Kugan, take care... It's very common here these days... should be completely cured in a week...:)

wash your hands frequently(esp after touching ur eyes) so that you don't pass it on to others...and don't allow others to use ur towel, bed etc...anything used to wipe ur eyes,or anything on which u lie down should be washed thoroughly before others use it... Madras eye is very very contagious...

My dear friends, thank you soo much for your prayers, and wishes.

First I would like to thank my niece Anu for promptly posting the birthday wishes for NM.

Dev, Suvai and Roshan for posting recipes.
I would also like to thank, NOV anneh, Rajraj uncle, P.S Tamby,
Selviem, Aarthii, Lakme, Suja, NM, bKarthika, Rose75, and Gulabjamun for keeping the thread moving while I was away.

The rain was driving me mad, I managed to take my children to many temples in Kumbakonam, Kuthanoor Saraswathy temple, Guru temple and Tirunallar temple.

Later my children were bald in our Kula Deivam temple in Sadamangalam. We cooked for about 50 people who came for the ceremony. The temple is deep in a country side.
Imagine carrying pots and pans there.

We had a good time in the Asramam in Thuraiyur.
Time was flying and the rain spoilt all our plans.

Now the medical, the doctor said that both my kidneys are impaired a little.

According to them my creatinine level is 147
It should be only from 43 to 115

Potassium level is 5.6
It should be 3.5 to 5.5

Urea too is 8.1
It should be 2.0 to 6.8

Oh they said my haemoglobin level is low.
Not only that, you cannot eat this, you cannot eat that.
All contain potassium. Cannot be cured completely.
Can prolong the duration.
Well I was sick of hearing all those.

I enjoyed my stay in my sis house.
Came to the airport wearing dark glasses,
all three of us. Like foreign spies :rotfl: :rotfl:

:shock: :shock: Kugan ka Creatinine is produced from Creatine found in liver, mostly body builders/ Athletes takes creatine to give extra strength, this can damage your kidneys. I used take this about 5 years ago, I noticed rapid gain in strength and muscle size, but then I started to get palpitation and high blood pressure, it also dehydrates you. I stopped taking it then.

but I don’t understand your craetinine levels, you are female and you do not take Creatine, so how come your creatinine level is so high??? :confused2:

Well tamby they get this result from blood test.
They say if your kidney does not filter well your Creatinine
level will be high. Its o.k lets go on with our food forum.

I had this combo in a hotel.

SIMPLE VEGETABLE PULAO

Ingredients:

3 cups of basmati rice soaked for 20 minutes
2 cups of coconut milk
2 ½ cups of water
100 grms carrot cut into strips
100 grms beans cut into lengths
10 florets of cauliflower
50 grms green peas

200 grms onions chopped
4 green chillies sliced
1 tbs ginger garlic paste
¼ cup mint leaves
¼ cup mint leaves for garnishing
Salt to taste

2 tbs ghee
1 inch cinnamon stick
1 bay leaf
2 cardamom pods
1 star anise

Method:
Heat the ghee in a pot, add in the cinnamon, cardamom,
and bay leaves.
Add in the mint leaves, add in the onions.
Sauté for a while, add in the green chillies, ginger,
garlic paste, sauté well again.
Now add in all the vegetables, and salt. Mix well.

In a rice cooker transfer the vegetables, add in the soaked
drained rice. Add in the water and the coconut milk.
Taste for salt, cover and cook till done.
If using a pressure cooker, cook for 3 whistles, and sim for about 3 minutes.
Remove and garnish with the other ¼ cup of mint leaves.
You will have fluffy white colour less spicy, vege pulao.
Serve with spicy brinjal aachari.

You can add in fried cashews and raisins if liked

BRINJAL AACHARI

Ingredients:

2 cups of brinjals cut into 1 inch cubes.

1 tbs oil
1 tsp mustard seeds
1 tsp aniseeds
1 tsp fenugreek seeds
½ tsp cumin seeds
1 sprig curry leaves

3 big tomatoes chopped fine
1 big onion chopped
1 green chillie chopped
1 tsp ginger paste
1 tsp garlic paste

1 tbs coriander powder
1 ½ tbs chillie powder
½ tsp turmeric powder
½ tsp asafoetida powder
½ tsp garam masala powder
½ tsp mango powder or lime juice

Salt to taste
Little coriander leaves chopped

Method:
Put the brinjal cubes in a bowl of water and little salt.
After 10 minutes, drain and dry them on a kitchen towel.
Now fry the brinjals till they are lightly brown. Drain and keep aside.

Heat a wok with the oil, add in the seasonings.
When the seeds crackle, add in the onions, sauté well.
Add in the ginger garlic paste and the green chillies.
Sauté till the onions are translucent.

Add in the chopped tomatoes and sauté well.
Add also the coriander, chillie, turmeric, garam masala,
asafoetida powder and mango powder.
Stir well till oil rises, add in 1 1/2 cups of water, add salt.
Mix well and let it come to a boil.

When the gravy thickens, add in the fried brinjals.
Let it come to a nice boil, taste for salt and remove.
Garnish with cut coriander leaves.
Serve, with simple vegetable pulao.

Thanks Roshan for the nice feedback.
I felt very proud of you, when I read about your profession.

Roshan, while I was in US, I used to string the curry leaves, wash them, dry them well. I used a moist muslin cloth, well wrung of water. line a airtight tupperware with the cloth and put the leaves in, close tightly and put it in the fridge.
It lasted fresh for about 3 weeks for me. It worked for me :huh:
My children are taught only to leave behind, chillies in their plate :lol:

Roshan do you get ridge gourd in your place.

RIDGE GOURD CURRY

Ingredients:

300 grms ridge gourd
2 tomatoes finely chopped
2 onions finely chopped
2 green chillies chopped
1 tsp ginger paste
1 tsp garlic paste
2 tsp chillie powder
¼ tsp turmeric powder
1 tsp poppy seed powder
2 tbs finely ground coconut paste
Salt to taste

1 tbs oil
1 sprig curry leaves
1 inch cinnamon stick
2 cloves
2 cardamom pods
1 bay leaf
Little coriander leaves to garnish.
Little lime juice

Method:
lightly scrape the ridge gourd and chop them.
Heat a wok with the oil, add in the seasonings.
Now add in the chopped onions and sauté well.

Then add in the ginger and garlic paste.
Sauté well, add in the tomatoes.
Cook till they become mushy, add in the chillie, turmeric,
poppy seed powder and the coconut paste.
Stir well, add in ½ a cup of water and the chopped ridge gourds.
Add salt and let it simmer till the vege is cooked.
Remove and add little lime juice and garnish with the
coriander leaves. Goes well with rice or roti.

TAKKALI KULAMBU

Ingredients:

300 grms red tomatoes, cut into big chunks
1 big onion chopped

(A)
To Roast And Grind:

1 tbs channa dal
½ tsp cumin seeds
2 tbs coriander seeds
4 red chillies
¼ cup onions chopped
1 ½ tbs grated coconut
Oil for roasting

1 sprig curry leaves
½ tsp mustard seeds
Little coriander leaves
Salt to taste
Oil

Method:
Heat a 1 tsp of oil in a wok, roast the (A) items one by one.
Lastly add in the onions, slightly brown them.
Add in the coconut, stir fry and remove.
When cool, blend to a smooth paste.

Heat a wok with the oil, add in the mustard seeds.
Let it crackle, add in the curry leaves.
Now add in the onions and sauté till they turn limp.

Add in the blended paste, mix well.
Add in 1 cup of water, mix them well.
Add in the cut tomatoes and salt.
Stir well and let it come to a slow boil.
Cook till the gravy is little thick.
Add the coriander leaves and remove.
Goes well with thosai, idli or rice.

No, haven't done any cooking lately. Just couldn't find the time to do so.

Whenever I come here and see your recipes and your ever-so-delicious-looking-pictures, I'm just tempted to try the recipes at home. But the moment I step into my home, I just become lazy (though I prefer to use the word "tired") to do anything, let alone cooking.

Seriously, I don't know how working women manage their house-hold chores. Just goes on to show how some men (me included) take women for granted. :oops:

An easy yummy recipe learnt from my mother:

EGG CURRY

Ingredients:
eggs-2
small onion-4/5
turmeric powder- a pinch
jeera powder-1/2 tsp
chilli powder-1/2 tsp
salt-a little
oil-2 tsp
Preparation:
Boil the eggs, remove the shell and cut them into 4 pieces lengthwise. Heat oil in the kadai and fry chopped onion and add a tbs of water. Add the turmeric poder, chilli powder, jeera powder and salt. Add to this the diced egg pieces. Saute in small fire till dry.

Suvai, 2nd batch ready aagiduchungala!!!!!!!... glad everyone enjoyed it...:D We usually make it during winter months as it's said to produce lot of heat in the body...

Arshu,few tips...
1. U have to leave the eggs undisturbed for sometime(2-3 mins) after adding it into the curry...
2. make sure the curry is not boiling rapidly... U have to keep the flame on medium...
3. You can also cover and cook after adding the eggs... that way the eggs will cook faster and the top also well cooked..

I know!!!... Actually Arshu has asked why her eggs turned out like scrambled eggs when she actually wanted to poach then...

I don't like the traditional poached eggs... but when poached in a curry base, they taste yummy, IMO...

Fried stuffs are always good...;)

NOV anneh neengalumaa? Do not worry maam.

PP, maam, as far as I know, when you add quartered eggs in a gravy, the yolk will fall out easily.
Thats why we add whole boiled eggs.
Your dish looks more like a prettal. Add the eggs last, I am sure it will taste great.


NOV anneh, of course, fried eggs added to kulambu tastes great.


As for Wibha, the method is that, when the kulambu is fully cooked.
Simmer the kulambu, do not let it boil, then break one whole egg into the gravy. Do not distrub, let it fully cook.
If your pot is big you can break about 2 to 3 eggs.
Other wise, when i egg is fully cooked, remove gently to a plate and break the other egg. This way you will not get scramble egg.

Another method my cousin makes is that, wash the egg nicely. make a small crack on the top of the egg, about 1/2 inch round. use a chop stick stir the egg well, drain out the egg. then add in very finely chopped onions, green chillies, pepper powder, little red chillie powder, little finely chopped coriander leaves, and salt.
using a small funnel, pour the egg contents into the shell.
seal the mouth with all purpose flour dough.
boil the egg, when cooked remove and shell the egg and add it to your muttai kulambu.
Hard work, but if you do it while having guests, they will praise you.

Suvai, here is your dish.

Simple Zuchini Subji (suvai)

Iniki oru simple side dish panninen here it is:

zuchini - small ones 2 halved & cut into reasonable bite size

1 big juicy tomato chopped small one

2 green chillies or one according to yr taste

little corriander & karuvepilai chopped

1 garlic pod sliced

1 onion (small one is enough) diced

two pinches of garam masala (kissan)

(Only in medium fire ) In a kadaai...add 1 & a half tsp of oil, when hot add two pinches of jeeragam, to this add diced onions & green chillies..garlic.stir till onion is limp....now add tomatoes & a pinch of turmeric.......fry this for a bit now add in the bite size zuchini stir well /add salt & cover & cook till the tomatoes are well mashed & the zuchini is cooked....once this is done....stir it..kaai onnum paathiyaai irukanum....put off the fire....add in the two pinches of garam masala stir add in the corriander & karuveppilai (chopped) stir it goes well with chapathi or even little white rice or brown rice...Smile

P.S Tamby, making the peri peri sauce is easy.
Why the trouble, just buy a bottle.

It consists of sweet red chillie, firey small chillies, garlic, white vinegar, lime juice, salt and oregano.

Heat the oil, add in the sweet red chillie and the garlic.
Then add in the white vinegar, lime juice, simmer a bit,
add in the salt the firey red chillies, and oregano.
Cool the whole thing then blend them well.
Keep in the fridge for a month. Thanks, Kugan98

[tscii]Suvai, here is a sweet dish for our Tamby Jay.


MANGO PUDDING

Ingredients:

2 cups of ripe sweet mango slices.
¼ cup of sago
½ cup condensed milk
1 cup fresh milk
2 tbs sugar
1 tsp mango essence

Method:

Soak the sago for about 10 minutes.
Boil the sago in lots of water till cooked.
Drain the water in strainer and wash the sago under running tap water
to wash out the excess starch.

Chop the mango into small pieces. Reserve little for garnishing.
Now blend the rest of the mango pieces, with the condensed milk,
fresh milk, sugar and essence to a smooth paste.

Now transfer the blended paste to a bowl. Add in the cooked sago.
Mix well, add little more fresh milk if needed.
Now pour it into small containers, top it with the mango bits.
Chill well before serving.

This is my egg salad. Of course from the old file.

O.K, I used to make egg curry, using fried eggs, boiled eggs, poached eggs.
Make egg sambal, egg salad, egg achar, spicy egg prettal.
Egg vindaloo, egg omelette, and the list can go on.
Now no eggs in the house :lol: Kugan98

O.K, I used to make egg curry, using fried eggs, boiled eggs, poached eggs.
Make egg sambal, egg salad, egg achar, spicy egg prettal.
Egg vindaloo, egg omelette, and the list can go on.
Now no eggs in the house :lol: Kugan98

SPICY NON VEGETARIAN BOLI

Ingredients:
200 grms minced chicken meat
2 tbs meat curry powder
120ml water
50 grms grated carrot
200 grms potatoes boiled and mashed (do not over boil the potato)
1 red onion minced finely
½ tsp ginger garlic paste
1 tbs oil
1 inch cinnamon stick
2 cardamom pods
Little coriander leaves cut finely
Salt and sugar to taste

Method:

Mix the minced chicken meat with the curry powder

Heat the oil in a wok, add in the cinnamon stick and cardamom pods.
Add in the minced onion, sauté nicely.
Add in the minced chicken and ginger garlic pastes.
Fry for about 2 minutes, then add in the water.
Add salt and sugar and cook on low heat .
Cook till the the water has almost evaporated.
Add in the grated carrot and the mashed potatoes.
Add also the coriander leaves.
Cook till almost dry, remove from the stove.

Now remove the cinnamon stick and cardamom pods
from the mixture. Let it cool, make into small balls.
Now use the prepared dough and make into bolis.


NOTE: For vegetarian bolis, omit the chicken.
You can add in finely cut cabbage, and green peas.
Mash the veges a little before adding the potatoes.

[tscii]A simple vendi paal kulambu, which I had in the hotel.

VENDI PAAL KULAMBU

Ingredients:

300 grms vendi cut into 2 inches long.
1 big onion sliced
3 green chillies, split into 4 and cut across.
1 inch ginger, chopped fine
1 sprig curry leaves.
¼ tsp turmeric powder
1 tsp coriander powder
¼ tsp pepper powder
½ tsp chillie powder
¼ cup of water
½ cup coconut milk
Salt to taste
Oil
Little lime juice
Fried shallots to garnish.

Method:
Heat oil in a pan, shallow fry the vendi a little, remove.
Add 2 tsp of oil in a wok, add in the onions.
Sauté well, add in the green chillies, curry leaves and ginger.
Sauté for a minute.
Add in the coriander , turmeric, chillie and pepper powder.
Stir for a minute, add in the semi fried vendi.
Give a good stir, add in the water and salt.
Cook for 5 minutes, add in the coconut milk.
One boil and off the flame.
Add the lime juice to taste, garnish with the fried shallots.

Suvai, I made this halwa today. Though this might not be authentic, the end result was very tasty and I thought it would be a good idea to note down my version of this recipe.

White pumpkin halwa/ ashgourd Halwa/ Kasi halwa:

1.Grate required quantity of mature pumpkin after removing the skin and seeds.

2. Squeeze out all the water from the grated pumpkin. You can use a big strainer to make this process easier.

3. Measure the pumpkin. Take equal quantity* of sugar. ie 1:1 ratio.(read note)

4.Put the pumpkin and milk[around 1/4 cup-1/2 cup(depends on how well the pumpkin is squeezed) for every one cup of squeezed pumpkin] in a deep, heavy bottom vessel. Cover and let cook on m medium flame for 10 minutes or until the pumpkin turns soft and fully cooked.(this step doesn't need much attention)

5.Take off the lid and cook on high flame until most of the liquid evaporates.

6. Add the sugar and keep cooking on medium flame until it thickens. Keep stirring in between so that the mixture doesn't stick to the bottom. This process takes about 15-20 minutes.(Requires moderate attention)

7. One the mixture turns thick, add 1/4 cup of ghee and keep stirring till all the ghee is absorbed.

8. Cook for further 7-10 minutes stirring every few seconds.(requires high attention)
Switch off flame.

9. Add cardamom powder and mix well.

Note:

I squeezed the pumpkins roughly after grating. So it was not very dry. So I used only about 1/4 cup milk.

After the veggie was cooked in milk, I found that it was extremely bitter. Don't know why. Anyway I proceeded with it and at the end I found no trace of bitterness. So if yours too taste bitter in the beginning, don't worry. The sugar will do its magic. ;) :lol:

I eyeballed the quantity of milk and ghee. So adjust accordingly.

The consistency of the halwa before I put off flame was half-string consistency. Just touch the halwa and test for consistency. I am not sure if this is the right consistency but for me, it was perfect.

*With equal quantity of pumpkin and sugar, the halwa was very sweet. But If u prefer moderate sweetness(like me), 3/4th sugar to 1 cup pumpkin should be fine. You can start with 1/2 cup sugar and add more half-way through.

Adding color is optional. Without color, it doesn't look very appealing but I prefer mine without color.

ashgourd kidaikum podhu senju paarunga... and you can start with 1/2 cup sugar and add more half-way through coz I find the halwa to be very very sweet... I couldn't eat more than 1 spoonful at a time... but mom says the sweet is just fine...;) :lol2:
make sure u buy a real big piece... I used 1/2 a medium pumpkin and got about 1 1/4 cup of halwa...
It's not difficult but it's time consuming. Takes atleast 1 hr from start to end , provided you have a food processor to do the grating stuff. I don't think I'll even attempt it if I don't have a food processor.

In my house during very hot season, we will buy a small ash gourd. Wash it nicely, cut the top like a cover.
Scoop out the seeds and the mushy centre.
Add in the sweet petha, close the ash gourd with the cover.
Now steam the whole, ash gourd, Then we will scoop out the contents and give the children to eat. It is very very cooling.
Try it during your hot season. Thanks Kugan98



ASH GOURD PETHA

Ingredients:
1 kg firm ash gourd
800 grms sugar
2 tsp calcium hydroxide
½ tsp alum
1 tsp rose water
2 cups of water

Method:
Dissolve alum in ½ cup of water. Keep aside.
Dissolve the calcium hydroxide in 1 liter water.
Strain with a clean cloth, keep aside.

Peel the ash gourd, discard the the seeds and mushy centre.
Cut into desired sizes. Prick all over with a fork.
Put the pieces in the calcium solution, soak for 30 minutes.
After that drain and wash under running water for 3 minutes.
Put the pieces in a bowl, sprinkle the alum water.
Shake to coat all pieces evenly.

Now drain and boil the pieces in a large heavy pan,
till a little soft and exuding water.
Now make syrup with the sugar and water.
Boil till 2 ½ thread consistency.
Now drain the ash gourd and put in the syrup.
Boil till syrup becomes thick again.
Keep covered over night.
Drain, boil syrup again till thick, add pieces, reboil for 3 minutes.
Drain out excess syrup, sprinkle rose water.
Cool completely, dry in the sun till the sugar crystalises.

This is alum,
Alum is a salt that in chemistry is a combination of an alkali metal, such as sodium, potassium, or ammonium and a trivalent metal, such as aluminum, iron, or chromium. The most common form, potassium aluminum sulfate, or potash alum, is one form that has been used in food processing. Another, sodium aluminum sulfate, is an ingredient in commercially produced baking powder.

The potassium-based alum has been used to produce crisp cucumber and watermelon-rind pickles as well as maraschino cherries, where the aluminum ions strengthen the fruits' cell-wall pectins.

You can buy it in medicine shop.

My aunt will make this iddli and a special drumstick sambar.
The iddli will be well soaked and floating in the sambar.

Your vegetarian fish curry is coming.




THATTU IDDLI

Ingredients:

1 cup raw rice.
1 cup par boiled rice
1 cup urad dal
1 tsp fenugreek seeds
1 tsp cooking soda
2 tsp of sesame oil
Salt to taste

Method:
Soak the 2 rices for about 5 hours.
Soak the urad dal and fenugreek seeds for ½ an hour.

Now grind the ingredients separately.
Grind to iddli consistency.
Now mix the two ground ingredients well.
Add in the salt, the oil and the soda mixed with little water.
Allow it to ferment for about 8 hours.

In a thattu mould, smear little sesame oil.
Pour the batter to fill the thattu.
Steam cook for about 10 to 15 minutes.
Serve warm with special drumstick sambar.
The iddli will be very spongy, pour the sambar over it.
Burp! One iddli is too big for me

SPECIAL DRUMSTICK SAMBAR

Ingredients:

Sambar Powder:
To be roasted each separately and powdered

5 dry red chillies
3 tsp channa dal
3 tsp coriander powder
1 tsp fenugreek seeds
1 sprig curry leaves.
1 tsp asafoetida


1 cup toor dal
5 pips garlic smashed
2 big tomatoes diced
1 cup shallots sliced
½ cup ash gourd julienned
10 pieces of 1 inch drumsticks
1 tsp jiggery
1 sprig curry leaves
¼ cup ghee
¼ tsp turmeric powder
1 tsp chillie powder
¼ tsp asafoetida powder
½ tsp tamarind paste
½ tsp mustard seeds
¼ cup coriander leaves finely chopped
Salt to taste

Method:
Pressure cook the thoor dal with 4 cups of water.
Cook till the dal is soft.

In a pot, add in the ghee, add in the mustard, asafoetida powder,
curry leaves, let them splutter.
Now add in the onions, garlic and sauté for a while.
Add in the tomatoes and cook till they are mushy.

Now add in the ash gourd and drumstick.
Add also the turmeric, salt, chillie powder, jiggery and 1 tsp of
the prepared sambar powder.
Mix them nicely so that the spices are all well mixed.

Now add in the cooked dal along with the water.
Cover and cook over medium heat.
Once the veges are cooked, add in the tamarind paste and the remaining sambar powder. Let it come to a boil.
Add in the cut coriander leaves and remove.
Add little ghee before serving the sambar for the iddlis.

K, frozen shoulderku exercise is the ONLY solution... my FIL is recovering from it after months of physiotheraphy... If it doesn't improve with physiotheraphy, the doc will give a local anesthesia and bring full rotation... they say it's very painful... even after that you have to do exercise until the pain goes off completely and u r able to bring full rotation... The reason for all these is lack of exercise... It's high time we make exercise-atleast basic stretching/yoga mandatory...just like food and sleep...:)

The reason for all these is lack of exercise... It's high time we make exercise-atleast basic stretching/yoga mandatory...just like food and sleep...:)

Udambai paarthu kollunga. All recipes look yummy. Mango sago payasam looks delicious. Want to try it out. Thanks for all the nice recipes posted. My virunthu with relatives went well. [tscii]Suvai, here is a sweet dish for our Tamby Jay.


MANGO PUDDING

Ingredients:

2 cups of ripe sweet mango slices.
¼ cup of sago
½ cup condensed milk
1 cup fresh milk
2 tbs sugar
1 tsp mango essence

Method:

Soak the sago for about 10 minutes.
Boil the sago in lots of water till cooked.
Drain the water in strainer and wash the sago under running tap water
to wash out the excess starch.

Chop the mango into small pieces. Reserve little for garnishing.
Now blend the rest of the mango pieces, with the condensed milk,
fresh milk, sugar and essence to a smooth paste.

Now transfer the blended paste to a bowl. Add in the cooked sago.
Mix well, add little more fresh milk if needed.
Now pour it into small containers, top it with the mango bits.
Chill well before serving.

[tscii]We have eaten so many types of puttu.
Rice flour, atta flour, all purpose flour, and even ragi flour.
(This reminds me of sura puttu :lol: )
Try this tapioca puttu.


TAPIOCA PUTTU

Ingredients:

300 grms tapioca
¼ cup grated coconut
Sugar to taste
Pinch of salt
¼ cup grated coconut

Method:
Peel and grate the tapioca finely.
Using a muslin cloth, squeeze out all the juice.
Discard the juice.

Put the squeezed tapioca in a bowl.
Add the coconut, and the pinch of salt.
Using your fingers, mix them like breadcrumbs.

Now using a iddli thattu, spread little coconut on it.
Now put some of the tapioca mixture on it.
Close and steam for about 10 minutes.
Remove and mix the sugar, your puttu is ready.


Another way which I like is, boil the tapioca.
Mash it with a masher, add in coconut and sugar.
You have an instant snack to eat.

[tscii]Please try out this simple brinjal vathakkal.
It goes well with rice or bread.


BRINJAL VATHAKKAL

Ingredients:

250 grms brinjal sliced into wedges.
100 grms onion chopped
4 pips garlic chopped
¼ tsp ginger paste
2 green chillies chopped
1 tsp coriander powder
1 tsp chillie powder
¼ tsp turmeric powder
½ tsp coarsely ground pepper powder
1 tsp aniseeds
1 sprig curry leaves
1 tbs oil
Salt to taste


Method:
Heat oil in a wok, add in the aniseeds and curry leaves.
Add in the onions and sauté until lightly brown.
Add in the cut brinjals, salt and stir and cook on medium heat.
Let the brinjals cook in the oil, add in the turmeric, chillie,
and coriander powders. Keep stirring, add in ginger and garlic.

Sprinkle little water and keep on stirring slowly.
So that the masala sticks to the brinjal pieces.
Lastly add in the ground pepper.
Give a good turn over and remove.
Garnish with cut coriander if wished.

Dev, this roti John is another version of sandwiches or similar to murtabak filling. I used to do this for the children before.
There are many types of fillings, meat is the most common one.
You can do it with sardine fish, or even just eggs. Try it Dev.

ROTI JOHN

Ingredients:

150 grms minced chicken
1 onion chopped
1 tsp meat curry powder
1 pip garlic chopped
Little spring onion chopped
Little pepper powder
Tiny bits of button mushrooms
Salt to taste
Little oil

3 eggs
Little mayonnaise
Little chillie tomato sauce
Hot Dog buns, sliced sideways not completely through

Method:
Heat oil in a wok, add in the onions and garlic.
Fry till fragrant, add in the minced chicken.
Stir nicely, add in the curry powder, salt and little water.
Cook on low heat, add in the mushroom.
Cook till the liquid is almost dried up.
Add in the pepper powder . Remove.

In another bowl, beat the eggs, add in the cooked meat,
Salt and the spring onions. Mix well.

Heat a bit of oil in a non stick pan.
Pour a ladle of the egg mixture on to the pan.
Place the bun face down on the egg mixture.
Use a dosai spoon to lift up the whole bun, once the egg is cooked.
Pipe some tomato sauce and mayonnaise sauce.
Garnish with lettuce and tomato slices.
Close the bread, pipe little zigzag pattern on the bun
using the sauce. Serve.

You can also use a can by pricking several large holes in it.

when my cousin ordered it. It was super in taste.

Suvai, rice puttu always comes top. This tapioca, just to have the taste of it only.

I will be posting simple dishes that were made for daily cooking in my aunts house. Simple, but taste was abaaram.

I am posting the Chinese style fried rice and gobi manchurian that I had in the hotel. Enjoy Suvai, Kugan98


HOTEL STYLE VEGETABLE FRIED RICE

Ingredients:

1 cup basmati rice
100 grms cabbage cut into squares
100 grms carrot cut into cubes
100 grms capsicum cut intp squares
100 grms beans cut small
100 grms onions chopped
100 spring onion cut into lengths
8 pips garlic chopped fine
½ inch ginger chopped fine

½ tsp salt
½ tsp pepper powder
½ tsp sugar
Little aji no motto
Little vinegar or lime juice
1 tbs oil

Method:
Cook the basmati rice with little salt till ¾ cooked.
Drain and keep aside to cool.

Heat oil in a wok, add in the chopped onions.
Sauté until ¾ fried , add in cabbage, carrot, capsicum,
beans, spring onion, ginger and garlic.
Fry till all the veges are ¾ cooked. No water is added.

Now add in the rice , stir slowly so that the rice is not broken.
Sim the fire, add in the salt, pepper powder, sugar,
aji no motto and vinegar or lime juice.
Taste for salt , stir the rice slowly so that the veges are
spread out evenly. Remove and serve with cauliflower manchurian.

For non vegetarians, you can serve with chillie prawns, or chillie chicken.

NOTE: No soy sauce is used in this fried rice.

CAULIFLOWER MANCHURIAN

Ingredients:

300 grms of cauliflower florets

(A)
2 tbs of plain flour
4 tbs corn flour
2 tbs rice flour
1 tsp soy sauce
Little sugar
A pinch of aji no motto
Little pepper powder
Little salt
Little vinegar
Little edible orange colour

(B)
1 tsp oil
150 grms onion chopped
10 pips garlic chopped
100 grms capsicum chopped
Little ginger chopped
Little spring onion leaf chopped
1 tsp pepper powder
½ tsp sugar
1 tsp soy sauce
2 tsp tomato sauce
2 tsp chillie sauce


Method:
Cut and clean the cauliflower florets.
Put them in a big bowl, add in all the (A) ingredients.
Just sprinkle little water, and mix every thing well.
The mixture should not be watery.
The flour should coat the cauliflower well.
Heat a wok with oil and deep fry the cauliflower florets.

Now heat a wok with 1 tsp oil, add in the onions, ginger, garlic,
and capsicum. Stir fry for a minute.
Add in the fried cauliflower florets, mix well.
Add in pepper powder, sugar, soy sauce, tomato sauce
and the chillie sauce. Give a good stir.
Now add 1 tbs of corn flour in ½ cup of water.
Raise the heat, pour over the Manchurian.
Give one good stir, garnish with the spring onion and remove.
Serve with hotel style fried rice.

What do we do when u have a big bunch of sour grapes?... Trash it...NO!!!... I have been experimenting with sour grapes the whole of this week and I liked rasam made out of it and also use it in sambar instead of tamarind... It doesn't alter the taste even a tiny bit...:D

For both the recipes, U just have to grind it with lil water and extract the juice. Add it in place of tamarind juice and let it boil just like we do with tamarind juice in the recipe... Make sure it is boiled well, else u might end up with itchy throat...

I'm planning grapes rice(just like lemon rice) next...:lol:

K, do post the malaysian fried rice recipe... :) n do try the grapes rasam and I am sure u won't regret... I din't use even tomatoes for the rasam as my grapes were EXTREMELY sour...

My lil one loves pavakkai chips and she keeps eating it as a snack... so I buy it from a nearby shop and it keeps well(crisp) for 2 weeks... will using more of corn flour or cornflour alone help maintain the crispiness?...

Dev, try using corn flour and rice flour.
Just sprinkle water, very very little. Just for the flour to stick to the pavakkai. Then you fry, see it stays crisp longer.

CHINESE VEGETABLE FRIED RICE

Ingredients

3 cups cold cooked rice.

1 tbs of oil
1 tsp minced fresh ginger
1 onion diced
¼ cup green peas
½ red capsicum diced
2 tsp soy sauce
1 tsp vegetarian oyster sauce
Black pepper to taste
1 spring onion chopped

Method:
Heat oil in a wok, add in the ginger, stir fry until fragrant.
Add in the onions, stir fry for about 2 minutes.
Push the onion to the side of the wok, add in the green peas.
Stir fry for a minute, push to the side, add in the red capsicum
stir fry for a minute. Now remove all the things to a plate.

Now in the same pan, add in the rice, use a spatula to turn
and move the rice around.
Stir until the rice is heated through.
Add in the stir fried vegetables. Add in the sauces and pepper powder.
Give it a good stir, remove and garnish with the spring onions.

NOTE: You can use any vege of your choice.
You can also use little dark soy sauce if you need colour for the rice.

EGG FRIED RICE

Ingredients:

350 grms cooked rice (refrigerated)

2 eggs beaten
2 tbs shredded carrots
4 tbs thawed peas
2 tbs soy sauce
2 tbs oyster sauce
1 spring onion sliced
2 pips garlic minced
2 tbs oil
Little white pepper
Salt to taste

Method:
Heat a wok with 1 tbs of oil. pour the egg and stir rapidly
to break it up.
Push the egg to the side, pour in the other tbs of oil.
Add in the minced garlic, sauté until it gives a nice aroma.
Add in the cold rice, push back the fried egg.
Stir well until it is mixed thoroughly.

Now add in the carrots, peas and spring onions.
Mix thoroughly, add in the soy sauce, oyster sauce and pepper.
Toss it all together and remove from heat.

NOTE: When the rice is chilled, the grains do not tend to stick together.
This makes it perfect for fried rice dishes.

You can add in cooked shredded meat if preferred.

I remember posting a recipe for szechuan sauce.
I will post the fried frice if you like.
We even have our Malaysian style simple fried rice :lol:

Dev the reason for the smokey taste is the hot wok. One of the reasons that restaurant-made fried rice has that smoky flavour is the high temperatures and the seasoned carbon steel woks that they use. .

The soy sauce will make the rice wet instead of caramelising and the rice too will not get heated all the way through. Now, to get a nice, smoky, fried rice flavor, you have to stir-fry everything on a very high heat, and quickly.

Heat your wok on high, add the cooking oil then stir fry all the ingredients on high heat .
Here at times you can see the flames in the wok.
The soy sauce will sizzle and give out an aroma.

For Chinese fried rice the sesame oil will make the difference.

CAULIFLOWER MUSHROOM CURRY

Ingredients:

200 grms mushroom quartered
100 grms carrot diced
100 grms cauliflower florets
50 grms green peas
3 tbs tomato paste
1 tsp chillie powder
1 tsp coriander powder
¾ tsp garam masala powder
2 cups of water
½ cup whisked curds
4 tbs finely cut coriander leaves
2 tbs oil
Salt to taste

To grind fine:
1 large onion chopped
4 tbs cashew nuts
½ tsp cumin seeds
3 dry chillies
1 inch ginger
2 birds eye chillie

Method:
Heat oil in a wok, add in the ground paste.
On low heat cook the paste until the raw smell goes.
Keep stirring to prevent burning.

Add in the tomato paste, garam masala, coriander, and chillie.
Stir fry for 2 to 3 minutes.
Add 1 cup of water, add in the cauliflower and carrot.
Cook for about 4 minutes, add in the cut mushrooms.
Add little more water if needed.
Lastly add in the green peas and salt.

Remove from heat, when the gravy is slightly thick and the veges cooked.
Now add in the well beaten curds, mix well.
Garnish with the cut coriander leaves.
Goes well with rice roti and even pulao.

SPECIAL POTATO THOKKU

Ingredients:

500 grms potato ¾ cooked
1 tsp pepper
1 tsp cumin
200 grms small onion chopped
1 sprig curry leaves
1 tbs ginger garlic paste
¼ tsp turmeric powder
2 tsp chillie powder
2 tbs oil
1 tbs special masala powder
¼ cup coconut, ¼ cup cashew nuts, ground fine
Little lime juice
Salt to taste

Special masala powder:
100 grms coriander seeds
1 tbs par boiled rice
1 sprig curry leaves.
Dry roast everything and grind to powder

Method:
Cube the potatoes and deep fry them in oil. Keep aside.

Heat oil in a wok, add in the black pepper and the cumin seeds.
Let them splutter, add in the curry leaves, and onions.
Sauté well till light brown in colour.
Add in the ginger and garlic paste. Stir well.

Add in the turmeric and chillie powder.
Add in also the special masala powder. Mix well.
Now add in the fried potatoes and salt. Fry well again.
Lastly add in the coconut and cashew nut paste.
Give a good stir so that the potato is well mixed.
Cook for a minute and remove. Sprinkle little lime juice.
Garnish with the cut coriander leaves.

Suvai, I saw my aunt's cook adding the curds to the curry.
Gave a good stir and removed from the flame.
I too did the same in my house.
I did not think of asking her about the boiling.
Neenga venumnaa, oru boil vanthathum, remove pannidungga.
I too will try it another time.

Unggalukku Indonesia style fried rice venumaa?
They will use, sweet sauce and fish sauce, plus lots of non vege items to their fried rice. Poduren.

Malaysian Indian vegetarian style poduren, try pannungo.

[tscii] Suvai and Dev, the basic ingredient for fried rice is the cooked cold rice and the seasonings.
You can add in any vegetables, meat and things to make it a wholesome meal. I do not add aji no motto in our fried rice.

You can add in cabbage, fried potato pieces, green peas, young corn, and so on. Thanks, Kugan98


KUGAN”S STYLE FRIED RICE

Ingredients:

3 cups cooked cold long grained rice
¼ cup cut carrots
¼ cup cauliflower florets cut small
¼ cup beans cut in lengths
¼ cup soaked soya mate sliced
¼ cup soaked dried mushroom sliced

2 tbs chillie paste
3 pips garlic smashed
1 onion sliced
2 tsp soy sauce
2 tsp vinegar
½ tsp white pepper
1 tbs tomato sauce
2 tbs oil
Salt to taste
Spring onion chopped to garnish

Method:

Heat the oil in a wok, add in the smashed garlic.
Sauté till nice aroma comes. Add in the sliced onions.
Sauté till the onions are a bit brown.
Add in the chillie paste, and cook till the oil rises.

Now add in the sliced soya mate and the mushroom.
Stir fry nicely, add in the vegetables, sprinkle little water.
Stir fry till the veges are cooked, but crisp.

Now add all the seasonings, give a good stir.
Lastly add in the rice and toss well, so that the rice
Is mixed well with the spices. Taste for salt.
Sprinkle the spring onion and give a final mix.
Remove and serve.

I bought a pack of something called Ragi Huri Hittu... any idea what it can be used for... The packet instruction says mix it with milk n sugar and drink... or add jaggery syrup and cardamom and make it into a ball... no cooking instructions given... I guess it's something like read to eat stuff... but I just want to confirm it... Huri in kannada means roasted/puffed I guess... so is it something like flour made from ragi pori?...

My Malay friend told me, just have some cold rice.
Slice some onions, smash some garlic, have some anchovies.
Little fresh red chillies sliced. Heat oil add in the garlic, onions, anchovies, saute well, the aroma will be so nice.
add in the red chillies, add in the rice and some soy sauce.
stir well, your fried rice is ready, so simple.

Ragi means our kevur.
Huri means roasted
Hittu means flour
So it is roasted ragi flour.
You can make a healthy drink by adding milk and sugar.
You can make ragi sweet balls, or anything that you can make with roasted ragi flour.

Sudhaka, the lil one takes ragi porridge for breakfast and nothing else... so when we travel, it's a big headache... I have to find an accomodation where they allow atleast light cooking or where they can do it for us... So I thought of experimenting with it if it really doesn't need to be cooked!!!...

SNAKEGOURD KOOTU

Ingredients:
200 grms snake gourd cut small
50 grms toor dal boiled
1 onion chopped
1 tomato chopped
2 green chillies chopped
5 garlic pips chopped
1 inch ginger chopped

1 tbs oil
¼ tsp turmeric powder
½ tsp chillie powder
¼ tsp cumin seeds
½ tsp mustard seeds
1 sprig curry leaves
A pinch of asafoetida powder
Salt to taste
Little coriander leaves for garnish

Method:
Heat a wok with the oil, add in the mustard seeds and cumin.
Let it splutter, add in the onions and sauté for a while.
Now add in the garlic, ginger, green chillies, and curry leaves.
Add in the turmeric powder and chillie powder.
Sauté well, add in the tomato and stir well.

Now add in the cut snake gourd pieces, salt and fry for few minutes.
Add in the cooked dal, with its little water.
Cover and cook over medium heat.
When the snake gourd is cooked and moisture absorbed,
Add in the asafoetida powder, stir well and remove.
Garnish with the cut coriander leaves.

SNAKE GOURD PORICHA KOOTU

Ingredients:

300 grms snake gourd cut into pieces
100 grms of moong dal boiled


To Be Roasted Ground To Paste:
5 red chillies
2 tsp urad dal
1 tsp black pepper
½ tsp cumin seeds
¼ tsp turmeric powder
1 tbs coconut grated

¼ tsp cumin seeds
½ tsp mustard seeds
¼ tsp urad dal
1 sprig curry leaves
Little asafoetida powder
1 tbs oil or ghee
Salt to taste

Method:
Heat a wok with the oil, add in the mustard seeds and cumin.
followed by urad dal and curry leaves. Let them splutter.

Add in the cut snake gourd pieces.
Stir them nicely, add in the ground paste.
Add salt and asafoetida powder, stir well.
Let the snake gourd cook on low heat.
Stir once in a way.

Lastly add in the cooked moong dal.
Stir well and cook for about 5 minutes.
Remove and serve.

OATS RAISIN SLICE

Ingredients:
(A)
½ cup raisins
½ cup sugar
2 cups rolled oats
1 cup rolled oats ground into flour
¼ tsp nutmeg powder
½ tsp cinnamon powder
1 tsp baking soda
½ tsp salt

(B)
¼ cup oil
3 tbs butter
¼ cup milk
½ tsp vanilla essence
2 tbs flaxseed powder
6 tbs water

Method

Preheat the oven to 180 degrees C
Grease a baking dish with little butter and keep aside.

In a large bowl, add the ingredients in (A)
Mix well and keep aside.

Mix the flaxseed powder with the 6 tbs of water.
Mix well till it becomes like sticky.
Add in the butter and mix well.

Now add this to the ingredients in the bowl.
Add in the oil , milk and the essence.
Mix everything well till blended.

Now spoon the mixture into the dish and spread evenly.
Place it in the oven and bake for about 20 minutes,
or till cooked and the top is golden brown.

Remove from the oven, cool thoroughly and slice.


Sorry the slices are not that neat.

POMEGRANATE SALAD

Ingredients:

1 cup of pomegranate pearls
1 cup of sporuted moong dal
1 cup of thick beaten curds
1 green chillie chopped
1 shallot chopped
1/4 tsp pepper powder
salt to taste
little coriander leaves chopped

Method:
Mix all the ingredients gently.
Chill and serve.

Interesting recipes K... I made the ragi drink using huri hittu for the lil one n she drank it without a fuss... :)

Do u have a recipe for samosa using a dry dhal filling.... the filling is like kachori filling... These kind of samosa keeps well for a few days(3-4 days) on the counter...

Roshan, I read the following tip on sanjeevkapoor.com...maybe u can try it for curry leaves...

"To keep herbs fresh; put them in a plastic bag, blow air into the bag as if it were a balloon and seal it tight."

Dev, very glad that your little one enjoyed the drink.
So you will be happy with your trip.

Its nice, even if you add little cardamom powder, make the mixture a bit thick like sweet kali.
Your daughter would not like it. Its o.k for grown up people.

I sa another huri hittu with nuts n cardamom added to it... I'll try that aswell... yes, I am so relieved...:)

Take ur time K... avasaram illa... also, if u have some recipes that will be good for travel,pls do post it... Though we have fed her with restaurant food once in a while, I'm not sure how well she'll adjust to it for 3 whole days...

You get the most kick when you pick the fruit from the tree, break it open and chew one pearl at a time. Give some to your daughter. She gulps it and wipes her hand in your saree! Your saree changes color and your daughter gets the best kick! :lol:

[tscii]Dev, I hope this is the recipe that you want.
This is the dry dal filling that I have in the file.
Make tha samosa cover as usual and use this filling.
If this is not the recipe I will ask around for you. Kugan98

DRY MOONG DAL FILLING

Ingredients:

½ cup split moong dal
½ tsp cumin seeds
¼ tsp garam masala
1 tsp mango powder
½ tsp chillie flakes
¼ tsp ginger paste
A pinch of asafoetida powder
Little curry leaves chopped
1 tsp oil
Salt to taste

Method:
Soak the moong for 30 minutes.
Drain and grind coarsely, with very minimum water.

Heat a wok with the oil, add in the cumin and asafoetida powder.
Once the cumin splutters, add in the curry leaves.
Now add in the ground dal, ginger paste , lower the heat and keep stirring.
Keep stirring till the dal does not stick to the wok.

Now add in the garam masala, chillie flakes, mango powder, salt.
Stir it until the mixture dries very well.
Use it as a filling.

[tscii]I was surprised to see my friend making chocolates for Christmas. It was so easy. Here is the recipe from her.

HOMEMADE CHOCOLATE

Ingredients:

400 grms milk powder
½ cup cocoa powder
2 cups sugar
1 cup water
½ cup butter
1 tsp vanilla essence
Little nuts and raisins

Method:

In a non stick pan boil the water and sugar till it reaches
1 string consistency. Remove from the stove.

Add in the butter and mix till the butter melts.
Once the butter melts, add in the milk powder,
sieved cocoa powder and the vanilla essence.
Mix really well until everything blends.

Add in the nuts and the raisins.
Grease a tray, pour in the mixture.
Allow the mixture to cool down for few minutes.
Use a knife and mark squares. Let it harden.
Remove and wrap them in coloured papers.

Note: Once it cools you can even roll it into balls
