thanks Nov Anna and K for the steaming cake and banana oats cookie recipes. cha always i have banana at home but not today sad sad. i have the apple sauce too. anyway will buy and make it soon. it is so useful for me i love desserts without sugar. steaming of the cake is interesting to me. and the outcome is mouthwatering.

can the same be done using Yuca K? I havent seen this tapioca in common, but here every supermarket has yuca.

Try out the recipe, it tasted yummy.
Sangeetha, as Rajraj uncle has said, it is the same thing.
They go by different names, you can get them in the Korean Supermarkets.

Well with tapioca, you can cook so many types of dishes.
I simply love the tapioca perattal, you can eat it as it is.
As Rajraj uncle said, you can just boil and eat it.

potato sambol looks mouthwatering. i did ur egg sambol and sothi for this weekend. sothi was mild and the sambol was spicy so both went excellent. but made the sothi with wat ever vegges i had .For health reason my sothi was full of veges but tasted good with the combo.

It goes well with curd rice. Glad you liked the sothi.
You are right, use what ever things you have, need not follow the recipe strictly.

sangeetha: Yuca/yucca is tapioca, also known as cassava. We have tried boiled yuca/tapioca as we do in India! :)

Dear Sangeetha try this tapioca puttu.
Kugan.


TAPIOCA PUTTU

Ingredients:

300 grms tapioca
¼ cup grated coconut
Sugar to taste
Pinch of salt
¼ cup grated coconut

Method:
Peel and grate the tapioca finely.
Using a muslin cloth, squeeze out all the juice.
Discard the juice.

Put the squeezed tapioca in a bowl.
Add the coconut, and the pinch of salt.
Using your fingers, mix them like breadcrumbs.

Now using a iddli thattu, spread little coconut on it.
Now put some of the tapioca mixture on it.
Close and steam for about 10 minutes.
Remove and mix the sugar, your puttu is ready.


Another way which I like is, boil the tapioca.
Mash it with a masher, add in coconut and sugar.
You have an instant snack to eat.

Kuganka, the potato sambal was supero super.
It paired very well sambar rice .
Thanks for the nice recipe.
I think it will make a good filling for the curry puff.

thank you rajraj uncle for the info. million thanks K for a different puttu recipe. i love puttu, idiyappam etc sounds so yummy. internet problem thats why could not log in. how long can yucca be stored ? can i refrigerate it? sorry for such stupid questions.

I wanted to make the banana cookie recipe by Nov but did not have internet to check the ratio so i forgot the almond milk and also did not know the oats ratio. but still it was tasty and yummy. going to make in once again. and i baked it for just few mins as i was craving.

aiyo gulabjamun feedback patha its so tempting to make the potato sambal with sambar sadam combination. and i do not have potatoes . i made the curry leaves kulambu once again. yummy.

Dear Sangeetha, thank you very very much for the nice feed back you give.
You are really motivate me to do more cooking.

Sangeetha, here in Malaysia we get fresh tapioca, we have to peel the skin, put it in a bowl of water to cover it.
you can keep it in the fridge for about 2 days, otherwise the tapioca will slowly turn black and will spoil.

I have seen in US, they give a light wax like coating for the tapioca they sell in the supermarkets.
I have tried keeping in the fridge for about 5 days.

Good you made the recipe given by NOV anneh.

Sangeetha, I love the hot,hot tapioca parattal that I make.
You can just eat it as it is for lunch, or tea. I will post the recipe for you.

HOT,HOT TAPIOCA

Ingredients:
500 grms tapioca cut into cubes
1 big onion sliced
2 tsp chillie powder (more if you like)
¼ tsp tumeric powder
½ tsp mustard seeds
½ tsp aniseeds
1 tbs oil
2 sprigs curry leaves
Salt to taste

Method:

Boil the tapioca with little salt until ¾ cooked.
Drain the water and keep aside.

In a wok add the oil, add in the mustard seeds and aniseeds.
Let them splutter, add in the curry leaves and onions.
Sauté well till the onions turn limp.

Now add in the chillie powder and tumeric powder.
One quick stir, (do not let the chillie burn)
Add in 1 cup of water, let it boil. Add little salt.
Now add in the boiled tapioca pieces.
Keep on stirring till all the liquid is evaporated.
Taste for salt and remove.
You can eat it as it is for lunch.
Very filling and tasty.

My dear friends, you all remember my guest from UK? well she visited her sis-in-law in Singapore.
There they served her sizzling noddles, which her sis in law found in the net.
She got the recipe from her, and I copied it from her. It seems they served it on a sizzling plate.
I did not have one, so I served it in a bowl. Here is the recipe. Kugan



SIZZILING NOODLES

Ingredients:

3 pkts instant noodles
Enough water to boil
1 + 1 tbs of oil

2 tbs butter
6 pips garlic finely minced
10 button mushrooms, quartered
½ a zucchini or cucumber diced
6 cauliflower, or broccoli florets
1 big onion diced
1 carrot thinly sliced

1 cup water
Salt to taste
½ tsp sugar
2 tsp Maggie or ready made seasonings
1 tsp soy sauce or to taste
1 tsp oyster sauce or to taste

5 pak choy or mustard leaves cut into big pieces
1 tbs corn flour }
2 tbs water }


Method:
Heat sufficient water in a pot, add in the noodles, boil till just cooked.
Remove and drain the water, add 1 tbs of oil, mix and keep aside.

Heat butter in a non stick wok, add in the minced garlic, sauté well.
Add in the mushrooms, zucchini, broccoli, onions and carrots.
Stir fry on high heat for 2 minutes, add in the water, salt, sugar,
seasonings, soy sauce, and oyster sauce. Mix well, cover and cook for 2 minutes.

Meanwhile, heat the 1 tbs of oil in a non stick pan. Add in the boiled noodles.
Cook till lightly crisp in the bottom, toss it and cook on the other side till crisp.
Remove to a serving plate.

Now add the pak choy leaves to the cooking vegetables.
Add also the corn flour mixed with the 2 tbs of water.
Cook few minutes till the sauce thickens, pour over the crispy noodles.
Serve hot.

Was always around by people past 4 or 5 days. So all was avasara samayal and had lot of flops. From today yey :-D its going to be Kugans Kitchen at home so all will turn out good.

Kugan thanks for the explanation on tapioca. i always buy at this stage with the black lines. will be carefull.

Dear P.S Tamby, thanks for your inquire.
Tamby, I normally use besan flour as coating for only if I am doing Manchurians, sweet sour tofu and so on.

For shallow frying I do not use any flour.
If you cut the tofu into small strips and fry you can get them crisp.

Otherwise all tofu fried will have a little crisp out side with a soft inside.
Tamby I have taken pictures of different types of frying.
I have changed my pc set, all is new to me.
I will post as soon as I can.

Thanks akka for the info about using corn flour to fry tofu.
I use a lot of tofu in our cooking, as we are vegetarians.

I only use gram, rice flour coating if cooking sweet sour tofu or Manchurians.

At times it is good to have guests in the house. Even though lot of work, there will be happiness.

What did you do for Krishna Jeyanthi?
This time I made a new sweet, coconut laddu. Turn out well.
My new pc and I do not know how to upload pictures.
Have to upload flicker and picasa, before I can do anything.

If you have only little black lines, you can scrape them off.
There is another Malaysian kuih called tapioca binka.
It is baked, very tasty, I will post as soon as I am settled with my pc.

1 1/2 kilo dates is jujube for us to just eat it as it is:smokesmile:

Anyway there are so many recipes with dates, cakes, cookies, halwa, laddu and ect.
We have our simple sweet dates chutney.

Here is how I fry them. Kugan


The first is a soft tofu, it is only good for steaming.
They use it in dishes like mopo tofu

SOFT TOFU:

If you cut it into thin strips, you get crispy tofu.

Gram flour coated frying for sweet sour or manchurians.

At times my children would request, spicy fried tofu. I will just rub chillie powder
tumeric powder, salt, and deep fry it for them.

Thanks Kugan akka, Now I understand what mistake I made.. I was trying to fry "Soft" tofu, no wonder it never worked! :oops:


I guessed that much, that's why I posted a picture of the soft tofu.
Good now you know the difference.
Use also the tip given by our akka for using little corn flour.

I was expecting to see your krishna jayathi spread. But now know that u r learning in your new PC.

I made just 8 vadais and 8 appams. diet. pongal gothsu for breakfast and dinner.

lunch keerai parrupu , salad and valzhakai fry . :( vadai appam lunchkuda varla. breakfastlaye gale.

K one strange Idea in my mind since u people r talking about tofu.

when you pan fry tofu why cant we fry the entire block on all sides instead of cutting them and turning tiny pieces. cutting later after we fry will save some time, but do not know the outcome. :think::think:

when you pan fry tofu why cant we fry the entire block on all sides instead of cutting them and turning tiny pieces. cutting later after we fry will save some time, but do not know the outcome.

Because larger chunk will not fry properly (especially the middle potion) and if you try to fry for longer it may be burnt on the outside while uncooked on the inside

Imm Sangeetha super spread thaan for Krishna Jeyanthi.

I did not do much, iddli and chutney for breakfast. Lunch, sambar, 3 types of veges, payasam and vadai.
For prayers, sundal, kesari, aval payasam, seedai, murukku and coconut ladoo.
I will soon post the recipe for coconut ladoo.

Oh ho, ennama ponnu, eppadi keera, vathiyaaruke kostina?:rotfl::rotfl:
Kannu, if you fry the whole tofu, it will get fried only in all sides.
The middle will be still very soft. Then when you cut into cubes, you cannot get neat slices.
Moreover when you cut into slices the fried tofu, only the top and bottom will be little fried.
So if you cut the slices first, you can stir fry all the sides in a non stick pan.
So kelviyai pararthu kelu kannu, adrasakai, adrasakai.

I remember taking for my aunt, taugeh, tofu, sawi, kuchai and fresh yellow noodles, every time I visit her in Chennai.
They love our mee goreng, so I will take every thing and fry for them there.
I do not know the rules now.

Here is the recipe for coconut ladoo.


COCONUT LADOO

Ingredients:

400 grms coconut grated
350 grms condensed milk
½ tsp cardamom powder
100 grms of roasted almond nips

50 grms desiccated coconut

Method:
Add the coconut into a non stick wok and stir fry on low heat for 5 minutes.
Add in the condensed milk, cardamom powder, and the almond nips.
Cook on a slow fire till mixture leaves the sides of the pan. About 5 minutes.
Remove and cool, butter your hands and roll into small ladoos.
Roll them in the desiccated coconut and serve.

Chinnankkannan Sir, here is a simple dates sauce.
I will post a date cake tomorrow. Kugan


DATES SWEET SAUCE

Ingredients:
(A)
12 seedless dates
3 green chillie
1 tsp cumin seeds
2 tsp coriander powder
2 tsp jiggery
2 tsp ground mint leaves
Salt to taste
Sprinkling of water


(B)
1 cup tamarind juice
1 cup water
Salt to taste

Method:
Add all the ingredients in (A) in a blender.
Grind to a smooth paste.

Now in a wok, add in the ground ingredients.
Add also the ingredients in (B).
Cook on a low flame for about 10 minutes.
Stirring occasionally, remove and cool.
Serve as a sauce for any snack.

But my husband daily used to do some kind of things like this and then repent.

Yesterday by the time i completed the cooking (mochai kurma, brocolli poriyal, salad, rice) my husband was still cooking one poached egg. and it did not turned out good and he dropped some egg yolk on the stove. but he apologized for the time he took and cleaned the stove in the end.

night we went to buy some dark chocolate we were comparing the nutrition of 60%, 70%,85%,and 90% dark chocolate ofcourse 90% had a better nutrition value. I chose 60% for myself and my husband was so proud to chose the healthy one he chose the 90. mine was so good, his chocolate was literally i am just getting some bad words. vaila vekka mudiyala.

daily sir experiments thaan . thats why he is scientist, i do not take risk at all.

K thaks for the coco ladoo recipe. ur menu is as expected. murukku sedai nenaithale vai oorudu. thanks for the dates sauce recipe i also needed this i like this sauce on top of porikadalai along with onions tomatoes and some green sauce.

PS Thamby earlier i used to eat 10 vadai and 5 appam single hand, now i shared the 8 and 8 with my hubby. I know its a slow poison now but trying to overcome these cravings. this was after a long time (3 months). i learnt now to make as little as 1/2 cup payasam kudicha feelinge erukadu.

A little dense cake, because no eggs. Thanks Kugan.


DATE CAKE

Ingredients:

20 seedless dates
¾ cup milk

¾ cup sugar

½ cup vegetable oil

1 cup all purpose flour
½ tbs baking powder
Sieve both together twice, and keep aside.

Method:

Preheat the oven at 170 degrees C for 10 minutes.
Grease and line a baking pan with parchment paper.

Put the dates in a pan with the milk, heat for about 5 minutes.
Remove and cool, the dates will become soft.

Now put the sugar in a blender, add in the milk and dates.
Now blend till smooth.

In a bowl pour the vegetable oil. Add in the ground paste.
Use a fork and mix well, till well blended.
Now add the flour little by little to the mixture, and mix gently.
Pour into the prepared pan.

Bake in the oven for about 20 minutes, or till the cake is baked.
Test it with a cake tester. Remove and cool before slicing.

Dear friends, went to friend's house for valla kaapu. There they served 5 types of mixed rice.
For white rice they served a type of brinjal kulambu with lots of garlic. I thought just brinjal kulambu.
But the taste was abaaram, viduvenah, sweet talked and got the recipe from the caterer.
The secret lies in the masala. Here is the recipe. Kugan


ARACHIVITTA BRINJAL KULAMBU

Ingredients:

Oil 3 tbs
½ tsp mustard seeds
¼ tsp asafetida powder
½ tsp funugreek seeds
1 sprig curry leaves
2 green chillies, slit into 4 and cut across

1 big onion chopped
15 garlic pips
1 big tomato chopped
¼ tsp turmeric powder
300 grms brinjals cut into big cubes

Roast and grind to smooth paste:
2 tsp oil
2 tbs coriander seeds
1 tbs channa dal
1 tsp aniseeds
½ tsp black pepper corns
10 dry chillies broken
½ cup grated coconut
1 tsp kas kas
Roast all the ingredients separately and grind to a smooth paste using little water

1 lemon size ball of tamarind, extract 2 cups of juice
Salt to taste
1 tsp jiggery

Method:
Heat oil in a pot, add in the mustard seeds to splutter.
Add in the asafetida powder, funugreek seeds , curry leaves and the green chillies.
Now add in the onions, and garlic and saute till the onions turn little limp.
Now add in the tomato, turmeric and cook till the tomatoes turn mushy.
Add in the cubed brinjal pieces, stir fry nicely, cover and cook for 5 minutes.

Now add in the ground masala, and stir fry again for about 3 minutes.
Add in the tamarind water, and enough water to make a thick kulambu consistency.
Add in the salt and sugar, cook on medium flame till oil starts separating.
Remove and serve on steaming rice with a dollop of ghee.

KUIH ANGKOO


Ingredients:

Outer Layer:
200 grms glutinous flour
150 grms orange sweet potato skinned and cubed
1 tbs sugar
8 tbs oil
80 ml hot water

FILLING:
160 grms skinned mung beans (pasi paruppu ) soaked for 3 hours.
90 grms castor sugar
A pinch of salt
5 tbs oil

Some banana leaves cut into rounds

Method:
Steam the cut sweet potatoes until soft. Mash while still hot, add in the glutinous flour.
Add in the sugar and salt and mix until it turns crumbly.
Add in the oil and the hot water, gradually knead into a soft dough.
Cover the dough with a clean kitchen towel and leave aside.


Steam the soaked mung beans for 20 minutes, or till they are soft.
Remove the steamed beans and place in a food processor. Add in the sugar, salt and oil.
Process into fine paste then remove and shape into small round balls.

Shape small balls from the skin dough into rounds. Flatten each piece and place a small ball of the mung filling in the centre. Wrap up to conceal the filling and seal.
Dust lightly with extra glutinous flour, press the balls into the plastic mould.
Knock out the angkoo and place on the round banana leaf.
Steam over medium heat for about 10 minutes. Brush the steamed angkoo lightly with oil.


NOTE: I did not have a mould. So I just flatten the round kuih on the banana leaf.
Used a fork and made patterns all around.

Enjoy Madhu anneh.

Ok Ok I can understand, here is the halwa recipe. Very very simple


DATES HALWA

Ingredients:

500 grms dates, nicely chopped
Water to cover the dated

200 grms sugar
Water to just cover the sugar
2 tbs chopped almonds
200 grms ghee

Method:

Boil the dates in the water till they become mushy.
Remove and cool, blend it till smooth.

Add the sugar and little water in a thick bottomed wok,
Cook on low heat till the sugar melts and there is “ one kambi patham”
Add in the ground dates, and the almonds. Cook on low heat stirring all the while.
Add in the ghee and cook till the halwa leaves the sides.
Remove on to a greased tray. Let it cool before cut.


NOTE you can sprinkle, little pista like a young girl slowly smiling at you.:rotfl::rotfl:

O.K friends, the first pineapple was made into pineapple lassi.
The second was made into pineapple sambal, goes well with ghee rice and things. Kugan

PINEAPPLE SAMBAL

Ingredients:

1 tbs oil
2 pips garlic smashed
1 big onion sliced
1 tbs of chillie paste
300 grms pineapple cut into small pieces
Sugar to taste
Salt to taste

Method:

Heat a non stick pan with the oil.
Add in the smashed garlic and saute well. Add in the sliced onions.
Saute till slightly limp. Add in the chillie paste.
Cook on slow fire till the raw smell goes.

Add in the pineapple slices, sugar and salt.
Cook for few minutes. The pineapple will ooze out some juices.
Stir fry for a moment and remove.
Goes well with any pulao or ghee rice.

Long Weekend here went for a short trip with friends and family. K adukula evlo recipes. Angkoo kuih looks different and healthy sweet. K can this one be made with only orange sweet potato? I doubt if I have come across one.

Try this simple Lima beans curry. Kugan


LIMA BEANS CURRY

Ingredients:

2 tbs ghee

To Grind To A Paste:
2 big onions
6 dried red chillies
3 tsp coriander seeds
1 tsp cumin seeds
2 tsp poppy seeds
5 black pepper corns
3 cloves
½ inch cinnamon stick
5 pips of garlic

4 tomatoes, made into puree

1 cup of dried lima beans, soaked over night and boiled.
Salt to taste

Method:
Heat the ghee in a non stick pan. Add in the ground paste.
Sauté well till the raw smell goes.
Add in the pureed tomato, the boiled lima beans.
Add in salt and cook for few minutes till you have a thick consistency gravy.
Remove and serve.

Let me visit the korean super market for next week shopping during the weekend. I never new Malaysian Korean Chinese had these many varieties before coming to this forum. I just knew their sticky rice cake which they sell in the chinese markets also their stuffed steamed buns.

Why not uncle, sweet dates filling for the kozhukkattai.
Just chop up the dates finely, add in little roasted coconut, little cardamom powder.
mix every thing well, it is your filling already.

What you do is, add in the green chillies either whole or paste in the recipe.

SOYA MATE SAMBAL (Malaysian )

Ingredients:

3 tbs oil
2 pips of garlic smashed
3 big onions sliced
1 medium tomato chopped

15 dry red chillies, soaked
3 shallots
2 pips garlic
All ground to a fine paste

100 grms soya mate soaked, boiled and squeezed dry
1 tbs tamarind paste
1 cup of water
Salt to taste
Sugar to taste

Method:
Heat a wok with the oil. Add in the smashed garlic, let it brown a little.
Add in the sliced onions, and saute till it turns slightly brown.
Add in the chopped tomato and cook till mushy.

Now add in the ground paste and stir fry well till oil separates.
Add in the boiled soya mate, stir fry well.
Add in the tamarind paste, and the 1 cup of water.
Add also the salt and sugar, let it simmer and thicken again.
Remove and serve with rice, bread and things.

I added the soya mate in this sambal. Kugan



SEENI SAMBOL (Sri Lankan )

Ingredients;

2 tbs oil
1 inch cinnamon stick
2 black cloves
2 cardamom pods
1 sprig curry leaves

1 pip garlic grated
¼ tsp ginger grated
50 grms of soya mate, boiled and squeezed and cut into small pieces

250 grms big onion chopped
2 tbs red chillie powder
2 tsp tamarind paste
1 cup of water
Sugar to taste
Salt to taste

Method:

Heat the oil in a wok, add in the cinnamon, cloves, cardamom pods and curry leaves.
Now add in the grated ginger and garlic, stir fry once.
Add in the soya mate and stir fry well for a minute.
Add in the chopped onions and saute well till the onions turn golden.

Add in the chillie powder, tamarind paste, 1 cup of water.
Stir well and let it cook on medium heat, add also the sugar and salt.
Mix well, once the sambol thickens, remove.

Kannan anna, we have ulunthu puranam, which is not sweet.
Here is the recipe:




ULUNTHU POORANAM

Ingredients:
50 grms whole white ulunthu
20 grms toor dal
10 grms channa dal
3 green chillies chopped
Little asafoetida powder
Salt to taste

2 tbs gingelly oil
½ tsp mustard seeds
2 tsp grated coconut
1 sprig curry leaves.

Method:
Soak the 3 dals for ½ an hour.
Drain well, and grind to a thick coarse paste,
with the green chillies and salt .

Heat a non-stick pan with the oil.
Add in the mustard seeds and curry leaves and asafoetida
When they splutter, add in the coconut and the ground paste.
On medium flame, keep on stirring the paste, till it is cooked
and becomes a bit uthir uthir.
Remove and use it as pooranam.


THE DOUGH:
Heat 2 cups of water in a pan. When it starts bubbling,
Add the oil and the rice flour in a slow stream, stirring
Continuously. When all the water has evaporated and
The dough thickened.Remove and let it cool.
Knead the cooled dough nicely.
Grease the palm of your hand. Take a little dough
And shape it into a cup. Place enough fillings
In the middle of the cup, and shape it like a curry puff.
Do this to the rest of the dough.
Steam for about 20 minutes. Serve warm.

Note: You can even shape it like a ball, with a small
Cone on the top. It is called Modakams.

Why do you have to squeeze the Soya chunks once it has been boiled, I know you do that to get rid of water content, but does it taste differently without the water?

செய்முறை: பச்சைக் காரட்டை அந்த மக்கில் உள்ள தண்ணீரில் நன்கு அலம்பிக்கொள்ளவும்.. தண்டுப்பகுதியை வெட்டி விடலாம்
உப்பு + மிளகாய்ப் பொடியைத் தேவைக்கேற்ப - அந்த கால் பக்க நியூஸ்பேப்பரில் போட்டு கலந்து வைத்துக் கொள்ளவும்
இப்போது அந்தக் காரட்டை மி.பொ.உப்பு காம்பினேஷனில் தொட்டுக்கொண்டு நேரடியாகவே சாப்பிட்டு விடலாம்..

Soya chunks, soya meal maker, soya balls, soya meat, soya mate ellaam onnu thaanpa.
Coffee mate mattum o.k, annal soya mate kuudaathaa:banghead:


O.K lets come to the point, P.S Tamby, the soya mate, aiyoh! soya meat will be hard dried thing.
It has a type of odour, so what I do is, boil the soya meat with little smashed garlic, crushed ginger, 1 small stick of cinnamon.
Boil for about 10 to 15 minutes, cool and wash it in two changes of cold water.
each time you squeeze out the water, wash again and squeeze out the water.
The odour will be gone and you will have the nice smell of ginger and garlic.

Madhu anneh and Kannan anneh, good news for both of you.

Madhu anneh wanted new varieties of kozhukattai.
Kannan anneh wanted uppu kozhukattai, I spoke to my aunt in India.
She told me, use broken wheat rava, with green chillies, grated carrot, chopped coriander leaves,
little coconut gratings, and our usual seasonings, that is mustard seeds.
Boil water with the ratio of 1 rava to 1 1/2 water, make into upma.
When little warm shape into pidi kozhukattai, and steam.
Have it with kara chutney.

So 1 kallu, rendu mangga:pink::pink:

kugan: You are welcome ! We were shopping in a natural/organic food store and I saw date-coconut-nut (almond) rolls. I thought that a softer date-coconut-almond roll would become date halwa! :) Then came Vinayaka Chathurthi. The rolls minced became pooraNam! :lol:
They make date halwa in North India using shredded almonds and dates ( From a cookbook I browsed yesterday in a book store.)

My recipe: Get kadalai mittaai. Crush it to pieces and add some warm water. Use it as pooraNam ! :)

Sangeetha: If you consume too much carrot your skin will turn yellowish. Thia is mistaken for jaundice (liver disease). But, jaundice also truns your eyes (eye white) yellowish. Carrot does not. If your skin turns yellowish have check up to be sure!

That reply was towards Raj uncle, he oftens kindalfying me as the "Real" paramashivan (lord shiva) hence I was joking around with him saying Lord Ganesh needs to go on a diet, so no kuzhukattais for him nu :) That's all!

Having a very bad flu with high temperature. Temperature rai thalli vaithu had to prepare for the prayers.

Made little items only, channa dal puranam kozhukkatai, coconut groundnut modak.
roasted, par boiled rice and moong dal pidi kozhukkatai, and ammani savoury kozhukktai
lemon rice, coconut rice, puli saatham, ponggal and sundal.


Body is begging for rest, so I need few days to recover.

aiyo why did u stress out so much K with flu. I did uppu (urad dal stuffing) and vella kozhukattai (coconut jaggery). aduke kitchen was in reverse order at the end of pooja. then cleaned the kitchen for 2 hrs. Defintely lord vinagayar will cure your flu soon. Pls take care of your health visit the Dr.

Simple Nool Kol Kootu Recipe:

Nool Kol - 2 (cut into medium size cubes)

Moong Dal - 1 cup boiled with little turmeric and 1 1/4 cup water

Jeera - 1/2 tea spoon

coconut - 3 tbl spoon

red chillies - 5

For seasoning - little mustard seeds , urad dal, curry leaves, perungayam.

Method:

Boil the cut nool kol with half cup water, little salt and little turmeric, once its cooked 90% add the cooked moong dal, mean while grind the coconut, red chilles and jeera to a thick paste with just little water and this paste to the boiling kootu and mix thourghly. let it simmer for about 4 mins then turn off.

season with the given ingredients once you turn off the kootu.

Mix rice with cheese and spices/herbs of your choice. Spread it out evenly on a non stick skillet. Brown one side, then flip over and brown the other side. Enjoy!

Simple Rasam For Kugan

Tomatoes - 3

Dal Water - 1 cup (optional) (2 tsp boiled dal mixed with 1 cup water)

Garlic - 2, Pepper - 1 tsp, Jeera - 1 tsp, Curry leaves - 5 (crush all of these coarsely without water)

Turmeric - little, salt as per taste.

Seasoning - Ghee (Compulsory) , Mustard seeds - 1/2 tsp

Method

Boil water nicely and add the three tomatoes close with lid and turn off the stove.

After 10 mins remove the tomatoes and grind in mixer. Do not through the water. In the same water mix the crushed tomatoes add some more water or dal water as per required consistency.

Add salt turmeric check taste . In low medium heat, boil this again. meanwhile season mustard seeds in ghee turn off stove and add the coarse paste of crushed garlic,pepper,jeera, curry leaves . Mix well add it to the rasam once you just see one bubble remove the rasam and serve it hot with rice or as soup. If made right there will be nurai towards the end. rasam should not boil like sambar or other gravies. Just one boil.

A simple recipe for Madhu anneh, since he bought agar agar from Malaysia.:-D


DOUBLE LAYER AGAR AGAR

Ingredients:

FIRST LAYER:


7 grms agar agar powder
80 grms sugar
¾ cup milo
1 ¾ cups of water


SECOND LAYER:

11 grms agar agar
80 grms sugar
1 ½ cups of water

1 can evaporated milk

Method:

In a pot, add in all the ingredients of the first layer.
Now cook on low flame and bring to a boil.
Keep stirring till the sugar and agar agar powder are dissolved.
Rinse a mould or container, pour the mixture, and allow to set.
Once set, take a fork and lightly scratch the surface of the set agar agar.

Now for the second layer, mix the sugar and agar agar powder in a pot.
Add in the water and bring to a slow boil stirring till sugar and agar agar are dissolved.
Now stir in the evaporated milk, do not let it boil, remove.
Gently pour over the milo layer, chill till set.
Cut into shapes and serve.

We do not celebrate Onam, but I always cook the Kerala dishes on the Onam day for my family.
This year very few items only. Kugan.


pumpkin erissery, avarakkai thoran, cucumber tayir patchadi, inji puli,

appalam, vadai, rice, avial, paruppu, ghee, banana and moong dal payasam.

Kannan anna, first we make the chakka varatti.



CHAKKA VARATTI

Ingredients:

4 cups of chopped ripe jackfruit flesh
¼ cup water

2 cups of jiggery
Little water

1 cup ghee
¼ tsp cardamom powder


Method:

Pressure cook the jackfruit flesh with the water till it becomes soft.
Let it cool and grind it to a smooth paste in a blender.

Dissolve the jiggery in little water, heat up till all the jiggery is dissolved.
Filter and remove the impurities from the syrup.

Now add the syrup and the blended jackfruit flesh in a pot.
Cook on medium heat till the water content is reduced.
Keep on stirring, to avoid getting burnt.

Add the ghee little by little and the cardamom powder.
Continue to stir till you get a dark brown colour and thick jam.
Remove and allow to cool.

Then we make the Chakka Pradhaman.



CHAKKA PRADHAMAN

Ingredients:

1 cup chakka varatti
1 ½ cups thin coconut milk
½ cup jiggery, made into syrup (or as to taste )

Little cardamom powder
½ cup thick coconut milk

1 tbs ghee
5 cashew nuts broken into halves
10 raisins
2 tbs coconut sliced into small pieces
All roasted in the ghee.


Method:

In a thick bottomed pot, add in the chakka varatti, along with the thin coconut milk.
Keep stirring so that the chakka mixes with the coconut milk, and becomes liquid.

Add the jiggery syrup to this mixture and simmer until it turns thick.
Keep stirring continuously to make sure that the bottom is not burnt.

Now add in the cardamom powder, and the thick coconut milk.
Stir nicely, do not allow to boil. Remove from the stove.

Heat a pan with the ghee, add in the cashews, raisins, and the coconut pieces.
Roast till golden and add to the chakka pradhaman.
Serve and enjoy.

போன சனிக்கிழமை மாங்காய் இஞ்சி, பச்சை மிளகு கிடைத்தது..அதில் வீட்டில் ஊறுகாய் செய்தார்கள்.. நன்னாயிட்டு இருந்தது..

Here Rose, a simple Chinese stir fry recipe, with easy to get ingredients.


TOFU WITH BRINJAL


Ingredients:

1 tbs oil
1 long purple Chinese brinjal
Cut the brinjal in half and diagonally slice it in ½ thick pieces

1 tbs oil
3 pieces of firm tofu
½ tbs of cornflour
Little dark soy sauce
Little light soy sauce
Cut the tofu into fingers, marinate with all the ingredients, except the oil.



2 tsp oil
5 pips of garlic chopped
5 dry red chillies, cut into ½ inches in length
2 big onions , thickly sliced in half moon shapes.


2 tsp vinegar
1 tbs light soy sauce
1 tbs mushroom sauce
2 tsp chillie sauce
¼ tsp sugar
Salt to taste
½ cup of water
Mix all the ingredients in a bowl.


1 tbs roasted sesame seeds

Method:
Heat 1 tbs of oil, and saute the brinjals on medium heat. Once they are soft, little brown
on both sides, remove to a plate.

Heat the another tbs of oil, saute the tofu pieces, till they are little crisp on both sides. Remove and keep aside.

Heat the 2 tsp oil, add in the chopped garlic, saute till lightly brown.
Add in the cut red chillies, stir fry a little. Add in the thickly cut onions.
Fry till the raw smell goes and the onions a little limp.
Lower the heat, add in the fried tofu and the brinjals, add in the mixed sauces.
Stir fry gently, taste for the flavor, remove.
Sprinkle with the roasted sesame seeds, serve hot.

Another simple dish.

Simple Murngai Keerai Curry

Drumstick Leaves - 250 gms

One Big Onion

2 garlic finely chopped

3 red or green chilles

For Seasoning - Little mustard seeds, jeera, urad dal.

in a pan without any oil put the washed leaves and cook them thoroughly add very little water if needed. Once it is done remove it in a plate. In the same pan put oil season the mustard jeera and urad dal. add the chilies and garlic fry till they sizzle then add the onion and required salt. when the onions slightly browns add the precooked leaves to the pan fry for 5 more mins and serve with white rice.

I made your Noodles with red sauce for dinner. Turned out so yummy. K when ever I make your malaysian or chinese or thai dishes I get so much appreciation. I really thank you from bottom of my heart. Thanks for those wonderful recipes. I also need some more stir fry noodles recipes. I already have 3 more stri fry noodle recipes to try from yours so avasram illa. Take your time. Do you know something using rice noodles (medium width or Large width)

Hi K,

Today I made breakfast and lunch...

I made Idly and onion+tomato chutney.

Lunchkku paruppu, arai keerai poricha kuzhambu, pepper rasam, potato fry, curd.

For dinner am gonna prepare Brinjal tofu as side dish. I'll let you know the result soon(Kandippaa nalla thaan irukkum) :D.

Kannan anna, I was looking high and low for the yericha keerai kulambu recipe.:mrgreen:
Oh! palaya kulambu thaanaa?

My great grandmother, used to have an earthen pot. She will pour the remainder kulambu into the chatty.
She will do that every day for a week, but will heat up the contents daily.
After a week, the whole mixed kulambu will be heated until it becomes thick, and oil separates from the kulambu.
The sunda kulambu will be served on steaming rice. The taste will be abaaram.
Nobody does that nowadays. They say bad for health.

We all love drumstick leaves, I cook it at least once a week.
Good source of iron.
I too cook the same way like you, once in a way add little coconut gratings.
Once try seasoning with little ghee, imm very tasty.

We do a lot of those, as we have to pack lunch for our school going children.
I will soon post recipes using, maggie noodles, beehoon, kueh teow, and yellow mee.

All kinds of keerai's are my favourite.
Very glad that the tofu brinjal dish came out nice for you.

CARROT POTATO PATTIE

Ingredients:

1 cup potato shredded
1 cup carrot shredded
3 tbs chopped coriander leaves
1 big onion chopped
5 tbs rice flour
3 tbs besan flour
¼ cup evaporated milk
Salt to taste
Little black pepper powder

Water if needed

Method:
Combine all the ingredients well. It should be little thick like idli consistency.
Heat a non stick pan with little oil.
Spoon little mixture, using a ladle. Spread it to about 3 inches rounds.
Drizzle little oil around them. Cook on medium heat until light brown.
Then gently flip it over and cook the other side for 2 minutes.
Remove and serve with tomato or chillie sauce.

Dear Sangeetha, here is your fried Maggie Mee.



FRIED MAGGIE MEE

Ingredients:

3 packets of Maggie Instant Noodles, curry flavor

1 tbs oil
2 pips garlic smashed
2 shallots sliced
1 tsp chillie paste

¼ cup carrots cut into sticks
¼ cup cabbage cut into sticks
¼ cup mustard greens, only leaves sliced
2 tofu puffs cut into big pieces
2 wedges of tomatoes cut into halves


¾ the sachet of the seasoning that comes with the noodles
2 tsp light soy sauce
1 tsp thick soy sauce
Salt to taste

To Garnish:
Little spring onion cut into pieces
Fresh red chillie sliced
Little fried onions
1 small lime

Method:
Blanch the Maggie noodles in boiling hot water for just 1 minute.
Remove from water and drain well and loosen up with a fork.

Heat the oil in a pan, add in the garlic, and saute till nice aroma comes.
Add in the shallots and the chillie paste stir fry well.

Add in the carrots, cabbage, mustard greens, tofu puffs and tomatoes.
Stir fry well on high heat, let the vegetables cook a little.
Add in the drained noodles, the seasoning, both the sauces and salt.

Stir fry nicely so that all the the spices and veges are nicely mixed with the noodles.
Remove and garnish with the spring onions, red chillie, and fried onions.
Serve hot with the little lime.

NOTE: Some people like to add a little tomato sauce or chillie sauce.

Ingredients
Crust
2 cups finely crushed graham crackers
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1 pinch salt
6 tablespoons unsalted butter, softened
Filling
4 packages (8 oz each) cream cheese, room temperature
1 1/3 cups sugar
2 teaspoons vanilla
1 pinch salt
1 cup sour cream
1 cup heavy cream
4 large eggs
1 each of liquid food colors (blue, yellow, green, red)


Directions
1 Preheat oven 350 degrees. Before you get started with the crust, make sure your 9 inch springform pan is water tight. I do this by carefully wrapping a few layers of foil on the outside of the pan, so water cannot get into the pan. Be careful not to rip the foil or water will get into your cake and ruin it!
2 Mix crushed crackers, 2 tablespoons sugar, the cinnamon and salt together in a bowl. Then mix in butter with your clean fingers, until crumbs are pea sized.
3 Press all of the graham cracker mixture into the prepared springform pan. Press it down firmly in the pan. I like to use a measuring cup for this, which makes it easy to get around the edges. You should have an even, flat crust.
4 Bake the crust for 10 minutes on a low oven rack. Remove from the oven, and cool completely before continuing. Turn oven temperature down to 325 degrees.
5 To make filling, cut cream cheese into pieces and add to a mixing bowl. Whip until smooth, maybe 4 minutes. Then add 1-1/3 cups sugar, and continue to beat until smooth again, another 4-5 minutes. Next, add vanilla, salt, sour cream and heavy cream; beat until smooth. Add in 1 egg at a time, beating briefly between each egg.
6 Once the mixture is well combined and very smooth, divide evenly into 6 dishes. Add food color to each dish to get the desired colors. (Red = 25 drops of red, Orange = 18 drops yellow + 6 drops red, Yellow = 18 drops yellow, Green = 18 drops green, Blue = 18 drops blue, Violet = 18 drops red + 12 drops blue)
7 Pour colored mixtures into cooled crust. Start with red filling, and slowly pour it right in the center of the crust. Continue to build the rainbow by pouring the fillings directly in the center. This will create layers so that each slice has some of each color.
8 Place cheesecake into a baking dish on oven rack, and fill baking dish with boiling water about 1 inch up the side of the springform pan.
9 Bake at 325 degrees in the water bath for 1 hour and 40 minutes to 1 hour 50 minutes or until set but still jiggles slightly 2 inches from the edge. If cheesecake begins to brown on top, cover loosely with foil during last 5 minutes of baking.
10 Turn off the oven, open the oven door a crack, and let the cake cool in the oven for 1 hour. The slow cooling will help it not crack.
11 Then loosely wrap the dish in foil so the foil isn't touching the top of the cake and refrigerate for at least 4 hours.
12 When ready to remove cake, run a clean narrow knife around the edge of the dish, remove the foil, unlock the spring, and carefully lift off the outer ring.
13 Serve either alone or with a cherry/raspberry sauce. It's so rich and creamy that it really doesn't need a topping.
