Aarthi,
My friend suggested to use Sujata atta. The ratio was 1 cup water to 2 cups of flour. She did not add any oil to the dough. Let it rest for about 40 min.The tough was not hard, but illakamai irunthucchu. Not kola kola. The rotis she made puffed up like pooris on the tava without any oil. Aarthi, I will try to post pics when I make it over the week-end. Hope this answers your question,

No i am Non Vegetarian....In Tuesday and Friday i used to make sambar type kulambu...Thats y i am bored of it....

Arthi, glad u liked the kadai veg... for most northie dishes, adding a spn full of crushed kasuri methi towards the end gives a spl flavour that brings it close to the restaurant ones...

Tell Rubenee ,that she doesnt wants to get scared at all.
Akka,
In japanese culuture,everybody in the family used to take bath at night.
What they will do is,they used to fill the tub with warm water and aromatic herbs and powders.
Everyone in the family,will takes a body wash outside the tub with soap and then they will get in that herbal bath and will stay in there for 5 to 10 mns.
Since the body has been washed already,they will not worry in reusing the same water again for other members.


Akka,ore family members kooda ukkantha parava illa,in most of all the towns and cities,there are places called as onsen.Even in ferries to they have these onsens in japan.
In those also,in centre a large tub would be there,which is filled with hot water(Not too hot).On the side of the tubs separate washrooms would be there,people first used to take complete body wash and then they will ,move to the centre tub.But everyone will be very carefull in not polluting the water.

These all are not a compulsory ones,if u wish u can do avalo thaan.Thanniku ellam ange kastam illa kuganka.So ask her to be happy.

Regaridng vegetarian foods,Which part of Japan she is going?How long she is going to stay there?
U can get veg foods in all the shops kuganka.They consider fish and egg as veg stuffs.So She has to ask for it specifically.Thats all.
If it is very short days,she can carry the stuffs.Becoz even though we can get veg items,but ennaku therinchu,avalo seekirama taste nammaku pidikathu.It takes time to adjust to the tastes.Noddles stuffs would be good.If she likes that ,then it is good.
Then so many indian restuarants are there kuganka.
So she dont have to worry at all.

Poor girl she was very frighten after hearing from her friends.
She will be away for 15 days.She will be in Tokyo. Foster parents house.

Try the fish kuzhambu. The fish will have a little taste like our vadai:-D
Otherwise it is o.k. See if it is the same taste as you had.

bkarthika, do not worry. There are so many types of kulambus around.
Chinna venggaya sambar, araichivitta sambar, idli sambar.
vatha kulambu, kara kulambu, puli kulambu.
mushroom curry, tomato curry, potato curry.
mor kulambu, keerai kadaiyal, vegetable sothi, paal curry
simple kurmas, patchai payir curry, motchai kulambu
bottle gourd kadayal, endless bkarthika.

Our friends, Dev, Selviem, Aarthii, Suvai, Sudha, Madhu Sree and more of them have contributed lot of recipes. Its so sad, too difficult to trace.

Do different types and asathu your husband:-D

hello nga kugan...just went thru the recipes......yr morekuzhambu sounds a little different to what i make & looks absolutely delicious.....will try it out & let u know........kadai vegies i also make similar to what u have given....looks very yummy...;-)

Aarthii, try with kasuri methi next time... only then u'll get it close to restaurent ones... even for other northie curries(all butter masalas, tadaka dhal, kadai dishes, aloo mutter, channa etc) u add it towards the end...but some don't like its flavour...so try it and see if u like it...

My niece called from India to tell me the recipe for Maha Rusi Bonda.
I have heard about potato bonda, but maha rusi bonda:roll:
Well here is her recipe, nothing great to shout ha,ha ho, ho.
Nice snack for the evening. Kugan98



MAHA RUSI BONDA

Ingredients:

2 potatoes boiled and mashed fine

To Grind Coarsely:
2 green chillies
2 tbs grated coconut
½ tsp ginger
½ tsp garlic
1 cardamom pod
1 clove

1 big onion chopped and fried till golden in little oil
¼ cup pottukadalai flour
1 tsp dry chillie flakes
1 tbs curds
Little cashew nuts chopped
A pinch of turmeric powder
Little lemon juice if needed
Salt to taste

Little rice flour enough to bind all the ingredients
Oil for deep frying

Method:
Boil and mash the potatoes.
Grind the ingredients into a coarse paste.

Now mix all the ingredients, except the oil to form a soft batter.
It should be like our methu vada batter.
Heat the oil in a wok.
When it is hot, drop in small round balls of the batter.
Cook on medium heat till they become golden brown.
Remove and put them on kitchen papers.
Serve hot with chillie sauce, tomato sauce or any chutney.

i have never heard of adding cardomom & clove to bonda kugan ngo........this is a new recipe for sure to try...thank u & yr niece.... ;-)........no "haahaa ho ho" comments from family yaaa? :noteeth:

kugan......why dont u elevate yr feet while on the computer.....oru stool just higher than the ground level, lower than hip onnu iruntha pottu kaalai athil mel vaithu paarunga while sitting on yr computer chair....velaila neraiya peruku intha problem iruku so most of them put their feet up when they feel uncomfortable......try panni paarunga....that might minimize the swelling.

wont be able to make blackeyed bean curry....becoz i have none in the pantry.....i have mochai so have changed menu to make yr mochai recipes......first i thgt let me post something here before i go hunting for it :noteeth:

Kugan, I tried veg fish curry and the curry was yumm... fish neenga sonna maadhiri konjam vadai taste...
Also made fried rice using the rice noodles paste u sent me... came out well... thanks a lot Kugan...:)

Suvai, I have posted the elaneer payasam in Kugan's Kitchen 3.
Not only that, elaneer subji, and also elaneer rasam:smokesmirk:
The recipes are in Kugan's Kitchen 3. Page 26.
Since you are a gem, I will repost the payasam recipe for you.

TENDER COCONUT PAYASAM

Ingredients:
1 cup tender coconut pieces. (cut into small pieces)
2 cups fresh milk
1 cup tender coconut water
5 tbs sugar
2 tbs condensed milk
1 tbs cashew nuts roasted
1 tbs raisins roasted
2 tbs ghee
Little cardamom powder

Method:
Wipe the tender coconuts a little dry.
Heat the ghee in a pot, add in the tender coconut pieces
and fry for a while.
Pour 2 cups of the milk into the pot and cook the tender coconuts.
Stir continuously as the milk thickens.

Now add in the sugar, condensed milk.
Add in the fried nuts and raisins
Add in the tender coconut water.
Let it boil once, add in the cardamom powder.
Remove from fire and cool.
It tastes best when chilled.

FRIED CHICKEN BALLS

Ingredients:

500 grms ground chicken meat
½ tsp white pepper powder
1 tbs corn flour
2 small shallots ground
½ tsp ginger ground
1 green chillie ground
1 egg white
Salt to taste


For Frying:
½ cup all purpose flour
½ cup corn flour
Little salt to taste
Oil for deep frying.

Method:
Mix all the ingredients well for the chicken balls.
Form into balls, the size of a small marble.
Set on waxed paper.

Mix well the ingredients for frying .
Heat oil in a large non-stick frying pan.
Roll the balls in the flour to coat.
Fry in the oil, until the balls float and are golden.
Drain on paper towels.
Serve hot with chillie sauce or plum sauce.
Stick a tooth pick in each ball.
It will look pretty as a starter for parties.

You know nowadays they have seasoned flour to fry chicken and things.
You can use the flour too.
Otherwise, just dip the chicken balls in beaten egg, and roll it in bread crumbs.

Rose, the taste for this curry is the kudampuli, or kokum as they call it.
It gives a very nice taste for this Kerala fish curry.
You can use tamarind if you do not have this puli. Kugan98


KERALA FISH CURRY

Ingredients:

500 grms fish slices (any fish ) cleaned
1 onion sliced
3 pips garlic sliced
1 inch ginger chopped
3 green chillies slit
1 sprig curry leaves
4 kudampuli or 2 tbs tamarind paste

2 tbs coconut oil
4 tsp chillie powder
½ tsp turmeric powder
¼ tsp fenugreek powder
2 cups thin coconut milk
1 cup thick coconut milk
Salt as needed

Method:
Soak the kudampuli in ½ a cup of water.
Heat oil in a manchatty or a pot.
Add in the onions, and sauté until light brown.
Add in the garlic, ginger green chillies and curry leaves.
Sauté well.

Now add in the chillie, turmeric and fenugreek powders.
Give a good stir, add in the soaked kudampuli with the juice.
Add in also the thin coconut milk. Add salt and mix well.
Cover and boil on medium heat till it boils.

Now remove the cover and add in the fish slices slowly.
Do not stir, let it come to a slow boil.
Once the fish is cooked, add in the thick coconut milk.
Gently stir the gravy. Put off the fire when the gravy is about to boil.
It tastes better if kept for few hours before serving.

Suvai, one of my neighbour says the ilaneer payasam is a kerala dish... not kongu... :roll: her recipe is slightly diff from Kugan's...

Ilaneer payasam:

Grind together 1/2 of a tender coconut flesh, condensed milk, boiled and cooled milk, sugar or jaggery(if req) and the coconut water...
Chop the rest of the coconut flesh into small pieces... add to the above payasam base...no need to cook...
Roast to golden some raisins and cashews and add to the payasam... add cardamom powder as well...This payasam will be lil watery...
Best served chill...

Note: U can add chironji seeds (sara paruppu) instead of cashew-raisins...
U can also add some good quality rose water for a diff flavour...

We young housewives are gifted to get friemds like you all.

The link shows a chicken ball that is very Indian. Anyway I had a nice time looking through all the other recipes. The one I tasted was like what kugan has given. Thanks Suvai.

Dear Kugan, I made the mor kuzhambu following your recipe exactly--rombo super!! Also made masala vadai, kootu, sambar, kothavarakkai curry, gulab jamun, and laddu. My guests loved the mor kuzhambu and took home a container of it.

I did this simple cake today. It turned out very soft and nice.
Try it please. Kugan98



MIXED FRUIT CAKE

Ingredients:

3 cups all purpose flour
3 tsp baking powder
½ tsp baking soda
1 ½ cups sugar
2 cups curds at room temperature
1 cup oil
2 tsp vanilla essence
6 tbs mixed fruit , mix with 2 tsp of flour

Method:
Pre heat the oven to 200 degrees C for 10 minutes.
Grease and flour an 8 inch baking pan.

Cream sugar and curds, until the sugar is completely dissolved
Add in the baking powder and baking soda and combine well.
Leave aside for about 4 minutes. Bubbles will appear.

Now add in the oil and essence and combine well.
Now slowly add in the flour little by little.
Blend well with the curd mixture.

Lastly add in the mixed fruits.
Now pour the batter into the greased pan.
Bake in the preheated oven at 2oo degrees C for about 10 minutes.
Then reduce the temperature to 175 degrees C.
Bake for about 30 minutes or till a toothpick inserted into
the cake comes out clean.

Cool the cake for about 20 minutes and then overturn onto a plate.

Kugan, thanks for the super fish recipe and the cake looks beautiful.
At first I doubted the recipe as it had no coriander powder.
My family asked me to have full confidence and try.
I made the curry for dinner yesterday.
It turned out super. Thanks a lot. Hope you will post the Goan curry too.
One more request Kugan I heard there is another Kerala fish curry which will look yellow in colour.

your friends version of ilaneer payasam sounds very simple ....no cooking ahaa ahaaa....i have everything except tender coconut......indian stores ponaa thaan thedanum....try pannaren to get it...;-)

Suvai, no need to cook the payasam... but she says it's sure to please everyone... I'm not sure if it is the original version or tweaked version... if it is a traditional one, condensed milk ellam irukaadhunu ninaikiren,..

The other version of Elanir payasam I heard of:

Take coconut milk and tender coconut water in 2:1 ratio.
Add sugar or jaggery(preferably). Mix well.
Add chopped tender coconut flesh.
Let this mixture simmer for for 5 minutes.
Add cardamom powder and take off flame.

To me, this sounds more like original version... Ilaneer kidaichaal ungalukku pidicha version try panni paarunga...:)

Suvai, I finally managed to get the recipe for payar thirattal... Tirattal(kongu style) = some kind of lentil + groundnuts appadinu solraanga...Here's the recipe for payar thirattal...u can use any payar...thattai payir or pachai payar(whole green moong dhal) etc...

Payar thirattal(Kongu style):

Grind to a paste:
Handful of roasted peanuts
1/2 a handful of shallots
1/4 tsppeppercorns
green chillies
salt


Take a cup of soaked payar in a pressure cooker.(thattai payar- soak overnight; green moong 2-3 hrs)
Add in the paste,req water and pressure cook(3 whistles for green moong, 5 whistles for thattai payar).
Let the steam settle. Open the cooker now and mash the dhal mixture to a a coarse paste. Just like kadaiyals. Use maththu for mashing.
Season with oil,mustard, red chillies and curry leaves.
Serve with rice.

My niece is very excited after I posted her first dish in this forum.
So she calls me with her recipes. I chided her for wasting money in phone calls. Told her to e-mail her recipes. Here is another recipe. Thanks, Kugan98


PANNER FINGERS

Ingredients:

300 grms panner cut into finger size.
1/2 cup corn flour
1/2 cup all purpose flour
1/4 cup rice flour
¼ tsp pepper powder
1 tbs tomato sauce
1 tsp chillie powder
Salt to taste
A pinch of orange red colour
Oil to fry

Method:
Mix all the ingredients, except the oil and the panner.
Add enough water to form a thick batter.

Heat oil in a flat saucepan.
Dip each panner finger in the batter and deep fry.
When fried remove to the kitchen paper.
Serve hot with chillie sauce or tomato sauce.
Children will love it as a snack.

Kugan, thanks for all you are doing for us.

Kugan I went to a friends house, they served us a gravy, made of small onions.
It had coconut and things ground in the gravy. They said it is a Kerala dish.
Something ulli or something like that.

Also they served us two types of pickles. One lime sweet pickle and a garlic pickle.
The sweet lime pickle was soo yummy. The garlic pickle had a strong taste of vinegar.
She said both the pickles are Baba Nyonya recipes. The pickles were present from a Baba family from Malacca. Kugan can you p-lease find out the recipes for me.
Please take your time. I know I am disturbing you a lot. Sorry Kugan.

As per your request, Rose, The ulli as you say is small onion theeyal.
It is a Kerala dish, I remember posting a pavakkai theeyal recipe.

As for your sweet lemon pickle, I have also posted the recipe.
Do not worry, I will repost it for you again.
Rose you will not believe me, only today I soaked garlic pearls in vinegar.

This recipe is by my Portuguese friend who is from Malacca.

GOAN FISH CURRY

Ingredients:

4 slices of firm fish (can use any fish)
Little salt
Little pepper powder

2 tbs oil
10 shallots finely sliced
1 tbs garlic finely minced
1 tbs ginger finely minced
3 green chillies finely minced
1 sprig curry leaves

2 tsp red chillie powder
1 tsp coriander powder
½ tsp cumin powder
¼ tsp garam masala powder
¼ tsp turmeric powder

2 cups light coconut milk
¼ tsp freshly ground pepper
Juice of 1 lime or to taste
Cut coriander leaves to garnish

Method:
Clean the fish slices, sprinkle with little salt and pepper keep aside.

Heat oil in a large saucepan. Add in the shallots and sauté until golden.
Then add in the ginger, garlic, green chillies and curry leaves.
Sauté again for about 3 minutes.

Add in the chillie, coriander, cumin, garam masala and turmeric powders.
Mix for a minute, add in the coconut milk, reduce the heat to low.
Add in the ground pepper powder, salt and bring to boil.
Reduce the heat and add in the fish slices.
Simmer just for about 6 to 7 minutes, until the fish is cooked.
Off the stove, add in the lime juice, stir slowly.
Garnish with coriander leaves.

Here is Kugan's recipe for

SWEET LEMON PICKLE

Ingredients:
6 medium sized lemons
250 grms sugar make it into thick syrup
200 grms chillie powder
¼ tsp tumeric powder
1 tsp mustard seeds dry roasted and powdered
1 tsp fenugreek seeds dry roasted and powdered
3 tbs gingelly oil
½ tsp salt

Method:

Boil the lemons in a pot of water for about 10 minutes.
Let it cool, wipe nicely and cut them into pieces.
In a jar add the cooled syrup and the cut lemons.
Add the salt, and tumeric and keep aside for two days.
On the third day add the chillie powder, mustard powder
And the fenugreek powder and mix well.
Heat the oil, let it cool and add to the lemon pickle.
Taste for salt and sugar, both can be added if necessary.
Keep it in the sunlight for few days.
Use a dry spoon. It goes well with chappati, dosa and things.

Kugan's BITTER GOURD THEEYAL

Ingredients:

To Grind:
½ cup scrapped coconut
2 shallots sliced
10 black pepper corns
½ tsp cumin seeds
2 tsp chillie powder
2 tsp coriander powder
1 sprig curry leaves
1 tbs oil

Seasonings:
1 tbs oil
½ tsp mustard seeds
½ tsp fenugreek seeds
2 dry red chillies broken
2 sprigs curry leaves

2 tsp tamarind paste
¼ tsp tumeric powder
Salt to taste
1 tbs oil

Method:
Heat a pan with 1 tbs of oil.
Add in the sliced shallots, fry for a minute.
Add in the pepper corns, cumin seeds, chillie powder,
coriander powder, curry leaves and the coconut.
Fry until a nice aroma comes and the coconut is
golden brown in colour. Remove from stove, let it cool.
Then grind to a fine paste.

Heat a wok with 1 tbs oil, add in the sliced bitter gourds.
Fry them to a deep brown colour. Add in the tumeric
powder, salt and 1 cup of water. Let it boil.
Add in the tamarind paste, and let it simmer for about 6 minutes.

Heat up a pan with the 1 tbs oil.
Add in the mustard seeds, when they splutter,
add in the fenugreek seeds, dry red chillies and curry leaves.
Stir and pour it into the wok with the bitter gourds.
Cover the wok for a while. Now taste for salt and remove from stove.
Serve with rice.

Note: Theeyal can be made with any veges of your choice.
The most common ones are, shallots, snake gourd, bitter gourd,
and prawns.
You can even make with brinjals, potatoes or with mixed veges.
The theeyal tastes best the next day.

Selviem's Small onion theeyal (Ulli theeyal):
-----------------------------

small onion - 250 g
tamarind - small lime size
boiled toor dhal - 3 tblsp

fry and grind:
-------------

dry dhania - 1 1/2 tsp
kadalai paruppu - 2 tsp
red chilly - 6
fenugreek seeds - 1/4 tsp
small onion - 2
coconut - 4 tblsp grated

fry the above ingredients in oil one by one and grind.

in a pan pour 2 tblsp of oil and 2 tblsp of ghee. then add kadukku, curry leaves. when kadukku pops up add the small onion and fry for 3 minutes. then add tamarind extract, boiled dhal, salt, turmeric powder and allow it to boil for sometime. Once the onion is cooked, add the ground masala and allow it to cook for some time. finally fry 2 tblsp of grated coconut nicely in 1 tsp of ghee. add this coconut to the boiling mixture, let it boil for 3 minutes, then serve.

i tasted this theeyal suvai, it is really very tasty.

Remember someone asking for Fish molee/Fish molly(Fisn in yellow sauce-kerala style ). Here is Kugan's recipe...

FISH MOLLEE

500 grms fish slices
1 big onion sliced fine
5 green chillies slit into 4 and cut across
1 inch ginger sliced into fine strips
3 pips garlic sliced
2 medium tomatoes puried
1 tsp tumeric powder
1 tsp lime juice
2 cups of thin and 1/2 cup thick coconut milk
2 tbs oil
1 sprig curry leaves
A pinch of pepper powder
Salt to taste
Little chopped coriander leaves for garnish.

Method:
Wash and apply little salt and tumeric powder to the fish slices.
Heat oil in a broad based cooking pot.
On low heat add in the the onions, ginger, garlic and green chillies.
Sauté them well, add in the tomato puree, curry leaves.
Stir nicely, now add in the tumeric powder and the 2 cups of thin milk.

Slowly bring to boil and simmer for some time. Add salt.
Now slowly add in the fish slices and let the gravy simmer.
Once the fish is cooked , add in the pepper powder.
Also add in the thick coconut milk. Let it slowly come to a boil.
Do not let it over boil. Remove and add the lime juice and the
Chopped coriander leaves. Serve with steaming rice.

Note: You can also lightly fry the fish and add it to the gravy.

Dev, you are great. You know I have even lost the picture of the fish molee when my p.c crashed.
You have to let me into the secret as to how to find the recipes.

Dev, one more thing, I save my pictures in Picasa. There is a place to add a text to the picture. For example, I can write the name of the dish, or my name. I can do it there.

I thought of posting this curry recipe. I know it is difficult to get some ingredients in India. Maybe you can get in US in the Asian market.

CHINESE NYONYA MIXED VEGE CURRY

Ingredients:

100 grms zucchini cut into 1 inch length
100 grms carrot cut into 1 inch length
100 grms long beans cut into 1 inch length
100 grms cabbage cut into thick strips
1 red capsicum cut into strips
2 potatoes peel and cut into cubes
6 fried bean curds cut into halves
2 cups of thin coconut milk
½ cup thick coconut milk
2 tbs oil

2 tbs meat curry powder, mixed with 3 tbs water
1 vegetable cube
Salt to taste
Little sugar to taste

Blend into paste:
2 stalks of lemongrass
1 cm galangal
½ inch fresh turmeric
6 shallots
4 garlic
2 piece candlenuts
2 tbs chillie paste

Method:
Heat the oil in a pan. Stir fry the blended ingredients until fragrant.
Add in the curry powder, continue to stir fry.
Add in little of the thin coconut milk.
Continue to fry until you see oil separates.

Add in the rest of thin coconut milk and the vegetable cube.
Bring to boil, add in the carrots and potatoes.
Cover and let it cook for 5 minutes. Add in the rest of the vegetables.
Cook on medium heat until the vegetables are cooked.

Add in the bean curd, simmer for another 5 minutes.
Add in the thick coconut milk, season with salt and sugar.
Heat for a minute and remove. Serve warm.

This is a simple biscuit for tea time or with coffee.
Try it friends. Kugan98

SPICY KAARA BISCUIT

Ingredients:

500 grms all purpose flour
50 grms rava
50 grms atta flour

10 grms chillie powder little more if you like.
10 grms salt
10 grms aniseeds
25 grms sugar
50 grms sesame seeds

250 grms margarine
¼ litre water, little less or more

Method:

Preheat your oven to 180 degrees C for 10 minutes.
Grease baking trays with butter.

Mix the three flours nicely.
Now add in all the other ingredients in the second part.
Mix nicely so that all the ingredients are mixed well.

Now add in the soft margarine, and mix well with your finger tips.
They will be like bread crumbs.
Now add the water slowly and mix to a soft dough.
The dough should not be sticky.

Now take a handful of the dough.
Put it in between a plastic paper.
Use a chapathi roller and roll into thin chapathi.
Use a biscuit cutter and cut into shapes.

Put the cut biscuits in a greased tray.
Bake for about 20 minutes at 180 degrees C.
Remove and let it cool before transferring to a plate.
When fully cooled put in an air tight container.
A very good snack for tea or coffee.

Try out this simple biscuit. It can be made in a jiffy:-D



BUTTER COOKIES

Ingredients:

3 cups all purpose flour.
2 cups of butter
1 cup castor sugar
1 tsp baking powder
½ tsp baking soda

Method:

Preheat the oven to 180 degrees C.
Grease baking trays with melted butter.
Sieve the flour, baking powder and baking soda once.
Cream the butter and sugar until it becomes fluffy.
Now add the sieved flour slowly into the butter mixture.
Mix well till it becomes a smooth dough.
It should not be sticky or too dry.

Now take little dough, the size of a big marble.
Roll it into round balls. Then flatten a little with your palms.
Arrange the cookies in the tray, leaving a gap in between.
Bake for about 20 minutes on 180 degrees C.

Once cooked, remove the trays, and let it rest for about 5 minutes,
before transferring to a container.
Let it cool well before storing in an airtight container.

NYONYA GARLIC PICKLE

Ingredients:

300 grms small garlic pips skinned whole.
Little sugar
Little salt
Enough vinegar to soak all the garlic.


3 tbs red chillie paste
4 tbs shallot paste
2 tbs oil, or little more
Little sugar
Little salt
Little vinegar.

Method:

Peel the garlic pips and leave them whole.
Dry the garlic well, put them in a dry bottle.
Add in the salt, sugar and fill the container with vinegar
to cover the garlic. Leave it aside for 3 days.
After 3 days, drain all the vinegar. Discard the vinegar.

Heat a wok with the oil. add in the chillie paste and shallot paste.
Cook on medium heat till the raw smell goes and oil seperates.
Now add in the drained garlic pips. Give a good stir.
Add in little salt and sugar to taste.
Add in also new vinegar. Stir nicely, do not allow the garlic to cook.
The garlic pips should be still crunchy.
Remove, let it cool nicely. Store in glass bottle.

NOTE: You can less the chillie paste and onion paste if you want less sambal in the pickle.

top color innum brown aagalai.....regarding thayir shld it be room temperature before mixing kugan?? i think i might have made a mizzzzzztake.....i didnt have baking soda as i dont use it in my cooking so tried with a pinch more of baking powder.....i found the mixture was very thick.....so added a little milk....waiting for it to brown on the top & cool ofcourse...saapittu comments podaren............

Ah, you are right, the tayir should be in room temperature.
I did not think about it.
Mixture being very thick may be your curds were very firm.
Moreover the baking soda is important for eggless cakes.
Reason for refusing to brown, I have no idea.:confused2:
It will not brown only in microwave.
Anyway once it is cooked it will be eatable I believe.:)
This was a very easy, but a soft and spongy cake.

Rava kitchadi/Semiya kitchadi:

Grind green chillies, gin-garlic, pattai, krambu, sombu & fennel seeds , coconut-abt a tbsp to a paste. spices are all to taste... masala stuffs konjam podhum... masala flavour shouldn't be overpowering...

Heat oil. Splutter mustard, green chillies, curry leaves. Add onions & saute till translucent. Add in a handful of cori & mint chopped & tomatoes. saute for a min or so. Add in the paste & saute until flavourful. Add lotsa mixed veggies(carrot-beans-cauliflower-peas etc) chopped fine,salt. Give it a good mix & add water. Let the water come to a boil & the veggies get cooked. Do not overcook the vegies. now add in white rava or semiya, stirring all the time to avoid lumps. Cover & cook on low flame till done & the water is absorbed.

Serve hot with coconut chutney.

Note: U can add a lil ghee towards the end.
WHite rava is best for this type of kitchadi... semiya comes next...:)

Grouch, as Suvai mentioned seeing your name even I thought I am in the wrong thread or your are in the wrong thread :mrgreen:

I make the ginger-garlic paste with the same proportion of both and I grind it using vegetable oil instead of water. With oil you can preserve it for long, it gives a nice smell and it doesn't turn green.

Suvai and Dev, I did the payir thirattal today.
Did it look like this:shaking:


Dev's PAYIR THIRATTAL
Payar thirattal(Kongu style):

Grind to a paste:
Handful of roasted peanuts
1/2 a handful of shallots
1/4 tsppeppercorns
green chillies
salt


Take a cup of soaked payar in a pressure cooker.(thattai payar- soak overnight; green moong 2-3 hrs)
Add in the paste,req water and pressure cook(3 whistles for green moong, 5 whistles for thattai payar).
Let the steam settle. Open the cooker now and mash the dhal mixture to a a coarse paste. Just like kadaiyals. Use maththu for mashing.
Season with oil,mustard, red chillies and curry leaves.
Serve with rice.

Here is another recipe from Sumi. Very simple to make.
Try it out friends. Kugan98


POTATO EGG SANDWICH

Ingredients:

Few bread slices
Little tomato ketchup
Little butter to spread
Little coriander leaves chopped
½ a cup grated cheese

1 tbs oil
3 green chillies chopped
3 shallots chopped
A pinch of turmeric powder
2 potatoes boiled and cut into small pieces (not over boiled)
3 eggs ( I did not use)
Salt to taste

Method:

Beat eggs with the coriander leaves and salt to taste.
Pour this beaten egg into the pan.
Stir well and mix with the ingredients and cook till the eggs
are cooked and scrambled. Take off the stove and keep aside.

Heat the oil in a wok, add in the chopped shallots and green chillies.
Sauté till the onions turn slightly brown.
Add in the turmeric powder and the cut potatoes.
Stir fry till the potatoes are fried to a light brown colour.

Take two slices of bread. Apply butter on both the slices.
On one slice apply little tomato ketchup on the top of the butter.
Now place some scrambled egg and the potatoes on the slice.
Then sprinkle some grated cheese on top.
Now close with the other buttered bread. Now put it into a sandwich maker
and toast the two slices.


Note: you can toast two slices of bread. Put all the ingredients on
one toast, then cover with another toasted bread and serve.

kugan/dev/selvi.....adadey....i guess kugan tried her "thiratal" before i wrote up saying that i did a variation on it....i did not use anything raw.......paste ingris oru vathaku vathakitu....thattai payir didnt boil it completely...(mushya pannala) nalla namma chick peas vega vaipom thaaney antha pathathuku vega vaichi....rest followed the recipe. So ....ooopssss...........it did not turn out the way kugan made....sorry...!!
mine was veryyyy delicious.....i think frying the masala has its own taste ileengala!

O.K Groucho Anna:-D, I am 35 years old this year. So I can call you anna.
I will try to locate the greens recipes for you.

This is how I prepare ginger garlic paste. It differs from house to house.
I also make my chillie paste by grinding soaked dry chillies with little shallots.
Then cook in oil till oil separates. Cool and bottle. I never buy chillie paste from the shops. Thanks, Kugan98


Normally the ratio for ginger garlic paste is made according
to the family’s taste.
Generally, we take equal amount of ginger and garlic while
making paste for curries. Ginger is very pungent and should be used in less quantity when compared to garlic.
Again this is individual taste. I always use about 60 grms of garlic and 40 grms of ginger. This brings out the best flavour in curries.


GINGER GARLIC PASTE:

300 grms garlic pearls cleaned and dry. (Use freshly peeled garlic)
200 grms ginger cleaned cut and dry
½ tsp turmeric powder
1 tsp kosher salt
3 tbs vegetable oil or more.

Method:
Heat the oil in a pan till very hot. Keep aside to cool.
In a food processor, or mixie pluse all the remaining ingredients.
Slowly keep on adding the oil till all the ingredients are well mixed.
Remove and store in a GLASS container with an airtight lid.
It will stay good for a month or more.
It will not turn green.


Store it in the refrigerator . Use only a dry spoon.
Immediately put it back in the fridge after using.
Turmeric and oil serve as natural preservatives.

I followed Dev's method and mashed the green peas with a mathu.
I added 2 bird's eye chillie for extra oomph.
Only I was not able to taste it.
Everyone liked it with their chapathi.

I have posted this recipe before.
Try this Groucho anna.

This is a simple satisfying and nutritious way of cooking greens with tuvaram dhal. It is delicious with rice or chappaties. Pour a spoonful of pure melted ghee over each serving of hot sauce. The children will love this.


Tuvaram Dhal And Greens Creamy Sauce

Ingredients

1 cup tuvaram dhal
2 big handfuls of greens, after picking of the stalks.
( parupu keerai,methi kerrai, spinach or any of your choice )
2 onions, chopped into tiny bits.
4 pods of garlic peeled
2 green chillies,slit into haves
1 tomato chopped into tiny bits
2 tsp thick tamarind juice
1 dried red chillie broken into 2 pieces
tsp of mustard seeds
tsp of jeera
tsp of tumeric powder
1 tbs of ghee
1 tsp of oil
salt to taste

Method:
Clean the greens and chop into shreads.
Add 1 cup of dhal with tsp of tumeric and 1 tsp of oil in 6 cups of boiling water. Cook till the dhal turns soft.
Add the greens, chopped onions,slit green chillies,peeled garlic,all to the boiled dhal. If the mixture is too thick, add cup of hot water. Cook for another 5 minutes.
Add the tomatoes, tamarind juice, salt to taste,and boil till the greens are cooked. ( not over cooked )
Pour the top thin dhal – greens liquid only,into another vessal. Mash the residual thick dhal,greens, and tomato,till creamy smooth, with the wooden dhal spoon churner. (It's tasty done this way, or use your mixie )
Pour back the top thin dhal water into the mashed mixture.
Heat a wok and pour in the 1 tbs of ghee. When it turns hot, add the tsp of mustard seeds, when they stop spluttering, add the jeera and the broken dried chillies. When the chillie turns crisp, pour in the dhal mixture. Stir once thoroughly and dish out.

Actually I do not add garlic for my chillie paste, the reason is,
at times when I make sambal, or fry noodles, I like to smash
the garlic and add it to the hot oil first. It gives out a very good aroma.
So I do not want more garlic in my dish, that's why.:-D

You can add garlic in your chillie past while grinding.
It is all personal preference.

DEv, something for you to cool down. You can use kiwi fruit if you like.

DRAGON FRUIT AGAR2 (JELLY)

Ingredients:

12 grms agar- agar powder (1 packet)
100 grms sugar more if you like sweeter
600 ml water
200 ml coconut milk or low fat milk
1 cup of dragon fruit puree. ( The red type)
2 pandan leaf tied in a knot for fragrance

Method:

Soak the agar agar powder in a pot with the water.
Let it soak for about 10 minutes.
Now add in the pandan leaf and bring it up to a boil.
Cook until the agar agar powder has dissolved.

Lower down the heat and add in the coconut milk, sugar
and the dragon fruit puree. Bring it up to a boil.
Turn of the heat and taste for sweetness.
Remove the pandan leaves. Pour the mixture into a tray,
or mould as you like. Chill until firm, before serving.

Yes, Selviem, you can use all purpose flour or maida
as you all call. The yeast is very important in this recipe.

3 days ago too I made pizza for dinner.
Its so cheap to make at home.

Roshan thanks for your nice words.

High protien flour means, bread flour made from hard, high-protein wheat. It has more gluten strength and protein content than all-purpose flour. It is unbleached and sometimes conditioned with ascorbic acid, which increases volume and creates better texture. Bread flour has 12% to 14% protein (gluten). This is the best choice for yeast products.

I at times use normal all purpose flour for my pizza or simple breads.

COOL CUCUMBER SANDWICH

Ingredients:

2 cups grated cucumber (squeeze the juice out a little)
1 cup grated radish (squeeze out the juice)
2 tbs finely chopped onions
¼ tsp pepper powder
½ cup of cream cheese softened (more if you like )
Salt to taste

Soft butter to spread
Bread slices

Method:
Mix together the cream cheese, grated radish, grated cucumber,
onions, pepper powder and salt to taste.

Butter few slices of bread. Spread the cucumber filling,
onto the buttered bread slice. Top with another buttered slice.
Serve as it is or cut into diagonal.
A very cool sandwich. Tastes like tuna sandwich.


NOTE: You can use vegetarian mayo instead of the cheese.
You can even add very finely chopped green chillies.

CHILLI POTATO

Ingredients:
(A)
3 medium potatoes cut into wedges.
1 tbs rice flour
1 tbs corn flour
2 tbs all purpose flour
Little salt
Little orange colour
Oil for frying

1 tbs oil
½ tsp ginger paste
½ tsp garlic paste
2 medium onions cut into strips
1 capsicum cut into strips
½ a cup of water
1 tsp chillie sauce
1 tsp green sauce (optional )
2 tsp tomato sauce
½ tsp soy sauce
½ tsp vinegar
½ tsp black pepper powder
1 tsp corn flour mixed with 2 tbs water
Salt to taste
½ tsp honey
Chopped scallions for garnishing

Method:
Clean and cut the potatoes. Make a batter with the ingredients in (A).
Heat the oil in a pan, dip the potatoes and coat well.
Deep fry and keep aside.

Heat the 1 tbs oil in a wok, add in the ginger and garlic paste.
Sauté for a minute, add in the sliced onions, sauté well again.
When the onions turn pink a bit, add in the capsicum
and sauté fror about 2 minutes.

Now add in ½ a cup of water, add salt, black pepper, soy sauce,
green chillie sauce, chillie sauce, tomato sauce, and vinegar.

Mix well, now dilute the corn flour in the water.
Add it to the sauce and stir well.
Now add in the fried potatoes and toss well.
Add honey and garnish with the scallions.
Remove and serve hot.

Simply follow the directions and it will turn out super.

CARROT CAKE EGGLESS

Ingredients:

4 tbs soft butter
¾ cup curds, room temperature
½ cup castor sugar

1 cup of all purpose flour
1 tsp baking powder
1 tsp baking soda

1 ½ cups of grated carrots
¼ cups chopped cashew nuts or almonds
¼ cup sultanas
½ tsp grated ginger
A pinch of nutmeg
A pinch of salt.

Method:
Grease a 6 inch cake pan. Line it with parchment paper.
Preheat the oven to 180 degrees C for 10 minutes.

Sift together the flour, baking soda and baking powder 2 times.
Mix together the curds, butter and sugar, and cream well.
Do not worry if the batter looks a bit thick.

Add in the grated carrots, spices, nuts and fruit.
Mix well, now the batter should be like dropping consistency.
If not add little more curd and mix again.

Pour the batter into the cake pan. Smooth the top with the wet spatula.
Bake at 180 degrees C for about 40 minutes.
Test to see if the cake is cooked.
Remove from the oven and let it rest for about 10 minutes.

Now loosen the cake from the sides of the pan.
Turn out onto a wire rack to cool well.
Now you can slice it to your taste.

Suvai, will passon ur wishes to my cousin...

K & Suvai, idhu varai only diff thing on the menu was the tenkasi parotta... It had a lil diff texture from the usual parotta... n they said sprite and little karupatti was used in making the parotta dough...the parotta din't taste sweet though... when they put the parotta balls in oil(yes, they don't apply oil over the dough balls, they just make balls out of the dough and put it in oil), the ball almost doubles in size... and then they takeout the ball after sometime and go ahead making parotta the usual way... It's just made a lil thicker than usual parotta... the outer layer was moru moru and inner layers were feather soft...

Innoru dish which might be new to some is saamai thayir sadham...nice n creamy...;)

Dev, you are missing out on carrot cake if you have not tried.
This is only a vegetarian method. The original recipe uses eggs.
Not only that they will ice the cake with cream cheese frosting.
Ammaadi, suvaio suvai. The nuts, the sultanas ellam:slurp:

Well visitors from Singapore were having mouth ulcers.
They requested for this dish. Here is the recipe Groucho anna.

MANATHAKKALI KEERAI SAARU
Ingredients:
250 grm manathakkali keerai only the leaves
150 grms toor dal
2 green chillies sliced
3 garlic pips
tsp tumeric powder

1 tomato chopped
1 onion sliced
tsp mustard seeds
tsp cumin seeds
1 dry chillie cut into pieces
1 tsp tamarind paste diluted
Salt to taste
Oil
cup coconut milk ( optional )
Method:
Boil the dal with the tumeric powder, sliced green chillies,
And garlic.
After the dal is well cooked ,add the keerai.
Do not over cook the keerai. Remove from stove.
The consistency should be a bit watery.
Use a pan, add the oil, then the mustard seeds.
Also add the cumin seeds. Then add the dried chillies,
Chopped onions, and chopped tomatoes.
Let the tomatoes cook well, add in the diluted tamarind.
Let it boil well, pour the contents in the dal, keerai mixture.
Add salt. Add the coconut milk if you are using it.
Let it boil once and remove from stove, and serve.

Note: This keerai is called Black Nightshade in English.
It is supposed to cure stomach ulcers, and mouth ulcers.

This keerai is good source for iron.

PASALAI KEERAI POONDU MASIYAL
(PALAK)
Ingredients:
1 bunch of keerai cleaned and chopped
4 pips garlic crushed
3 green chillies sliced
Salt to taste
A pinch of sugar (it retains the green in the keerai)

To Season:
1 tbs ghee or oil
4 pips garlic chopped
1 medium onion sliced
tsp mustard seeds
tsp urad dal
Lime juice to taste

Method:
In a deep pot, add the chopped keerai, crushed garlic,
Sliced green chillies, salt and sugar. Add very little water
And cook the keerai. Remove as soon as it is cooked.
Cool a bit and mash it nicely. You can use the wooden mathu
Or just one spin in the mixie.
Heat the ghee, add the mustard seeds, and urad dal seeds.
Then add in the onions and chopped garlic.
Let the garlic brown a bit, it gives out a good aroma.
Pour it on the mashed keerai and mix nicely.
Add little lime juice to your taste.
Serve with steaming rice.

bake cake cake bake nu....jamaichiten iniki........followed the recipe to the T & it turned out well....made one simple cake (kaalai vaari vitichey....athey cake) superrrrrr ah vanthidichi............i also made the carrot cake........adaa adaa adaaa thaaan...ponga......two cakes turned out well......phewwwww!!!!!.....thank u nga kugan...dev...selvi....for the nudge from the back to bake (again)...:noteeth:

thanks a lot kugan and suvai. exactly at 12 we cut cake for him, with our friends. he was so happy , all our friends kids gave him cards.

Cake was so delicious. absolutely u r right suvai, baking smell of the cake , is something different.

Suvai, I am very happy that both the cakes turned out well.
Yes, sometimes the ingredients will play us out.
I did not have problem while baking with eggs before.
Now vegetarian cakes gives me lot of trouble at times.

Singapore visitors just left this evening.
She gave me a simple recipe for toor dal and tomato subji.

Selviem, gald that your son was very happy.
He has a able mom, so nothing to worry.
I am sure all would have enjoyed your cooking.

Here is the recipe by the guest.


TOMATO TOOR DAL SUBZI

Ingredients:

3 red tomatoes cut into pieces
3 tbs toor dal cooked
2 green chillies slit into 4 and cut across
¼ tsp turmeric powder
Little asafoetida powder
1 tsp fenugreek seeds roasted and powdered
Little curry leaves
½ tsp mustard seeds
1 tsp urad dal
2 tsp oil
Salt to taste
Little coriander leaves chopped

Method;
Heat a wok with the oil. add in the mustard and urad dal.
When the mustard seeds splutter, add in the tomatoes,
turmeric powder, asafoetida powder and the curry leaves.

Cook till the tomatoes turn mushy on a low flame.
Add in the fenugreek powder, salt and mix well.
Now add in the cooked toor dal, and let it come to one boil.
Remove and garnish with the cut coriander leaves.

It went well and very good suvaika.
Morning we went to thriuchendur murugan temple in finch avenue west,but since some consruction works were going on,we were not able to pray properly.
Then by evening we went to Canfroth ,sri durga temple.Amazing temple suvaika.
Ange netru meenakshi thirukalayanam nadanthathu.Actually we didnt expect this,nanga chumma,morning ange kovila nalla kumbida mudithanala,inge ponom,we had a very ncie time suvaika.
full kalyana poojai parthom.romba thirupithiya irunthathu.
ennaku ange irunthappo,canadala irukura feela illa,etho namma oorla oru koilku pona feel thaan.

Lunch we had at saravana bhavan.Planned to go to little india,but went to saravana bhavan.Food ok suvaika.
