Kuganka I tried your vendi stir fried. It was such a nice combo for rice. Thanks for the nice recipe, very simple and easy. Hope to do it more often. I am sure we can try the same style with other veggies too. Rose

Here is the measurement for kambu/cholam dosai that we usually prepare...

3 heaped cups kambu/cholam
1 heaped cup idli rice
1 cup urad dhal(not heaped)
1 tsp methi seeds

Soak everything overnight and grind to a slightly coarse batter. Add salt to taste.
Let ferment for 8 hrs.

U can use this batter to make idlis as well as dosais. i presonally prefer dosais than idlis...

My dear friends, a dish that was served in Kerala for us.



Ingredients:

1 cup of chopped banana stem, soaked in light butter milk.


1 tsp coconut oil
¼ tsp mustard seeds
1 sprig curry leaves
Salt to taste


Grind coarsely:
¼ cup grated coconut
5 shallots
1 tsp chilly powder
½ tsp cumin seeds
¼ tsp tumeric powder


Method:

Put the cut banana stem in a pot, pour water just to cover it.
Simmer on low heat and cook. Remove.

Heat a wok with the oil, add in the mustard seeds to crackle.
Add in the curry leaves, now add in the ground ingredients.
Stir fry the paste well for few minutes.

Now add in the boiled banana stem, stir fry till the water dries up.
Add enough salt, stir fry once more well, remove and serve with rice

K, this is called thoran in kerala,right?... we can use any vegie n make thoran... yummy!!! Variations I've tried are adding garlic to the mixture and substituting green chilly in place of chilly pwd...

I've promised to post my MIL's rasam recipe for Suvai looooong back... here is the recipe for her Kongunadu dhal rasam...

1. Cook dhal with lotsa water and turmeric,vilakennai(few drops). Once the dhal is well cooked, drain 1 cup of the dhal water and keep aside for making rasam.
2. Crush 3 garlic pods and chop 3 shallots.
3. Add tamarind juice from a small gooseberry sized tamarind and add it to the dhal water.
4. Also add 1/2 tsp kongu masala pwd,asafoetida,generous amts of curry leaves and coriander leaves roughly torn,salt.
5. Heat 1/2 tsp oil. Splutter mustard and the add the garlic,onions and 1 dry red chilly and saute for a min. Garlic shouldn't turn brown.
6. Add the dhal water and let it foam.
7. Switch off flame and add 1/4 tsp(or a lil more) coarsely ground jeera-pepper powder.
8. Yummy rasam is ready to serve.

Note.

1.This rasam should be slightly sour-meaning u should be able to feel the sourness the moment it hits the tongue.
2. The rasam should be made imme(within 2-3 misn) after adding tamarind n stuffs to the dhal water. Else the taste will change significantly she says.

Here is a simple,quick tomato rasam...

Quick tomato rasam:

1. Grind 1 small ripe tomato adding 1/2 tsp kongu masala pwd,asafoetida, 1/4 tsp(or a lil more) coarsely ground jeera-pepper powder,salt.
2. Crush 3 garlic pods and chop 3 shallots.
3. Heat 1/2 tsp oil. Splutter mustard and the add the garlic,onions and 1 dry red chilly and saute for a min. Garlic shouldn't turn brown.
4. Add the tomato water,generous amts of curry leaves and coriander leaves roughly torn and let it boil for 2-3 mins. Once the raw smell is out, take the rasam off flame.
5. Yummy rasam is ready to serve.

I made garbanzo beans/konda kadalai kaara kuzhambu from Menu rani chellam Arusuvai Neram..It came out good!!
Here is the recipe..
Ingredients:

Chick peas - 1/2 cup soaked for 8 hrs and cooked for 2 whistles in pressure cooker

Onion - 1 medium sliced

Tomato - 1 chopped

Dry red chillies - 2

Mustard seeds - 1 tsp

Methi/Fenugreek seeds - 1/4 tsp

Coriander powder r- 2 tsp

Chili powder - 1tsp

Turmeric powder - 1/2 tsp

Tamarind - size of a lemon soak din water

Extract about 2 cups of juice

Salt to taste

Oil preferably gingelly oil - 1/4 cup

Curry leaves - a sprig

Grind the following into a paste :

Grated coconut - 2 tsp

Poppy seeds - 1 tsp

Cashew nuts - 5 or 6

Method:

Heat oil in a kadai.When hot add the mustard seeds.When they splutter add the methi seeds and chillies till slightly brown.

Add the curry leaves and then the onions.

Saute till onions turn translucent.

Now add the tomato,turmeric powder and saute till mushy.Then add coriander powder and chili powder and saute for 2 minutes.

Now add the paste and saute till raw smell goes off.

Finally add the tamarind juice,required amount of salt and boil for about 8 to 10 minutes on medium heat.

Serve with plain rice.

As for your query about the banana stem, I think the taste will vary a little.
No harm in trying, adding the moong dal, I am sure the taste will be nice.
I am going to try it out, also as Dev said, green chillie paste and garlic.

Yes my host called it thoran. They are my distant relatives, settled in Kerala.
She also cooked some brinjal dishes. ( I think she likes brinjals :-D)

What a co incident, she too made a lemon rasam that I liked very much.
You too have posted two types of rasams. Rasams are my favourites.
Thanks I will try them out.

In turn I taught her how to make cookies, pizza and cakes:smokesmile:
Had a hectic time visiting the doctors, anyway all was fruitful.

How was your holidays, mine was a visit to a doctor.

As I said, many co incidents, my host too made chole with chapathi.
A little different to what I make.
You have also posted a recipe using chick peas. I am sure the kara kulambu would be tasty.

One of the cookies that I made for my host. Kugan



BUTTER, MILK COOKIES

Ingredients:

Sieve together:
1 cup all purpose flour
1 ½ tsp baking powder
2 tbs milk powder

½ cup castor sugar
½ cup soft butter

2 tbs milk
2 tsp vanilla essence

3 tbs flour optional

Method:

Preheat the oven to 180 degrees for 10 minutes

Cream the butter and sugar well.
Add in the milk and vanilla essence mixture.
Now add in the flour mixture and and mix till it forms,
a plaiable dough. Add the 3 tbs flour little by little if the dough is sticky.

Now take a marble size of the dough, and flatten it little.
Grease a baking tray and line them, a little apart.
Bake for about 15 minutes or till the cookies are cooked.
Remove and cool them before storing.

I made beans-carrot thoran today... lil S too loves this tomato rasam and she wants this red rasam with lotsa garlic every day...

haa haa...

I thought the cookies are made from buttermilk (மோர்). Then only I saw the gap between butter and milk.
Thank God. I really thought that we can use the extra buttermilk for baking cookies..

mm.. anyway these cookies are so beautiful. How to eat them ? It will take time to look and enjoy their appearance.

Let me tell you a small secret, I used a cookie cutter to cut the cookies:yessir:
Since the dough is a empty dough, you can use a cookie cutter.

I will be posting a choco chip cookie soon.
You cannot use a cookie cutter for, the choco chips will be in the way of the cutter.

Let me too try your combination of carrot beans thoran.
I will try my host's lemon rasam and post the recipe.

I heard another recipe from my paatti, narthangaai rice, it smells and taste awesome it seems... lemon rice maadhiri thaan seyyanum..
have to try once i go back to india :D

Since this is the fasting month, I received a pm for this black glutinous rice porridge.
There are many styles of doing this. This is how I do.

BLACK GLUTINOUS RICE PORRIDGE

Ingredients:

1 cup of black glutinous rice
1 1/2 litres water
2 pandan leaves knotted

3 tbs of brown sugar
60 grms palm sugar
1/2 litre second coconut milk

250 ml thick coconut milk
¼ tsp salt

Method:
Wash the glutinous rice thoroughly and soak for about 3 hours.
Put the soaked rice water and the pandan leaf in a pot.
Bring to a boil and simmer for about 30 minutes till the rice
is well cooked and mushy.

Add in the the two sugars and the 1/2 litre of coconut milk, cook well.
See that it does not stick to the pot.
You can add in little more water if the porridge is very thick.

Serve warm with slightly salted coconut milk poured over.

Narthangai rice has an awesome taste.. I like it better than lemon rice. But if you use kuccha narthangaais it may have a bitter taste. enga veetu vaasalil oru narthangai maram irukku. But at present adhu vaadi pOyiruchu. ( water scarcity,, evLO thaNNi vittaalum no thuLir. But mazhai peithAl it will become green again I think ). Season varappO fresh narthangai parichuNdu poyi senju paarunga ( Mayflower used to prepare once in a while :slurp: )

Madhu Sree, vaangga, I remember posting a recipe for pineapple rasam.
Let me check, otherwise, I will post again.
Imm pineapple rasam gama gamanu irrukkum.

Narthangaai saadam is just like our lemon rice.
Use narthangaa instead of lemon. Just taste that the juice is not bitter.

Glad to know that you want to try the recipe.
As I have replied to Dev, you can use a cookie cutter.
One more tip, keep the dough in the fridge for about 20 minutes.
It will be easier to roll and cut the cookies.
I will soon post a recipe for choco chip cookies.

Dear friends, a brinjal kulambu served with simple pulao by our host. Kugan



BRINJAL KULAMBU

Ingredients:

3 tbs oil
½ tsp mustard seeds
½ tsp cumin seeds
½ tsp funugreek seeds
½ tsp pepper
1 sprig curry leaves

1 big onion chopped
Salt to taste
2 green chillies, slit and cut across
½ tsp tumeric powder

3 tomatoes chopped
2 tsp ginger garlic paste
150 grms brinjals, cut into chunks
2 tsp chillie powder
½ cup tamarind juice from 1 lemon size tamarind ball
½ cup water

2 tbs sesame seeds
½ tsp funugreek
Both roasted and powdered
Few curry leaves.

Method:

Heat oil in a pot, add in the seasonings and let them crackle.
Add in the onions, and salt. Saute well till little limp.
Add in the green chillies and tumeric powder.

Add also the tomatoes, ginger and garlic paste.
Give a stir, add in the cut brinjals, chillie powder.
Saute well for a minute, add in the tamarind juice and water.

Stir well and, cover and cook on low flame till the brinjals are cooked.
Taste for salt, add in the powdered sesame seeds and funugreek. Add in the curry leaves.
Give a stir and remove. The gravy should be thick.
Suitable for biryanis and pulaos.

I've seen it selling for 350/kg...that too vaadi vathangi pona rambutans...:( adhulernthu indha exotic stuffs(!!!) pakkam ellam poradhe illai naan...;)
and yes, nasi lemak is called nasilama(dalai lama maadhiri ;) ) here in some cookery books...:lol:

Made frankie/kati rolls for dinner... very tasty...:slurp:

Cauliflower Tikka frankie / chapathi rolls:

Filling:
1. Break 1 small cauliflower into small florets, soak in salted warm water for 10 mins and then proceed to cook.
2. Mix together curd, salt, chilli pwd, turmeric pwd, gin,gar, garam masala pwd, kasuri methi(dry fenugreek leaves) and grind it to a paste.
3. Mix the paste with the cauliflower, 1 onion chopped rougly and keep aside for 5-10 mins.
4. Heat oil in a pan and add in the cauliflower mixture and cook covered on medium flame until the cauliflower is cooked and the water is almost evaporated. but u need abt 2-3 tbsp of water left.
5. Mix together 1 or 2 tbsp of kadalai maavu with water,salt and chilli pwd and add to the cauliflower and stir well. Cook covered until the raw flavour of the flour goes off and all the water is evaporated.
6.Mix in juice from 1/2ma lemon,mix well. keep this mixture to cool.

Green chutney:
Grind together a handful of mint leaves, 1/2 that qty of coriander, salt, 3 tbsp curd to a chutney consistency.

Salad:
1. cut an onion into thin strips. mix in 1/2 tsp salt and crush well. let rest for 10 mins and then rinse off with cold water. This way the onions won't have a sharp taste.
2. chop a tomato.

Chapathis:

Make chapathis the usual way but roll it a lil thicker than usual ones and 1/2 cook on one side and cook one side fully.

Assembling:

1.Take 1 chapathi and place it on a plate with the fully cooked side facing up.
2. place a big spoonfull of filling lengthwise in one corner of chapathi.Leave some space on the bottom without filling.
3. drop a spoonful of green chutney over the filling.
4. Top with the onions and tomato.
5. fold the botton side up and then tightly roll the chapathi to make a cigar shape.
6.cook this roll with some oil by placing on a tawa(folded edge down first) , press slightly and once browned, turn over and cook on the other side.

Yummy rolls ready to serve!!!

Though it sounds like a loooong process, it's quite easy . U can make the chutney and salad while the cauliflower is cooked as it doesn't need much monitoring. Also it's like like making chapathi and a curry...

Variation:
Paneer tikka rolls:
In case of paneer, marinate is the same. Just add the gram flour aswell to the marinate as paneer doesn't have to be cooked much.
Add onion and capsicum cubes and fry for a min and then add paneer mixture. rest is the same.

U can use any filling-like manchurian, chilly chicken/mushroom, chettinad dry curries, any types of tikkas, cutlets as filling and make tasty frankies...:slurp: vary the chutney according to the filling used...like chillies in vinegar for manchurian or some sauce(tomato/tomchi etc)... this green chutney will go well with tandoori fillings,cutlets,tikkas and even chilly varieties...but it doesn't suit chettinad varieties,chinese stuffs...

Nasi lama means old rice, or palaya saatham.

vadai mora mora and soft I think :slurp:
pongal with cashews ( kadak pachak..) and chana sundal ... kadikka vENdaam. appadiye muzhungidalaam.

Anyhow.. I had all here. so not heaving sigh of heat :lol:

Friends, try this simple choco nuts cookies.
Very easy to make. Kugan

CHOCO CHIP NUT COOKIES


Ingredients:

2 cups of all purpose flour
2/8 tsp of baking powder

1 cup butter at room temperature
½ cup caster sugar

2 tsp vanilla essence
½ cup chocolate chips
¼ cup cashew nuts chopped

Method:

Preheat the oven for 10 minutes at 150 degrees C
Grease a baking tray and set aside.

Sieve the flour and baking powder. Keep aside.

In a bowl, beat the sugar and butter till fluffy.
Now use a spatual, and add in the vaniila essence,
Add aldo the choco chips and the nuts. Mix well.

Now add in the flour slowly and mix well.
You can use your hands to bind the dough.
Keep the dough covered with a wrap, in the fridge for about 10 minutes.

Now take the dough and roll into small balls.
Flatten a little with your fingers.
Put the cookies in the greased tray, a little apart.

Bake for about 20 minutes or till the cookies are cooked.
Remove and let them cool. Store in an air tight bottle.

NOTE: this cookies will be a difficult to cut with cookie cutters.

Here Ramrish is the rasam.


HEALTHY RASAM

Ingredients:

½ cup moong dal
2 medium size red tomatoes, cut into cubes
1 inch ginger finely chopped
¼ tsp tumeric powder
Salt to taste

2 tsp cumin seeds, roasted and powdered
1 tsp crushed black pepper powder

1 tsp ghee
¼ tsp mustard seeds
½ tsp cumin seeds
¼ tsp of asafoetida powder
1 sprig curry leaves

1 to 2 tbs of lemon juice, or according to taste

Little coriander leaves for garnishing

Method:
Pressure cook the moong dal, tomatoes, ginger, tumeric and salt.
Cook for 2 whistles, remove and mash it with a spoon.
Add 4 cups of water, powdered cumin seeds, and black pepper.

Now heat a pan, add in the ghee, add in the mustard, cumin seeds,
asafoetida powder, and curry leaves. Let it crackle.
Now add the seasonings to the dal mixture.
Let it come to a boil nicely. Remove and add the lime juice.
Garnish with the coriander leaves. Serve with rice or as a soup.

hye kugan ka n frens.....
here is my latest try in zucchini wic hit my hse lately....


Zucchini Sambhar



½ cup toor dal
½ teaspoon turmeric powder
2 tablespoons corn oil
½ teaspoon asafoetida powder
1 whole dried red chilli pepper
½ teaspoon fenugreek seeds
1 teaspoon black mustard seeds
1 teaspoon urad dal
½ medium onion, cut lengthwise
1 small tomato, chipped
2 teaspoons samhbar powder
¼ cup tomato sauce
¼ teaspoon tamarind paste
1 Teaspoon salt (more, if desired)
2 cups peeled and cubed zucchini
2 to 3 tablespoons chopped fresh coriander



Boil 4 cups of water in a tall saucepan. Add toor dal and ¼ teaspoon turmeric powder. Reduce heat to medium and cook, uncovered,
for about 30 minutes until dal becomes creamy. If water evaporates during the cooking process,
add another cup of water and cook until dal becomes creamy. Set aside.

In a saucepan, heat oil over medium heat. When oil is hot, but not smoking, add asafoetida,
whole red pepper, fenugreek, mustard seeds, and urad dal. Cook, covered, until mustard seeds pop and urad dal is golden brown.

Add onion and tomato.Cook 2 to 3 minutes, until onions are tender.Then add remaining ¼ teaspoon turmeric powder and sambhar powder and stir well.

Add tomato sauce. Add toor dal mixture, plus 3 cups of warm water, to the mixture in the saucepan. Stir mixture well.

Add tamarind paste and salt. When mixture begins to bubble, add zucchini and cook, covered, over low heat, until zucchini is tender.

Add coriander and simmer for an additional few minutes.

PINEAPPLE RASAM

Ingredients:

(A)
4 tbs of soaked toor dal
1 tomato chopped
3 green chillies sliced
1 cup water

(B)
1 cup chopped pineapples pureed with 1 cup of water
½ inch chopped ginger
1 tomato chopped
½ tsp tumeric powder
1 cup chopped pineapple
1 tsp jaggery
2 tsp rasam powder
3 cups of water, more if you like
1 tsp tamarind paste (optional )
Salt to taste

(C)
Seasonings:
2 tsp ghee
¼ tsp asafoetida powder
½ tsp mustard seeds
½ tsp cumin seeds
2 red dry chillies, broken
1 sprig curry leaves

A pinch of red chillie powder
Little coriander leaves.

Method:

Pressure cook all the ingredients in (A) for 2 whistles.
Let the steam settle on it’s own.

Now add in all the ingredients in (B).
Boil on medium heat for about 10 minutes.
Now heat a pan with the ghee, add in the ingredients in (C)
according to order. When done add the pinch of red chillie powder.

Now pour the seasonings over the boiling rasam.
Cook for a minute and remove.
Garnish with the cut coriander leaves.
Now gama gama rasam is ready.

Thanx everyone for ur prayers..iam lil bit better now,but i feel energy has been sucked out of my body..

Kugan-thanx for the recipe..my husband made it for me but with toor dal..

He also made a decoction with apple cider vinegar,raw honey and water..beleive me it was the worst thing i ever tasted but it kept my cough under lil bit control..

Very good of your husband to make the rasam for you.

My grandma used to tell us that always use moong dal if you are not well.
Moong dal it seems is more gentle on your stomach.
It does not cause flatulence, and has antioxidant prpperties.
It also provides resistance against infectious diseases.

LONG BEANS PORIYAL

Ingredients:


1 tsp oil
½ tsp mustard seeds
2 garlic pips smashed
1 big onion chopped
¼ tsp tumeric powder
1 sprig curry leaves

250 grms long beans cut into ½ inch pieces
¼ cup chana dal cooked till done, not mushy.

To Grind Coarsely Without Adding Water:
3 tbs grated coconut
5 dried red chillies
Salt to taste
4 garlic pips, add last when grinding

Method:

Heat oil in a wok, add in the mustard seeds and smashed garlic, saute well.
Add in the onions, tumeric powder and curry leaves. Stir fry well.

Add in the cut long beans, sprinkle little water.
Cover the wok and cook on medium heat till beans are tender.
Now add in the boiled channa dal, fry for a minute.

Now add in the ground powder, mix well and let it cook for few minutes.
The dish will be a dry one.
Remove and serve with rice or roti.

Ramrish, pepper n honey is d best remedy for cold and cough...if u have continuous cough, just pop 2 peppercorns in ur mouth, bite it 2-3 pieces and keep it between ur teeth... keep swallowing the saliva with the hotness from the pepper... cough nalla control aagum...

Here is a simple, mildly flavoured curry that goes well with chapathis...
Simple mixed veg subzi for chapathis:

Chop mixed vegs(carrot.beans,cabbage,mushrooms, gourd,avarakkai or whateverver...actually it's good for fridge cleaning...;) ) - 1 cup

Heat oil and add onions chopped---fry till translucent.
Add 1 tsp gin-gar crushed fine and fry till flavourful
Add 1 m. tomato and fry till mushy...
Add the vegs, chilly pwd, salt , a handful of cooked channa or any other beans(optional),water and pressure cook for 1 whistle.
Release the pressure after 2-3 mins and add in 1/4-1/2 tsp garam masala pwd, coconut-cashew paste-2 to 3 tbsp and let it boil for 5 mins.
Done.

This curry will be very mild n watery...

Well here is a brinjal curry by my host.

EGG PLANT IN COCONUT MILK

Ingredients:

2 tsp oil
10 small long egg plants , cut into 2 length wise

2 tsp oil
1 medium onion sliced
3 green chillies chopped
½ tsp minced ginger
2 pips garlic chopped fine

¼ tsp tumeric powder
1 big red tomato cup chopped fine
1 tsp curry powder
½ tsp red chillie powder
¼ cup water

¼ cup light coconut milk
Salt to taste
Little coriander leaves for garnishing

Method:

Heat a non – stick wok, saute the egg plants in the 2 tsp of oil.
See that they are nicely browned on all sides. Remove and keep aside.

Now in the same wok, add in the 2 tsp of oil.
Add in the onions, green chillies, ginger and garlic. Saute well.
Add in the tumeric powder, tomatoes, curry powder, and red chillie powder.
Stir fry well, cook till the tomatoes are mushy.

Add in the ¼ cup of water and let it simmer for a minute.
Now add in the egg plants, coconut milk and salt.
Cook on low flame for a minute for the egg plant to soak up the spices.
Remove and garnish with the coriander leaves.

The egg plant curry is really tasty. You can try with any type of brinjal.
I did not take the picture of the spread, but it was taken, one by one by Ruben.

Dear Gulabjamun, here is the recipe for Chinese garlic rice.
I hope this is the recipe you are asking for. Thanks Kugan.



GARLIC RICE CHINESE STYLE

Ingredients:

2 tsps oil
6 garlics cut into big pieces
300 grms cold cooked rice with some salt
2 tbs spring onions chopped
½ tsp soy sauce
A dash of pepper powder
A dash of aji-no-motto (OPTIONAL )
Little salt if needed

Method:
Heat a non- stick wok on high heat, add in the oil.
Add in the garlic and stir fry till fragrant.
Cook for a minute, tossing and turning quickly to avoid burning.
Add in the rice and stir vigorously, but gently.

See that the rice is mixed well with the garlic and oil.
Do this for a minute, toss in the spring onions.
Season also with the soy sauce, pepper and aji if using.
Mix well and remove from the heat. Serve warm with other dishes


NOTE: Can you see the garlic pips in the rice?

Madhu aanna, yes bamboo shoot strips are added to fried rice and many more dishes.
As far as I know, bamboo shoots take on the flavours of what ever they are served with.
Bamboo shoots are crunchy, they are low in fat and calories.
They are also a good source of fibre and potassium.

Madhu aanna, it is time consuming to prepare fresh bamboo shoots.
So the easy way out is to buy and use canned bamboo shoots.:smokesmirk:

Now this the fasting month. You can find our local kuihs every where.
For a very small piece you have to pay 40 sen.
I found this recipe in our local newspaper, made it for tea. Kugan



STEAMED TAPIOCA TEA CAKES

Ingredients:

(A)
330 grms of grated tapioca
70 grams of grated sweet potato
10 grms of custard powder
170 grms of castor sugar
100 grms sago soaked in 20 ml coconut milk for 10 minutes
130 ml thick coconut milk.

(B)
Topping:
125 grms grated coconut
¼ tsp of salt.

Method:
Use little butter and grease a 15cm square baking tin.
Mix together all the ingredients in (A)
Pour the mixture into the greased tin.
Steam the contents covered for about 40 minutes or till cooked.
Remove and allow the cake to cool fully.

Steam the ingredients in (B) for 10 minutes.
Remove and spread it on a tray.
Cut the steamed cake into neat squares.
Roll it in the steamed coconut and serve with a cup of steaming hot tea.

Kugan, yesterday was a holiday. Tried your vada kari, it turned out very good. Every one enjoyed in my house.

Kugan, I love one pot dishes, by chance do you have a recipe to make tomato rice in a pressure cooker as a one pot
meal. I do not like to cook the rice first then mix with the tomato goju. Thanks Kugan.

Well you can make a healthy maggie noodles by just adding vegetables to it.
Kugan.



MAGGIE NOODLES

Ingredients:

1 packet of maggie noodles
3 cups of water

2 tsp of corn flour

2 tsp oil
1 tsp chopped garlic
2 tbs diced onions
1 green chillie sliced
¼ cup capsicum cut into 1 inch strips
¼ cup carrots cut into 1 inch strips
¼ cup sliced mushrooms
2 tsp green peas
¼ tsp red chillie powder
1/3 cup tomato sauce
Salt to taste


Method:

In a pot, boil 3 cups of water, add in the dried maggie noodles.
Cook for a minute, strain the liquid and keep the noodles aside.
Also retain the the liquid in which the noodles were boiled.

Heat a wok with the oil, add in the garlic and saute well.
Add in the onions, and green chillie, stir fry well.
Add in the capsicum, carrots , mushroom and green peas.
Stir fry for a second. Add in the red chillie powder, tomato sauce and salt.

Now add in the stock from the boiled maggie noodles into the wok.
Also add in the corn flour mixed with little water.
Stir and add in the cooked maggie noodles.
Let it come to a boil, remove and serve piping hot.

Dear friends, the cookies I made for Rubenee's birthday.
Kugan.




CORN FLAKE COOKIES

Ingredients:

250 grms caster sugar
320 grms soft butter
1 tsp vanilla essence

500 grms all purpose flour
80 grms corn flour
100 grms corn flakes, ground into powder
1 tsp baking powder

Little corn flakes for decorating

Method:

Preheat the oven to 160 degrees C for 10 minutes.
Grease baking trays, keep aside.

Cream the caster sugar and the butter.
Add in the vanilla essence.
Now add in all the dry ingredients in the butter mixture.
Knead to a nice dough. Roll the dough and cut into desired shapes
Gecorate with a corn flake piece.

Place the pieces a little apart and bake for about 15 to 20 minutes.
Remove and cool well before storing.

A simple cauliflower spicy curry recipe.
Kugan.



CAULIFLOWER SPICY CURRY

Ingredients:

2 tsp oil
¼ tsp mustard seeds
½ tsp urad dal
¼ tsp cumin seeds
1 sprig curry leaves
1 big onion chopped


To Grind To A Paste:
1 tbs grated coconut
5 garlic pips
1 ½ inches of ginger

¼ cup of water

1 tsp red chillie powder
¼ tsp tumeric powder
2 medium tomatoes chopped

300 grms of small cauliflower florets
¼ cup boiled or fresh green peas
Salt to taste

Little coriander leaves for garnishing

Method:

Heat a wok with the oil. Add mustard, urad dal, cumin and curry leaves.
Let them crackle, add in the onions and saute well.

Add in the ground ingredients, stir fry well.
Add in the water and let it boil till the raw smell goes.
Now add in the red chillie powder, tumeric powder and the chopped tomatoes.
Let the tomatoes become mushy. Add in the cauliflower, peas and salt.

Cook till the cauliflower is cooked but crunchy.
The gravy should be little thick.
Remove and garnish with the coriander leaves.

The dish was made by my host in India.

Nithi, my host's son loves maggie mee, every time he would just boil,
the mee with the soup contents and have it like that.
You know the Indian maggie masala, yucks, the taste.
So I taught him how to make a healthy maggie mee with veges.

OATS KOLUKATTAI

Ingredients:

1 cup quick cooking oats

1 tsp oil
½ tsp mustard seeds
1 tsp urad dal
1 tsp channa dal
2 dry red chillies broken into pieces
1 sprig curry leaves
Little asafetida powder
1 tbs coconut cut into small bits (palu, palu )

Salt to taste
Enough water

Method:

Dry roast the oats till a nice aroma comes.
Cool and grind coarsely in a grinder.

Heat a pan with the oil, add in mustard seeds, urad dal, and channa dal.
Stir fry till lightly brown, add in the dry red chillies, curry leaves , asafetida powder.
Add also the coconut bits and stir fry and remove.

In a bowl, add in the ground oats, salt and the seasoned items.
Mix every thing well. Add in the water and knead like a chapathi dough.
The dough should be soft and pliable.

Take a small amount and shape it into a kolukattai with your palm.
Then steam them in a idly pot, for about 10 to 15 minutes.
Remove and serve, as it is or with any chutney.

Immediately I asked Mayflower to prepare this. She did it with slight variation.

First... she preapred a sweet variety.

In kara kozhukkattai.. Instead of grinding the oats, she used it as it is.
Added green chillies instead of red chillies and grated coconut instead of pallu pallu.
I think small ginger pieces were also added.

Both are so tasty and prepared, served within a short span of time.

Waiting for other oats recipes now :slurp:

The combo was very good. Try it Aarthii.

As for the oats kolukattai, it was so soft, even after a long time.
You can use green chillies, ginger and coconut as Madhu aanna suggested.

Madhu aanna, here is the recipe. Unggal thiramayai kaatunggal.
Kugan.



SPICY OATS

Ingredients:

1 cup of cooking oats, dry roast till nice aroma comes

1 tbs ghee
1 tbs oil
½ tsp mustard seeds
1 tbs channa dal
1 tsp urad dal

2 green chillies finely chopped
1 sprig curry leaves
1 big onion chopped
2 tsp ginger garlic paste
¼ cup carrots chopped fine
2 tomatoes chopped fine

¼ cup of capsicum chopped
¼ tsp turmeric powder
½ tsp red chillie powder
¼ tsp garam masala powder

2 cups of boiling water, more if needed
Salt to taste

1 tbs lime juice, as per taste
5 roasted cashew nuts
1 tbs chopped coriander leaves

Method:
Dry roast the oats and keep aside.
Heat a non - stick wok with oil and ghee. Add in the mustard, urad , channa dals.
Let them brown a little, add in the green chillies and curry leaves. Stir fry well.
Add in the onions and sauté well till they turn pink.

Add in the ginger garlic paste and fry till the raw smell goes.
Add in the carrots, and the tomatoes, cook till they turn mushy.
Add in the capsicum, turmeric red chillie and garam masala powder.
Fry till the masala’s are well mixed.

Add in the boiling water , enough salt and let it come to a boil again.
Add in the roasted oats, quickly stir and cover with a lid. Sim the fire.
Let the oats absorb all the liquid and oats are cooked.
Water depands on the consistency that you need.

INDIAN GARLIC RICE

Ingredients:

1 cup cold rice cooked with salt

3 tsp gingelly oil
6 pips of garlic
1 tsp cumin seeds
Roughly smash the garlic and cumin seeds

¼ tsp mustard seeds
a pinch of funugreek seed powder
a pinch of asafoetida powder
a pinch of tumeric powder
1 tsp chillie powder

½ tsp tamarind paste
3 tbs water
Salt to taste

Method:

Heat a wok with the oil, add in the smashed garlic and cumin seeds.
Saute till a nice aroma comes, add in the mustard seeds.
Add also the funugreek, asafoetida, tumeric and chillie powders.
Sim the flame, add in the tamarind with the water and salt.
Let it boil with oil floating on top. Add in the cooked rice.
Give a nice stir so that all the spices are mixed well.
Remove and serve with sutta appalam.

I don't mean to say it's not healthy...it's healthy...no doubt abt it... but we do have many other healthy stuffs(they call it siru dhaniyam) that our ancestors had taken for ages... all tasty and nutrient rich stuffs...and above all they have a better texture than oats... adhai ellam vittitu ippo oats pinnadi ooditu irukkom... ellathukkum kaaranam marketing thaan...

My mum loves eating... maybe I inherited all these from her..
anyway, she loves to eat and is on the larger side... we used to control her food once she had a heart attack about 15 years ago.
but food was her fav and she will be joyful with nice food.
we always had to caution her to eat less....

now, she hardly eats and has lost her appetite almost 100%.
now when she eats, we are happy and always encourage her to eat more.
but she just doesnt want to eat much any more

Thiru,I'm no expert...enakku therinju banana stem juice is good for kidney stones... drink lotsa liq(esp water)... homeopathyla medicines irukku...u can also prevent recurrance of stones with those medicines...

While citrus drinks may be helpful in preventing calcium oxalate stones and uric acid stones, they might be harmful for people who form calcium phosphate stones. So people with Calcium phosphate stones should avoid taking citrus juices.

its not the barley or anything, but beer is usually drunk in large quantities at one go, thus forcing out the stone formations. ;)

madhu: In my ancestral village they used to feed koLLu to horses. Horseback riding was our pastime during summer visits! :) koLLu is known as horse gram, I am sure you know that. adai was either paruppu or kezhvaragu. :) I don't think I ever tasted anything made of koLLu! :(

Well kambu, kollu oats, many discussions about these.
I have posted kambu, idli, kool recipes in our kitchen, blog.
You can make adai, thosai, puttu, sweet and karam kolukattai,
all with kambu.

Kollu too, we have posted, thuvayal, masiyal, rasam, sundal,
and many more recipes with kollu.

Oats, too the same, will post more recipes for our Madhu aanna.

Good to know that we are going back to our old ways of eating.

NOV anneh, thanks for the almond milk recipe.

As for amma, I believe she ate home cooked food.
Those days, we did not have junk food that we have now.
More over amma must have worked hard to bring up all her kids.
That is more than exercise for her.

NOV anneh, she is a makalai petra magaraasi.
All her children are around her to take care of her now.
What about us, onneh onu or rendu.
They will not have time for us when we grow old, or become sick.
So start eating oats or kambu:smokesmile:

OATS IDDLI

Ingredients:

½ cup cooking oats

1 tsp oil, or ghee
¼ tsp mustard seeds
¼ tsp urad dal
¼ tsp channa dal
A pinch of asafetida powder

3 tbs grated carrots
1 tbs finely minced green chillies
1 tbs finely chopped coriander leaves
Salt to taste
¼ cup rava


¼ cup well whisked curds
¼ tsp baking soda
¼ cup water, or more if needed

Method:
Dry roast the oats till nice aroma comes. Powder in a mixie, keep aside.

Heat a pan with the oil or ghee. Add in the mustard, urad dal, channa dal,
and the asafetida powder. Let the mustard crackle well.
Add in the carrots, green chillies, and the coriander leaves and salt.
Satue well, add in the rava and roast till all are combined well.

Remove and add it to the bowl of the ground oats.
Mix well, add in the whisked curds and mix well. Keep for 2 minutes.
Now add in the baking soda and enough water to form a dropping consistency.

Fill in the iddli moulds and steam for about 10 to 15 minutes.
Remove and serve with any chutney of your choice.

Dear Lakme welcome, yes you have been missing for sometime.
How are you? Thanks for your nice feed back.
Here I have given you the method to make idli with rava idli.
This is how I make. Thanks. Kugan



IDLI RAVA IDLI

Ingredients:


2 cups of idli rava
2 cups of warm water
Salt to taste

1 cup urad dal
½ tsp fenugreek seeds
water to grind the urad dal


Soak the urad dal with the fenugreek seeds, over night.
The next day grind the urad dal and fenugreek seeds to a creamy consistency.
Do not add lot of water.

Soak the idli rava with the warm water and salt for about ½ an hour.
Now mix both the soaked idli rava and the ground urad dal paste.
The consistency should be like idli batter.
Mix well and let it ferment for about 8 to 9 hours.

Then steam idli as usual.

Rajrai uncle, P.S Tamby, Madhu Sree, here is the kollu rasam or soup.
Kugan.



KOLLU SOUP

Ingredients:

1 tbs kollu (horse grmam ) soaked for 1 hour.
2 cups of water

3 pips of garlic
½ tsp black pepper corns
½ tsp cumin seeds
¼ piece of dry red chillie
Salt to taste

Little coriander leaves to garnish

Method:
Clean the kollu and soak it in the 2 cups of water for 1 hour.
Now pressure cook the kollu in the water it was soaked for 3 to 4 whistles.

Now drain the liquid into a saucepan.
Add the ground ingredients, and bring to a boil.
Remove and serve piping hot, garnished with the coriander leaves.

NOTE: I usually consume the boiled kollu also.

Kuganka, Ijust do not know how to thank you. You know my elderly parents just take cooked oats with little salt for breakfast. You know how boring it will be to take the empty oats daily.
They were so happy when I told them about oats idli, and all the rest of the dishes that you are going to post.
Kugan you know how they blessed you. Everyone's blessings will do you lot of good.

Madhu aanna, you can make kollu rasam, just like our rasam.
The recipe I gave was for kollu soup, so no tamarind.

I am reposting my kollu rasam recipe for you.

Kollu RASAM

Ingredients.
125 grms roasted kollu ( soaked overnight )
1 litre water
1 tsp cumin
1 tsp black pepper
2 dry chillies
1 lime-size tamarind
tsp tumeric powder
4 pods garlic roughly smashed

FOR TEMPERING

2 tsp oil
tsp mustard
2 stalks curry leaves
2 red chilli broken
salt to taste

METHOD:

Boil the roasted, soaked kollu in a litre of water till cooked ,mash well , and keep aside.
Coarsely grind the black pepper, cumin seeds and the dry chillies, and
Add to the kollu mixture.
Extract the tamarind juice, using a little water and add it to the kollu mixture.
Also add the tumeric powder, and the roughly smashed garlic.
Add some water to the mixture if you find the liquid is very little.
Heat a pot, add 2 tsp of oil. When it's hot add the mustard seeds followed by the broken red chillies, and the curry leaves.
When the dry chilli browns, quickly pour the kollu mixture and close immediately.
Open the lid when it starts to boil, add salt to taste, and remove from fire.

Here is the first simple recipe for kambu adai.
One more kambu adai recipe , with more ingredients, coming soon. Kugan.



KAMBU ADAI

Ingredients:

1 cup kambu
¼ cup toor dal
¼ cup channa dal
¼ cup urad dal
2 dry red chillie broken

1 sprig curry leaves cut into small pieces
1 shallot cut chopped very fine
A pinch of asafetida powder
Salt to taste

Method:

Soak the kambu, toor dal, channa dal, urad dal and the red chillie.
Soak for about 3 hours. Drain and grind coarsely.
The batter should be thick.

Add in the cut curry leaves, chopped onions, sasfoetida powder and salt.
Heat a dosai kal, pour a ladle full of batter on the kal.
Just spread a little, like an oothappam. Drizzle little gingelly oil around.
Cook both sides till little brown, remove and serve with any chutney.

SPICY KAMBU ADAI

Ingredients:

(A)
2 cups kambu
½ cup toor dal
½ cup channa dal
¼ cup urad dal
2 dry red chillies
1 tsp aniseeds

(B)
1 onion chopped fine
2 green chillie chopped fine
2 pips garlic chopped fine
½ an inch ginger chopped fine
OR run in a mixie to a coarse paste

(C)
1 sprig cury leaves chopped
2 tbs sprouted green gram
½ tsp aniseeds
Salt to taste

Method:

Wash all the ingredients clean in (A)
Soak them for about 6 hours.
Grind them to a coarse consistency.

Now add in all the ingredients in (B).
Add also all the ingredients in (C)
Mix into a thick batter.

Heat a dosai kal, wet your hands and take a handful of the batter.
Pat it on the dosai kal, pat till a thin adai is formed.
Drizzle little gingelly oil around. Cook on both sides.
Remove and serve with any chutney.

one of the cookies that I made for the festival. Kugan



GHEE COOKIES


Ingredients:

600 grms all purpose flour
250 grms caster sugar
250 grms ghee
1 tsp rose essence
A pinch of salt

Method:

Sieve the all purpose flour well.
Add in the caster sugar and mix well.
Add in also the rose essence and salt, mix well.
Lastly add in the ghee and mix the flour with your fingers.

Mix until you get a nice dough.
Keep the dough in the fridge covered for ½ an hour.
Remove and roll into small balls.
Grease a baking tray and line them in the tray.

Preheat an oven to 180 degrees C.
Bake the cookies for about 20 minutes or until cooked.
Remove the tray and let it cool for 10 minutes, before transferring .
When cool, store in an air tight container.

KAMBU ROTI WITH VEGES

Ingredients:

200 grms kambu flour
25 grms capsicum cut into small pieces
25 grms cabbage, shredded very finely
25 grms carrot grated
1 onion chopped fine
1 tsp finely chopped ginger
Little coriander leaves, mint leaves, curry leaves chopped
1 tsp red chillie powder
¼ tsp aniseeds powder
Salt to taste

Method:

Mix all the ingredients in a bowl.
Add enough water and mix it into a soft dough.
Heat a dosai kal, take a lump of the dough.
Pat it round on the dosai kal.
Drizzle some gingelly oil around the roti.
Cook on both sides, remove and serve with any gravy.

kambu roti is a must must must try K...no stopping u... continue maadi...:D

K, my diet is usually to cut the junks I eat(I eat way too much sweets ...u give me jilebis,I can eat atleast 5-6 a day... ). Otherwise it's the normal food but qty will be limited... aprom lots of vegs n fruits... nightku chapathis or bread n soup... lunch will be rice,dhal,rasam,vegs,curd... BF usual idli,dosai,pongal stuffs... I'll even eat poori once in 2 weeks during my diet...;) Added to it will be a brisk walk for 45 mins-1 hr... Now that I have a gym very close to my house, I can do some cycling n walking...

madhu anna, jilebi/jangiriku enakku diff theriyaadhu... enga ooril jilebinu thaan solluvaanga... naan solradhu made from urad dhal I believe..palm sizela softa orange colorla irukume adhu.... not that hot , thin,crispy jilebis... adhu one gola 4-5 saapidalaam...;) my prob is I eat sweets everyday...after almost every meal...and as a filler too attimes(ie when I have my fav sweets)...:( aprom eppadi weight yeraama irukkum...:(

jangiri is made with ulundu maavu while jilebi is from maida.

Kuganka,can you please give those ghee biscuits measurements in cups,I want to try that ka.

Yes, I do have recipe for bread rolls. Will post soon for you.

As for the ghee cookies, here is the cup measurements.


1 1/2 cups of all purpose flour
1/2 cup of caster sugar
1/2 cup of ghee
1/2 tsp rose essence
a pinch of salt.


Aarthii, the method is the same as I have done.
Nothing hard with this cookies, if you find the dough very dry, just add in little ghee.
If your dough is very soft, just add in little more flour.
You must be able to roll it into balls.
Actually after baking the cookies will look white.
In my picture it looks a bit yellow due to light when I took the picture.
It will be a little crunchy after it cools well.

K, my diet is usually to cut the junks I eat(I eat way too much sweets ...u give me jilebis,I can eat atleast 5-6 a day... ). Otherwise it's the normal food but qty will be limited... aprom lots of vegs n fruits... nightku chapathis or bread n soup... lunch will be rice,dhal,rasam,vegs,curd... BF usual idli,dosai,pongal stuffs... I'll even eat poori once in 2 weeks during my diet...;) Added to it will be a brisk walk for 45 mins-1 hr... Now that I have a gym very close to my house, I can do some cycling n walking...

Dear Dev, please read this:

Most people have heard of jalebi – this ancient Persian sweet is popular at celebrations and street corners all over India. But jangiri is a little more obscure. I thought it was a sweet special to South India, but I have come to learn that it also has a presence in North India – called imarti. Jalebi and jangiri both look like sugar-coated orange funnel cakes.

What is the difference you say? First, they are made with different flours: jalebi is made with maida (all purpose) flour and jangiri with ground urad dhal. Jalebi batter is also supposed to be left to ferment (giving it a faint tangy flavour) while jangiri is not. There is also a difference in their appearance – the swirls of jalebi are more chaotic, while jangiri resembles a more organized flower pattern.

Those with a trained palate will also notice the slight crunchiness of jalebi, distinguishing it from the chewy, gooiness of jangiri. In most sweet shops, jalebi also appears a little shinier and more on the brown side (and jangiri more orange).


I like Jelabi more than Jangiri, it will be crunchy, little sour with the syrup in the swirls, apapa:-D
