I thought of sharing this here!. The significance of vEmpam pazham(Kai)

Thanks Sudha for your nice post.
Have a nice Indo maid to help me out, otherwise:cry3::cry3:

Sudha, I always make, one type of puli inji, this I think is Kerala style
One puli milaga, all taught by my grandma.

Let me tell you one joke, the group that came for lunch,
tayangi, tayangi asked me, if I could give them the bottle of inji puli that I made.
I gladly wrapped up the bottle and gave them.

One more joke, while they were busy eating, my maid put a bowl of purple grapes,
all cleaned and seperated ,on the table in the sitting room.
When they came and sat, we started talking and I forgot about the grapes.
Suddenly one of them asked me if the grapes were real or plastic ones.
I apologized and told them that they were real and for them.
Within minutes the bowl was empty.:rotfl::rotfl:
Later they told me of their experinces of reaching for grapes and finding them to be plastics.

I will post both the recipes soon.

There are many ways to cook this inji puli.
This is how I was taught. Kugan

INJI PULI

Ingredients:
2 tbs gingelly oil
1 tsp mustard seeds
200 grms young ginger cut into small pieces
100 grms green chillies cut into small pieces
1 sprig curry leaves cut into pieces

1 cup of tamarind extract ( fairly thick)
1 tsp chillie powder
1/4 tsp tumeric powder
2 tbs brown or white sugar, or more to taste

salt to taste

METHOD:
Heat the wok with oil. Add in the mustard seeds. Let it crackle.
Now add the ginger, green chillies, and curry leaves
And saute for 2 minutes, till they come tender.
Now add tamarind juice, chillie, tumeric powders and let it boil on a medium
flame, till it is thick. You have to stir the contents occasionally,
until the raw smell goes.
Now add the sugar, and salt, careful with the salt as tamarind has salt.
Let it cook till the oil rises to the top.
Remove and cool. Then store it in a bottle.

This was what I posted in 1999 in this same forum... 14 years ago :frightened:
From: NOV (@ bkj-cache80.jaring.my) on: Fri Oct 15 21:40:07

I don't know which one is the Kerala style.
But here is one recipe for Coconut Appam. In those days, toddy was used for the fermenting process. Not anymore though. :-)))

PAAL APPAM
(Coconut Pancake)

You Need:

Rice
Coconut milk
Salt to taste
Dried yeast

TO DO:

Soak rice for at least eight hours.
Grind soaked rice with coconut milk.
The consistency should be that of dosai.
Add salt to mixture.
In a small cup, mix yeast with a little sugar and warm water. Leave it for a few minutes till it becomes frothy.
Add this to the mixture and let it ferment for another 6 hours or so.
Heat a small, oiled, iron wok (measuring six in. in diameter), and spoon batter.
Give it a quick swirl so that you have a slightly thick centre and lacy sides.
Cover and let it cook for a couple of mins.
Your appam is now ready.
It can be eaten with coconut chutney or with sweetened coconut milk.

For variation, add sugar during the process of grinding. This can be eaten on its own. But because of the sugar content, the resultant appam may stick to the pan, so don't do it until you become an expert. :-))

Tips : If you are using pan for the first time, fry some grated coconut over low heat till it browns. Discard the coconut. Now coat the pan heavily with oil and leave it overnight.
When ready for cooking, let the oil smolder first, reduce heat, remove excess oil and then pour the batter in.

24th April 2013, 08:16 AM
Thanks NOV anneh, what I meant was,
you know we do not know how to cook kai alavu, or kan alavu:banghead:

The picture of the aapam was just like how my grandma cooks.
Fluffy in the middle, ours will be very flat, because otherwise the middle will not cook.
My grandma will make " kapi " and add to the ground rice mixture.
No cooked rice added, she will add toddy:roll: or little of yesterday's fermented batter.
The next morning she will add coconut milk and sugar.

I have my own recipe from my grandma, mother and so on.
I just wanted to compare your recipe.
That is, how much rice, coconut, sugar and yeast.
Jangan lah marah. Kugan

NOV
24th April 2013, 08:24 AM
Fluffy in the middle, ours will be very flat, because otherwise the middle will not cook.thats very easy.
just turn over the appam in the same chatti and let it cook for a minute. No change in fluffiness

ok, the next time I will measure everything and come back with a Kugan Recipe :D
usually I will use 2-3 cups of rice and milk from one coconut. sugar according to taste. (you can taste it after grinding) or you can add more sugar after tasting the first appam made.

1) Take Vitamin C tablets

2) Put a bit of honey and lemon in hot water, pour it into a big pot, cover your head with a towel and inhale the steam

3) Put one spoon of "Manuka" honey (Manuka is the best), squeeze one lemon/lime, mix these into warms water and drink daily in the morning instead of tea

usually I will use 2-3 cups of rice and milk from one coconut. sugar according to taste. (you can taste it after grinding) or you can add more sugar after tasting the first appam made.

Thanks NOV anneh, let me try too and see how it turns out.
No cooked rice added, only yeast to make the aapam soft.
I will post the picture if it turns out well:-D

Tomato chutney, thokku, gojuu, are all made in so many different ways.
This one, which I tasted while being away. Try it friends. Kugan

TOMATO THOKKU WITH POWDERS

Ingredients:

1 tbs gingelly oil
1 tsp mustard seeds
1 tsp urad dal
2 sprigs of curry leaves
¼ tsp asafetida powder

500 grms ripe red tomatoes chopped
½ tsp turmeric powder
2 tsp chillie powder
1 tsp tamarind paste
¼ cup of water

1 tsp sambar powder
1 tsp coriander powder
1 tbs of jiggery
Salt to taste

1 tbs of chopped coriander leaves

Method:
Heat oil in a non-stick wok, add in the mustard seeds.
Let it crackle, add in the urad dal, let it brown a bit.
Add in the asafetida powder and curry leaves.
Give a good stir.

Add in the chopped tomatoes, turmeric powder, chillie powder,
tamarind paste, stir fry nicely, add in the water.
Put the flame in sim, and let cook, stirring occasionally.
The tomatoes should have become mushy now.

Add in the sambar, coriander, jiggery and salt.
Stir well and cook for few minutes.
The thokku, should be semi solid in consistency.
Remove and garnish with the coriander leaves.

Here is one recipe which my mom use to prepare and it is my favourite.
I really dont know how my mom prepares, but this how I prepare and yes it tasted the same and looked the same as my mom's recipe.
I use to prepare this on the day when I dont like/want to have onion or garlic.

Simple Keerai poricha kozhambu:

Spinach - 1 bunch
Toor dal - I guess 4 tbsp. (3/4th handful :oops2: seriously this is how I measure :|)
Channa dal - 1.5 tbsp
Redchilli - 4
Coconut shreds - 1 tbsp(optional)
Turmeric - as required.
Salt - as required.
Oil - as required.

Tempering:

Panch puran seeds - 2 tsp or mustard seeds, jeera - 1/2 tsp
urad dal - 1.2 tsp

Method:

Fry channadal and red chille in oil and keep it aside to cool town.
In a wok, add toor dal and required water, cook till toor dal is mashable. Add turmeric powder, salt, spinach, mix it well. Let is cook for about 15 mins.
Now grind channa dal + red chillies +coconut shreds and add the powder to the spinach mixture.
Add a pinch of asofotida/perungaayam, tempered Panch puran seeds or mustard, jeera and urad dal. Mix well. Leave for about 2 mins.

Thats it. Keerai poricha kozhambu is ready. Enjoy as a main dish or a side for thengaai thuvayal rice.

Thanks,

Madhu Sree

Hello Meerra - how are you doing :)

Sangeetha - enjoy your pregnancy and stay active and safe.. eat healthy :)

Madhu - Happy Birthday, have a blast..

Hello to all KK members.. :)

My dad's brother passed away recently due to cancer (in the stomach).. Such sad news.. They diagnosed it only in his last stage and then it was too late to help.
No one in my family had any awareness of cancer, whenever he had stomach pains it was mistook for normal indigestion etc and he will have carbonated drinks to calm his stomach..
Also there was no history of any diseases in the family since grandparents and dad n his brothers grew up in villages with fresh air and good water and led a active life. They were using all these factors and kept telling themselves they are healthy and nothing can happen.. It should be a simple problem in the stomach. By the time the diagnosis was done it has affected his liver and he passed away because of organ failure.

So much advertisements all around us in tv, hoardings etc to detect cancer early and now only i understood its importance..

I'm trying these days to avoid hotel food and make food at home how much ever i can.. I can remember how in our grandparents house eating in hotels will be a luxury, how things have changed now and all these diseases are creeping up..

Sorry for the long post... Just writing in to create awareness among KK family members so they take care of themselves well and their near and dear ones. We lost him not because of the disease but simply because of lack of awareness about the disease :(

Priya, Sad to hear abt ur uncle . All you said is true I am also becoming more and more alarmed with the harmfulness of hotel foods . Some people think whatever we eat we can burn it with exercise . Today I read a saying like
Exercise is icing on the cake. Food is the actual cake. Lets make the healthy food tasty so that our family members dont get tempted for the hotel ones.

Dear Priya, first my condolences, I know the pain of loosing a beloved one.
May his soul rest in peace.

Glad to see you after a long time in the forum.
Nice post of yours, let us all take care of our health.
Glad that you tried out many dishes.

Thanks Priya for your nice post.
Priya, as. I have said before, no two houses cook the same type of sambar.
The same goes to this tavala dosai.
Every household has its own recipe and method.

It is something like the adai, only few ingredients change.
Some will do it thick like chapathi , and some will do like dosai.

O.k I am cooking tavala dosai for dinner, just like my grandma.
I will post with pictures soon. Take care, Kugan

Here Priya, our style of tavala dosai. Kugan

TAVALA DOSAI

Ingredients:

(A)
2 cups raw rice
¾ cup chana dal
¼ cup toor dal
2 tbs urad dal

(B)
½ cup grated coconut
1 tsp cumin seeds
1 small piece of ginger
½ tsp black pepper
3 dry red chillies, cut into pieces

(C)
Salt
1 ½ cups sour curds

(D)
1 tsp oil
1 sprig of curry leaves
Little asafetida powder
½ tsp mustard seeds
½ tsp urad dal

Method:
Soak all the ingredients in (A) for about 2 hours.
Strain, add in all the ingredients in (B).
Grind the ingredients to a coarse batter.
Add in the salt and curds, mix well and leave it for about ½ an hour.

Now heat a pan with the oil, add in all the seasoning ingredients in (D)
Pour it over the prepared batter, mix well.
The batter should be a little thick. Pour as thick dosai.
Apply oil all around and cook on both sides.

Remove and serve with your choice of chutney.
I made coconut katti chutney.
Very nutritious dosai.

Sudha, katti chutney is coconut chutney ground very thick,
without any seasonings. Very tasty with dosai or rice porridge.
I am giving the recipe for you. Kugan

COCONUT KATTI CHUTNEY

Ingredients:

a cup grated coconut
5 dried chillies
2 small shallots
ginger a small piece
goose berry size tamarind
few curry leaves
salt to taste

Method:
Grind everything to form a paste.
Use sprinkling of water, when grinding.
Tastes great with crisp dosa, or rice kanji.
We still grind this chutney in the ammi kal
You can even use the mixie to grind.

Dear Rose, I have rewritten the recipe and tried the recipe that your,
grandma saw in a show. I made little changes, I put only the gravy from the lime pickle.
Not the limes also, the taste was super. went well with the curd rice.
Thanks again for the recipe. Kugan.

POTATO PICKLE

Ingredients:

2 tbs oil
1 tsp cumin seeds
3 dried red chillies cut into pieces
1 sprig of curry leaves
2 tsp of ginger garlic paste
150 grms tomatoes chopped fine
½ tsp chillie powder
Salt to taste

250 grms potatoes, half boiled and cut into big cubes
100 grms green peas
1 tbs spoon , the gravy from the lime pickle
1 tbs cut coriander leaves.

Method:
Heat a non stick pan with the oil. Add in the cimin seeds.
Let it crackle, add in the red chillies, curry leaves and ginger garlic paste.
Sauté for a minute, add in the chopped tomatoes, chillie powder and salt to taste.
Cook till the tomatoes turn mushy. Add in the boiled potatoes and green peas.

Lower the flame, cover and cook till the potatoes are done and dry.

Zucchini pulao:

I saw zucchini rice recipe from one of the youtube videos of manjula's kitchen. I got inspired and I customized it, made a zucchini pulao with little variations.
Here is the recipe..

Rice - 2 cup
Bay leaves - 2
cinnamon stick - 1 inch
cumin seeds - 1 tsp
big onion - 1
shredded zucchini - 2 cup for 2 cups rice
Peas - as required
salt - as required
jeera and pepper powder - 1 tsp
green chillies - 3 or 4 based on the spicyness

Method:

Soak Rice in water, then drain the water and keep it aside for abt 15 mins.

Heat oil in a big vessel(the size of the vessel should be enuff to cook rice),
Put cinnamon stick, cumin seeds, bay leaves, leave it till it turns color.
Now add onion, green chillies, saute well till it turns color. Add peas, salt, pepper jeera powder and mix well. Add zuccini shreds, give a good mix.

Now, add the soaked and drained rice, mix well for abt 5 mins. Add 4 cups of water.
Keep in high heat for abt 10 mins, then reduce to medium flame and let it cook for abt 10 mins or till the rice is cooked.

Thats it!!!!! Zucchini pulao is ready. Enjoy with some good gravy. I prepared Mushroom gravy. I didnt feel like adding ginger garlic, next time I ll try to do that with this. I have in mind to grind onion and chilli. Let us see how that will turn out.

The weather is so hot, and children stare at me if I make puli curry and so on.
This moor based rasam will do justice for the hot weather.

MOOR RASAM

Ingredients:

1 litre thin mooru
3 tsp gram flour
Little tumeric powder
2 tsp oil
½ tsp mustard seeds
½ tsp cumin seeds
1 sprig curry leaves
Little asafoetida powder
2 tsp green chillie paste
Little coriander leaves
Salt to taste

Method:

Mix the salt, gram flour and the mooru.
Heat a pan with the oil. Add in the mustard and cumin seeds.
Let them splutter, add in the green chillie paste and curry leaves.
Saute for about 5 seconds. Then add in the asafoetida powder.

Add in the tumeric powder, mix well then add in the mooru mixture.
Cook on medium heat, when it comes to boil, off the stove.
Garnish with the coriander leaves, serve with rice or as a drink.

Another simple spinach dish with a twist.

SPINACH WITH COCONUT

Ingredients:

300 grms spinach, chop it finely with the stems.
2 pips garlic
Salt to taste
A pinch of sugar

Grind to a smooth paste:
3 green chillies chopped
¼ cup grated coconut
1 tsp cumin seeds

1 tsp oil
½ tsp mustard seeds
½ tsp urad dal
2 red chillie cut into pieces

¾ cup curds whisked

Method:
In a pot, add in the spinach, garlic, salt and a pinch of sugar.
Add just enough water to cook the greens.
When cooked, mash the greens well.

Now, add in the ground coconut, and boil till every thing blends well.
In a pan, heat the oil, add in the seasonings, when they splutter,
Pour it into the pot of mashed greens. Mix well, off the stove.
Now add in the whisked curds and mix well. Serve with rice or roti.
