Dear friends, another simple vegetable biryani by the cook in Trichy.
Very simple ingredients, one pot meal.
He made vegetable kurma for this biryani. I asked him, why the same kurma with the same vegetables. Well he gave me a simple rich onion gravy recipe. Very yummy. I used seera samba rice.
I will post it later. Thanks and take care, Kugan98

VEGETABLE BIRYANI

½ kilo basmathi rice, soak for 10 minutes, drain
½ kilo mixed vegetables e.g carrot, cauliflower, beans, potato.
100 grms green peas
200 grms onion chopped
200 grms tomatoes chopped.
1 hand full mint leaves
1 hand full coriander leaves
3 green chillies sliced
3 tsp ginger garlic paste
1 cup curds
2 tsp chillie powder
3 tsp coriander powder
Salt to taste

1 big spoon oil or ghee
2 star anise
2 bay leaves
3 cardamoms
2 pieces cinnamon sticks
3 cloves
Little jathi pathiri or mace

Method:
Wash and soak and drain the rice.
Cut the vegetables into 1 ½ inches in length

Heat a pressure cooker with the oil or ghee.
Add in the seasonings, let them splutter.
Add in the hand full of mint and coriander leaves.
Sauté well , add in the chopped onions, sauté well.

Add in the ginger garlic paste, stir well.
Add also the chopped tomatoes, stir fry well.
Add in the green chillies, add in the beaten curds and salt.
Cook well, now add in all the vegetables, stir fry well.

Now add in the coriander powder and the chillie powder.
Mix well till oil separates from the masala.
Add in the drained rice. Give a good stir slowly.
Now add 1 ½ measures of water for 1 measure of rice.

Mix all the ingredients well. Close the pressure cooker.
Keep for 3 whistles, then sim for 5 minutes.
Remove and fluff up the rice.
Garnish with more cut coriander leaves.

Dev,Kugan: Congratulations on your idea of a blog. I finished my income tax return a few days back and thought about an index. This is what I came up with.

Recipe title ..............post number...........page number (depends on the display mode)

A lysrsort script won't work for this hub. It can be done with some effort. But it must be Rajaraman or some other moderator/administrator.

When Dev posts the recipes in the blog she can also create this list for the hub or update the list she created for the first few threads. Of course it is time consuming. Let the administrators and moderatore share the work. Ask them! You have contributed a lot and it is time they helped.

Friends, during our last month's visit to Singapore, we stayed in the Marina Bay Sands Hotel, which is a five star hotel.
During lunch time my friends went looking for a Chinese Vegetarian Restaurant in the hotel. I was not keen to have anything, as I do not feel comfortable eating in a Chinese restaurant. One of the items they ordered was salt pepper tofu..
The dish cost a fortune in that hotel. Here is the recipe for all my friends. Enjoy.

SALT AND PEPPER TOFU

Ingredients.

Marinate:
3 firm tofu cut into cubes
1 tsp plain flour
1 tsp corn flour
1 tsp soy sauce
¼ tsp white pepper powder
½ tsp garlic powder
Little salt
Oil for frying

2 tsp oil
1 big fresh red chillie, seeded and cut fine
2 pips of garlic chopped very fine
1 tsp coarsely ground black pepper
¼ tsp grated fresh ginger
2 tsp sliced scallions
Little soy sauce

Method:
Marinate the tofu in the above ingredients for 20 minutes.
Do not use any water.
Heat oil in a pan, shallow fry the tofu until golden.
Remove and keep aside.

Heat 2 tsp of oil in a pan, add in the chopped garlic.
Sauté well, add in the ginger, chopped red chillie,
Add in the fried tofu, the black pepper powder,
Soy sauce and the scallions.
Stir fry well for a minute and remove

Dev, thanks for your hard work Dev.
Many will benefit from your idea.
No need to crack:banghead: the head to get the recipes.
Thanks again.

Couscous is made from two different sizes of the husked and crushed, but unground, semolina of hard wheat using water to bind them. Semolina is the hard part of the grain of hard wheat (Triticum turgidum var. durum), that resisted the grinding of the relatively primitive medieval millstone. When hard wheat is ground, the endosperm—the floury part of the grain—is cracked into its two parts, the surrounding aleurone with its proteins and mineral salts and the central floury mass, also called the endosperm, which contains the gluten protein that gives hard wheat its unique properties for making couscous and pasta--that is, pasta secca or dried pasta, also called generically macaroni. Couscous is also the name for all of the prepared dishes made from hard wheat or other grains such as barley, millet, sorghum, rice, or maize.

Thanks, Kugan98

Uncle, I've already done 1 1/2 thread in the blog... also, I'm not in the mood to do another index in the hub... I feel blog is better for records and index...:)

Dev, this is how I do. It is very easy. Kugan98

VEGE MEAT OR SEITAN

Ingredients:
8 cups strong flour
2 ½ cups of water

Method:

Mix the flour with the water to make a stiff dough.
Form into a ball and knead well.

Let it stand under water for at least 2 hours or over night.
Then wash out starch by kneading with the hand in the water.

Be careful to to keep the dough together.
Pour off the starchy water frequently and continue,
washing until the water is almost clear.

You will then have a lump of gluten.
Boil the lump of gluten in water with little sliced
onions , garlic, salt pepper and little soy sauce.

Remove slice as you wish and use in your dishes.

Suvai, I forgot that you asked for the recipe.
For about 200 grms vege meat you need:
1 big onion sliced, 6 pips garlic sliced , one inch ginger sliced into sticks , and 4 green chillies slit into 4 and cut across.

You will need dark soy sauce, light soy sauce, little vinegar and a pinch of sugar.
In a pan, add little oil and saute the onions, ginger, garlic and green chillies.
add in all the sauces, vinegar , sugar, and little water.
add in the cut vege meat, and stir fry well.
Since the vege meat is already pre cooked, by boiling (refer to recipe)
Just mix well so that the sauces coat the vege meat well and a bit dry.
Remove and serve.
This is a Chinese dish.
Thanks, Kugan98

My dear friends, normally, this panang curry is made with the panang paste.
Panang paste consists of red chillies, kaffir lime leaves, lemon grass, coriander stems, lengkuas and things. I know it will be difficult to obtain such items overseas.
I have simplified the recipe for our use. The taste is still yummy. Try it out friends. Thanks, Kugan98.

PANANG CURRY

Ingredients:

2 cups of mixed vegetables, carrots, beans, baby corn, potato, capsicum.
2 firm tofu cut into cubes
1 ½ cups thin coconut milk
½ cup thick coconut milk
1 tbs smooth peanut butter
2 big onions sliced
1 tbs grated ginger
5 pips garlic finely chopped
3 tbs red chillie paste
2 tsp brown sugar
½ tsp turmeric powder
½ tsp cumin powder
3 tsp lime juice
2 tbs oil
Salt to taste

Method:

Heat a wok with the oil, add in the onion, ginger and garlic.
Sauté well till the onions are limp.
Add in the red chillie paste and sauté in the oil.
Add in the thin coconut milk and mix well.

Now add in the turmeric powder, cumin powder and peanut butter.
Mix well, add in the vegetables, salt and sugar.
Cook on low heat till the vegetables are cooked.
Add in the thick coconut milk. Let it come to a boil.
Remove from the stove, add in the lime juice.

K, be strong... all these difficulties are just to make us stronger...:) I hope u get the medicines for the other kids atleast... we take preventive for chikunguniya, chickenpox, swine flu etc when it is in season...so far it has worked... only thing, once taken it'll work only for 3-6 months... so it has to be taken every year... or everytime the flu sets in...anyway, prevention is better than cure...:)

when taking homeopathy preventive make sure u don't drink coffee during the course and also don't take anything orally 1/2 hr before and after the medicine...

Dev, can you get jack fruit seeds separately in India?
Here you have to buy the whole fruit to get the seeds.

So I will post the recipes without pictures for you.
Thanks and take care, Kugan98

Here in blore, we used to get the seeds separately... nowin cbe, my sister has a jackfruit tree in her farm... so everytime a jackfruit ripens, we get free supply of both the seeds and fruit... I don't like the fruit... so I'll collect the seeds...;)

Thanks Dev, for all trouble you are taking.
You are very lucky to have a sister who supplies
you with jack fruit. I love jack fruit and it's seeds.
I just love to boil the seeds with salt and start munching:-D

I will post the podimas recipe first.
Have to dig in old files for the recipes.
As we seldom cook these recipes, since we do not get the seeds here.
I should learn a lesson to take snaps of what ever I cook.
It will come handy one day.
Thanks, Kugan98

I tried a chutney yday which I remember reading somewhere...peyar maranthidichu ... so I've named it 'ennavo chutney'... it's very simple to make and tastes yummy...

Ennavo chutney or Raw chutney:

Grind together the following to a slightly coarse paste and season with mustad, curry leaves, urad dhal n dry chillies:
coconut- 1/2 a medium coconut
Tomato- 1 medium
onion- 1/2 a medium or 4-5 pearl onions(if u don't mind the smell of raw onion, u can use upto 1 medium onion)
pottu kadalai(chutney dhal)- 2 tbsp
curryleaves - 1 stalk
coriander leaves- 2-3 stalks
ginger- 1 inch piece
green or red chillies- to taste
Salt- to taste

This chutney goes well with dosai and chapathis... not with idlis....

PS, inga veg restaurentsku kuraichale illai... U can literally walk into any of the decent looking ones and most of them serve decent food... U can also ask the locals or the hotel where u stay and they'll guide you...

orye tip from my side... If the restaurant is basically south indian (meaning they'll serve north indian, chinese etc aswell but SI is their speciality), don't order NI food there... most of the times, adhu sothapidum.... Chinese food is good in most places no matter what their speciality is... Thanks Dev for your nice post.
Dev, I was waiting in the airport from 5.a.m
The flight touched down at about 7.30 a.m
By the time they came out is about 9.a.m

I am lucky, my uncle owns the Kowloon Hotel in K.L.
It is in the middle of K.L town, surrounded by many shopping complexes.
I made arrangements for them to stay there.
Also arranged for breakfast, lunch, and dinner until their stay here.

Also gave them a car and a driver to take them, where ever they want to visit.
What else can I do.?
Aishu is only about 4 days. She has over 300 spots on her body.
Even her head is not spared. I am worried about her face.
. I have to be near her all the time.
Exams going on.

Dev, while waiting for the plane, I met an elderly lady and her son,
waiting for their family. I was talking with her and slowly our talk
shifted to food.:-D
As usual I asked her about recipes, and she gave me a tomato chutney recipe.
Were you listening to our talk? you too have given a tomato recipe:confused2:

Dev, her recipe had sesame seeds, coconut scrapings and ground nuts.
She said you can use it as a dip and also as sandwich filling:roll:
Let me try it out first, and post the recipe.
Thanks, Kugan98

Kugan, thanks again for making my life so blissful. Good cooking brings happiness to a family.

P.S Tamby, thanks for your prompt response.
Making the fillings for the sausages will be easy.
We will not get the casings to fill the ingredients to make the sausages.
Only big companies will manufacture vegetarian casings.
So, sorry Tamby, if you feel like eating, just buy a packet:-D

green chillies and curry leaves.

Here is another simple recipe by Sumithra. It's nice for a change from normal dosai.
Thanks, Kugan98

SEMIYA DOSAI

Ingredients:
1 cup roasted semiya
½ cup rice flour
1 cup curds
½ cup water
1 green chillie chopped
1 sprig curry leaves chopped
1 tbs coriander leaves chopped
Salt to taste

2 tbs onion chopped
2 tbs grated carrot.
Oil

Method:
In a bowl, add the curds and water, mix it nicely.
Add in the salt, curry leaves and coriander leaves.
Add in the semiya and the rice flour. Mix throughly.
Leave it aside for 30 minutes and mix it in intervals.

By now the semiya would have absorbed the liquid and become thick.
Add little water if the batter is very thick.
Lastly before making the dosai, add in the onions and carrots.
The batter will become orange in colour if you add the carrot first.

Heat a dosai kal and pour a laddle full of the batter.
Use your back of the laddle and spread into a circle.
This dosai will be little thick. Pour some oil around the dosai.
After the dosai is cooked, flip it over and cook the other side.
Serve hot with chutney.
