THAI VEGETARIAN RICE

Ingredients:

2 cups cooked cold rice
1 tofu cut into cubes and shallow pan fried

2 tbs vegetable oil
5 pips garlic minced
½ tsp grated ginger
¼ cup sliced red capsicum
¼ cup sliced green capsicum
¼ cup baby corn strips
¼ cup carrot julienned
1 ½ tsp red chillie flakes
2 tsp soy sauce, little more if needed
Salt to taste
½ tsp light brown sugar
½ cup basil leaves, sliced

Method:
See that there are no lumps in the cold rice.
Shallow fry the tofu and keep aside.

Heat the oil in a non- stick wok. Add in the garlic and ginger.
Saute for few seconds till fragrant.
Add in the red, green capsicums, also the corn and carrot.

Give a good stir, add in the chillie flakes, soy sauce, salt,
brown sugar and basil leaves. Mix well and reduce the heat.
Add in the cold rice and tofu, and toss the rice gently to mix well.
Serve hot.

This is not a special or new one. Just shared it :).
I prepared this for roti. It was good. Can be consumed as part of dieting :)

Cauliflower Dal:

Cauliflower florets: 2 cups(each piece should be medium sized)
Moong dal: 3 spoons,(enakku kaiyalavu thaan 1/2 hand moongdal)
Toor dal: 1.5 spoonhalf hand again
Red chilli: 3 (you can replace this with green chilli)
Groundnut: 1/2 cup
Onion - 1 big sized
Tomato - 2 medium or 1 big
Turmeric Powder
Chill Powder
Coriander Powder
Oil
Salt

Method:

Heat the cooker, pour oil, fry the red chillies, add onion fry till golden brown.
Add tomato fry for a minute. Add salt, chill powder, turmeric powder, coriander powder.
Add cauliflower and groundnut, give a good mix. Put the dal, give a good mix, pour enough water.
Close the cooker and leave it for a whistle. Thats it, garnish with coriander and have with roti or rice.

Oh thanx kugan...u are the best!iam gonna try this soon..this is what i was asking for..btw I made kungpao noodles this weekend again..I also tried black pepper noodles ..the taste was superb..
I baked strawberry bread for my bday from a website..it came out good..
Do u have any bundt cake recipe which uses less eggs..I've just bought a bundt pan and can't wait to try out so e cake recipe.

This is one of my favourite rice I prepare often.

Capsicum Rice:

Capsicum - 1 for 1 person
Ural dal - 1/2 spoon
Cooked rice
Oil
Turmeric Powder - litle
Chilli Powder - 1/4 spoon
Salt

To Grind:

Red Chillies - 7
Urad Dal - arai kozhambu karandi ( :oops: sorry these are my measuring thinggies :|, karandi, 1 kai, arai kai :lol2: )
Channa dal - arai kozhambu karandi
Asafoetida powder aka perungayam

Method:

Heat the pan, dry fry Red chillies, asafoetida, urad dal and channa dal. After it turns slightly brown, Transfer the contents to a mixer grinder and make a powder.
Keep it aside.

Now let us go to the main dish,

Heat the same pan, pour oil. Now add urad dal after it started turning brown, add capsicum, fry for a minute.
Add salt, chilli powder turmeric powder. Cover a cook so that the capsicum cooks soon. Turn off the stove after ensuring that the capsicum is well cooked.

Now add the cooked rice to the capsicum content, then, add 1 spoon of the prepared powder, give a good mix. Check for the spice and salt, if salt is required, it can be added now.
If spice is less then add 1 more spoon or the desired content of the prepared powder. Give a good mix again. Thats it Capsicum rice is ready.
It may be appearing tedious but it is easy to prepare once the powder is ready on hand.

I prepared the powder and kept it safe so that I can add whenever I prepare this rice.

Simple Masala rice By Nithi Sri

Ingredients
Palaya saadham ( Old cooked rice) - 1/2 cup
Tamarind pulp - gooseberry size
Turmeric powder -1/2 tsp
Oil - 2 tbsp
Curry leaves - few springs
Urad dhal - 1tsp
mustard seeds - 1tsp
Ginger garlic paste - 1tsp
onion -1/2 small
green chilies - 2
chilly powder -1/2tsp
Salt to taste


Method
1. Take old rice in a bowl and add 1/2 tsp of turmeric powder and tamarind pulp and mix well with ur hand adding some salt. Allow it to soak overnight
2. In the morning take a kadai and heat oil. Add curry leaves, urad dhal and mustard seeds.
3. When mustard splutters, add the onions and saute them well.
4. When the onions are slight pink add the ginger garlic paste, green chillies slitted and saute until the raw smell goes away.
5. Add chilly powder and this point and cook for few minutes.
6. Now add the old rice mixture which is been soaking until the morning and give a nice stir
7. Cook for few minutes until all masalas blend into the rice
8. This serves as a nice breakfast or tea time snack and is a break from the normal tiffin varities like idli and dosa. Also people who are on diet can have this in the morning. As it is quite filling, lunch can be altered with a salad and u can still be active without hunger. Great way to start a day.

And soak overnight in the fridge or?
Feeling extremely stupid asking these questions, but I am not experienced cook, neither do I cook Indian food :oops: :(

Today I prepared Tamarind rava upma and bombay kadappa. My mom used to prepare the bombay kadappa when I was kid. Today had time to cook this and took picture too :swinghead:

Tamarind rava upma:

1 cup rava.
2 cups tamarind water(extracted from a goosebery sized tamarind ball)
Red chilli - 3
Urad dal - 3/4 spoon
Channa dal - 3/4 spoon
asafoetida/perungayam
Mustard seeds
Turmeric Powder
Chilli powder(if required)
Salt to taste.

Method:

Heat a pan with desired oil. Put mustard seeds, let is splutter. Add urad dal, channa dal, red chilli, asafoetida.
After the dal turned brown, add turmeric powder, little chilli powder, salt. Now pour tamarind water.
Once the water started boiling, slowly put the rawa and stir continuously as we do for normal upma, make sure it doesnt form lumps.
Tamarind rava upma is ready to eat. Serve hot with any type of chutney, I did bombay kadappa.

Bombay kadappa/Besan chutney:

Onion - 1/2
Tomato - 1
Mustard seeds
Turmeric powder
Chill powder(if required)
Red chillies - 2
Water - 3 cups
Besan flour - 1/4 cup
Oil
Salt

Method:

Heat a pan with oil. Add mustard seeds, let it splutter. Add red chillies, onion, fry till golden brown.
Add tomato give a good mix. Add salt, turmeric powder, chilli powder. Then pour water. Let is boil.
Now in a cup put the besan flour and add little water to form a paste, now add the paste to the boiling content.
Stir nicely so that the water starts thickening. If it is not thickening properly you can add some more besan flour paste.
Once you feel it comes to a chutney consistency, switch off the stove. Garnish with coriander. It is ready to eat.
Have this as a side for dosa, upma.

Have attached the picture of tamarind rava upma and besan chutney. I know the picture is not that tempting, :( didnt have time to take a better picture, but believe me the taste was lip smacking :lol2:. Please bare with me :D.

Dear Crazy, thanks for your post.
No harm in asking your doubts.
What you can do is, add little warm water and extract thick tamarind juice.
just enough for the rice, or to your taste.
Mix it with the rice using a spoon, or your fingers.
Keep it in the fridge over night.
What I did was mixed the tamarind juice and just kept it for 30 minutes.
Then I seasoned the rice, taste wonderful just like puli saatham.
Try it out, very simple. Come often with your kelvigal.

Recipe Source: Ramrish

SPICY FRIED GREEN BEANS

Ingredients:
1 lb - fresh green beans
2 cloves -garlic minced
2tbsps - stir fry sauce or substitute with soya sauce
4 tbsps - any cooking oil
chilli powder,salt - to taste
Method:
Wash the green beans .Chop the ends off and cut the beans into halves.Heat oil in a pan.When the oil is very hot add the beans and keep on stirring them in high heat for about 5 minutes.Then add the minced garlic ,salt and continue the stirring for another 5 minutes.By this time the beans would have started to brown.
Add the soya sauce/stir fry sauce and chilli powder and saute for about 1minute.Turn off the heat.
Serve with rasam sadham(rasam rice).

Dear friends, we normally use potatoes for every thing.
Seldom use the sweet potato. Try this dish.
The taste of, sweetness, sourness and heat, makes this dish very yummy.
You can have it as a side dish or can have it like that.

SPICY SWEET POTATO PORIYAL

Ingredients:
300 grms sweet potato
1 tbs oil
¼ tsp mustard seeds
1 sprig curry leaves
1 green chillie chopped
¼ tsp tumeric powder
1 tsp chillie powder
Salt to taste
¼ tsp garam masala powder
Enough amchur powder to taste


Method:
Boil the sweet potatos with little salt.
Do not over boil it. Remove skin and cube it. Keep aside.

Heat oil in a non-stick pan, add in the mustard seeds and let it splutter.
Add in the curry leaves and green chillies.
Give a stir, slow the flame, add in the tumeric and chillie powder.
Give it a stir add in the cubed sweet potatoes, and salt.

Sprinkle little water and gently turn the potatoes.
See that it is coated with the spices.
Add in the garam masala powder, and the amchur powder.
Stir fry till nicely roasted, remove and serve.

Thanx kugan for trying out the beans recipe..ur picture looks drool worthy..for fathers day I made all the traditional TamIl recipes because that's what my husband likes of all...I made kuzhambu vadagam vatha kuzhambu,beans parippu usili,lemon rasam and fried appalam..
We had the leftover strawberry bread.

I did not cook anything for father,s day:-D
Whole family went out for brunch, later for a show . In the evening went out for dinner.

Here is the curry puff recipe.
You can just do it with potatoes alone,
or you can add in little grated veges and things.
remove the spices after cooking before making the puffs.

Here is Curry puffs

CURRY PUFFS
Ingredients:

PASTRY
400 grms plain flour
tsp salt
150 grms margarine
180 ml cold water or more

METHOD:
Put the flour and salt into a mixing bowl.
Rub margarine into flour until it resembles fine bread crumbs.
Make a well in the centre and add in cold water to bind.
Knead the pastry well and keep aside.

FILLINGS:
50 ml oil
3 pips garlic finely chopped
1 big onion finely chopped
3 tbs coriander leaves chopped
tsp ginger paste
1 tsp black pepper powder
2 tsp meat curry powder
120 grms carrot finely diced
180 grms potatoes peeled and finely diced
75 grms green peas
1 tsp sugar
1 green chillie finely chopped
2 tsp lime juice
salt to taste
1, inch cinnamon stick
2 cloves
2 cardamoms

METHOD:
Add the oil, the spices, garlic, onion, ginger paste, stir nicely.
Add in the potato, carrot, and peas, stir once.
Now add in the meat powder, pepper powder, green chillies
Salt and sugar. Sprinkle water and allow the veges to be cooked.
You can mash the veges a little with your spoon.
Now add in the lime juice and coriander leaves and dish out.

PUFF MAKING:
Turn the pastry onto a floured table top and roll out thin
. Cut into rounds with a 5cm round pastry cutter.
Put a tbs of filling in the centre of each pastry round.
Fold pastry into half to enclose the filling.
Seal by pinching and fluting the edges.
Deep fry curry puffs in hot oil, until brown.
Drain on crushed absorbent paper.

Aarthii spiral curry puffs.

SPIRAL CURRY PUFF

Ingredients:

Fillings:
200 grms potatoes cut into cubes
100 grms sweet potatos cut into cubes
150 grms big onion sliced
½ tsp garlic and ginger paste
1 tbs meat curry powder
1 tbs chillie paste
1 green chillie sliced
Little coriander leaves chopped
2 tbs oil
Little lime juice
Salt to taste

Method:
Heat the oil, add in the sliced onions, and ginger garlic paste.
Sauté well, add in the chillie paste mix well.
Now add in the cut potatoes , sweet potatoes and the curry powder.
Sprinkle little water and mix well, cover and cook on low flame.

Stir now and then, add in the green chillie and salt.
Fry every thing till fragrant. Add in the coriander leaves,
fry till dry, remove and add the lime juice. Leave aside to cool.

Water Dough:
400 grms all purpose flour
225 ml water
¼ tsp salt
2 tbs margarine

Place flour in a mixing bowl, add the salt to the water.
Now rub the margarine into the flour.
Slowly add in the water little by little and knead to a smooth dough.
Keep aside for about 10 minutes. Divide the dough into 24 equal portions, shaping into a ball. Keep aside.


Oil Dough:
200 grms plain flour
100 grms margarine

Rub the margarine into the flour to form an oily dough.
Knead and leave aside for 10 minutes.
Divide the dough into 24 portions shaping into a ball.

Making the pastry:
Flatten one water dough, and wrap one oil dough into the water dough.
Do this to all the doughs. You will get 24 balls.

Now take one dough and flatten it length wise with a rolling pin.
Now roll it up like a swiss roll.
Repeat the process one more time.
Roll it again into a swiss roll, then cut the roll into 2 equal parts.
You can see the circles in the cut halves.

With the cut side on the table, roll the dough into a circle and fill
with a spoonful of the fillings.
Wet the outer rimr of the circle and fold into half.
Flute the edges. Deep fry the spiral puffs in medium hot oil.
Drain and serve.

Dear Ramya, nice to know that you made all traditional dishes. Yes, you have to cook their favourite food.
What camera do you use? your pictures all look very nice.
I have changed 3 cameras. My latest is Nikon J1. Meera bought it for me.
Now I am eyeing for a DSLR camera. My HB says the cameras are good, only I am no good:-D

MINI Besan dosas/Besan omlette(Eggless):

I prepared these dosas last week, it turned out to be good. It is quick and easy to cook.
I will take a snap of this when I do the next time and share the photo. As of now bare with me :).

Besan flour - 2 cups
Onion - desired
Cumin seeds - 1/2 tea spoon
Green Chillies - 2 finely chopped
Ginger - small piece chopped fine
Chill powder - optional for taste and more spice
Salt

Method:

Mix besan flour in a bowl with water(1.5 cups to get a thick batter), mix it without lumps. Add onion(Can be fried and added), cumin seeds, green chillies, Ginger, Chilli powder, salt. Mix well.
Pour on the dosa pan and wait till the base turns brown, flip it over and cook the other side, slide it to the plate. Dosas are ready to eat.

This can be had as a snack or as a side dish for vathakuzhambu rice, just like how people have omlet as side dish :).
For variations can add some veggies.

2 simple recipes... not sure if it's posted already...

Pudalangai kootu:snake Gourd kootu

Cook a small cup of yellow moong dhal.

Grind to a paste- coconut, jeera, green chillies and Garlic
heat coconut oil or any oil. Splutter mustard, jeera,curry leaves, red chillies.
Add chopped onion and saute till translucent.
Add 1 medium snakegourd chopped, water,salt and turmeric and cook until the veg is 90% cooked.
Add the paste, dhal and let cook for 2-3 mins.
Done!!!
Goes well with plain rice.yumm!!!

Masala rava Kitchidi:

Grind to a paste-1" gin-3 or 4garlic,1green chillies,1 inch pattai , 1 krambu,1/2 tspsombu.
Roast the white rava(1 cup) in a lil oil/ghee fro 2 mins.

Heat oil. Splutter mustard,2 dry chillies,curry leaves.
Add chopped onion and fry till translucent.
Add the paste and fry till nice n flavourful n brownish.
Add chopped 1 small tomato chopped and cook till mushy.
Add finely chopped mixed vegs(carrot,beans,peas,cauliflower) and cook for 2 mins.
Add water(rava:water=1:2 1/4 to 2 1/2), salt and let it come to a boil.
Taste test now and make necssary modifications.
Once the vegs reach the cooked but crunchy stage, add the rava and stir and cook till the water is absorbed.
When the water is 90% absorbed, switch off flame, add ghee and close with a tight fitting lid and leave it on the stove for 5-10 mins.
Mix well once again and serve with coconut chutney.:)

coconut chutney:

Grind a handful of grated coconut, 1/4 handful of roasted channa(pottu kadalai aka chutney dhal), 2 green chillies, few cori leaves(optional), 1 sprig curry leaves, a small pice of ginger, salt to a paste adding lil water.
Season with mustard,curry leaves and dry chillies.

Var: u can add garlic in place of ginger for the chutney.
1 or 2 shallots can also be added while grinding the chutney.

Madhu, I remember posting a similar besan dosai, recipe given by my friend.
She calls it Chilla, but the ingredients are little different.
She has added little grated veges into the batter.
Let me locate and repost it.

Well at times my conscious will keep me awake, saying that I have not posted,
anything in the forum. So I will be up and start doing my job:-D
Moreover, I am up every day at 4.a,m in the morning.
Enough time for prayers, cooking for take away lunch for school.
Sending the kids out by 6.30 in the morning.
This is my daily routine. Thanks and take care. Kugan.


Crazy, I love your stupid questions.
At times they are very useful to many.
Crazy, you can just grind ginger and garlic seprately and keep in the fridge and use.
Or you can do it as I do.
Here is the method:


.GINGER GARLIC PASTE:

300 grms garlic pearls cleaned and dry. (Use freshly peeled garlic)
200 grms ginger cleaned cut and dry
½ tsp turmeric powder
1 tsp kosher salt
3 tbs vegetable oil or more.

Method:
Heat the oil in a pan till very hot. Keep aside to cool.
In a food processor, or mixie pluse all the remaining ingredients.
Slowly keep on adding the oil till all the ingredients are well mixed.
Remove and store in a GLASS container with an airtight lid.
It will stay good for a month or more.
It will not turn green.


Store it in the refrigerator . Use only a dry spoon.
Immediately put it back in the fridge after using.
Turmeric and oil serve as natural preservatives.

Nithi Sree, here is the green curry paste recipe.
Enjoy making the green curry. Kugan



GREEN CURRY PASTE

Ingredients:
1 large bunch of coriander leaves
6 green chillies
1 tbs finely sliced lemon grass
1 tsp finely sliced galangal
3 pips garlic
1 tsp coriander seeds
1 tsp black peppercorns
1 tsp ground cumin
½ tsp finely sliced kaffir lime rind, only the green part
1 tbs lime juice
1 tbs fish sauce
1 tbs soy sauce

Method:
Pound the peppercorns, coriander seeds, and cumin seeds first.
Now add all the ingredients into a mixie.
Grind to to a smooth paste.
Remove and store in a fridge.
It will keep well for about 3 weeks.

VEGETARIAN THAI GREEN CURRY

Ingredients:

4 tbs Thai green curry paste
400 ml coconut milk
½ cup water

1 cup Chinese cabbage shredded
½ cup carrot cut into sticks
½ cup red capsicum cut into strips
½ cup button mushrooms sliced
½ cup baby corn cut into fingers
½ cup tofu cubes, that have been pan fried

1 tbs fish sauce or to taste
Little palm sugar to taste
Salt to taste

¼ cup Thai basil leaves
1 fresh green chillie diagonally sliced

Method:
In a pot, add in the coconut milk, water and green curry paste.
Stir well and cook over low heat for about 10 minutes.

Now add in all the vegetables, seasonings and simmer for about 5 minutes.
Cook until the vegetables are cooked and not mushy.
Turn off the heat, sprinkle the Thai basil and the green chillies.
Serve with steaming jasmine rice.


NOTE: You can add in chicken pieces , or sea food if you like.

Dear friends, do you all remember the sponge cake that got " oothikichi "

Well I have got an perfect cake this time.:happydance::happydance:

Try it out friends. Kugan



EGGLESS SPONGE CAKE

225 grms all purpose flour
2 tsp baking powder
1 tsp baking soda

400 ml condensed milk
100 grms melted butter
4 tbs well beaten yogurt
2 tsp vanilla essence

200 ml milk

Method:

Preheat oven to 180 degrees C.
Grease and flour a 9 inch baking pan.

Sieve the flour, baking powder and baking soda 3 times.
In a bowl, whisk the melted butter and the condensed milk.
Add in the yogurt and vanilla essence.
Whisk again until you get a smooth mixture.

Now add 1/3 of the flour , to the butter-milk mixture and fold slowly.
Then add a little bit of the milk and fold again.
In this way, add the flour and milk alternatively, until the entire flour is finished.
Be careful with the milk, the consistency should be dropping only.
YOU NEED NOT ADD ALL THE MILK

Pour the mixture into the greased cake pan.
Bake for about 30 minutes or till the cake is cooked.
Remove and cool for 10 minutes before removing from tin.
A very nice cake to ice for birthdays, it slices well.

Today I prepared this yummy milagu kozhambu(chettinad kind of style). Please try this, it tastes yummy... :slurp:
My aunt use to prepare this.

Potato Milagu kuzhambu:

Onion: 1
Tomato: 2 medium
Potato - 4 small ones or 1 big one or 2 medium ones :oops:
Red Chilli - 3 long one
Garlic - 4 - 5
Turmeric powder - a pinch
Chilli powder - 1 tbsp
Coriander powder - 2 tbsp
Curry powder - 1/2 tsp
Pepper powder - 1/2 tsp
Tamarind - kuttiyaaa oru lemon ball size.
Mustard seeds
Channa dal - 1 tsp
Coriander leaves.
Oil

Method:

Extract nearly 3/4th cup of tamarind juice. Fine chop onion and tomato. Chop potato to have medium slices.
Heat a wok with oil. Put mustard seeds and let it splutter. Add channa dal fry till it turns brown.
Now add red chillies and garlic. Fry for 1/2 minute, then add onion, fry till it turns brown.
Add tomato, fry till it becomes little mushy. Now, add salt, and the remaining powders, give a good mix.
Add coriander leaves, potato, and 1 cup of water. Let it cook for 5 minutes. Now, add the tamarind water and mix well.
Keep it for about 10 - 15 minutes. The milagu kuzhambu is ready to eat.Mix with hot rice and eat. :slurp:.

Dear Ramya, here is the cake recipe.


SOUR CREAM VANILLA BUNDT CAKE

Ingredients:

1 tsp baking soda
2 tsp baking powder
3 cups all purpose flour
Little salt

2 cups castor sugar
¾ cup melted butter or oil
¾ cup of sour cream
2 tsp of vanilla essence
1 ½ cups of milk


Method:

Preheat an oven to 180 degrees C for 10 minutes.
Grease a 10 inch bundt pan with butter, and dust it with flour.

Sieve the flour, baking powder, baking soda and salt into a bowl.
In another bowl, whisk the sugar, butter, and the sour cream.
Stir in the vanilla essence.
Now add the flour alternating with the milk with a spatula.

Pour into the prepared tin. Bake in the oven for about 40 minutes,
Or till a cake tester comes out clean.
Cool in the pan for about 10 minutes. Then on a rack till cooled.
Dust with powdered sugar.



Eggless Chocolate Bundt Cake

2 1/4 cups all purpose flour
1/2 cup cocoa powder
1 cup sugar
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1 cup water or milk
9 tbsp melted butter
1 tsp vanilla essence
1 tbsp apple cider vinegar

Preheat oven to 180 degrees C . Grease and flour a 9-inch bundt pan.
In a large bowl, sift together flour and cocoa powder. Whisk in sugar, brown sugar, baking soda and salt. Pour in water or milk , melted butter , vanilla essence and vinegar, whisking thoroughly, but quickly, until the batter comes together and is quite smooth.
Pour into prepared pan.
Bake for 45-50 minutes at 180 degrees C , until a tester comes out clean and the cake springs back when gently pressed.
Allow to cool in pan for 10 minutes, then turn out onto a wire rack to cool completely. Once the cake as cooled, dust with powdered sugar.

Ramya here is the white bread. Kugan



PLAIN WHITE BREAD

Ingredients:

4 cups bread flour
2 tbs full cream powdered milk
½ tsp salt
¼ tsp bread softner
¾ tsp bread improver
2 tbs olive oil
¾ cup warm water, little more or less

1 tbs yeast
2 tsp sugar
¼ cup warm water

1 tbs olive oil to coat

Method:

Mix the yeast, sugar and warm water in a container.
Cover and let it froth for 10 minutes. Keep aside.

Mix the flour with all the other ingredients with your fingers,
except the warm water and oil.
Now make a well in the middle of the flour, pour in the yeast mixture.

Knead the flour, slowly adding the ¾ cup of warm water and the oil
in between, you should knead for about 10 minutes.
The dough should be soft and smooth.

Place the dough in slightly oiled bowl, cover with a cloth.
Let it rise until doubled in size.
Punch down the dough again, and knead for another 2 minutes.
Place in a well greased loaf pan and cover, allow to double again.

Preheat the oven to 190 degrees C, for 10 minutes.
Bake for about 40 minutes, or until done.
Remove from tin and allow it to cool down completely.
Slice and enjoy with your butter and jam.

VEGETABLE COCONUT MILK PULAO

Ingredients:

¼ cup potatoes cut into 1 inch fingers
¼ cup carrot cut into 1 inch fingers
¼ cup capsicum cut into fingers
¼ cup green peas

2 green chillies, slit into 4 and cut across
2 tsp chillie powder
¼ cup tomatoes cut into strips
1 tbs tomato sauce
1 tsp garam masala powder
Salt to taste
2 tbs coriander leaves
2 tbs scallions cut into 1 inch in length

2 cups basmathi rice soaked for 10 minutes and drained
1 cup coconut milk
½ cup curds + ½ cup water mixed
1 cup water

1 tbs cashew nuts roasted in ghee
1 tbs raisins roasted in ghee

Method:
Heat a wok with the oil and ghee, add in the spices, and cumin seeds.
Add in the sliced onions and saute for a minute.
Add in the ginger and garlic paste, mix well.
Add in the potatoes, capsicum, carrot and green peas.

Give a good stir, now add in the green chillies, chillie powder.
Add in the cut tomatoes, tomato sauce, garam masala powder.
Also salt, coriander and scallions. Give them a nice stir.
Raise the heat, add in the drained rice, and gently stir well.

Now put the seasoned rice with vegetables into a rice cooker.
Add in the coconut milk, curd and water. Give a stir and on the cooker.
When the rice is cooked fluff up the rice gently, garnish with cashew and raisins.
Serve with any raitha.

Here is the kurma to go with it. Kugan


SIMPLE KURMA

Ingredients:

To Grind To Paste;
2 tbs coriander seeds powder
½ tsp kas-kas
1 ½ tsp red chillie powder
1 cardamom
2 cloves
1 inch cinnamon stick
4 cashew nuts
2 tsp coconut
2 tsp ginger garlic paste
2 tbs sliced onions

1 tbs ghee or oil
¼ cup sliced onions
1 red tomato sliced
¼ tsp tumeric powder
Salt to taste
Little lime juice
Little coriander leaves chopped

Method:
Grind all the ingredients to a smooth paste, using some water.

Heat the ghee in a pot, add in the onions, salt and saute for a minute.
Add in the tomatoes and tumeric powder, add ½ cup of water.
Let the tomatoes simmer for about 5 minutes.

Now add in the ground paste, stir fry well.
Add water if needed, simmer till the raw smell goes.
Add in the lime juice, remove and garnish with the coriander leaves.
Goes well with ghee rice, dosai or roti.

Father's day celebration was good. we went out for lunch that day. birthday was too good. kids gave me so much of surprise. i was very happy.

Dev, here is the cabbage rice. Kugan


CABBAGE RICE

Ingredients:

1 tbs ghee or oil
½ tsp cumin seeds
1 tsp channa dal
½ cup onions sliced

To Grind To Paste:

1 tsp ginger garlic paste
2 green chillies chopped fine
2 tbs grated coconut
½ tsp fennel seeds
1 cardamom pod
2 cloves
1 small cinnamon stick
Very little water

1 cup cabbage cut into little thick strips.
1 cup rice soak for 15 minutes and drain
1 ½ cups of water
Salt to taste

Method:

Heat oil in a pressure cooker.
Add in the cumin seeds and let it splutter
Add in the channa dal, let it brown a little.
Add in the onions and saute for a minute.

Add in the ground paste, saute well till the raw smell goes.
Add in the cabbage and give a quick stir.
Now add in the drained rice, water and enough salt.

Keep the flame low and allow one whistle.
Off the flame and let the steam subside on its own.
Remove and fluff up the rice, serve with any raitha.

NOTE: I always only allow one whistle.
More than that rice will be kulanjify:confused2:

Here is the brownie, tastes good with ice creams or sweet sauces. Kugan



BROWNIES

Ingredients:

1 cup all purpose flour
1 cup caster sugar
4 tbs cocoa powder
1 tsp baking soda
A pinch of salt

1 cup well whisked yogurt
6 tbs of water
4 tbs melted butter
100 grms chocolate melted using a double boiler

Method:
Preheat an oven to 180 degrees C
Grease and flour a baking pan.

Sieve the flour, sugar, cocoa, baking soda and salt.
Now in a bowl, add the yogurt, water, melted butter and chocolate.
Use a whisk and whisk well.

Now using a spatula add in the dry ingredients little by little.
Fold in gently till all the flour is mixed well.
Pour the prepared batter into the pan and bake for about 30 minutes.
Or until a cake tester comes out clean.

Remove and cool for 5 minutes before removing from pan.
Serve with any ice creams or any sweet sauces.

MINI Besan dosas/Besan omlette(Eggless):

I prepared these dosas last week, it turned out to be good. It is quick and easy to cook.
I will take a snap of this when I do the next time and share the photo. As of now bare with me .

Besan flour - 2 cups
Onion - desired
Cumin seeds - 1/2 tea spoon
Green Chillies - 2 finely chopped
Ginger - small piece chopped fine
Chill powder - optional for taste and more spice
Salt

Method:

Mix besan flour in a bowl with water(1.5 cups to get a thick batter), mix it without lumps. Add onion(Can be fried and added), cumin seeds, green chillies, Ginger, Chilli powder, salt. Mix well.
Pour on the dosa pan and wait till the base turns brown, flip it over and cook the other side, slide it to the plate. Dosas are ready to eat.

This can be had as a snack or as a side dish for vathakuzhambu rice, just like how people have omlet as side dish .
For variations can add some veggies.

NOTE: Kugan added little grated carrot:smokesmirk:

Kugan,The brownie recipe is soooo gud.Its lowfat,eggless and what can we ask for more??I try to avoid all the baking recipes which has more than 1 egg,as I find that the baked good has an eggy smell...especially some cake and brownie recipes has 3 or 4 eggs.

Hi everybody, I prepared this pulao for lunch today... if there are some variations please let me know :)

Plain Pulao:

Onion: 1 1/2 big
Basmati rice: 2 cups
Water - 2 cups
Coriander powder - 1 tsp
Pepper jeera powder - 1/4 tsp
Green chillie - 3
Cloves - 4
Cinnamon stick - 1 inch
Ginger garlic paste - 1 or 1 1/2 tbsp
Scraped coconut - 3/4 cup (optional)
Garam masala powder - 1/4 tsp
Salt to taste
Oil

Method:

Clean the rice with water and drain the water. Keep the rice aside for about 20 minutes.

Cut onion. In a cooker, pour oil(more the oil more the taste :oops:, replace with butter for more taste :oops2: ).
Put cinnamon, cloves and fry for some seconds, once u get the aroma, put the ginger garl paste, fry for some seconds.
Put onion, fry till the onion turns transparent. Put the green chilli, fry again. Put all corainder powder, pepper jeera powder, garam masala powder, salt and mix it.
Put the rice and fry it for about 5 minutes. Now add the coconut, water and keep it for 2 whistles. Plain pulao is ready to eat. Serve it with anykind of gravy.

I have tried eggneer, flaxseed powder, apple sauce and things.
I am not very happy with them.

Friends, try this combination of potato and long beans.
Kugan.


POTATOES WITH LONG BEANS

Ingredients:

1 tbs oil
½ tsp mustard seeds
2 pips garlic smashed
1 medium onion sliced
½ cup sliced tomatoes

1 tsp red chillie powder or to taste
¼ tsp tumeric powder
½ tsp cumin powder
Salt to taste

2 medium potatoes half boiled and cut into cubes
2 cups long beans cut into 1 inch in length
1 tsp jaggery (optional
2 tsp lime juice
Little cut coriander leaves

Method:
Heat oil in a non-stick pan. Add in the mustard seeds and garlic.
Saute for a minute, add in the sliced onions, saute well.
Add in the tomatoes, and all the powders with salt.
Cook till mushy, add in the potatoes and long beans.

Cook till the gravy is thick and is well coated on the vegetables.
Add in the jaggery and the lime juice.
Remove and garnish with the cut coriander leaves.
This is a semi dry dish, goes well with rice or roti.

MINT CORN PULAO

Ingredients:

1 cup basmathi cooked with salt


2 tbs oil
10 shallots
3 green chillies slit
1 piece of ginger
4 pips garlic
2 small pieces of cinnamon sticks
2 cardamom pods
2 cloves
1 cup mint leaves
½ cup coriander leaves
¼ cup grated coconut

2 tbs ghee
1 tbs oil
¼ cup corn kernals
Salt to taste
2 tbs lime juice

Method:
Cook the basmathi rice with the salt, ¾ cooked.
Strain and let it cool.

Heat 2 tbs of oil, add in the shallots and saute well till it browns.
Remove and keep aside.

In the same pan add in the green chillies, ginger, garlic,
cinnamon sticks, cardamom pods and cloves.
Saute well, add in the mint leaves , coriander leaves .
Saute for a minute, add in the grated coconut, stir for a moment.

Remove and let it cool, add in the sauteed onions.
Now in a mixie grind to a paste.
Now heat the oil and ghee in a non stick wok.
Add in the ground paste and stir fry till the raw smell goes.

Now add in the corn kernals, and the cooked rice.
Gently fluff up the rice, so that the paste is evenly distuburted.
Add in the lime juice, mix well.
Cover the pot and simmer on a very low flame for 10 minutes.
Remove, and serve with the brinjal raitha.


NOTE: Corn is added because, green peas will be of the same colour.
You can omit corn if you do not like it.

Here Gulabjamun, here is the recipe.
In fact if you have the ready made bajii flour, you can use it also.
Kugan.



BABY CORN FITTERS

Ingredients:

¼ cup besan flour
¼ cup rice flour
1 tsp corn flour
¾ tsp chillie powder
½ tsp baking soda
½ tsp cumin seeds
¼ tsp asafoetida powder
Salt to taste
Water as needed

10 baby corns , cut into 4 in lengths, rub with little salt.
Oil for deep frying.

Method:

In a bowl mix all the ingredients.
Add water and and make it into a dosa batter consistency.

Heat oil in a wok, when the oil is hot, dip the corn slices,
In the batter and fry it in the oil.
Fry till the corn is golden in colour. Remove to a kitchen towel.
Serve with chillie or tomato sauce.

K sis, troube is, potato is my life-long enemy. Not that I resent it, but I have trouble with the boiling part. Sometimes underboiled, sometimes over...onniyum puriyala...very frustrating...and I don't like to poke them amidst boiling to check if its cooked and break the cubes...what is your suggestion/tips?

Groucho anneh, thanks for your nice post.
Groucho anneh, the reason for us to half boil the potato is, the potato will take longer to cook than the long beans.
What you can do is, add the potato to cold water, then boil it.
It will take about 10 to 15 minutes to half boil, for a medium potato.
For full boil, it will be about 30 minutes. Anneh no harm in poking slightly while boiling:smokesmile:

This keerai bonda is nothing, they do it in the village for sudden visitors.
You know you add cabbage and it becomes cabbage bonda,
The same way, carrot, and any grated vege and call it that bonda.

My grandma mixes moong dal and urad dal and makes small bondas.
For that she will make a dip of sweet sour chutney.

KEERAI BONDA

Ingredients:

1 cup besan flour
¼ cup corn flour
1 tbs rice flour
½ cup very finely cut onions
2 tbs finely cut green chillies
1 tsp ginger grated
1 tsp aniseeds
A good pinch of baking soda
A good pinch of asafoetida powder
Salt to taste

300 grms spinach , only leaves, cut fine
Little water
Oil for frying

Method:

Mix all the ingredients from besan flour to the salt, well.
Now in a bowl add in the finely cut spinach leaves.
Add in the flour onion mixture. Use your fingers and mash them well.
Just sprinkle little water to bind the mixture well.
PLEASE DO NOT ADD LOT OF WATER.

Now heat a wok with the oil.
When the oil is hot, just wet your hands, take little mixture.
Shape them into small balls, and fry them in oil till cooked well.
Keep the flame low , do not burn the keerai bonda.

Remove on kitchen paper, serve with chillie sauce.


NOTE: In the villages, this is served as a side dish for lunch.
In the city, this ia a appetiser.
You can use any keerai as you like, ara keerai, spinach,
drumstick leaves , siru keerai and so on.

P.S Tamby, saag is nothing but palak keerai.
It is something like our keerai kadayal.
You can add potatoes, or panner or chick peas or non-vege item.
Little variations with yogurt, coriander powder and so on.
I will post it soon for you.

It will take about 10 to 15 minutes to half boil, for a medium potato.
For full boil, it will be about 30 minutes. Anneh no harm in poking slightly while boiling the best way to cook or undercook potato is to use the pressure cooker... 1 whistle and its nearly ready.

using a small knife to check is better than using a fork which will make the potato messy. I guess all the best chefs still check to see whether the food is cooked or not :lol:


here is a simple method to do mashed potatoes.

best is to use Russet potatoes as they do not become watery.
wash potatoes with skin and cook with water abt an inch above the brim of the potatoes. add enough salt. check to see whether they are done ( :D ) and when the kniofe goes through easily, switch off the flame and discard water immediately. then return pot to fire so that the potato is completely evaporated (a few mins would do)
then leave it to cool, after which you can remove the skin easily.
now mash the potatoes and add fresh milk, butter and pepper. add more salt if desired.
as you mash, add more milk for a creamier taste and stop when the potato is of the right consistency.
this is the basic recipe for mashed potatoes... use your imagination to make it more desirable (almond slivers for crunchiness, raisins for sweet tooth, etc)

Once my mutton became minced mutton, in a pressure cooker.:smokesmirk:
That was when we were non-vegetarians.
From that day onwards, I only pressure cook dal in my pressure cooker.
I have about 5 pressure cookers in my house:confused2:

Now I am slowly, learning how to make pulao in a pressure cooker.
Athum, only one whistle, it cooks nicely.

Dear P.S Tamby. here is the aloo saag, or potato saag.
Enjoy the dish. Kugan.



ALOO SAAG

Ingredients:

300 grms spinach, roughly chopped
1 medium onion sliced
3 green chillies sliced
A pinch of sugar

1 tbs oil or ghee
3 shallots finely chopped
1 tsp cumin seeds
¼ tsp tumeric powder
1 tsp coriander powder
1 tsp chillie powder

2 tsp ginger garlic paste
2 small tomatoes cut into cubes
½ tsp amchur powder
2 medium potatoes, boiled and cubed

2 tbs cream (optional )

Method:

In a pot, add the spinach, onion, green chillie and sugar.
Add very little water and boil till the spinach is cooked.
Remove, cool and grind into a little coarse paste. Keep aside.

Heat oil in a non- stick wok, add in the shallots, saute well.
Add in the cumin seeds and let them crackle.
Now add in the tumeric, chillie and coriander powders. Saute for a minute.

Now add in the ginger garlic paste, saute till the raw smell goes.
Add in the cubed tomatoes, amchur powder. Let the tomatoes become mushy.
Now add in the ground spinach paste, little water, and the potatoes.

On low flame let it cook for about 10 minutes, for the potato to absorb the flavour.
Remove and add the cream if using. Serve with rotis.


NOTE: you can use, panner, prawns, chicken, or what ever you fancy.
Some will add yogurt, before removing from the stove.
Some people like to add, little mustard leaves and funugreek leaves.

MOONG URAD DAL BONDA

Ingredients:

½ cup urad dal
¼ cup moong dal

2 green chillies chopped fine
2 sprigs curry leaves chopped fine
1 tbs coriander leaves chopped fine
Salt to taste

Method:
Soak the urad dal and moong dal for 3 hours.
Drain and grind to a paste with out adding water.
Now add in the green chillie, curry leaves , coriander leaves.
Add salt to taste and fry into small round bondas. Keep aside.


SWEET CHUTNEY

½ cup tamarind juice from 50 grms tamarind
¼ cup jaggery, dissolved in little water
6 seedless dates chopped fine

½ tsp chillie powder
¼ tsp roasted cumin powder
A pinch of dry ginger powder (suku)
Salt to taste.

Method:
In a wok, boil the tamarind juice, jaggery and the dates.
Add in the c hillie cumin, dry ginger powders and salt.
Let the saiuce thicken a little. Allow it to cool.
Now strain it using a strainer, press with a spoon to,
extract all the juice. Use as a dip for the bondas.

My dear friends, I am too going to be very busy this week.

On the 4th of July, we are having 6 visitors from India.
Have to cook lunch and dinner for them.

On the 7th, our company is launching the new Felda building near the KLCC.
Work has been going on for the past two weeks, all are busy as bees.

On the 8th, Rubenee, as the President of her school's Tamil club,
is holiding a charity function in her school. She is responsible for the job.
So all of us have to pitch in to help her.

On the 9th morning, I am flying to India for my check up.
I will be only back on the 22nd.

I feel very sad to leave Kugan's Kitchen for so many days.:cry2::cry2:

Is this the crispy dosai recipe u r talking abt, selviem?

CRISPY DOSAI

3 cups of raw rice (patcha arisi )
1 cup urad dal
1 tsp funugreek seeds
2 tbs channa dal
2 tbs aval

Method:

Soak, urad dal, funugreek seeds and channa dal in one bowl.
Soak the rice in a separate bowl. Soak both for about 5 hours.
Soak the aval in water for about 10 minutes.
Squeeze out the water and add to the rice before grinding.

First, grind the urad dal mixture till fluffy.
Next grind the rice mixture well and add to the urad dal mixture.
Add salt and beat well with your hands and ferment over night.
The consistency should be like dosai consistency.

The next day, mix the flour with a ladle well.
Heat a dosai kal, pour a ladleful of dosai batter in the middle.
Spread in concentric circles starting from the centre.
Drizzle 1 tsp of oil around the circumference and let it cook.
It should cook till golden brown.

Once done remove and serve with any chutney or gravy.
You need not flip over this dosai.
You can do so if you like.

Potato or Plantain roast:

This is not new for anyone here, but to get a proper roast without sneezing in kitchen :lol2: because of the chilli powder, you can follow this tip....
Cut pototo or vaazhakaai in your desired size. Transfer to a bowl, add desired chilli powder, turmeric powder and salt. Mix well so that the chilli powder and turmeric is even.
As usual heat the pan with 2 or 3 tbsp of oil, then tranfer the potato/vazhakkai to the pan and give a mix, close the pan and leave it for 2 minuts, then mix again.
Repeat the same until the vegetable is cooked and roasted well. In this way you can get a proper roast at the same with less oil.

Dear P.S Tamby. here is the aloo saag, or potato saag.
Enjoy the dish. Kugan.



ALOO SAAG

Ingredients:

300 grms spinach, roughly chopped
1 medium onion sliced
3 green chillies sliced
A pinch of sugar

1 tbs oil or ghee
3 shallots finely chopped
1 tsp cumin seeds
¼ tsp tumeric powder
1 tsp coriander powder
1 tsp chillie powder

2 tsp ginger garlic paste
2 small tomatoes cut into cubes
½ tsp amchur powder
2 medium potatoes, boiled and cubed

2 tbs cream (optional )

Method:

In a pot, add the spinach, onion, green chillie and sugar.
Add very little water and boil till the spinach is cooked.
Remove, cool and grind into a little coarse paste. Keep aside.

Heat oil in a non- stick wok, add in the shallots, saute well.
Add in the cumin seeds and let them crackle.
Now add in the tumeric, chillie and coriander powders. Saute for a minute.

Now add in the ginger garlic paste, saute till the raw smell goes.
Add in the cubed tomatoes, amchur powder. Let the tomatoes become mushy.
Now add in the ground spinach paste, little water, and the potatoes.

On low flame let it cook for about 10 minutes, for the potato to absorb the flavour.
Remove and add the cream if using. Serve with rotis.


NOTE: you can use, panner, prawns, chicken, or what ever you fancy.
Some will add yogurt, before removing from the stove.
Some people like to add, little mustard leaves and funugreek leaves.

Typical South Indian food.

O.K the lunch was, let me post the menu.

Kesari, tomato rice, white rice.

Dal kadayal, home made ghee.

Drumstick arrachvitta sambar, paruppu rasam, curds.

Drumstick leaves poriyal, cabbage chillie flakes poriyal.

Karunai kilanggu masiyal, motchai vendi puli mandi.

Beans usli, mango chutney, mint thogayal, bitter gourds crisp fried.

Carrot raitha, sago payasam, urad dal vadai.

Last but not the least, home made lime pickle.

Here is the poondu milagu rasam. Kugan



POONDU MILAGU RASAM

Ingredients:

(A)
2 tsp gingelly oil
a pinch of asafoetida powder
¼ tsp mustard seeds
¼ tsp funugreek seeds
1 dry red chillie cut into pieces
1 sprig curry leaves


CRUSH COARSELY IN A MOTAR:

(B)
3 pips of garlic with skin
1 tsp cumin seeds
1 tsp pepper corns

(C)
2 cups of tamarind juice from a gooseberry size tamarind
1 tomato crushed
A pinch of tumeric powder
Salt to taste


Little cut coriander leaves.

Method:

Heat the oil in a mud pot. Add in the ingredients in (A) one by one.
Saute for a second, add in the ingredients in (B).
Saute for a minute well.
Add in the ingredients in (C). Taste and adjust the tanginess by adding little water.
Remove the rasam from heat, when foam forms on the top.
Garnish with the cut coriander leaves.
Give a steaming hot cup of rasam to a person suffering from cold.

Tiru Tamby, here is the nandu rasam. Kugan


NANDU RASAM

250 grms of the crabs claws , smashed
2 tsp oil
½ tsp cumin seeds
2 pips of garlic smashed
1 onion chopped
1 tomato crushed
¼ tsp tumeric powder
Salt to taste


MASALA GRIND TO A PASTE:
2 tbs black pepper, lightly roasted
2 shallots
1 tsp cumin seeds
1 small piece of ginger
2 dried red chillies
1 tbs coriander seeds
Little curry leaves

Method:

Heat oil in a pot, add in the cumin seeds, let them splutter.
Add in the garlic, onion, tomato, saute for a second.
Add in the tumeric powder, smashed crab claws.
Saute well for a minute, add in the ground paste, stir fry well.
Add in enough water and salt, cook for about 10 minutes.
Serve piping hot, all the “ Sali “ will drain out.

TOMATO PULAO

Ingredients:

2 tbs ghee
1 bay leaf
2 cardamom pods
2 cloves
1 inch cinnamon stick
½ tsp aniseeds
1 sprig curry leaves

1 big onion sliced
1 tsp ginger and garlic paste
2 green chillies sliced
3 tomatoes chopped fine
1 tsp red chillie powder
1/8 tsp tumeric powder
½ tsp garam masala powder
6 mint leaves
1 tbs coriander leaves

¼ cup green peas
A pinch of sugar
Salt to taste

1 cup basmathi rice soaked for 10 minutes and drained
1 ½ cup boiling water

Method:

Heat a pressure cooker with the ghee. Add in the seasonings.
Let them crackle for a minute. Add in the onions and ginger garlic paste.
Saute well till the onions turn limp. Add in the green chillies.
Add in also the chopped tomatoes. Stir fry once nicely.

Add in the red chillie powder, tumeric powder, and garam masala powder.
Cook until the tomatoes turn mushy. Add in the mint, coriander leaves.
Add in also the green peas, sugar and the salt.
Now add in the drained rice and the boiling water.

Give a good stir, close the lid and cook on low flame till 1 whistle.
Off the flame, and let the steam subside on its own.
Remove and fluff up the rice, serve with any raitha.
Garnish with roasted cashews and raisins.

NOTE: My cooker needs only one whistle. Please cook as to how you
will pressure cook in your house.

the live crabs are called mud crabs and move in both land and water and called kaandaa nandu in thamizh

Here is a simple tindora/kovakkai chutney...goes well with idli/dosai/chapathi... Had it with kambu idli at a party and it was so good...K stylela udane recipe vaangitten...;)

1. Roughly chop about 20 tindoras, 1 onion/ 1 tomato.
2. Heat oil ans saute the onions,2 dry chillies until brownish. Add the tomato and let it turn pulpy.
3. Add the tindora and saute till cooked. Add lil water(justa a sprinkle if needed and cover with a lid to cook it faster.
4. let cool and grind it along with 10 sticks of coriander(abt 2 whole planst) and about 5-6 sticks of mint, 4 tbsp of grated coconut,salt.

Done!!!

Hello nga TM.....nalla sirichen after reading part of your post...:noteeth:

For cold some of the tips that I follow are below.....:
a) Plenty of warm water...keep sipping on & often.
b) More warm water with smashed ginger in it....boil panni kudichaa more effect.
c) No milk/ no tomato/ no creamy soups......only clear soups with a lot of black pepper.....milagu rasam & potato is all time fav of mine too like madhu sree said ;-)
d) broil (dry roast) black pepper & cummin seeds...1/2 : 1....add 1 & half cups of water...boil it & then let it simmer till the water gets to to 3/4 or if u like more stronger...1/2 cup...ithai sip this water on & often.
e) ginger thogayal without coconut
f) IF you are having non vegetarian food then have it with a lot of black pepper...(this is hear say only)..I would not know.
g) tea varieties la : mint tea/ ginger & lemon/ masala tea (all without milk)
h) 1 teaspoon of pure honey early morning is good too.
I)....most of all gargle mouth with salt water (warm enough) morning & evening without fail....

My dear friends, since I bought the tindoras, I tried the stir fry also.
Here is the recipe. Kugan.



TINDORA STIR FRIED

Ingredients:

(A)
1 tbs oil
1 tsp mustard seeds
1 tsp cumin seeds
3 pips garlic chopped fine
3 shallots sliced
1 sprig curry leaves
1 green chillies sliced


(B)
Mix all the ingredients in (B) and keep aside for 10 minutes
3 cups of tindora cut length wise
1 tsp chillie powder
2 tsp coriander powder
¼ tsp tumeric powder
¼ tsp cumin powder
¼ tsp garam masala powder
Salt to taste

(C)
2 tbs grated coconut
1 tbs lime juice
Little cut coriander leaves

Method:
Heat the oil, add in the mustard and cumin seeds.
Let them crackle, add in the chopped garlic and the shallots.
Saute till little brown, add in the curry leaves and the green chillies.
Stir fry well.

Now add in the ingredients in (B), stir fry well.
Sprinkle little water, cover and let it cook on low flame for 5 minutes.
Keep stirring for some time. Once they feel a bit soft, add in the grated coconut.
Stir fry well, add in the lime juice, mix well. remove and garnish with the cut coriander leaves. Serve with rice or roti.

CARROT CAKE WITH CREAM CHEESE FROSTING

INGREDIENTS
* 330 g grated carrots
* 250 g all-purpose flour
* 350 g white sugar
* 1 ½ teaspoon baking soda
* 1 teaspoon baking powder
* ½ teaspoon salt
* 2 teaspoon ground cinnamon
* ¼ teaspoon ground nutmeg
* ¼ teaspoon ground cloves
* 4 eggs
* 355 ml vegetable oil
* 1 teaspoon vanilla extract
* 1 (8 ounce) can crushed pineapple with juice
* 90 g chopped pecans

FROSTING
* 300 g confectioners' sugar
* 224 g Neufchatel cheese
* 115 g butter, softened
* 6 ml vanilla extract
* 120 g chopped pecans

DIRECTIONS
Preheat oven to 150 degrees C. Grease and flour a 9x13 inch pan.
In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt, cinnamon, nutmeg and cloves. Stir in eggs, oil, 1 1/4 teaspoon vanilla, pineapple and chopped pecans. Spoon batter into prepared pan.
Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

To Make Frosting: In a medium bowl, combine confectioners' sugar, Neufchatel cheese, 1/2 cup butter or margarine and 1 1/4 teaspoons vanilla. Beat until smooth, then stir in 1 cup chopped pecans. Spread on cooled cake.

VEGETARIAN THAI GREEN CURRY

Ingredients:

4 tbs Thai green curry paste
400 ml coconut milk
½ cup water

1 cup Chinese cabbage shredded
½ cup carrot cut into sticks
½ cup red capsicum cut into strips
½ cup button mushrooms sliced
½ cup baby corn cut into fingers
½ cup tofu cubes, that have been pan fried

1 tbs fish sauce or to taste
Little palm sugar to taste
Salt to taste

¼ cup Thai basil leaves
1 fresh green chillie diagonally sliced

Method:
In a pot, add in the coconut milk, water and green curry paste.
Stir well and cook over low heat for about 10 minutes.

Now add in all the vegetables, seasonings and simmer for about 5 minutes.
Cook until the vegetables are cooked and not mushy.
Turn off the heat, sprinkle the Thai basil and the green chillies.
Serve with steaming jasmine rice.


NOTE: You can add in chicken pieces , or sea food if you like.

Kuganka, your tomato pulao came out very super. I did it in a rice cooker. Thanks for the simple yet easy recipe. It will be nice to have one pot meal with a simple poriyal for people who are in a hurry. Take care of your health. Missing you Kuganka.

Well Kugan, let me post a recipe for you. I feel very bad to see your thread stagnant. Cook and post with picture when you come. a friend gave me this recipe.


BREAD CHILLI TOAST

Ingredients:

bread slices 8
onions chopped fine 2
butter 1 tsp
cheese grated 150 grms
green chillie finely chopped 2
capsicum finely chopped 1/2
red chillie powder 1/4 tsp

Method:

Preheat oven to 180 degrees C
slightly saute the onions and capsicum in a pan.
Except for the bread, mix all the ingredients together well.
Spread the mixture evenly over the bread slices.

place the bread slices on to a tray.
set the oven to toast mode.
toast for 5 minutes or till golden brown.
serve with chillie sauce.


Note: sorry kugan I am not good at recipe writing. That's why I always pm the recipe to you.

A fantastic recipe for kadai paneer/kadai veg I tried recently...absolutely heavenly!!!...:drool: I added some milk and a pinch of sugar towards the end...


Ingredients

14 oz. paneer, cut into cubes

1 small size onion, diced

1 small size green pepper (capsicum), diced

Water *

2 bay leaves

For the base

1 large onion finely chopped

1 large size tomato or 2 small size tomatoes, chopped

2 large garlic pods, peeled

1 inch ginger, cut into small pieces

2 green cardamom

1 to 1 1/4 inch cinnamon

1 tsp. kasuri methi (dried fenugreek leaves)-optional

1/4 tsp. ground garam masala (store bought/ homemade)

1/8 tsp. ground turmeric

1/8 tsp. or more kashmiri red chilli powder (optional)

Salt (as per taste)

2 1/2 tbsp. + 2 1/2 tbsp. oil

For the spice mix ( to be ground fine)

8 red chillies broken

1 1/2 tbsp. coriander seeds

Method

1. Bring a pot of water with some salt to boil and switch off. Cut the paneer into cubes and plunge into the hot water. Let it sit for a minute. Drain, cover and reserve.

2. In a sauté pan, add the 2 1/2 tbsp. oil, and once it is hot, add the cardamom and cinnamon, followed by the finely chopped onion, turmeric, garlic and ginger. Sauté at low medium flame until the onion becomes translucent. Now add the tomato and salt.Sauté frequently, until the skin just leaves the pulp from the tomato and the oil starts separating. The longer it takes the tastier the base will be. Just few seconds before switching off the flame, add the garam masala and the kasuri methi. Allow the mixture to cool and grind into fine paste adding about 1/4 cup water (US standard measuring cup) (Make sure it is still thick, no where in the process, the mixture should be thin and runny).

3. In the same pan, add 2 tbsp. oil, add the bay leaves, followed by the ground paste. Add even more water (little though- 1/8 cup or little more) as the mixture is cooking again at low flame. Bring in the onion, green pepper (capsicum), ground spice mix (as needed), kashmiri chilli powder (if needed and for the color) and final touch of salt (if needed). Do not allow the content to become dry. While the mixture becomes thick, add the paneer cubes. Gently spoon the gravy over the paneer. Serve it hot with rotis/ phulkas.

Am sure many knew this recipe, still am posting this as i prepared this 2 days before, thought of posting it :D

Aloo Bonda:

Bajji/Bonda flour - 1 cup
onion - 1
carrot -1
Boiled and peeled potato - 3
green chillies - 3
mustard seeds
chill powder
turmeric powder
oil
salt

Method:

Heat a pan with oil, put mustard seeds, let is splutter, add onion, fry it, add salt, turmeric powder, chill powder, green chillies, fry for about 5 mins.
Add finely chopped carrot then mash the potatoes, add it and give a good mix, keep it in medium for about 5 mins. Now shape the aloo mixture as medium size balls.

In a bowl, add the bajji/bonda flour and add water, mix it well to get a consistency of pourable batter just like idly dosa batter.

Heat a deep pan with enough oil. Once the oil is hot enough, dip the aloo ball in the bonda batter and marinate it well with the bonda batter, drop in the oil.
You can fry for about 5 bondas simultaneously. Transfer the fried bonda to a plate covered with tissues. Let the tissue obsorb the oil.

Serve with tomato or cocunut chutney.
