cbe... remember the organic food store I told u abt?...there is another store called nuts n spices next to it...they carry a nice variety of nuts, spices and many rare to find stuffs in the usual departmental stores... I found garlic powder in that store...

Hello kugan akka, thanks for the clarification.. so kadavulukku padaikrathukkaga fresh a irukanumnu, again they fry aval and make it into pori and sell it as aval pori?? I think the one i made pori urundai with was arisi pori i think.. That is the only one sold in US i think. only one packet they have in shops saying puffed rice. Also yummy recipes you have posted akka, super!! btw peanut-sesame podi how long can we store??

After nithisri's raving reviews about kollu kozhambu i'm also planning to try it tomorrow :)

As for the peanut podi, you can keep in the fridge for a month.
That's what I think, can any one please correct me?

A simple sweet potato fry dish. Try it out very tasty.

SWEET POTATO FRY

Ingredients:

1 tbs oil
½ tsp mustard seeds
½ tsp cumin seeds
1 tsp urad dal

1 pinch of asafetida powder
1 sprig of curry leaves
1 pinch of turmeric powder
1 tsp red chillie powder

2 sweet potatoes , peeled and cut into small cubes
Salt to taste
Sprinkle of water
½ tsp curry powder

Method:
Heat oil in a non- stick wok, add in the mustard, cumin and urad dal.
Let them splutter and turn a bit golden.
Add in the asafetida, curry leaves, turmeric and chillie powders.
Stir and mix well.

Now add in the cubed sweet potatoes, salt to taste.
Stir fry for a minute, now sprinkle water, cover and cook on low heat.
Stir and allow to cook for about 5 minutes.
Cook until soft but not mushy. Add in the curry powder.

Stir fry nicely and remove. Serve with rice or roti.

If any one likes Grapefruit try this .


Minutes to Prepare: 5

Minutes to Cook: 15

Number of Servings: 2



Ingredients

1 grapefruit
1 teaspoon honey
2 teaspoons shelled and finely chopped pistachios



Tips


Try this for an afternoon snack or after-dinner treat.



Directions

Preheat oven to 325 degrees.

Slice the grapefruit in half.
If your grapefruits are tipping over, use a knife to remove a thin layer from the bottom, taking care not to expose the flesh.
Use a paring knife to separate the grapefruit segments (optional). Run the knife between the inner flesh and the white pith between the flesh and rind.
The grapefruit halves on a baking sheet and top with the honey and chopped pistachios.
Bake for 15 minutes.

Serve warm.

Ran out of veggies and wondering what to make for dinner/lunch... Try this simple kootu...

Tomato Kootu:

Grind to a paste- Coriander seeds - 2 tsp
Cumin seeds - 3/4 tsp
Garlic - 2 cloves
Red chilli - 3
Grated Coconut - 1 tbsp
Cloves - 2
Cinnamon - 1" piece
Turmeric pwd-1/4 tsp
salt

Heat oil and splutter mustard and curry leaves.
Add 1 big onion chopped and saute until translucent. Highly recommend using pearl onions if available.
Now add 3 medium tomatoes and saute until it starts to breakup.
Add the ground paste, lil water(not too much. U r looking for thick kootu consistency) and let it simmer for 10 mins.
Garnish with coriander leaves and serve with rice or chapathis. Goes well with curd rice too.
Yummy!!!

Priyasri, any kind of chinese gravy dishes-like sweet n sour vegs, shangai veg, veg in hot garlic sauce,kung pao chicken/veg etc goes well with fried rice...

Generally the kootu is made with lots of tomato... no vegs are added... maybe u can add carrots...

Thanks Dev, I'm planning to try kung pao tofu (found in the blog).. will remove tofu and just try with veggies...i tried Gobi manchurian from some random recipe in the net (those newly married days when i was cooking terribly) and it was awful.. so thirumba try panradukke payama iruku.. so was checking if there are any other sides.. thanks for the suggestion..

Also - yarukkavathu cranberry vachu ethavathu dish idea irukka.. i thought this berry also will be like strawberry/blueberry nu costco la oru peria packet vangittu vanden.. pulippo pulipu.. i dont have the heart to trash it..

Cranberry...sry Priya...I've never had this fruit...so enakku idea illai... since it's sour, maybe pickles... or just chop it, add chilly pwd, salt and coconut oil...mix well and eat...just like we eat raw mangoes... nalla irukumanu theriyalai... konjama try panni paarunga...

I dont think cranberry is available (குருதி நெல்லி) in Tamilnadu. Or is it available somewhere ?

Cranberries are mainly found in north america!, it is very unlikley to grow in the sub continent.

I tried cranberry chutney yday.. for having with dosai.. Cranberry i think is tamarind in pink color.. pulippu ennnavo tamarind ku equal a irunduchu, with pinkish color... I found it good only but my husband didnt like it (of course, amma panra dishes tavara veru edhu pannalum it will be pushed to doubtful or dislike q :) )
Here is what i tried (from vah reh vah)

add oil, cumin, ginger and garlic chopped n saute.. add green chillies, cranberries and keep sauteing till soft. Athuku apparam add cilantro, salt, jaggery and blend it nicely. Add talippu items.

And enjoy!!

Babycorn fingers:

1. Slit the babycorn if thick and long. Else leave it whole.
2. Cook the babycorn in salted water until 80% done. Drain and keep aside.
3. To the babycorn add- chilly pwd, turmeric pwd, salt, gin-gar paste, garam masala, lemon juice. Mix well and set aside for 10 mins.
4. Mix together equal qty of rice flour and rava in a plate.
5. Now take the babycorn and roll it in the semolina mix and shallow fry till nice and brown.

Done!!!
Eat as such or wrap it in a chapathi with some green chutney and onion slices and make it a meal. :)

Authentic Sura puttu:

Here is how it is done
Method:
1/2 kg Sura(Shark)
Turmeric powder - 1tsp
pepper powder - 2 tsp
Salt
Green chillies - 4
Garlic pods - 8
Ginger - Big piece
Onion - 1
Egg - 1

To temper:
Mustard seeds
Curry leaves
urad dhal

Method:
1) Heat water in a pan when it is hot, wash the sura with clean water and put it into the hot water. Allow the hot water to form bubbles, the color of the water needs to turn white that is when you should remove the Sura
2) Remove and keep aside to cool down
3) Take a bowl, mix turmeric powder, pepper powder and salt with your hand. Tear the shark into small pieces and mix it along with the spice mix.
4) Now heat oil in a kadai, add the tempering ingredients, followed by finely chopped garlic, ginger and green chillies.
5) Add the onion and when the onion turns pink to brown, add in the Sura(mixed with spices)
6) Allow sura puttu to cook for a while - say 10 mins.
7) Break open a egg and beat it in a bowl.
8) Pour the egg into the sura puttu and give it a nice stir.
9)Once the egg cooks along with Sura puttu, add some coriander leaves and serve hot with Rasam rice or any gravy of your choice.

Dear frienzs, this curry goes well with any plain ghee rice or pulaos.
Try this for Christmas. Meerra.

RICH CURRY

Ingredients:

25 grms cashew nuts
25 grms almonds
25 grms walnuts
All soaked and ground to paste

5 red chillies soaked and ground to paste
5 pips garlic, ground to paste
1 ½ inches ginger , ground to paste

3 tomatoes, blanch , puree and keep aside
2 big onions, 3 tsp butter
Sauté and grind to a paste

For marination:
¾ cups of curds
1 tsp chillie powder
¼ tsp turmeric powder
The ground , cashew, almond walnut paste
¼ cup cubed panner
1 ½ cups of mixed vege, carrots, French beans, peas,
capsicum, cauliflower,
All cut into equal bite sizes.
Salt to taste
Mix well and keep aside for 1 hour.

2 tbs oil
2 tbs butter
2 cardamom pods
2 cinnamon sticks
2 cloves
½ tsp cumin
2 bay leaves

1 tsp coriander powder

2 tbs cream
1 tsp kasuri methi

Method:
Heat a wok with the butter and oil.
Add in the cardamom, cinnamon, cloves, cumin and bay leaves.
Now add in the ground onion paste and keep sautéing till it
becomes deep brown in colour.
Add in the ginger and garlic paste and sauté for 2 more minutes.

Now add in the ground chillie paste sauté till the raw smell goes.
Add in the coriander powder and sauté for a minute.
Add in the pureed tomatoes and salt, let it boil over a
medium heat.
Add in the marinated vegetables, and required amount of water.
Cover and cook till the vegetables are cooked.

Finally add in the cream, mix well and sprinkle crushed
kasuri methi and switch off stove.
Keep it covered for 5 minutes for the methi flavor to infuse.
Serve with plain ghee rice.

Even though we do not celebrate Christmas, we decorate the house and cook something on that day.
The children enjoy the festival, by giving presents.

O.K frienz, a nice cool cake to try for Christmas.

LEMON CAKE

Ingredients:

100 grms butter
185 grms caster sugar
1 tsp vanilla essence
2 tsp of lemon zest
2 tbs flax seed meal, mixed with 6 tbs water
200 grms self – rising flour
½ cup of milk


LEMON GLAZE:
Ingredients:
1 cup icing sugar
¼ cup softend butter
2 tsp lemon juice
2 tbs milk

Method:
Preheat the oven to 180 degrees C.
Grease a cake tin, dust with flour and keep aside.

Cream the butter and caster sugar.
Add in the vanilla and the lemon zest and cream again.
Now add in the flaxseed mixture and beat until combined.

Add flour and milk alternately and stir well after each addition.
You should not over mix at this stage.
Pour into the greased cake tin and bake for about 25 to 30 minutes.
Test the cake with a toothpick. Remove and cool on a wire rack.

Now beat all the ingredients for the lemon glaze.
Pour it over the cooled cake.
Cut into slices and enjoy.

Golden Santa Bread

Ingredients
--- 4 to 4-1/2 cups bread flour
--- 1/2 cup Imperial Sugar® / Dixie Crystals® Granulated Sugar
--- 2 packages (1/4 ounce each) active dry yeast
--- 1-1/2 teaspoons salt
--- 1/2 cup milk
--- 1/4 cup water
--- 1/4 cup butter, cubed
--- 2 eggs
--- 2 raisins
--- 2 egg yolks
--- 2 to 3 drops red food coloring

●► Directions
--- In a large bowl, combine 2 cups flour, sugar, yeast and salt. In a small saucepan, heat the milk, water and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Beat in the eggs until smooth. Stir in enough remaining flour to form a stiff dough.
--- Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
--- Punch dough down. Turn onto a lightly floured surface; divide into two portions, one slightly larger than the other.
--- Shape the larger portion into an elongated triangle with rounded corners for Santa's head and hat.
--- Divide the smaller portion in half. Shape and flatten one half into a beard. Using scissors or a pizza cutter, cut into strips to within 1 in. of top. Position on Santa's face; twist and curl strips if desired.
--- Use the remaining dough for the mustache, nose, hat pom-pom and brim. Shape a portion of dough into a mustache; flatten and cut the ends into small strips with scissors. Place above beard. Place a small ball above mustache for nose. Fold tip of hat over and add another ball for pom-pom. Roll out a narrow piece of dough to create a hat brim; position under hat.
--- With a scissors, cut two slits for eyes; insert raisins into slits. In separate small bowls, beat egg each yolk. Add red food coloring to one yolk; carefully brush over hat, nose and cheeks. Brush plain yolk over remaining dough.
--- Cover loosely with foil. Bake at 350° for 15 minutes. Uncover; bake 10-12 minutes longer or until golden brown. Cool on a wire rack. Yield: 1 loaf.

nice to see u here. we r fine and boys are doing good. Vacation time, so kids are very happy. Elder son is going to mumbai for tournament. he is away for a week. so preparations are going on, tomorrow he is leaving.
For christmas i am not baking, my students are bringing lots of stuffs. Newyear we have party at home. for that i will bake plum cake.

For Christmas cooking typical South Indian dishes, sambar, rasam, vendi motchai pachadi, cabbage thoran, potato roast,
spinach masiyal, cucumber raitha, paal payasam, vadai and appalam.
Have made few cookies that Kugan taught me, and a cake.

We are having Ganapathy Homam on the 28th.
For that ven pongal, sambar, vadai, curd rice, coconut rice, and ponggal.
Lot to catch up Suvai


Suvai one suggestion, please come at least fortnightly.
Take 10 minutes less to have your dinner.
In the 10 minutes, log on and post a few lines.

I can see Kugan running after me with a big cane for being, athigaperasingge.

Dear Suvai, I almost forgot, Kugan send me the picture and recipe for patcha payir urundai.
She told me that you have requested. I forgot all about it. Sorry, here is the recipe.
Meerra.


PATCHA PAYIR URUNDAI

Ingredients:

1 cup green moong dal
A pinch of salt

½ cup lightly roasted grated coconut
3 tbs sugar or little more
¼ tsp cardamom powder

Outer Covering:
1 cup all purpose flour
2 tbs rice flour
A pinch of salt
A pinch of turmeric powder
A pinch of baking powder
Enough water

Oil for deep frying

Method:
Soak the moong dal for about 2 to 3 hours.
Now boil the moong dal with a pinch of salt in little water.
Do not over cook the moong dal. Drain excess water if any.

When the cooked dal is slightly cooled, add in the coconut,
sugar and the cardamom powder. Mash up the ingredients coarsely.
Now form lime sized balls and keep aside.

In a bowl, take the ingredients for the outer covering.
Add enough water and and make the batter.
The batter should be like the idli consistency, without lumps.

Heat oil in a wok, dip each of the moong dal ball in the batter.
Deep fry, till it is golden in colour.
Remove to a kitchen towel, and serve.

Eggless Fruit Cake

Preparation Time - 10 mins
Baking Time - 180 degree for 15 - 18 mins

Ingredients

For the dry ingredients :

All purpose flour / Maida - 1 cup
Baking powder - 3/4 tsp
Baking soda - 1/2 tsp
Spice powder (Clove, Cinnamon, Nutmeg) - 1/2 tsp*

For the Fruit Mix

Black and Golden Raisins, Cranberries, Cashews, Walnuts, Currants, Tutti fruity, Apricot,- 1 cup
Brown Sugar/ Demerara Sugar - 1/2 cup
Baking Soda - 1/2 tsp
Butter - 3/4 tbsp
Water - 3/4 cup
Mixed Fruit Jam - 2 tsps

For mixing the cake batter:

Curds/ Yogurts - 3tsp
Milk as required if the batter gets thick
Potatoes - 1/2 cup

Method to prepare:

The Fruit Mix

In a thick bottom pan, take sugar add water and bring to boil. Once it melts, add all the chopped fruits and nuts. Bring to boil and simmer for 10 mins. If the water evaporates completely go ahead add little more to make it liquid. Once the syrup is cooled, add the soda.

The Potatoes:

Pressure Cook the potatoes and mash after removing the skin. You may microwave it but pressure cooking it makes more soft and has water content. Keep this aside.

The dry ingredients:

Shift the flour along with the baking powder, soda and spice powder.

The baking tin

Grease the baking tin with butter and dust it well. Pre-heat the oven at 185 degree C

Getting the batter ready:

In a bowl, take the flour and add the mashed potatoes. Mix well. Then add the yogurt, whisk well.

Next add the fruit mix and combine everything together.

If it is not in dropping consistency, add some milk as required.

Pour into the greased tins and bake at 185 degrees C for 15 mins. Check at 11th minute for doneness by inserting a toothpick or sharp knife. If it comes out clean, it means done.

It gets done by 14th minute. if you want your cake to be little more brown, bake for couple of minutes but keep an eye and not let it burnt.

*For making the Spice powder (Clove, Cinnamon, Nutmeg). roast the spices separately and grind them in those small mixer jars.

Eggless fruit cakes are ready.

Hello Meera.....i do remember...those were the days when i used to spend most of my time online especially at the Hub.....but now even if I want to......i am unable...... Vantha happy varalaina not sad ngra policy is better nu neenaikaren :noteeth: ......

There are a lot of well wishers & supporters on here meera for kugan....suvai ilainaalum....irunthukitey thaan iruken....becoz kugan / u & the rest... all cook with suvai in every dish they make....so suvai is not missing!!!

I like the way u put it....take less 10 mins to eat....:rotfl:

Dear Priya, I read in the forum, you asking about the aluminium containers.
Well in US, aluminium containers are used for every thing.

We had a Ganapathy Homam in our house.
The priest used the aluminium container, for the Homam.

RAVA ROTI

Ingredients:

1 cup Rava
1/4 cup Curds
1/2 Onion, chopped thinly
2-3 tbsp Grated Coconut,
2-3 tbsp Grated Carrots
2-3 strands Coriander leaves, chopped
1.5 tsp cumin
1-2 Green chillies,chopped
Salt as per taste
1-2 tsp Oil

Method:

Mix all the ingredients except oil in a mixing bowl. The batter should
be thicker than the usual dosa batter.

Take a non-stick pan and grease it with a few drops of oil.
Pour a handful of the batter on the pan and spread it into a circle
with the help of you hands.

Cook on stove with medium heat. Cook on both sides.
Remove from pan and serve hot with coconut chutney or any other side
dish of your choice.

Note: To make the next roti, hold the backside of the pan under cold
running water for a few seconds or until it cools down. Proceed with
making the next roti.

Thayir Vadai

● Ingredients for Vadai

--- 1 Cup ulundhu (Urad daal)
--- Salt to taste
--- Oil to fry

--- For Thayir:
--- 1 kg thayir (yogurt)
--- 1/2 tsp grated ginger
--- Finely chopped coriander leaves
--- 1-2 green chilies chopped
--- Salt to taste
--- 2 tsp Roasted cumin (seeragam) powder
--- Red chili powder to taste

● Preparation:

--- For vadai - Clean, wash and soak the ulundhu overnight.
--- Grind it into smooth paste.
--- Add salt to taste.
--- Heat oil in a pan and drop a spoonfuls of batter and fry till golden brown.
--- Take the hot vadais and put in cold water for 2-3 minutes.
--- Now Take them out of water and squeeze the water and keep aside.

--- For thayir - Blend the curd (yogurt) and little water until it is smooth.
--- Keep in refrigerator for an hour to get chilled.
--- Add salt, red chili powder and cumin powder.

--- Serving - In a deep dish arrange vadai and pour thayir over them.
--- Now add puli (tamarind) chutney and green chutney.
--- Garnish with coriander
--- Serve the thayir vadais chilled

My frienzs, a ridgegourd was sitting in my fridge, and starring at me.
Do I decided to make it into a masiyal, and the skin into togayal.
The problem with me is I only cook on weekends and stock up for the whole week.

Here is the masiyal

RIDEGOURD MASIYAL

Ingredients:
1 tsp of oil
¼ cup toor dal
2 dry red chillies broken
1 big ridgegourd remove skin and cut into small cubes

1 tbs oil
A pinch of asafetida powder
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp funugreek seeds
1 sprig curry leaves
1 red chillie broken

5 pips garlic chopped
10 shallots chopped
¼ cup tamarind juice from a small ball of tamarind
¼ tsp turmeric powder
1 tsp sambar powder
Salt to taste

Method:
Heat a tsp of oil, add in the toor dal and the broken red chillies.
Fry till the dal gives a nice aroma, remove.
In a pressure cooker, add in the roasted dal, chillie and the ridgegourd.
Add water till the dal is immersed, pressure cook dal, as you would normally.
Remove and smash the dal and the ridgegourd well. Keep aside.

Heat a pan with the oil, add in the seasonings, and let them crackle well.
Add in the chopped garlic and shallots, sauté well till it turns brown.
Add in the tamarind juice, turmeric powder, sambar powder and salt.
Add ½ a cup of water and allow it to boil.

Now add in the cooked dal, and allow it to boil.
Once the masiyal is little thick, remove and serve with rice or roti.
The masiyal looks a bit dark due to the tamarind paste that we get here:roll:

Thought of making chettinad mushroom fry today but as my luck would have it, the power went off,,,:( so started off with the mushroom fry with no solid recipe in mind and it did turn out well...

Yummy No-recipe Mushroom Fry:

1. Clean n slice the mushrooms- 1 pack white button mushrooms
2. Heat 1 tbsp oil. Add 1/2 tsp saunf(sombu), pattai-1 piece, 1 each of krambu and elaichi
3. Once flavourful, add 1 sliced onion, 2 cloves garlic and saute till golden.
4. Add in one small tomato chopped, turmeric pwd, salt, chilly pwd. Search for garam masala and find the packet to be empty ;). Think... look for KK masala and find no sign of it in the pantry:sigh:
Find a packet of aachi sambar powder. Add 1/4 tsp of it and saute till the tomato turns pulpy.
5. Add the mushroom and mix well, sprinkle lil water and cover with a lid and cook till 3/4th done.
6. . Did a taste tes and found it to be spicy. :think:
7. Grate 1-2 tbsp of coconut and add it to the curry and saute till dry.
8. Did a taste test... still a lil spicy.
9. Add some coconut oil/any vegetable oil and curry leaves and mix well.
10. Taste test... yummm!!!...;)
11. Take in a plate and taste test a few more pieces...;)
12. Serve the rest...Goes well mixed with plain rice, curd rice as well as bread. I tried all these combinations today. I'm sure it'll taste good when made into a dosa /chapathi roll.

meerra , my son came back safely. but he was sick, coz of food poison. today he is feeling better. so i didnot cook anything special. i baked plum cake and all pathiya samyal for him.

O.K Rajraj uncle as per your wish, first Italian dish tadaa!!!
I made a little change by adding steamed vegetables to make it wholesome.


AGLIO OLIO

Ingredients:

100 grms broccoli cut into bite size
100 grms carrot cut into small rounds

500 grms Angle Hair pasta
1 tbs oil

¼ cup olive oil
6 pips garlic thinly sliced
½ tsp red pepper flakes
Freshly ground black pepper to taste
Salt to taste

1 tbs fresh Italian parsley chopped
½ cup grated cheese

Method:
Steam the broccoli and carrots and keep aside.
Bring a large pot of of water lightly salted, to boil.
Add in the tbs of oil, cook the Angle hair pasta in the the boiling water.
Strring occasionally until cooked through, but firm to the bite.
Drain and transfer the pasta to a bowl. Retain ¼ cup of the pasta water.

Combine garlic and the olive oil in a cold pan, cook over medium heat to,
slowly toast garlic, about 5 minutes, reduce heat to medium low when olive oil begins to bubble.
Cook and stir until garlic is golden brown, remove from heat.
Stir red pepper flakes, black pepper , the steamed vegetables and salt into the pasta.
Pour in olive oil and garlic, and sprinkle on the Italian parsley , and 2 tbs of the pasta water.
Sprinkle half of the grated cheese and stir until combined.
Serve pasta tipped with the remaining grated cheese.

I had something called Gongura idli in a food outlet yday... it was tasty and my guess is that u just have to saute onions(very finely chopped and also a lot-like 1 big onion for 6 mini idlis) until transparent...then add some gongura pickle(storebought) and mix well...maybe sprinkle very lil water if the pickle is too thick... then add the idlis and mix well... That's it... Since I don't have gongura pickle on hand, I couldn't try it out imme... once I make it, I'll post the exact recipe...
You can add some mustard and urad dhal for tempering and also some broken cashews to make it more attractive...

I am sure the Gongura idli will be yummy.
Please post the recipe, we can get gongura leaves in Lotte Mart.
Or can buy the gongura pickle in one of the Indian grocery shops.
Something different, instead of the same idli and chutney.

Here in UK, never heard of Cranberry chutney. But there are cranberry juices. Love the taste and it is an excellent antioxidant and is very good for your kidneys!

POTATO PATTIES

Ingredients:

1 onion finely chopped
1 green chillie finely chopped
1 tsp ginger finely chopped
1 tbs coriander leaves finely chopped
2 big potatoes, skinned and grated
2 tbs grated parmesan cheese
3 tbs all purpose flour
A pinch of black pepper powder
Salt to taste

Method:
Mix every thing in a bowl.
Add little water and make it into a thick batter.
Heat a non – stick griddle , pour a big ladle of batter on it.
Spoon a little gingelly oil around it.
Once cooked flip it over and cook on the other side too.
It has to be brown on both sides.
You can serve it with tomato ketchup

P.S I usually buy a big bag of dried cranberries.
I use it with my oats, make cakes and muffins for the children.
I read about Priya making chutney with fresh cranberries.
I tried out my own method of chutney, it turned out awsome.
Good on bread , patties and even with rice.
I will post it tomorrow.

O.K Guys, inspired by Priya's cranberry episode, I tried my hands at cranberry chutney.
It turned out awesome, children spread it on bread like jam.
Try it out frienz. Meerra


CRANBERRY CHUTNEY

Ingredients:

300 grms dried cranberries
2 cups of water

1 tbs oil
½ tsp mustard seeds
1 red onion chopped fine
1 tbs chillie powder more or less
¼ cup water
1 tbs vinegar
Salt to taste

Method:

Cook the dried cranberries in 2 cups of water on medium flame.
Cook till the fruits become soft and mushy.
The consistency would be like jam.
Use a spoon to smash the cooked cranberries.
It will be little chunky here and there. Keep aside.

Heat the oil in a non – stick pan, add in the mustard seeds.
Let it splutter, add in the chopped onions and sauté well.
Now add in the chillie powder, one quick stir.
Quickly pour the ½ cup of water. (the chillie should not burn )

Add in the cooked cranberries and little salt and simmer over low heat.
Let it cook to a thick mass, add in the vinegar for tartness.
No need to add sugar as the dried cranberries, have enough sugar.
Remove once it reaches the chutney consistency.

Had some leftover broken wheat(dalia) cooked for lunch and some potato poriyal... I gave it a quick makeover and this is what we had for dinner... healthy n tasty it was...

Tangy Dalia:Lemony broken wheat

Heat oil and add some jeera. Once golden, add chopped green chillies,nuts(groundnut or cashew) and onions and saute till transparent...
Add some crushed pepper , salt, curry leaves,turmeric pwd.
Add in the cooked dalia, potato poriyal(or any stir fried veggies) and mix well adding enough salt.
Once heated through, take off flame and add lemon juice, chopped coriander leaves.
Serve piping hot.

i made both pongal, banana milagu poriyal and vegetable puli kulambu. i make uppuma, kanchi, kitchadi, payasam from dalia.
i like dalia based items very much. my friend taught me kitchadi , it is very tasty i will post the receipe tomorrow.

Dhalia Kitchidi:
===========

Dalia - 1 cup, wash and drain
black channa- 3 tblsp , soak overnight, boil with little salt
peanuts - 3 tblsp soak and drain
frozen corn - 3 tblsp
carrots - 2 tblsp , cubed in small size
potato - 3 tblsp, cubed in small size
beans - 2, cut like potato and carrots
frozen peas - 2 tblsp, optional
now in a pressure pan, add oil 2 tsp, 1 tsp ghee add rai, jeera for tadka, bit of hing, little ginger grated and fry nicely, then add dalia, fry for 2 to 3 mins, then add black channa, peanuts, corn, peas, beans, carrot, potatoes fry for 2 minutes,then add pav bhaji masala - 1 tsp, salt, turmeric powder and add 2 1/2 cups of water, once it comes to boil check salt and spice. if everything is ok then close the pan and allow it to cook for 2 whistles in high flame then switch off the stove, garnish with chopped coriander leaves and 1 tsp of ghee. it is very tasty and crunchy coz of vegs and dhals, nuts.we have it with curd.
it is very filling too. we like this version of kitchidi.

when u r in cbe, u SHOULD try annapoorna sambar idli... :slurp: Though the taste has deteriorated, it still is yummy... I also find that few outlets serve better tasting sambar than the others...:roll:

Here is a simple veg biriyani that amma makes... This style of biriyani is very common in kongu region but I'm not sure if it is a kongu speciality...

Biriyani with coconut masala:

Seeraga samba rice- 1 heaped tumbler(approx 150-170 ml),washed and soaked in 2 1/2 cups water.
chopped mixed veggies

Grind to a fine paste adding very lil water:
pattai, 2 krambu, 2 yelakkai, 1/2-3/4 tsp sombu,
4 big cloves garlic, 1/2 that qty ginger,
4-5 plump pearl onions, 3 tbsp coconut,
green chilly to taste, salt. turmeric and lil chilly pwd.

Heat oil+ghee. Saute 1 onion sliced and saute till transparent.
Add the paste and saute well until raw flavour goes off and u can smell a nice aroma. approx 5 mins.
Now add the veggies,saute for a minute.
Add the rice+water. cook for 2 whistles.
Done!

Zafrani Pulao

Fragrant basmati rice made exotic with the addition of saffron and nuts.

Ingredients:
- 2 cups - basmati rice
- 2 cups - sugar
- 1 1/2 cup - milk
- 2 1/2 cups - hot water
- 3 tbsp - cashews, halved and fried
- 4 - cardamoms, whole
- 4 - cloves, whole
-1" piece - cinnamon, halved
- 1/4 cup - raisins
- 2 tbsp - blanched almonds, slivered
- 1/2 tsp - saffron strands
- 1 tbsp - hot milk
- 2 tbsp - ghee

Method

- Wash and soak basmati rice for 15 minutes.
- Drain rice in a colander, keep aside.
- Heat ghee in a large heavy or nonstick pan.
- Add whole spices, allow to splutter.
- Add rice, stir very gently for half a minute.
- Add hot water.
- Cover, and cook till rice is half done.
- Add milk and let it cook.
- Each grain should be separate, not mushy.
- Dissolve saffron in hot milk, but rubbing into it.
- Add sugar, raisins, 3/4 almonds, cashews and saffron to rice.
- Cover securely and cook till rice is fully done.
- Stir gently, and allow any extra moisture to evaporate.
- Garnish with remaining almonds and cashews, and serve warm.

My dear frienz, I usually make nei appam with ground rice.
My colleague, brought the nei appam to office made with all purpose flour.
Here is the recipe, try it out. Meerra


NEI APPAM

Ingredients:

1 ½ cups melted cold jaggery
1 ½ cups all purpose flour
½ cup rava
3 tbs rice flour
¾ cup pureed ripe banana
¼ tsp cardamom powder
¼ cup small coconut pieces roasted in little ghee
2 tbs ghee
A pinch of baking soda
Salt to taste

Method;

Mix all the above ingredients to a idli consistency.
Add little water if needed.
Let it rest for about 3 hours.

Mix well and adjust the consistency if the batter is too thick.
Heat a paniyaram pan with little ghee in each hole.
Pour a ladle ful of the batter into each hole.
Cook on medium heat.

After 3 minutes, gently turn the nei appam to the other side.
Cook both sides until golden, remove and serve warm.
Use a non- stick paniyaram pan.

This is a simple beetroot patchadi.

BEETROOT PATCHADI

Ingredients:

250 grms beetroots, grated
A pinch of turmeric
Salt as needed

To Grind:

2 tbs grated coconut
2 small green chillies
½ inch ginger
¼ tsp mustard seeds
¼ tsp cumin seeds

½ cup curds

To Season:
1 tsp oil
½ tsp mustard seeds
2 dry red chillies, broken
1 sprig curry leaves

Method:

Cook grated beetroot, with salt, turmeric powder and very little water.
Add the ground paste and cook few more minutes in low flame till the raw smell goes.
Let it cool, add in the whisked curd, taste for salt.

Heat the tsp of oil, add in the mustard seeds, red chillie and curry leaves.
Let the mustard seeds crackle, now pour it over the patchadi.
Mix well and serve.

posting after a long time.. In this gap, tried some new recipes from the blog.. unga aglio olio.. nalla irunduchu... bonda try pannen.. adhu vadai madri flat ayduchu.. without the centre hole..

Nice idea on the cranberry chutney to use it like a spread. Maybe i shud give my husband also like that covered and hidden.. once he sees pink color he starts rejecting the dish.. ennna pink chutney aaa.... enakku vendam enaku vendam...

I was waiting for your post for a long time.
Kugan had told me about you, and asked me to help you if you needed any recipes.
she knows that you are a beginner, she has suffered the same fate during her times.

I tried the cranberry chutney after reading your post.
i made it like the mango chutney and it turned out awesome.
you add chillie powder and it will be red chutney:-D:-D

Priya as for the cucumber raitha, there are many ways to do that.
Some add coconut paste, some add tomatoes, carrots and many things.
As for the green chillie, you can grind the green chiile and add to the raitha.
If you really want kaaram, have you heard about the bird's eye chillie.
Just grind two of them and add to the raitha.
I will soon post how I do it.

Already tried Kugans NASI GORENG, red coconut chutney, Drumstick leaves sambar,green peas kerala curry, moong dal idly sambar, oats kolukattai,kerala pasta, selvieam kadala curry with soya granules, madhu sree capsicum rice, all came out really good. I want to thank you all for your inputs. PS thamby nala i have order marmite vera. Simple ice cream on its way.

When I joined Kugan missing. Want to thank her a lot. I have gone thru only KK 7, 6, 5 only half. Bookmark list is full. I feel its really a worthfull passtime here.

for past 2 yrs i am cooking in my life. 40% i cook bad dishes 35% medium level cooking 25% good cooking. sometime (40%) really sodapify so much and waste the food. but still like to try with all spirit. I prefer home food. My husband likes hotel food a lot. 1 yr in europe 1.5 yrs in USA soon will move from here. dont know where till now. was cooking somehow regularly but was not showing variety. still not managing the house chores abroad. thats abt me . I am a vegetarian. so this group is perfect for me.

one question to Kugan or whom ever who cooks 50% of her daily menu. how come u all cook so much like for lunch upto 5 items. that too the amt (the containers from pics here looks bigger to me) . I too have big hand so if some one can give me tips to reduce the quantity for two people it wud be nice. I can't eat refrigerated food (i know too much :( ) but has been brought up like that . "kandal aanalum kasi kattu mathiri " "ka vayiru kanji naalum, fresha cook pannu." so even if I cook even a bit more for lunch its gonna be waste. so i really need tips to cook for just 2.

though we both r slightly plumpy i cook only 1 cup rice on weekdays. one gravy (sambar, kootu etc ) and one dry curry if i cook extra like rasam or one more extra curry or patchadi like that its mere waste, all the items will have little left overs which will not suit the dinner tiffin items. morning we regularly take one cup coffee one porridge and fruits with enough gap. do u all have 2 kids thats the reason u all cook 4 items for lunch? or do u all cook 4 items and make sure nothing will be left over? defiantly need to master cooking little. one cup rice is perfect for us that i know for sure. on week ends it will be 1.5 cups. so do u all eat the kootu , curry etc without rice so as to finish it all.

Does any one know how to make "Vadagam" , I know kugan akka gave me the receipe long time ago, but can't find it? and how do you sun dry the vadagam in a cold country like UK, can you put it in the oven ?

I am new to this forum. Already tried Kugans NASI GORENG, red coconut chutney, Drumstick leaves sambar,green peas kerala curry, moong dal idly sambar, oats kolukattai,kerala pasta, selvieam kadala curry with soya granules, madhu sree capsicum rice, all came out really good. I want to thank you all for your inputs. PS thamby nala i have order marmite vera. Simple ice cream on its way.

When I joined Kugan missing. Want to thank her a lot. I have gone thru only KK 7, 6, 5 only half. Bookmark list is full. I feel its really a worthfull passtime here.

Kugan would have given you a rousing welcome, I am not expert in that.
Glad to know that you have tried so many recipes.
Yes, we all post mostly tested recipes, so slim chance of dish going wrong.

Kugan is away on personal reasons.
Kugan mostly posts vegetarian recipes.

Sangeetha , the pictures posted are mostly spreads cooked for functions.
That's the reason the dishes look big.
I think most dishes posted will be suitable for two persons.
Well if you think the amount is big, just divide the recipe into two.
In cooking kaaram, salt and things are up to induviudual taste.

As Kugan says the recipe is only a guide line.
You can plus and minus things as you like to your taste.

Well sangeetha, I am a working woman, goes to work at 7.30 a.m,
and back in the evening about 7.00 p.m
I have children, so what i do is that, I cook on weekends and stock up my fridge.
My dishes will be lined up from monday to friday.
I cannot effort to cook daily fresh for my family.

to make it worst, weekends, we have laundry, house cleaning,
extra cl;asses for children and so on. So that is our life.

Glad that you are able to serve steaming dishes for your family.

CUCUMBER RAITHA

2 cups yogurt well beaten.
6 inches long cucumber, grated
1 shallot finely chopped
2 green chillies finely chopped, or ground
A pinch of red chillie powder (optional )
1/4 tsp roasted cumin powder
salt to taste
little chopped coriander leaves.

Method:

grate the cucumber with or without the skin.
squeeze out the juice.
All the ingredients to the beaten curds and mix well.
Chill before serving.

NOTE: you can add little tomato cubes if you like.
Or you can add little grated carrot if you like

Grind the toor dal and urad dal into coarse powder.
Add all the other ingredients except the oil.
Crush them lightly so that they can be moulded into balls.
Dry them in the hot sun.


In the evening break all of them, add half of the oil and mix well.
Make them into balls again. Next morning dry them in the sun again.
Again in the evening do the same process using the other half portion of the oil.
Now dry the balls in the hot sun for about 15 days, till it becomes hard.
Store them in a air tight container.

NOTE: Normally castor oil is used. Since this oil is banned in Malaysia,
I use gingelly oil.

12 hours must be gruesome.. Plus i can understand the looong traffic jams in the DC area..
Cooking for entire week also is an arduous job.. not as easy as it seems..
I tried for couple of weeks, then i gave up..

Thanks Meera for the nice welcome and clarification. THis hub has become by one spot now. I know cooking every curry in one day is the most difficult task . ITs all my mind set I know its bad but hesitant to change. Even when I used to work will strugle a lot but still was always regular in cooking daily. Spoilt child definetly agree.

Priyasri I feel happy that , I am not alone wondering the variety shown in a day by Kugan.

Tried spicy potato rice taste was very good but my potato absorved lot of oil. don't know if boiled potatoes will do good too. Icecream feed back tomorrow.

PS Thamby defintely I am ur akka in eating spicy foods. Like the ones who have sweet toungue I have chillie toungue.

Though I have not tried baking vadams in oven I have always been thinking to do so. I have dried orange skin in oven and the result was really as good as sun dried ones.

YOu can try this simple vadam which I have tried in sun dry method.

CHinna vengaya vadam

nicely mash 24 hrs old, 2 cup cooked raw rice. add 2 cups chopped shallots to it , then add salt and chille powder according to taste. mix them throughly and roughly shape them like tiny shallots (chinna vengayam) . SUn dry the vadams or set oven to the minimum temp in a tray place butter sheets and spray oil on it and arrange these vadagams.once dried deep fry them and enjoy ! (It will take 8 hrs to 10 hrs for this oven method i guess. for me atleast electricity is free).

I feel the more people request here for recipes the more wisdom comes . learn a new or an old forgot recipe. eg dev request for Paal ice sold in 80s , and also some Malaysian recipes gave us those recipes. PS thamby request of pita bread and falafel gaves a recipe to combine them and present as a sandwich. suvais request of uppadam puli vadai and so on. so pls request more so that our master of cooking will load us with lot of info.

Well I have no choice, but to cook for a week.
Priya, even though I welcome Fridays with open arms, but there are also many hurdles to pass.
Marketing in Lotte for the weekend, laundry, house cleaning and so on.
Children have their religious classes , kumon and many things on sundays.
Phew! really tiring Priya, so enjoy life when you get the time:-D

Sangeetha, Kugan is from a kutoo kudumbam.
There are 11 members in her family, plus her driver makes it a dozen.
Even though they have maids, it is a tradition in their family that, cooking is done by the lady of the house.
No one comes to their house during lunch time or dinner time , goes without eating.
That is a strict rule of their late father-in-law.
So Kugan cooks a variety daily, rasam, tayir, a kulambu and about 3 side dishes.

Kugan is from India, married into a Malaysian family.
She lived like a princess in her home without doing any work.
Kugan knows nothing to knots in cooking.
Her mother- in-law trained her to become a super cook.
Now she can cook even for 100 people with ease.

Kugan is a super woman, she takes care of the house, children, and also the accountant to her companies.
We are all very proud of our Kugan.

Sangeetha please go through all the threads, you will find lots of recipes to cook.
So you can cook daily variety in your house.
Please I am sure you too will have some special recipes.
Please post it for us to follow.

Dear Guys, our dear friend Ramrish has posted a Panner Tikka Masala recipe in her blog.
I tried it out and it came out awesome. Thanks Ramrish for the recipe.

PANNER TIKKA MASALA by RAMRISH

Ingredients:

Paneer - 10 ,1-inch cubes

Tomato - 2 medium(fully ripe).Puree it in a blender.

Bell pepper - 2 cut into inch cubes

Onion - 1 medium diced

Coriander powder - 1 tsp

Chili powder - 1 tsp

Turmeric Powder - 1/2 tsp

Ginger garlic paste - 1tsp

Kasoori methi - 1 tsp

Cumin seeds - 1 tsp

Garam Masala Powder - 1tsp

Oil - 6 tablespoon

Yogurt - 3 tablespoon

Salt - to taste

Method:

For the marinade :

Combine paneer,yogurt,salt,kasoori methi,chillipowder and allow to marinate in a airtight box in the refrigerator for 1 hr.
After 1 hr ,in a pan with 1 tsp oil,saute the marinated paneer pieces till slightly brown and drain them in paper towels.Keep aside

In the same pan,heat oil.When hot,add the cumin seeds.When it splutters,add the onion and allow to brown a little.

Now add ginger-garlic paste and saute till raw smell goes off.Add the turmeric powder ,chili powder and a little bit of salt.Add the capsicum pieces and saute for 2 minutes.

Add the tomato puree,garam masala and saute till oil oozes from the masala.Add 1 1/2 cups of water and allow to boil.Then add the paneer pieces,boil on medium heat till the paneer gets soft and absorbs the masala.Check for salt and garnish with coriander leaves.

Thank you Meera I am already going through all and what ever is my fav I am bookmarking and the list is now endless. 11 membersa oh my God. Work will be too tight but I think it is a blessing to live like that. THen I totally agree all the dishes will be over. Somehow I dont know whenever I visit India I am able to eat a lot like sambar rasam keerai poriyal kootu curd etc .because of the weather and work load i guess. my amma got married at 18 and she was also trained by her MIL. She always praises her in law for her great great cooking. Paati make a 5 star lunch or dinner without much ingredients actually sometimes with water and some seasoning . Her hands are so so good. Unfortunately both of them passed away and I seriously feel bad of not learning from them. I was also spoilt that way romba chelem and was not able to face when everything turned upside down.

the simple icecream is super. exactly like paal ice. I double the quantity of milk because I have strange taste buds. even too little is too sweet to me. I like sweets but its has to be with 50% less sugar. But still the icecream turned out exactly to my expectations. THanks to dev for asking this and thanks to Kugan for giving the recipe.

meerra....nei appam looks amazing....didnt look like it absorbed oil.....i once read a recipe long time ago ....that they even bake nei appams....now who would have thought of that eh?? ;-)
BUT............ennaa sollunga.....deep fried nei appam thaan slurpyyyyy slurpppppp.....:noteeth: correct thaaney naan sollarathu?...i can see meerra/ dev selvi .....all shaking their heads to yes...:noteeth:.....so would kugan ngo if she had to read this....;-)

i recently tried this idly & dosai recipe & both turned out pretty well....it was really really soft......try panni paarunga neram kidaikum bothu
3 cups - Idly rice
1 cup regular pachai arisi (saapidarathu) i used Tilda Basmati rice.
1 cup - aval - poha
1 tsp vendhayam

1 cup - skin illaatha muzhu ulundhu - (uluthamparrupu)

salt to taste

Soak the first four items together & soak ulunthu seperately

grind ulunthu first by adding little water (konjam konjama)

then grind the rest to idly maavu consistency...now mix it all with salt.

(same method as u do for idly or dosai....soak over nite & grind it in the morning.....& i leave the light on in the oven & cover it with some kitchen towel (the pathirams in which u have the maavu)...coax pannanum ilaati ferment aagathu....so konji kenji paattu paadi...thaalaati....panni paarunga...kandipa soft idly thaango :noteeth:

sonna recipe la aval plus pachai arisi......pottu irunthichi...back in india...i dont recall adding those two items to regular idly or dosai maavu in our households.......but we used to have very soft idli & morru morru dosai....athaan try panni post pannen nga....
