Dear Aarthi, here is the recipe for soya keema dosai.
You can use minced mutton, or chicken in place of the soya chunks.
Kugan



VEGETARIAN KEEMA DOSAI

Ingredients:

Dosai flour to make dosais.

For fillings:

(A)
1 cup soya chunks
1 pip garlic smashed
1 small piece ginger smashed
1 small piece cinnamon stick
Little salt
Enough water

2 tbs oil
½ tsp mustard seeds
½ tsp cumin seeds
1 sprig curry leaves
1 tsp ginger paste
1 tsp garlic paste

1 big onion finely chopped
Salt to taste
2 red tomatoes finely chopped
1 tsp chillie powder
¼ tsp turmeric powder
1 tsp coriander powder
¼ tsp garam masala powder

2 tbs of frozen green peas
Salt to taste
2 tbs of chopped coriander leaves

Method:
Boil all the ingredients in (A) for about 5 minutes.
Remove and wash in fresh water for two to three times.
Drain and squeeze out the water completely. Chop it into very small pieces.
Keep aside.

Heat the oil in a wok, add in the mustard seeds, let it crackle, add in the cumin seeds.
Add also the curry leaves, ginger and garlic paste. Stir fry well.
Add in the onions and little salt, sauté well till the onions turn lightly brown.
Add in the tomatoes, and cook till they turn mushy.

Add in the red chillie powder, turmeric, coriander and garam masala powders.
Give a nice stir, add in the chopped soya chunks and the green peas.
Cook well till all the spices are mixed well. Sprinkle little water if needed.
Stir fry till dry. Add in the cut coriander leaves and remove.

Now put a dosai kal, and make a dosai. Spread 2 tbs of the cooked keema.
Just like we do for masala dosai. Pour little oil all around the dosai.
When the dosai is cooked, fold it into two and remove and serve hot.
You do not need any chutney for this.

Pillayar chathurthi vazhuthukkal!This year we cannot celebrate nor do offering to god..so thinking about making ammini kozhukattai for snack..

Neenga ellam enna variety kozhukkatai seiya poreenga?

Sorry that you cannot celebrate Pillayar Chathurthi.
I feel no harm in making little kozhukattai, for the children to enjoy.

Well I normally, make mothagam, sweet and savoury kozhukkatais.
three types of rice, sundal and payasam for prayers.
Also there will be pori and sugar cane.

Aarthii and K, I've already posted our version of the dal as uppu paruppu/ilai paruppu... U should be able to find it on the blog... Usually this dal is not seasoned...Ghee is a must for this dal...:slurp:

Dear Dev, thanks for your nice mail.
Dev, I found your recipe for uppu dal.

Maybe the recipes vary from place to place.
All our relatives will do dal as I have stated,
No onions, curry leaves or coriander leaves.
We call it paruppu kadayal. It is served in a virunthu,
before serving the sambar.
Anyway thanks Dev, I am reposting your recipe for Aarthii.

Uppu Paruppu: By DEV

1. Cook a cup of thoor dhal along with a1/2 tsp oil & turmeric pwd. Cook until soft & the dhal just starts to brekup. Don't let it cook too long ,or the dhal will become a paste. Mash the dhal lightly.

2. Add 1/2 medium onion chopped finely, 3 cloves garlic chopped finely, few curry leaves torn roughly,Kongu spl masala powder and salt. Cook for 5 mins. The dhal should be thick(of dosa batter consistency)

3. Switch off flame & add in chopped coriander leaves & a tbsp of ghee. Mix well.

4. Serve with rice & more ghee if u wish. Yum. Avarakkai porial goes well with this. U can prepare he poriyal the same way as mentioned in the brinjal-potato poriyal recipe.

Adding ghee to the dhal is a must(either as the last step or while serving). Don't ever think of skipping it.

Innikku onion, garlic illaama samaikkanum, was really tuff thinking about wht to cook without my darling onions and garlic :lol2:
Appram I had a cooker and a pan, vera paathiram illa, so ellaam senju clean panni adutha variety seiyanum...
morning 5kku ezhundhen, 6kku samaiyal start panninen, 7:30 varaikkum senjen :oops2: konjam paathiram irundhaa seekiram senjiruppenu nenaikkaren...

I prepared rava kesari(kesari powder illa, so colorless kesari :oops: ), vella kondakkadalai sundal, Rice, Capsicum sambar, Carrot thengaai pota kari, thengaai pachidi... :slurp:

Sesame vegetable thokku: (Chef Damu)

Powder sesame seeds- 1 part, dry chillies n cori seeds-2 parts.
Heat oil. add sombu, curry leaves, onions. Saute.
Add gin-gar paste and saute well. Add turmeric, vegs(carrot,cauliflower,potatoes),water, salt and cook till done. There should be some water still in the vegs.
Add the powder, tamarind juice(optional) and cook till dry.
Done.

Ladiesfinger-Capsicum pepper curry: Chef Damu

Heat oil. Splutter mustard,2 dry chillies,curry leaves. Add 1 onion chopped, 1/4 kg ladiesfinger cut into 1 inch pieces, 1 b.capsicum cubed and saute these 3 together till LF is 1/2 cooked.
Add chilli pwd-1 tsp, turmeric pwd, dhaniya pwd-3 tsp and saute well. Add lil water if req and cook on sim for 5 mins.
Now add pepper pwd-1 or 2 tsp and saute for 2 mins.
Done.

Serve with phulkas or curd rice.

It had been long I myself prepared vegetarian item in home. Kugan Kitchen la irunthu oru item eduththu pannalaamnu, thaedi pidichchu itha pannaen..

It was named as Okra with Groundnuts..

As the above mentioned name is not good, I am renaming it as.

Original recipe la irunthu Coconut taken out, green chilles and garlic added. Prepared with minimum oil.

Light as lightning, you have posted your beautiful spread.
I really like your cute lamp. I made your mint rice Madhu Sree.

As for my spread, I made moong dal filling kolukkatai, sesame seed filling mothagam and savoury kolukkatai.
Ponggal, tamarind rice and coconut rice.
Nei appam, besan laddu, and chick peas sundal.
Pori, aval, and methu vadai.
Fruits and sugar cane, I will post the pictures soon.

I got a hand blender :happydance:, It is grinding ok... :D, adha use panni naan pudhina leaves konjam araichu paaththen.
Yesterday I prepared pudhina rice :slurp:

Pudhina rice(serves two):

Pudhina - 1 cup
Onion - 1 medium
Tomato - 1 medium
Jeera - 1/2 tsp
Ginger garlic paste - 1 tbsp
Turmeric powder
chilli powder
coriander powder
Oil
salt to taste

Optional: (To get a masala taste)

Cloves- 2
Cinnamon stick - 1 inch
Bay leaves


Method:

Grind the mint leaves with little water.(Note: Semi grind it, not to a fine paste)
Heat a pan with oil. Add the optional items specified and jeera, fry for 1/2 minute.
Add ginger garlic paste, fry for ten seconds, add onion, fry till it becomes transparent.
Add tomato, salt, turmeric powder, chilli powder, coriander powder. Fry for about 2 mins.
Add ground mint leaves. Mix and fry till the raw smell goes and till the water drains out completely.

Add this mixture to rice and mix well(if salt is required you can add it and mix again). Pudhina rice is ready. Server with cucumber raitha .

I just saw the blog.. and it was like entering heaven!! so many yummy dishes with tempting pictures..
Kugan akka!! you rock!

I tried brocolli stir fry today and it came out very nice. So easy yet tasty. Last i tried something like this with lima beans (recipe from some website on the net), where we had to add besan and cook, it was a mess! No one touched it, including myself. So i was doubtful about this dish, but your instructions were so clear, it came out well!!! :)

Mixed vegetable sabzi: (Geetha Deivasigamani)

Chop 2 carrots,2 s. poatatoes, 1/2 chow chow,1/2 cup beans,1/2 cup cauliflower, 1 cup cabbage and add 2 handfuls of peas to it.
chop 1 b.onion.
Keep ready other ingre as follows:
1 tsp gin-gar paste
chilly pwd to taste
1/4 tsp turmeric
3 tsp cori.powder
salt
oil
pattai, krambu, sombu and yellakkai for seasoning

Heat oil and add in pattai, krambu, sombu and yellakkai.
Add the onions and fry till translucent.
Add the ginger-gar paste and saute till raw flavour is out.
Add the vegs and spice powders,salt and water. don't add too much water. just enough to cook the vegs and still have some gravy left.
cook it in a pressure cooker for 1 or 2 whistles. release the steam and garnish with cori.leaves.
Serve hot with chapathis/pooris. Very healthy and tasty.

U can use the same veg masala to make kaara bonda, bread sandwich. In that case cook further to dry out the water and then use as filling.
U can also add 1 tomato chopped if making for chapathi/poori.

I do boondhi laddu for deepavali and special occassions.
You know the boondhi laddu is very time consuming.
Rava laddu, nei urundai and besan laddu are the easiest to make.
Normally I go for these to ease my work.

My dear Aarthii, thanks for inquiring about my health.
I had a mild stroke, recovering slowly.

I will post the recipe for the besan laddu soon.
Aarthii, there is nothing as scrambled tofu.
You have to buy the firm tofu, which will be like a square block.
You will have to break it up with a fork or using your hands.
That is called scrambled. I think you are asking to make the omelette.
You can even scramble the tofu and cook dishes.
I remember posting a scrambled tofu recipe.
I will find and repost it for you.

Aarthii, I am glad you asked this question.
No harm in asking anything which you do not know.
I too have learned many things this way.

SCRAMBLED TOFU

Ingredients:

2 cups of crumbled soft tofu

½ cup of tomato chopped

1 tbs thinly sliced scallions
1 tbs chopped coriander leaves
Salt to taste

Method:

Heat oil in a wok, add in the onions, sauté till it wilts.
Add in the ginger and green chillies. Stir for a minute.
Add in the tomato pieces, coriander powder, cumin powder,
tumeric powder and stir till the tomatoes are mushy.

Now add in the crumbled tofu and salt and mix well.
Sauté for about 6 minutes to let the tofu absorb all the flavours.
When the mixture is dry, add the scallions, coriander leaves and the pepper powder. Stir and remove.
You can even use this as a sandwich fillings.

Here is the besan ladoo recipe.
Kugan


BESAN LADDU

Ingredients:

2 cups of sieved besan flour
2 tbs ghee

1 ½ cups of fine castor sugar
2 tbs of finely chopped cashew nuts, roasted in ghee
A pinch of cardamom powder
¼ cup or little more melted ghee

Method:
Mix the besan flour and the 2 tbs of ghee.
Roast the besan flour over low heat, stir constantly, to avoid lumps.
Roast well till a nice aroma comes from the flour, do not burn the flour.

Now remove the flour to a bowl, let it cool a bit.
Add in the caster sugar, roasted cashew nuts and the cardamom powder.
Now add in the melted ghee, little by little, till you can make the flour into small balls.

Do not add in all the ghee, the flour should not be oily.
Now form the mixture into small balls.
Your ladoos are ready now.

kugan: Take care of your health first. Stroke is not something to be taken lightly. Recipes can wait. Where we live we had four cases of stroke. One is still in the hospital. Have a check up again for blood clots.

Halloween: We don't do anything special in dishes. It is for kids to have fun collecting candy walking door to door. We decorate the housefront with pumpkin lamps and something scary. May be, you can try pumpkin halwa! :)

KOVAIKKAI CURRY (Dondakaya )

Ingredients:

To Grind To A Smooth Paste:

2 tbs coconut
5 red chillies
½ tsp cumin seeds
1 tsp coriander seeds
1 tsp peanuts
1 tbs channa dal

1 small piece of tamarind

1 tbs oil
1 tsp mustard seeds
1 big onion chopped
Salt to taste
300 grms kovakkai cut into lengths (or any size)
¼ tsp turmeric powder

Method:
Dry roast all the ingredients , except the tamarind , for grinding.
When cool use little water, add the tamarind and grind to a smooth paste.
Keep aside.

Heat a wok with the oil, add in the mustard seeds, let them splutter.
Add in the onions and salt, sauté till the onions are little limp.
Add in the cut kovakkai and the turmeric powder.
Stir fry, close and cook for about 5 minutes.

Remove the cover, add in the ground paste, add little water.
Cook on low flame till all is blended well.
You can add more water if you want more gravy.
Remove and serve with chapathi


KOVAKKAI DAL (DONDAKAYA )

Ingredients:

1 tbs oil or ghee
¼ tsp mustard seeds
¼ tsp cumin seeds
1 pinch of asafetida
3 pips garlic smashed
2 dry red chillies broken
1 big onion chopped
Salt to taste

¼ tsp turmeric powder
1 sprig curry leaves
1 big tomato chopped
½ tsp red chillie powder
1 tsp coriander powder
300 grms kovakkai cut into rounds
Water

¼ cup channa dal, boiled but not that mushy
1 pinch of garam masala powder
Little lime juice (optional )
1 tbs chopped coriander leaves

Method:

Heat a wok with oil, add in the mustard and cumin seeds.
Let them crackle, add in the asafetida, garlic and red chillies.
Sauté for a second, add in the chopped onions and salt.
Sauté till the onions are limp.

Add in the turmeric powder, curry leaves, chopped tomato,
red chillie powder, coriander powder and the kovakkai.
Stir fry nicely, add in little water , cover and cook till the kovakkai is cooked.
Remove cover, add in the boiled channa dal, garam masala powder.

Stir fry till all are blended well. The consistency should not be too thick or thin.
Add in lime juice if using, garnish with coriander leaves.
Remove and serve with chapathi

Sandwich Idli

Ingredients:
Left-over idly batter or fresh idly batter
1 Onion chopped
Cilantro chopped (desired quantity)
2 green chillies finely chopped
1 tsp mustard seeds
2 tbsp oil
2 tsp urad dhal
pinch of asafeotida

Method

Mix chopped onion, cilantro, green chillies with idly batter.
Season it with mustard seeds (fried in oil) urad dhal and asafeotida.
Mix all ingredients well and pour it into the sandwich maker till the rim.
If desired ghee could be applied on the sandwich maker before pouring the batter.
Usually gets done in about 10 mins or wait till turns golden brown (not necessarily crispy).
Serve it with south Indian dosai chilli powder.
Try it out.

Dhokla Pizza

With the healthy benefits of Indian pulses such as green gram dal and blackgram dal, it is one dish you can relish as a main course or snack.

Ingredients
- 1 cup of moong dal or Green gram dal
- 1 cup of urad dal or blackgram dal
- ½ a cup of rice
- 2 tablespoon salt
- 1 tablespoon oil
- 2 tablespoon of curd
- 2 tablespoon of tomato pulp
- Shredded onions, cabbage and capsicum
- 100 grams of paneer

Method
1. Keep dal and rice soaked in water overnight.

2. In the morning, grind the mixture of rice and dal into a thick paste.

3. Add curd to the dal mixture and let it ferment for a few hours (minimum 2 hours).

4. Now pour the fermented mixture into a shallow vessel greased with a wee bit of butter. Top it with cabbage, capsicum, onions and panner.

5. Bake it at 350 degrees for 15 minutes or you can also steam it in a pressure cooker. Your dhokla pizza is ready to be served!

Puttu and Kadala Curry

Ingredients for Puttu

Puttu mavu (rice flour) – 2 cups
Salt
Hot water
Coconut (grated)

Puttu - method of preparation

Just add sufficient hot water and salt to the rice flour. Mix the flour well with fingers. For making the Puttu, you may use the traditional Puttu Kudam. You may begin by adding a spoonful of grated coconut into the cylindrical container, followed by the well mixed rice flour. As you add the rice flour into the container, in between, you may also add small quantities of grated coconut. Make sure that the cylinder is just fully filled and now you may place it on the Puttu Kudam after covering the top portion of the cylinder. Allow the steam to take care of the cooking.

Your Puttu will be ready in three minutes. Have it with Kadala curry for a great combination.

Ingredients for Kadala Curry

Black Channa (black chickpea / bengal gram) – 1 cup
Small onion (chopped) – 1 cup
Coconut (grated) – 1 cup
Coriander powder – 2 tsp
Red chilli powder – 1 tsp
Turmeric powder – ½ tsp
Garam masala – ½ tsp
Coconut (diced) – ¼ cup
Tomato (chopped) – ¼ cup
Curry leaves
Coriander leaves
Salt
Oil
Mustard seeds
Red chillies
Ginger-Garlic paste

Kadala Curry – method of preparation

First, soak the black channa (black chickpea / bengal gram) for at least ten hours by adding salt. Cook the black channa well and keep it aside.

Heat one teaspoon of oil in a pan. Put the grated coconut and fry until it turns brown. To this, add coriander powder, chilli powder and garam masala. Stir all the ingredients until it becomes brown. Make a paste of this and keep it aside.

Take a pan and heat some coconut oil. Put some mustard and add red chillies. When it begins to splutter, add the diced coconut. Stir a bit. Now add the ginger-garlic paste, followed by onions and tomatoes. Add some curry leaves and stir gently. You may now add the black channa (black chickpea). Pour sufficient water and add salt. Stir well.

Now add the coconut paste kept aside to the cooked black channa. Boil the curry well.

You may now garnish the curry with chopped coriander leaves and serve it ideally with Puttu. It is a great combination to relish.

My relative who came to visit me, told me that I lacked protein.
She prepared this ulunthu curry for me.

ULUNTHU CURRY

Ingredients:
(A)
¼ cup urad dal soaked for ½ an hour
2 cups of water
1 small tomato cut into cubes
¼ tsp turmeric powder
Salt to taste

1 tbs oil
½ tsp mustard seeds
¼ tsp cumin seeds
A pinch of asafetida powder
3 pips garlic minced
½ tsp ginger minced
1 sprig curry leaves

½ tsp red chillie powder
¼ tsp garam masala powder
½ tsp jiggery
1 tbs tamarind pulp

1 tbs coriander leaves chopped

Method:

Add in all the ingredients in (A) and boil on low heat till the urad dal is cooked.
Remove and mash up the dal a bit, keep aside.

Heat a wok, add in the oil, add in the mustard and cumin seeds.
Let them crackle, add in the asafetida powder, garlic and ginger.
Sauté for a minute, add in the curry leaves.

Now pour the cooked dal to the seasonings.
Add in the red chillie powder, garam masala powder, jiggery,
and the tamarind paste. Give a good stir, add little water if needed.
Boil on low flame till the raw smell goes.
Remove and garnish with the coriander leaves. Serve with rice or roti.

Method.

Pour H2o ( as per your wish ) in the kettle. ( Dont try to pour it through the beak. ) into the kettle.
If you are using vessel you can pour it directly. But be careful about the size of the vessel and the
quantity poured. :boo:

now FIRE !!! :oops: I mean keep the vessel or kettle on the stove and light it.

And wait... u can see bubbles forming under H2o in the surface of the vessel. After some time a light
smoke will emerge from the surface of the liquid. If it is a kettle ( with whistle u can hear a soft sound
in the beginning which will become like the voice of the memebrs of our sangam later ).

you can switch off the stove now.. and ...

voila.... Hot water is ready to use.

இதை வச்சு காபி, டீ போட்டுக்கலாம். கொஞ்சம் தேன் விட்டு காலையில் குடிக்கலாம். இன்னும்
எத்தனையோ உபயோகங்கள் உண்டு.

My dear friends, another healthy urundai which I was forced to take:-D

SATHU MAVOO URUNDAI

Ingredients:

50 grms corn
50 grms green peas
50 grms raw rice
50 grms soya beans


100 grms grated coconut, roasted
100 grms caster sugar
A pinch of salt
Cold milk as needed

Method:

Dry roast the corn, green peas, raw rice and soya beans.
Roast separately, till a nice aroma comes.
Cool and grind it to a nice powder.

In a bowl, add in the ground flour, sugar, coconut and salt.
Mix nicely, now sprinkle the cold milk little by little,
to hold the mixture. Make into small balls and serve.


NOTE: You can even add lot of milk and make it into a breakfast porridge.

I have the lil ones sathumaavu in stock..wwill try this recipe with that flour...what is the shelf life of these balls?... milk add panninal seekiram kettidatha?... I guess i can add ghee when I make it for the lil one...and maybe karumbu sakkarai instead of caster sugar...

I've heard ppl make roti out of this flour... I tried once and it was a flop...;)

Dear Dev, thanks for your nice post.
You see, we need people like you who can fusion recipes, with a single recipe.
Dev, the relative made the urundai with milk. I am sure it will not last more than a day.
Your idea is good, just melt little ghee and you can make nice urundais, that will keep longer.
Also as you say karumbu sakkarai, will be better.

Dev, why don't you add little atta flour to the saththu maavu and try making roti.

MOTCHAI PRATTAL

Ingredients:

1 cup motchai, soaked overnight , and boiled till cooked.

(A)
3 dry red chillies
1 tbs tamarind paste
¼ cup grated coconut
¼ tsp pepper
1 tbs of the boiled motchai


1 tbs oil
½ tsp mustard seeds
A pinch of asafetida powder
1 sprig curry leaves
2 pips garlic crushed a bit

Salt to taste
¼ cup of water

Little cut coriander leaves

Method:
Boil the motchai and keep aside.
Now grind all the ingredients in (A) and keep aside.

Heat the oil in a wok, add in the mustard seeds.
Let them splutter, add in the asafetida powder.
Add also the curry leaves and the crushed garlic.
Sauté well for a minute.

Now add in the ground paste, salt and the water.
Sauté well, add in the boiled motchai.
Let it come to a boil, and the contents little dry.
Remove and garnish with the cut coriander leaves.

RAJMA PULAO

Ingredients:

½ cup rajma (red kidney beans)
1 cup basmathi rice
1 cup coconut milk
1 cup green capsicum cut into squares
1 onion chopped
2 tomatoes chopped
4 pips garlic chopped
1 small piece of ginger chopped
2 green chillies sliced
1 tsp red chillie powder
½ tsp cumin seeds
Salt to taste
2 tsp ghee or oil
Cut coriander leaves to garnish

Method:
Wash the rajma well and soak in clean water for about 6 hours.
Add salt to rajma and cook it in the water which you soaked it.
Once cooked drain the water in a container, keep the rajma aside.

Now wash the rice, add the 1 cup coconut milk, and 1 cup of the
water in which the rajma was boiled, add salt and cook it in a rice cooker.

Heat a wok with the ghee or oil, add in the cumin seeds,
Now add in the ginger and garlic, sauté well.
Now add the onions and fry well, add in the green chillies,
the tomatoes and fry well, add in the salt and chillie powder.
Stir till the tomatoes turn mushy. Heat until all the moisture is absorbed.
Add in the cut capsicum and the cooked rajma.
Stir nicely and remove. Add the cooked rice and gently mix every thing. Garnish with the coriander leaves and serve with onion raitha.

Note: you can add cauliflower or broccoli instead of capsicum.

Dear Dev, I have 2 types of ellu urundai recipes.
One is made with roasted whole sesame seeds with melted jaggery.
The other is made with roasted pounded sesame seeds and pounded jaggery.
I will post both for you.

Ilish Maacher Paturi (Indian Fish Recipe) :-


Tender Hilsa pieces smoked in banana leaves is something you can’t resist. A true Indian recipe, Bhapa Ilish or Hilsa in thick mustard gravy will tickle your taste buds definitely. As this Hilsa preparation is a very versatile and easy recipe, it definitely deserves a place in your cook book.

Ingredients for Ilish Maacher Paturi :-
4 pieces Hilsa Fillets
80 gm mustard oil
75 gm mustard paste
2 gm Kalonji (nigella seeds)
1 tsp turmeric powder
5 gm red chili powder
5 gm sugar
Salt according to taste
4 pieces Banana leaves (Cut it into squares and put on hot griddle for half a minute to make it soft)

How to make Ilish Maacher Paturi? :-
Step 1:Cut and clean the fish fillets (Boneless pieces of approx 4 inch square)
Step 2: Marinate it with half of the mustard oil quantity given in above ingredients, kalonji, turmeric powder, red chilli powder and salt. Keep aside for an hour
Step 3: Now add mustard paste, sugar and remaining mustard oil
Step 4: Adjust the seasoning and again keep aside for half an hour
Step 5: Take individual fish pieces and wrap it in banana leaves. Pierce with tooth picks so that they do not open
Step 6: Put it in the steamer for 5-8 minutes or until the fish is cooked
Step 7: Serve it hot

ELLU URUNDAI

Ingredients:
2 cups ellu ( I used the white ones)
1 1/4 cups vellam (more if you like )
1/2 tsp cardamom powder
little water
little rice flour or ghee

Method:

Clean and wash the ellu, dry it well.
Lightly dry roast the ellu.
Heat a wok with little water, add in the grated vellam.
cook till it becomes thick. It should form a stiff ball
when dropped in water.
add the roasted ellu and the cardamom powder at once.
mix well and remove from the stove.
make balls from it while it is still warm.
use a little ghee or rice flour so that it does not
stick to your hands.
This is a very healthy sweet.

ELLU URUNDAI

Ingredients:

1 cup white ellu (sesame seeds )
½ cup grated vellam
A pinch of salt
A pinch of cardamom powder

Method:

Dry roast the ellu till it crackles. Do not burn this.
Let it cool, run this in a mixture.
Add in the grated vellam, pinch of salt and the cardamom powder.
Then run the mixie again, till all mix well.

Transfer the contents into a bowl.
Shape them into small round balls.
There will be little oil when you grind the ellu seeds.
This will help in shaping the balls. Enjoy.

NOTE: you can use black ellu instead of white ellu.
You can add in grated roasted coconut before grinding in the mixie.

Ingredients :-
--- 4 bread slices
--- 1 tsp salt or to taste
--- 1/8 tsp kali mirch powder
--- 1/2 cup cheese-grated
--- Chopped green chillies to taste
--- 1 Tbsp chopped coriander leaves
--- 1 Tbsp butter

Method :-
--- Mix cheese, salt, kali mirch, coriander and green chillies.
--- Butter the bread slices.
--- Place half each of the cheese mixture over two slices, on the unbuttered side.
--- Cover both with the other slices, buttered side on top.
--- Grill and serve.

This is how my grandma, and great grandma used to make.
This is a simple healthy , village sweet.
Adding coconut and groundnuts are individual wish.
You can add if you like.

Dear Rose, I am posting a simple vegetable soup for you.
You have to cut the veges, very small for this soup.

VEGETABLE SOUP

Ingredients:

2 tsp oil
2 red chillies
4 pips of garlic

1 onion chopped finely
¼ cup carrots chopped fine
¼ cup cabbage chopped fine
¼ cup cauliflower chopped fine
¼ cup beans chopped fine

3 cups of water
¼ tbs sugar
2 tbs soy sauce
Salt to taste

1 tbs corn flour
½ cup of water

Little chopped spring onion

Method:
Grind the red chillie and garlic to a fine paste.
Heat the oil in a wok, add in the ground paste.
Sauté on low flame till nice aroma comes.
Add in the chopped onions, sauté for a minute.

Add in the chopped vegetables and sauté for another 5 minutes.
Add in the 3 cups of water, and allow to boil till the veges are cooked.
Add in the soy sauce, sugar and the salt.
Now mix the corn flour with the water, to a smooth paste.

Pour this to the above soup and allow to boil for about 3 minutes.
Remove and garnish with the spring onions.
Serve in bowls as a starter, piping hot.

If you put directly will it not become stale in a day ?
( I can understand only cooking methods of routine items and not these special recipes.. moreover Mayflower is busy and hvnt answered this question till now :( )

I am really surprised at your cooking skills.
You are right, you have to roast the grated coconut in little ghee, till lightly golden,
Or you can use dessicated coconut.
The groundnuts too, you have to roast ,remove the skins and pound it coarsely before adding.
Mayflower anni must be busy, ask this sister if you have any doubts.

Here I come with a recipe for Palak Paneer. After several attempts in making it, I finally mastered after I spoke to the North Indian Chef in the Indian Restaurant.

Palak Panner
Ingredients
Spinach(Palak) - 1 bunch
Onions - 1
Garlic pods - 5
Paneer (Fresh or deep fried) - 150 gms
Kasturi methi (optional)
Coriander leaves - few
Coriander powder - 4 tsp
Red chillie powder - 2 tsp
butter - 1 tsp
oil - 1 tsp

Salt - to taste

To Garnish
Cumin seeds - 1 tsp
Green chillies - 2 big
Red Chily with Seeds - 1
Chopped onions - little
Lime juice
Method
1) For palak paneer the key is to blanch the Spinach without overcooking. For this watch the Spinach leaves and leaves all the stems. Use the Leaves only (Mandatory)
2) Boil water in a wide mouthed pan. When the water just starts to boil, throw in the spinach leaves. Cover the lid and leave it for not more than 1- 2minutes.
3) Immediately refresh these leaves by transfering into cold water. This stops any overcooking.
4) Allow to cool and add few coriander leaves and make a fine paste of these 2 greens.
5) Heat half the butter and oil in a pan. When it is hot, add the chopped onions, salt followed by the finely chopped garlic pods.
6) When the onion turns translucent and the garlic gells well with the onion add the chillie powder, coriander powder and cook till the raw smell disappears.
7) Now add the panner and greens paste and cook until the oil oozes out. Note that greens should retain the color.
8) For garnishing, add the remaining oil and butter. Splutter the cumin seeds and Green chillies (whole) and pour it into the palalk paneer just like chutney thalippu. Add chopped onions before serving.
9) This is a mild dish. If you prefer a more spicy one add 2 green chillies while grinding the greens.
10) The chef also suggested to add some yogurt for garnishing. I skipped it.
10) Goes well with roti and rice. I relished it with Radish chapathis.

Potatoes can be cooked in many ways.
I liked this puli potato that I tasted in my friend's house.

PULI POTATO


2 tsp oil
1 tsp mustard seeds
A pinch of asafetida powder
1 tsp urad dal
3 red chillies cut into pieces

2 big onions chopped
1 sprig curry leaves
1 cup tamarind juice, from a lime sized tamarind
1 tbs grated vellam
Salt to taste
2 tsp sambar powder
¼ tsp turmeric powder

300 grms potatoes, boiled, peeled and cubed
Little cut coriander leaves

Method:
Heat the oil in a non-stick pan.
Add in the mustard seeds, asafetida, urad dal and the cut dry chillies.
Sauté for a second, add in the onions and sauté for a minute.
Now add in the curry leaves, tamarind juice, vellam and salt.

Also add in the sambar powder and the turmeric powder.
Stir for a minute till the raw smell goes.
Now add in the boiled cubed potatoes, stir fry well.
See that the potatoes are coated well with the gravy.

Stir fry till dry, remove and garnish with the cut coriander leaves.
A nice tangy side dish.

Let me give you a special besan laddu recipe for the festival.

BESAN LADDU

Ingredients:

Ingredients:

2 cups besan flour
1 1/4 cup powdered sugar or caster sugar
5 tbs ghee melted
3 cashew nuts chopped
3 almonds chopped
5 raisins cut into halves
1/4 tsp cardamom powder

METHOD:

Sieve besan flour to remove any lumps.
Keep powdered sugar ready.
Heat 1 tbsp ghee in a fry pan.
Roast cashew, almond and raisins to golden.
Remove and keep it aside.
Now add besan flour and stir well.
Keep flame low and stir constantly till , it releases nice appetizing aroma.
Add powdered sugar, cardamom pwd and roasted nuts.
Mix thoroughly.
Remove from flame.
Sprinkle the remaining ghee and combine.
Allow the besan mixture to cool down little, so that it is comfortably warm to make balls.
Form small Ladoos of the besan mixture.

oh,tht's great...:) I now limit buying handbags as I find moving things from one handbag to the other to be a huge task.. I usually have so many sundry stuffs other than my purse in the handbag....;)my husband calls it the junk yard but who cares... I like my handbags that way...:lol:

Dear Gulabjamun, at first I was very skeptical about the recipe that you pmed me.
After cooking I found that it was something different and tasty.
I tweaked the recipe a little to suit my taste.

PASTA MUSHROOM MIX

Ingredients:

1 tbs oil
4 pips garlic chopped
1 sprig curry leaves
2 big onions chopped
1 big tomato chopped

1 tbs coriander powder
½ tbs chillie powder
Salt to taste

300 grms button mushroom quartered
3 tbs of macaroni, half boiled and drained

½ tbs black pepper powder
Little chopped coriander leaves

Method:

Heat oil in a wok, add in the chopped garlic and sauté till nice aroma comes.
Add in the curry leaves, onions and sauté for a minute.
Now add in the chopped tomatoes, cook till mushy.
Sprinkle little water if needed.

Add in the coriander, chillie powders and enough salt.
Cook on low heat till the raw smell goes.
Add in the quartered mushrooms, and cook for a minute.
Add in also the half boiled macaroni, stir fry well.

Lastly add in the black pepper powder.
Remove and garnish with the cut coriander leaves.
Goes well with bread dosai or rice.

Happens with me too...I once misplaced my driving license and that's when I decided to put an end to changing handbags often...

N u r right Aarthii... most ladies are crazy abt handbags,purses,footwear etc... somehow I don't have a craze for dresses... I love other accessories like hb,footwear...

I've seen ppl find it hard to make a restaurant style fried rice... the secret behing the Indian restau style fried rice is the high flame that gives a smoky flavour to the rice... Since the gas burners at home are small, it can be hard to get that smoky flavour... but I find using a fat having a low smoking point helps when cooking at home... olive oil/ghee works well... Also, use an iron kadai big enough to hold the rice,vegs and also for mixing it. Also. making it in batches(small portion) helps .

Restaurant style fried rice:

Finely chopped mixed vegs(including capsicum gives a nice flavour)
Cooked rice-grains separate
salt
pepper
minced garlic
spring onions

Heat oil+ghee/olive oil in a iron kadai and add the garlic. Once fragrant, add the spring onion white-chopped and stir until translucent.
Add the veggies, 1/2 the salt n pepper and keep sauteeing on HIGH flame until u see the kadai smoking. Once u see the smoke, keep sauteing for another 2-3 mins. By then the vegs will be cooked but still crunchy.
If adding eggs,reduce the flame; push the veggies to one side; add oil in the pan again and break the egg into it and crumble the eggs. mix in the veggies once the eggs are done.
Now add the rice,spring onion greens, more salt,pepper.now increase the heat to HIGH once again and keep mixing until it starts smoking again. Keep mixing for 2 mins.
Done.

Note:
I don't add sauces in my fried rice but if u fancy, u can add soy sauce,green chilly sauce and lil vinegar. It definitely adds to the taste of the fried rice.

She has said that she feels shy to ask for chicken recipe in this holy month.
She also adds that she needs it urgently to entertain her husband's boss.
Well, I do not mind posting the recipe for her, only that I cannot post a picture of my own.

This is a very simple chicken biryani.

SIMPLE CHICKEN BIRYANI

Ingredients:

To Marinate:
500 grms chicken cut into big pieces
1 tsp ginger garlic paste
¼ tsp turmeric powder
Little salt

2 tbs ghee
2 , 1 inch cinnamon sticks
2 star anise
2 bay leaves

150 grms shallots sliced
2 tsp ginger garlic paste
25 grms coriander leaves
50 grms mint leaves
150 grms tomatoes chopped

2 tsp chillie powder
1 cup curds
500 grms marinated chicken (above )
500 grms basmathi rice soaked for 10 minutes
Salt to taste
500 grms water

Method:
Marinate the chicken for about 20 minutes.
Heat the ghee in a thick bottomed pot.
Add in the dry spices and let them crackle.

Now add in the sliced shallots and sauté well.
Add in the ginger garlic paste, add also the mint and coriander leaves.
Give a good stir, add in the chopped tomatos and cook till mushy.

Add in the chillie powder, and the curds and mix well.
Now add in the marinated chicken and give a good stir.
Let it cook for about 5 minutes.

Now add in the soaked, drained basmathi rice.
Add in enough salt, and the water, give a good stir.
Sim the flame very low , cover with a thick cover and cook till all the water is absorbed.

If using a pressure cooker, sim the flame and let it come to 2 whistles.
Off the flame and let the pressure release on its own.
Now fluff up the rice and serve with a raitha.

Saboodana Vadai

Ingredients:
1) Potato - 1, boiled, peeled and mashed.
2) Green Chillies - 8-10 (crushed).
3) Sago - 1 Cup.
4) Peanuts - 1/2 cup, roasted and crushed crudely.
5) Rock salt (for taste)
6) Oil (to deep fry)

Instructions:
1) Wash Sago properly and drain the surplus water. Soak it for about 3 hours.
2) Next, add all the ingredients to Sago except oil. Blend it all into a paste.
3) In the deep frying pan, heat the oil.
4) Moist your hands and make small ball shaped moulds out of the paste you have made. Slip these into the heated oil on medium flame.
5) Keep frying the balls till they turn crisp and light brown. Drain them well using a sieve ladle. Serve with badaam chutney.

Peanut Curd Chutney Recipe

Ingredients:
• 1 tbsp Peanuts (crushed)
• 1 cup Fresh Curd
• 1 Stalk Curry Leaves
• 1/2 tsp Powdered Sugar
• 1 Green Chilli (finely chopped)
• 1 tbsp Coriander Leaves (finely chopped)
• 1 tsp Oil
• Salt to taste

How to make Peanut Curd Chutney:
• Beat the yogurt to make it smooth.
• Add chillis, peanut, coriander, sugar and salt.
• Heat oil in a pan and saute curry leaves.
• Add them to curds when they begin to splutter. Mix well.
• Refrigerate the mixture as per requirement.
• Serve the chutney with sabodana vadas.

NOV anneh your two recipes are super.
I have heard of sabudana vadai, but thought that they will be oily.
Peanut curd chutney looks very yummy.

RESTAURANT FRIED RICE

Ingredients:

2 tbs oil
2 pips of garlic chopped
1 tbs chopped white of the spring onion
1 to 2 tbs light soy sauce
1 cup of chopped vegetables (carrots, french beans, cabbage etc )
2 cups of cooked rice (refrigerated )
Pepper powder to taste
Salt to taste
1 tsp vinegar
1 tbs chopped green spring onion leaves
1 tsp sesame oil (optional )

Method

In a non-stick pan heat the oil.
Add in the chopped garlic, raise the heat, use your spatula and smash the garlic pieces.
This will give out a good aroma, add in the white of the spring onions.
Stir fry again well, add in the soy sauce and mix well. The pan will be smoky.
This will give the smoky smell, add in the vegetables and stir fry well.

The veges should not be over cooked, add in the cold cooked rice.
Add in the pepper powder , vinegar and salt, give ever thing a very good stir.
Now add in the onion green and the sesame oil if used.
Stir fry on high heat and remove. Garnish with cut salad leaves.

NOTES: use cooked rice that is refrigerated overnight .
This helps to prevent the rice from breaking as well as sticking together.

You can add in any veges of your choice.

sesame rice / எள்ளு சாதம் is available as prasadam in many Perumal temples on purattasi saturdays.
Its an offering to Devi on navarathri saturdays by my mom.

K, I've had ellu saadham from our college canteen during my UG days... I used to hate it as it will have a slightly bitter taste...but on days we go late to the canteen, we'll get only this ellu saadham... guess it was on the hate list of many...adhaan kadaisiya ponaalum ellu saadham irukkum... Anyway, if ur aunt gives a recipe, it should be good... so try senju paarunga... canteen cooks are mostly ok-ok cooks,.adhanaal namma avanga senjadhai saapititu mudivukku vara koodathu...

ELLU SAATHAM

Ingredients:

1 cup white rice cooked with salt and allow to cool

Dry roast and powder little coarsely:
1 tsp urad dal
2 dried red chillies
2 tbs white sesame seeds
2 tbs grated coconut (optional )

1 tbs oil
2 tbs peanuts
½ tsp mustard seeds
1 sprig curry leaves

Method:
Heat the oil in a pan, add in the mustard seeds and allow to crackle.
Add in the peanuts and fry till roasted.
Add in the curry leaves, stir fry for a second.

Put the cooked rice in a big bowl.
Pour the tempering over the rice.
Add in all the powdered ingredients.
Give a good stir, and let the rice absorb all the flavours.
Offer to God and then enjoy.

ELLU SAADHAM

Ingredients:

1 cup cooked rice

Dry roast and powder little coarsely:

pinch of asafoetida
salt to taste

1 tbs ginelly oil (nallennai)

Method:

Pour the gingelly oil in the cooked rice and then
add all the powdered ingredients..

Stir well. Garnish with few curry leaves
அம்புட்டுதேன்.. இது ரொம்ப ஜிம்பிள் குகன்ஜி !

Very nice tip rajraj. My mom always dries the curry leaves during summer and powder it. And I can bet any dish that curry leaves powder is added tastes yummy

Thanks Raj uncle... that's a nice tip...but the prob is we have like 4 fully grown karuvepillai TREES and more than 10 plants... so I doubt if we'll ever get to use the powder... we give the leaves to our neighbors and also to the ppl who run those mess near our home... appadiyum niraya waste aagudhu...:(
