Home Made Cappuccino

Ingredients-
- Skimmed milk
- Sugar
- Fresh strong coffee.

Method-
1) Brew coffee.
2) Combine sugar with the milk and microwave for 1 -2 minutes.
3) Add the heated milk and sugar to your blender and blend for one minute or until foam appears.
4) Pour coffee into cappuccino cup and add the heated froth on top.
5) Sprinkle with chocolate powder.

why is this kitchen so quiet? :roll:

here is an easy and quick recipe, using the microwave:



Grate two cups of carrot and add two tablespoons of ghee. Microwave for two mins. Add half cup evaporated milk to this and microwave for eight mins, stirring every now and then. Cook till milk is absorbed and the ghee starts separating. Add one cup (or less, if you prefer) sugar and some cardomon powder, together with almond slice. Microwave for a further one minute or so, until you get right consistency. Your carrot halwa is now ready!

Gulabjamun, I have not forgotten you. Here is the recipe for methu vadai.
I am not good in step by step, anyway lets see how it goes.

METHU VADAI

Ingredients:

2 cups whole urad dal soaked for 2 hours
Salt as needed

1 big onion chopped fine
2 green chillies chopped fine
¼ inch ginger chopped fine
5 curry leaves cut fine
2 tbs coriander leaves chopped fine

Oil for frying

Method:
Wash the urad dal and soak for 2 hours.
Drain the soaked urad dal well.
Now in a grinder grind the urad dal to a smooth paste.
Add the needed salt, so that it will loosen up the dal.
Just sprinkle water as you grind, the batter must be fluffy.

Transfer the ground urad dal to a bowl.
Add the rest of the chopped ingredients, mix it really well.
You can leave the mixture in the fridge for about ½ an hour.

While making the vadai, keep a bowl of water near you.
Just wet your hand, before making each vadai.
Take a medium ball sized batter in your hand, and place it on a plastic bag.
Just pat the batter slightly and make a hole in the centre.

Heat oil in a wok, just carefully slip the vadai into the oil.
The oil should be hot, but not too hot.
Keep the flame in medium, flip it over and fry till golden brown.
Drain it in a kitchen towel. Serve with chutney or sambar.

NOTE: The vadai should bounce up as soon as you slip it in oil.
That’s the correct patham.
Some like to add little crushed black pepper in the batter.

O.K here is Lady's Finger In Curds.
Lady's Finger:slurp::slurp:


LADY’S FINGER IN CURDS

Ingredients:

(A)
1 tbs oil
1 tsp mustard seeds
½ tsp cumin seeds
1 tsp urad dal
2 red chillies cut into small pieces
1 sprig curry leaves
A pinch of asafetida powder

1 big onion sliced fine
1 tsp ginger garlic paste
1 tsp garam masala powder
1 tsp red chillie powder
1 tsp coriander powder
¼ tsp turmeric powder
½ tsp amchur powder
A big pinch of kasuri methi leaves

2 ripe tomatoes finely chopped
5 cashew nuts +
1 tbs grated coconut, ground to paste
½ cup yogurt, beaten well
A pinch of sugar
Salt to taste
½ cup of water, little more if needed

3 cups lady’s finger, dried and cut into small pieces +
1 tbs oil, shallow fry the lady’s finger till light brown.
Remove and keep aside.

Method:
Heat a non stick wok with the oil. Add in all in (A)
Sauté for a second, add in the onions and stir fry well.
Add in the ginger garlic paste, stir fry again.
Add in all the dry spices and stir fry well.

Add in the chopped tomatoes, cook till it is mushy.
Add in the coconut cashew paste, beaten yogurt, sugar and salt.
Add in ½ cup of water, stir well, simmer the gravy and cook for 5 minutes.
Add in the shallow fried lady’s finger, mix well. Cook for 4 minutes.
Remove and serve with rice or roti.

BTW... naanga nari range-ukku poga vendam. Kuganji can provide any number of vadais .. :slurp:

I will add water for easy grinding, than add rice flour to make it thick.
Apuram, the vadai will be so hard.

Kugan"s spread looks soo yumm and can I have the recipe of suji fruit cake?
I made melting moments cookies from joy of baking website...Attaching the picture..
It came out soo yumm but sinful with 1 cup of butter:-)
Here is the recipe



Recipe courtesy:Joy of baking

Ingredients:

Allpurpose flour - 1 1/2 cup

Corn Starch - 1/2 cup

Butter - 1 cup softened at room temperature

Icing sugar - 1/4 cup to mix in and another 1/2 cup for topping

I made my own by grinding regular sugar in blender.

Vanilla extract - 1 tsp

Method:

In a medium sized bowl whisk together the flour, cornstarch and salt.

In the bowl , beat the butter and sugar until creamy and smooth (about 2 minutes). Beat in the vanilla extract. Add the flour mixture and beat just until incorporated.

Cover and refrigerate the batter for an hour or two, or until firm.

Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Line two baking sheets with parchment paper.

When batter is firm, form into 1 inch balls and place the cookies on the prepared baking sheets, spacing about 1 inch apart. Bake for about 10 - 14 minutes or until the edges of the cookies just start to brown. Remove from oven and place on a wire rack to cool for about 3-5 minutes.

Transfer the cookies to a wire rack that is placed over a sheet of parchment or wax paper. Put the confectioners sugar in a fine strainer or sieve and sprinkle the tops of the cookies with the sugar.

Actually it is easy to make vadai, you only need little practise.
I do not add anything, but I have heard that people use, rice flour, cooked rice,
and things while grinding the batter.

Dear Ramrish, so nice to see you and your post.
We all know that you are a very busy mum.
We hardly have time for anything, once the children start schooling.
How is the little one coping with school?

These cookies have so many names, they do melt in the mouth.
I usually make them for the festivals.

A simple apple cake, recipe by my neighbour Hannah.

APPLE CAKE

Ingredients:

First Layer:
2 green apples, skinned, cored and sliced
½ tsp cinnamon powder
½ tsp Nutmeg powder
1 tsp lime juice
4 tbs brown sugar
Mix every thing with the apple and keep aside

Cake:
1 cup all purpose flour
1/3 cup castor sugar
½ tsp baking powder
½ tsp baking soda
A pinch of salt
1 tsp vanilla essence
3/3 cup milk
¼ cup melted butter

Method:
Preheat the oven to 170 degrees C.
Grease an 8 inch tin and line with parchment paper.
Now lay the apple slices neatly round the tin.

In a mixing bowl add all the ingredients for the cake.
Mix well, but do not over mix.
Pour the batter over the apple slices.
Bake in the oven for about 40 minutes or till the cake is done.

Let it cool in the tin for 10 minutes, then invert on a plate.
Serve the cake plain or with rich cream

EGGLESS SUJI FRUIT CAKE ( SEMOLINA)


250 grms butter
525 grms ( 1 can) condensed milk
water ( fill the empty condensed milk tin)

200 grms chopped fruits

450 grms suji
2 tbs all purpose flour

1 tbs baking powder
1 tsp vanilla essence

METHOD:

Place the butter, condensed milk and water in a pot.
Stir and bring to a slow boil.
Remove from the heat and stir the chopped fruit.
Allow to cool to lukewarm.
Stir in suji, and the flour and let it soak in the mixture for 15-20 minutes
to plump up the grains.
Stir in the baking powder and the essence.
Turn mixture in a prepared pan and bake in preheated oven
At 175oC for 45 minutes, or till cake is done.

How is the mango season going in India?
Here is a curry with ripe mango.

RIPE MANGO CURRY

Ingredients:

1 tbs oil
½ tsp mustard seeds
1 sprig curry leaves
2 dry red chillies cut into pieces
2 pinches of fenugreek powder

(B)
1 onion chopped
3 green chillies, slit into 4 and cut across
1 sprig curry leaves
1 tsp Kashmir chillie powder
¼ tsp turmeric powder
2 medium ripe mangoes, skinned and sliced to pieces, add in the seeds too.
½ tsp sugar or to taste
Salt to taste
1 cup of water

¼ cup grated coconut
¼ tsp cumin seeds
2 pips of garlic
Add little water and grind the above to a fine paste.

Method:
Heat a non-stick wok, add in the oil and the seasonings.
Sauté for a minute.
Add in all the other ingredients in (B)
Mix nicely and allow, to come to a slow boil on medium flame.
Add little more water if needed.

When the mango is cooked, add in the ground paste.
Stir well and cook for about 3 minutes.
Remove and serve with rice.

Blueberry Coconut Dreamsicles

Prep time: 5 mins | Serves: 8

Ingredients

1 cup blueberries
⅛ cup liquid sweetener like Coconut Nectar
1 lemon juice
12 oz coconut milk

Instructions

Pour sweetener and lemon juice over berries and mix gently

Put coconut cream in a medium mixing bowl and whip until thickened adding in the blueberry mixture while whipping. Some of the berries will break down releasing their juices and creating texture. If you want the berries whole hand mix them in gently using a rubber spatula. If you prefer a quicker alternative and a more purple colored pop simply blend all of the ingredients together.

Pour mixture into popsicle molds. Place a 6 inch twig in place of the stem and freeze for 2 – 6 hours or until completely frozen. Run the mold under warm water for a few seconds and gently pull popsicle from mold.

Blueberry Coconut Dreamsicles

Prep time: 5 mins | Serves: 8

Ingredients

1 cup blueberries
⅛ cup liquid sweetener like Coconut Nectar
1 lemon juice
12 oz coconut milk

Instructions

Pour sweetener and lemon juice over berries and mix gently

Put coconut cream in a medium mixing bowl and whip until thickened adding in the blueberry mixture while whipping. Some of the berries will break down releasing their juices and creating texture. If you want the berries whole hand mix them in gently using a rubber spatula. If you prefer a quicker alternative and a more purple colored pop simply blend all of the ingredients together.

Pour mixture into popsicle molds. Place a 6 inch twig in place of the stem and freeze for 2 – 6 hours or until completely frozen. Run the mold under warm water for a few seconds and gently pull popsicle from mold.

Rose, I had to call my aunt for a different recipe for you.
I too enjoyed this dish. Try it out. Kugan


CAPSICUM AND TOFU

Ingredients:

2 tbs oil
½ tsp cumin seeds
3 onions, cut into slices
1 tsp ginger paste
1 tsp garlic paste

1 tsp chillie powder
1 tsp coriander powder
¼ tsp turmeric powder
¼ tsp garam masala powder
¼ tsp amchur
Salt to taste

3 tomatoes cut into juliennes
2 capsicum cut into juliennes

1 ½ cups of tofu cut into strips, and shallow fried
2 tbs coriander leaves chopped
½ tsp kasuri methi

Method:
Heat oil in a non – stick wok, add in cumin seeds, let it solutter.
Add in the onion slices and sauté till lightly brown.
Add in the ginger and garlic paste, saute for a minute.
Add in chillie, coriander, turmeric, garam masala, amchur and salt to taste.

Mix well nicely, now add in the tomatoes and capsicum pieces.
Mix well till they are coated with the spice powders.
Sprinkle little water, cover and cook on medium flame .
Cook till it forms a thick gravy, and no raw smell.

Add in the tofu strips and stir fry till the tofu is nicely incorporated in the gravy.
Add in the coriander leaves and give a nice stir.
Lastly add in the crushed kasuri methi leaves. Give a good stir and remove.

I came to post a mushroom pizza recipe which I tried.
I saw it in the net. Thanks to the owner of that recipe.

MUSHROOM PIZZA

Ingredients:

2 tbs olive oil
1 big onion chopped
3 medium tomatoes diced
4 pips of garlic chopped
1 leek chopped
Salt to taste

1 tbs of lemon juice
5 leaves of fresh basil chopped
4 large Portobello mushrooms, cleaned and gills removed
Enough parmigiano cheese

Little fresh parsely chopped

Method:
Preheat the oven at 200 degrees C for 10 minutes.
Spray olive oil on a baking sheet, keep aside.

Heat the oil in a non stick pan.
Add in the onions and sauté till lightly brown.
Add in the tomatoes, garlic, leek and a pinch of salt.
Sauté the ingredients till the tomatoes are soft.

Squeeze the fresh lemon juice over the ingredients.
Add the fresh chopped basil leaves.
Place the cleaned mushrooms on the sheet with the bottom side up.
Add the mixed ingredients from the pan into each mushroom.
Top with grated parmegiano cheese. Place the baking sheet into the preheated oven.
Bake for about 12 minutes. Remove , sprinkle with fresh parsely. Enjoy.

sorry K was busy with nothing important. just was helping someone here. i tried to catch up by looking from pg 275 after finishing i just went to the kitchen and ate few kadalai urundai. all the cake biscuits icecream are just mouthwatering. if i were at ur home i would have weighed 300kg by eating them because i cant control if i see them.

atleast in next jenmam i sud be a neighbor of u. can the orange pops made with grapefruit juice too?

NOV anneh, I have given the recipe for this apom balik.
In it I have said that 1 egg, that is optional.
I always make vegetarian version.
Those who like can add in the egg.

So Madhu anneh do as per recipe, just omit the egg.:exactly:

Well this Milo cake recipe was mailed to me by Rubenee.
I hope you all remember her, She is doing her foundation studies in an University.
The recipe is from her room mate who is a Sabahan. Of course I made it eggless:victory:
Here is the recipe. Kugan


MILO CAKE

(A)
3 cups all purpose flour
1 cup milk powder
2 tsp baking soda
1 tsp baking powder
4 tbs milo
1 cup sugar
2 tsp flax seed powder
A pinch of salt

(B)
1 ½ cups curds
1 cup vegetable oil
1 tsp vanilla essence

1 cup warm water if needed

Method:
Preheat an oven to 180 degreesC
Grease and flour a cake tin.

In a bowl sieve all the ingredients in (A)
In another bowl, whisk all the ingredients in (B).

Now add the ingredients in (B) into the bowl with ingredients in (A)
Mix slowly in one direction. The consistency should be dropping .
Add the warm water little by little if your batter is thick.
Pour into the prepared cake tin, bake for about 40 minutes,
Or till the tooth pick comes out clean.
Remove , let it cool and you can slice the cake.

NOTE: you can sprinkle, chocolate rice or chips before baking

Well talking about Rubenee, her University is in Perak.
Far away from a major town. Her canteen sells mostly only non-vege food.
The eating places are all run by the Malays.
Now the fasting month, and poor Rubenee, nothing to eat.
Only bread , cereals and instant mee. No facility to cook in her room.

She is coming for a 10 day break for the festival.
She has emailed me a list of all the dishes that she wants to eat.
So friends I am going to be semme busy from the 2nd of August.

My granny makes it with 3 types of dal.
Gram Dhal , Toor Dal and Pattani Paruppu.

I think Gai Choy belongs to the group like Bok Choy and others.
You can stir fry like how the Chinese stir fry their greens.
Look up for the Bok Choy recipes that I have given, you can do like that.
Or like our style of keerai poriyal.

I am posting the findings of Gai Choy from google for you.


An Asian vegetable green that is used as a cooking green, a salad green, or as a pickled vegetable prepared in a brine or sugar solution. Typically classified as either mustard cabbage or bamboo mustard cabbage, Gai Choy is considered to be an Asian cabbage due to its appearance and taste, however it is not a true cabbage plant. When young each variety provides a very tender green with a subtle mustard flavor that increases in intensity as the plant matures. The ribbed stalks of the traditional mustard cabbage are broad, thick and somewhat curved, holding veined and ruffled leaves that are pale green in color. Stalks of the bamboo mustard cabbage are thinner in width and do not have the curved shape of the traditional mustard cabbage.
When young and tender, gai choy is used for salads, similar to cabbage salads, as steamed greens, or for stir-fried and baked dishes. Mature greens are often added to soups or stews. In addition to being referred to as mustard cabbage or bamboo mustard cabbage, gai choy is also known as gaai choy, Chinese mustard, Chinese mustard cabbage, oriental mustard, or Asian mustard greens.
When selecting, choose greens with firm nicely colored pale leaves that do not show stress, do not have yellowed areas, that are not limp in appearance, and that do not have holes in the leaves. For best flavor, keep the greens stored in a plastic bag, refrigerated for 4 to 6 days. To prepare, cut the leaves into pieces prior to washing. Place the greens into water and rinse thoroughly. A second washing may be best and then begin to prepare the greens for the food desired. To store, place greens in a plastic bag that allows some air to enter and refrigerate where they can kept for approximately 6 to 8 days.

PAAL HALWA

Ingredients:

6 cups full cream milk
2 tbs lemon juice, a little more if needed

½ cup sugar
2 tbs ghee
A pinch of cardamom powder
1 tbs sliced roasted cashews or pistachios (optional )

Method:

In a heavy pot, boil the milk on medium heat.
Let it boil for about 3 to 4 minutes.
Lower the heat and add the lemon juice little by little.
Stop adding the juice as soon as you see the milk curdling.

Boil for about 5 minutes , then remove 1 cup of the whey by straining.
Continue to cook and keep on stirring until all the whey is evaporated.
Add in the sugar and cardamom powder, keep stirring till the mixture comes together.
Cook on low heat till the mixture changes to a slightly golden colour.

You can transfer the mixture to a greased tray, and press firmly into it.
Sprinkle the chopped nuts, let it cool before slicing into pieces.
Or do as I did by just removing it to a container, serve by spoonfuls.

I have heard my grand ma say that in the villages in olden days,
neem twigs were used as thooth brush. I do not think they still practice that.

Like how rubenee has visited her mom ;) I went to my mom's house for aadi perukku weekend. stayed there on sat and sun :happydance:

Sat:
amma enna edhuvume seyya vidala, saturday fullaa avangale samaichaanga, all kind of variety rice, sweets, vada everything... :D
Night dinner, amma pizza saapdanumnu ketaanga, we went and had pizza for dinner.

Sunday:

sunday lunch naan cook panninen, simple lunch thaan, mullangi + drumstick araichu vitta saambar, jeeraga rasam, cheppankizhangu fry, spinach fried with onion and garlic.
idhaiye amma nalla samaichirukkey nu solli saaptaanga... :D Dad and bro loved the fry a lot.
Night we went to hotel again and had North-Indian dinner.

I loved this weeked. :D

Achchocho, veepam poo rasam do not know?

Here is the recipe that my grandma used to make.
I used to get the dry flowers from India. Kugan
VEEPAM POO RASAM

Ingredients:

(A)
1 big marble sized tamarind
1 ½ cups of water
¼ tsp turmeric powder
1 pinch of asafetida powder
1 sprig curry leaves
1 tsp soaked toor dal
3 broken red chillies fried in little oil
Salt to taste

(B)
1 ½ cup of dal water, or water
½ tsp jaggery

(C)
1 tsp ghee
½ tsp mustard seeds
1 sprig curry leaves

(D)
1 tsp ghee
2 tsp dried veepam poo
1 tsp finely chopped coriander leaves

Method:
Extract the tamarind juice with 1 ½ cups of water.
Now add all the ingredients in (A) in a pot.
Boil on low heat till the raw smell goes.
Add in (B) and heat until froth starts forming.
Switch off the flame and remove.

Heat the 1 tsp of ghee, add in the ingredients in (C)
Pour it over the rasam.

Heat another 1 tsp of ghee, fry the dried veepam poo in low flame until they turn reddish.
Now add the fried veepam poo flowers to the rasam.
Now garnish with the cut coriander leaves, serve hot with steaming rice.

Gulabjamun, in the hustle and bustle, I have not forgotten your request.
Here is the recipe, cook and enjoy. Kugan


CHILLIE POTATO

Ingredients:

Batter:
½ cup corn flour
½ cup all purpose flour
2 tsp of soy sauce
2 tsp of chillie sauce
2 tsp of tomato sauce
Salt to taste
A pinch of ajinomotto
A pinch of chillie powder
Water enough to make a thick batter

5 medium large potatoes peeled and cut into wedges
Oil to fry the potatoes

3 tsp of oil
3 green chillies chopped fine
½ inch piece of ginger chopped
4 pips of garlic chopped
2 big onions cut into squares
1 big capsicum cut into squares
¼ cup water, or little more
3 tsp soy sauce
3 tsp chillie sauce
3 tsp tomato sauce
Salt to taste

Little chopped spring onion for garnishing

Method:
Mix the batter well,add in the potato wedges 4 at a time.
Properly coat the wedges with the batter.
Heat the oil in a wok, fry each of the coated potato pieces till crispy and brown.
Remove on kitchen towel and keep aside.

Heat the 3 tsp of oil in a non-stick wok, add in the finely chopped chillies.
Add in the garlic and ginger pieces. Sauté well.
Add in the onions, and capsicum, stir fry for few minutes.

Add in the water and all the sauces. Add more sauce if needed.
Add in salt and mix well, let it come to a boil.
Add in the fried potato wedges, mix well till nicely coated with sauce.
Remove and garnish with spring onions.

Jelly is soft and requires refrigeration to solidify.
Agar agar solidifies in room temperature and is more firm.
Unless it has too much water.

Madhu Sree you must know the difference between the jelly crystals and agar2.

Jelly crystals are mostly sold in boxes with a flavor

Let me give you a simple agar agar or china grass recipe:


.MILK JELLY

Ingredients:

25 grms agar-agar strands (china grass)
1000 ml water
400 ml evaporated milk
150 grms sugar (more if you like)
Few drops of pink colour
Little rose essence

Method:
Soak the strands of agar-agar in cold water for an hour.
Drain the agar-agar, put them in a pot.
Add 1000ml of water and stir constantly, while bringing
to the boil.

Add the sugar and keep stirring and simmering until all the strands
are completely dissolved.
Add in the colour , milk and essence.let it boil once.
Remove and pour into a tray that has been rinsed in cold water.
Allow to set, cut into diamond shapes.
This will be a firm jelly.

K i opened the forum to look at your spread for Aadi amvasai u r too quick. unga spreadku munadi mine too tiny. extra kootu pannalum hubby feels the lunch box is heavy. so mine is your karuvepillai kulambu and kovakai curry and mrs.mano kadalai paruppu payasam. innum naan taste pannala. iduke it took two hrs for me. :oops2:

unga spread lam is feast for us. only if more members are there we can cook variety.

K ONE request ,i know earlier you have posted a sambar recipe where ghee and paruppu are mixed in rice and on top sambar is served like ur spread today. can u pls link me to that. i am searching for it but cannot find it.

Here (in the US) lunch is light and dinner is heavy around 6 PM !

Dear Sangeetha, thanks for your nice post.
For Amavaasai, I have to cook many items as we give food to about 20 people on that day.


Daily cooking I have feed 12 mouths.
4 workers and 8 house people.
So I have to cook, rice, kulambu, rasam, curds and 3 side dishes.
This is my daily routine, apart from this, breakfast different each day.

Now our children, their dinner they would not take rice, so noodles, pizza, spaghetti, parotta , idli, thosai and things,
daily have to change for them. Chapathi for the men of the house. If no maid, I am dead.


Inspite of all these, office work, accounts, banking, children's tuition.
My day starts at 4.00 a.m daily and ends at 12 or 1 in the night.
I am used to this life, happy to see when every one enjoy their meals.


Sangeetha let me see through the file, it will take little time.
I will give you the link as soon as I see it.

Rajraj uncle, how I wished I was in your place.
I used to take food, just like what you have said, while I was in US for holidays.

Breakfast: 1 glass of fresh milk, 1 small bowl of oats

Lunch: 1 fruit and 1 slice of bread with little cream cheese.

Tea: Plain water with a handful of low sodium mixed nuts.

Dinner: mushroom pizza, or sandwiches, at times outing to a vegetarian hotel.

Chocolate: touch panna matten:-D

I love to look around the Godiva chocolate outlets:)

.MILK JELLY

Ingredients:

25 grms agar-agar strands (china grass)
1000 ml water
400 ml evaporated milk
150 grms sugar (more if you like)
Few drops of pink colour
Little rose essence

Method:
Soak the strands of agar-agar in cold water for an hour.
Drain the agar-agar, put them in a pot.
Add 1000ml of water and stir constantly, while bringing
to the boil.

Add the sugar and keep stirring and simmering until all the strands
are completely dissolved.
Add in the colour , milk and essence.let it boil once.
Remove and pour into a tray that has been rinsed in cold water.
Allow to set, cut into diamond shapes.
This will be a firm jelly.

STUFFED CAPSICUM

Ingredients:

4 medium capsicums

20 grms butter or oil
2 pips garlic crushed
1 tsp cumin seeds ground
1 tsp chillie powder
1 stick celery trimmed and thinly sliced
1 leek, trimmed and thinly sliced

400 grms potato boiled and cubed small
400 grms tomatoes diced
1 tsp vegetable stock powder
¼ cup water

¼ cup parsley chopped
Salt to taste
Pepper to taste

3 tsp olive oil
Grated cheese for garnishing

Method:

Preheat oven to 180 degrees C. line a roasting tray with aluminum foil.
Slice tops from capsicum, scoop out seeds and membrane.
Stand the capsicums in prepared tray.

Melt butter in a non- stick pan over medium heat.
Add in the garlic, cumin, sauté for a second.
Add in the chilli powder, celery and leek.
Cook for a minute until aromatic, add in potatoes, tomatoes, stock powder and water.

Reduce heat to low and simmer for 5 to 10 minutes.
Cook till the sauce thickens , remove from heat.
Add in the parsely, salt and pepper to taste.

Spoon the warm mixture into capsicums. Drizzle with olive oil.
Bake for about 30 minutes until the capsicums have softened, and skins begin to blister.
Remove the tray, sprinkle the top with grated cheese.
Put back in the oven for the cheese to melt, remove and serve.

I remembered about 2 years ago, some one requesting for a coco cola cake.
I some how missed it, it seems they bake in a bakery in India.

Well, now I got hold of a friend from India and she gave me the recipe.
I tried and it turned out well.
No harm trying once for curiosity.

Gulabjamun, here is the recipe.
Rajraj uncle :shaking::shaking:

COCO COLA SPONGE CAKE

Ingredients:

125 grms of melted and cooled butter
400 grms of condensed milk

225 grms all purpose flour
4 tbs cocoa powder
1 tsp baking powder
1 tsp baking soda
All sifted together

200ml coco cola

Method:
Preheat the oven to 160 degrees C
Grease an 8 inch baking pan, keep aside.

In a bowl use a beater and beat the melted butter and the condensed milk.
Beat well till you get a gooey mixture.
Now add the shifted flour little by little, alternating with the coco cola.
Pour into the greased baking tin, and bake for about 30 to 40 minutes,
Or till a cake tester inserted comes out clean.
Remove and let it cool on a wire rack.

Madhu anneh, I am no scientist, but I follow recipes with little alterations.
Well if they say melted cooled butter, I will melt the butter and let it come to room temperature.
It will be still oil on top and little sediments in the bottom.
COLD aannal, it will become mushy. This is what I know.

My dear friends, this is little story time.
Remember I told you all having relatives from UK for summer vacation?
Well I heard that the children love pizza, McDonalds and things.
So I made them 3 trays of pizza.

My eldest nephew who is 15 years old gave me a type of look.
The mother smiled and said he is trying to say that he too can bake.
I was surprised , he said he will do dinner rolls for me. The rolls were a bit hard, but good job.
Here he is making the dinner rolls and the end product.
Not bad for an 15 year old to do that ( my house they only know how to eat.

Illama, it does not run, in Western countries, children are taught to be independant.
I was shocked to see my little nephew doing the dishes in US, I nearly cried.
My sis in law scolded me and said, there is no difference between girls and boys.
At 18 they have to leave home to stay in the hostel for studies.
What will they do if they do not know any basic things.

So you see only in Malaysia, we still do every thing for our children.
We too have to change.

The relative from UK, cooked this dish in our house.
Supposed to be the signature dish of their ooru.
Try it friends. Kugan

TIRUNELVELI MAAPILLAI SODHI

Ingredients:

2 tsp oil
2 big onions sliced

(B)
3 cups of thin coconut milk
1 drumstick cut into 2 inch pieces
2 big potatoes cubes
2 carrots cut into cubes
¼ cup of cooked moong dal
2 pips of garlic

To Grind To Paste:
2 green chillies
¼ tbs cumin seeds
Salt to taste

1 cup of thick coconut milk
1 tsp grated ginger

2 tsp oil
1 tsp mustard seeds
1 tsp urad dal
1 sprig curry leaves

Lemon juice to taste

Method:
Take 1 cup of thick and 3 cups of thin coconut milk from 1 grated coconut.
Heat a pot with the 2 tsp of oil, add in the onions and sauté well for a minute.
Add in the 3 cups of thin coconut milk with all the ingredients in (B)
Allow the vegetables to cook in the thin milk on low flame.

Add the ground ingredients, to the thick milk along with the ginger.
When the vegetables are cooked, add the thick milk to the pot.
Allow to simmer in low flame, till you see froth on top.
Switch off the stove and remove.

Now add the oil to a small pan, add in the seasonings.
Let them crackle, pour it on the sodhi.
After the sodhi has cooled, add in the lemon juice to taste.
Goes well with rice, aapam or idiyappam

K ur fried rice and chille potato recipe. but used the veges i had at home as they were so tempting to try. i had yam so tried with them. also i baked them instead of deep frying. turned out so good. but as usual pic is an insult to you.

I love petai sambal with nasi lemak.
Always buy it when ever we pass Bidor.


O.K coming to coconut burfi and coconut candy.
Madhu anneh, in India they do coconut burfi, using grated coconut, sugar, little ghee and little cardamom powder.

In Malaysia coconut candy is made with, evaporated milk, grated coconut, sugar,
butter, colour and little essence.
I will post the simple coconut candy recipe for you.

Madhu anneh, here is a simple Malaysian coconut candy recipe.
Try it out anneh. Kugan



Coconut Candy

Ingredients.
(A)
115 ml evaporated milk
2 tbsp condensed milk
325g granulated sugar

(B)
375g grated coconut
1 tsp vanilla essence
1 tsp butter
A few drops red food colouring

Method.
Combine ingredients(A) in a wok and cook,stirring constantly, over a very low fire until sugar dissolves completely.
Stir in grated coconut and food colouring and cook until almost dry, about 30 minutes.Add essence and butter mix well to blend.
Grease a tray lightly with butter,and fill the tray with the coconut candy .Press the candy down firmly with a clean piece of plastic wrap,then set aside to cool slightly.
Then cut into neat slices,before it dries completely and hardens.Allow to cool completely before placing in clean air-tight jars.

Another Western dish by the young chef.


CHOCOLATE PUDDING

Ingredients:

(A)
2 tsp agar agar powder
½ cup boiling water

(B)
½ cup full cream milk
¼ cup heaped cocoa powder
¼ cup custard powder

(C )
1 ½ cups full cream milk
¾ cup fresh cream or evaporated milk
1 tbs chocolate chips
1 tsp vanilla essence

(D)
1 tbs chocolate chips to garnish

Method:
Mix together the ingredients in (A), stir well and keep aside.
Mix together all the ingredients in (B).
See that there are no lumps, keep aside.

Heat in low flame all the ingredients in ( C ) in a non stick pot.
When it comes to a boil, add in the (A) mixture, give a good stir.
Add also the (B) mixture, mix well and boil for about 5 minutes.
The mixture should coat the back of the spoon.

Remove and pour it into individual pudding moulds, or into 1 container.
Sprinkle the 1 tbs of chocolate chips on top.
Let it cool and refrigerate it for about 3 hours.
Can be served with sliced fruits or fresh cream/

I made your tomato chutney with sesame seeds came out so tasty and excellent combination for idly. But I do not know why I used karuppu ellu the chutney turned out black :banghead: taste arumai .

TRI COLOURED KUIH BINGKA

Ingredients:
(A)
960 grms of peeled and grated tapioca (320 grms for each layer )

(B)
For each layer:
100 ml coconut milk
3 tsp of tapioca flour
65 grms of caster sugar
1 egg lightly beaten (optional )
1 tbs melted butter
A pinch of salt


Little green colour
1 tbs thick pandan juice

Little orange colour


Method:
Prepare a steamer with boiling water.
Grease a nine inch round pan with parchment paper, set aside.

For the first layer:
Add in all the ingredients in (B).
Add in 320 grms of the grated tapioca.
Add in the green colour, the pandan juice mix every thing well.
Pour the mixture into the prepared cake pan and steam for 20 minutes .

While the green layer is being steamed, now get ready the second white layer.
Add in all the ingredients in (B) This layer will be white.
Now pour the white layer over the steamed green layer.
Steam for another 20 minutes.

Lastly prepare the top layer, add in all the ingredients in (B)
Add in the 320 grms of grated tapioca, add in the orange colour.
Mix every thing well, pour over the white layer and continue to steam .
Steam till cooked, remove from steamer and let cool completely before slicing.
Use a clean knife to get a cleaner cut

Dear Sangeetha, thanks for the Independence day wishes.
I too have to fly our Independence day flag in our house.
We hoist it on the 15th of August and remove it on the 15th of September.


Sangeeth, it is good to cook brown rice in the house.
All our children hate the brown rice, so we cook it 3 times in a week.
Try the tomato chutney with white ellu next time.
I am greatly indebted to you for all the feed backs you give.

The pandan plant in English is screwpine, It is widely used in Malaysian cooking for the aroma and color.
The leaves are pounded to take the juice. You can even just add the leaves to the cooking for its aroma.
I do not think that you get this plant in India. You can use green coloring and vanilla essence instead.
Sorry, I do not know the name in Tamil, NOV anneh:roll:

Tapioca flour is made from tapioca root, and arrowroot flour is made from arrowroot.
Both do the same work of binding and thickening.

And of course tapioca is maravalli kilanggu.

annaa, pandan leaf or grass is an essential part of SE Asian cooking. The plant grows like weeds and is easy to grow. Take back a bunch when you are here and grow your own in India :D

Malaysia is famous for it's sambals. Try this potato sambal.

POTATO SAMBAL

Ingredients:
2 tsp oil
250 grms baby potatoes, boiled and skin peeled

To Grind To A paste:
7 dry red chillies soaked and squeezed.
5 small shallots
5 pips of garlic
2 tsp of vinegar
Salt to taste

2 tbs oil

Method:
Heat 2 tsp of oil in a non stick frying pan.
Add the peeled potatoes and sauté over low flame for about 3 minutes.
Keep tossing the pan so that the potatoes become golden brown. Keep aside.

Heat the 2 tbs of oil in the non stick pan, add in the ground chillie paste.
Cook on low flame till the raw smell goes, add in the roasted potatoes.
Toss lightly with a fork till the potatoes have coated with the paste.
You can sprinkle little hot water if needed.
Remove and serve with steaming rice.

NOTE: you can cube boiled big potatoes, if you cannot get baby potatoes.

thanks Nov Anna and K for the steaming cake and banana oats cookie recipes. cha always i have banana at home but not today sad sad. i have the apple sauce too. anyway will buy and make it soon. it is so useful for me i love desserts without sugar. steaming of the cake is interesting to me. and the outcome is mouthwatering.

can the same be done using Yuca K? I havent seen this tapioca in common, but here every supermarket has yuca.

potato sambol looks mouthwatering. i did ur egg sambol and sothi for this weekend. sothi was mild and the sambol was spicy so both went excellent. but made the sothi with wat ever vegges i had .For health reason my sothi was full of veges but tasted good with the combo.
