Dear friends, my aunt gave me this recipe, which goes very well with vegetable biriyani or non-vegetable biriyani. I tried it and it came out very well.
Since we add in vegetables for the biriyani, we need not add any to the gravy.

EMPTY BIRYANI GRAVY

Ingredients:

1 tbs coriander seeds
3 red dry chillies
½ tsp cumin seeds
½ tsp aniseeds
1 tsp black pepper corns
½ inch cinnamon stick
2 cloves
1 cardamom pod
1 small star anise.
Combine all the ingredients and powder them. Need not roast.


5 pips garlic
1 inch ginger chopped
3 green chillies sliced
15 shallots.
Mince all ingredients nicely, or grind to a very coarse paste. No water.

3 tbs ghee or oil
2 bay leaves
½ tsp dry funugreek leaves
2 sprig curry leaves

2 tomatoes chopped
1 tsp red chillie powder
1 tsp coriander powder
¼ tsp tumeric powder
Salt to taste
½ cup water

1 tbs ground coconut paste
2 tbs chopped coriander leaves

Method:

Heat the ghee in a pot. Add in the bay leaves, funugreek and curry leaves.
Let them sizzle, then add in the minced ingredients. Saute well.
Add in ground spice powder and saute again well.

Now add in the chopped tomatoes, red chillie, coriander and tumeric powders.
Add in the salt and the water. Cook on medium heat till oil separates.
(At this stage, you can add any veges, or non-veges)

(If adding any veges or non –veges, add little water to cook them through.)

Lastly add in the ground coconut paste. Mix well and simmer for few minutes.
Remove and garnish with the cut coriander leaves.

NOTE: you can add mushroom, potato, or sliced capsicums.
OR small pieces of chicken, prawns, or boiled eggs.

Surprise,surprise!!!... I tried the same recipe a couple of months back(had some guests tht day n unfortunately, my biriyani was a bit bland. So did a google search and ended up trying this gravy n it did makeup for the spiceless biriyani :oops:) ... they have stepwise pics for this recipe in the website which I love...:) super taste gravy idhu... leftovers can be had with chapathi, dosai also...

Kugan how are you? You are missing for few days. I hope you are well. Kugan a friend served us a meal of vegetables in cheese sauce. She said she steamed the veges and then put them in cheese sauce then bake it. I cannot understand her explanations. You are good at writing down the recipe in order. Please Kugan, it does not matter if you do not have a picture. Just post the recipe. My children loved it very much. She called it AU something. like grating. Thanks Kugan.

Rose, here is the recipe for the vegetable Au Gratin.

VEGETABLE AUGRATIN

Ingredients:

100 grms cauliflowe cut into florets
100 grms carrot cut into cubes
100 grms button muchrooms quartered
100 grms beans cut into 1 inch in length
100 grms potatoes cut into cubes
( you can add baby corn, peas , brocoli any thing you fancy )

1 tsp oregano
½ tsp pepper powder
Salt to taste

White Sauce:
4 tbs butter
3 tbs all purpose flour
3 to 4 cups milk
½ tsp oregano
Salt to taste
Pepper powder to taste
1 tsp chillie flakes
½ cup chedder cheese

Topping:
½ cup grated chedder cheese
½ cup bread crumbs
Little butter

Method:
Steam the vegetables, see that they are crunchy.
Sprinkle with salt, pepper and the herbs. Keep aside.

Heat butter, add in the flour, saute over medium heat till raw smell goes.
Do not let the flour to burn.
Remove from the heat and add 1 cup of milk, and stir constantly.
See that no lumps are formed. Put the pan again over the heat.

Add in the remaining milk. Stir over low heat till sauce thickens.
Add in the salt, pepper and chillie flakes. Mix well.
Remove from the heat and add the cheese. Add in the steamed vegetables

Now transfer the mixture into a greased baking dish.
Sprinkle the bread crumbs and the grated cheese.
Put little butter here and there on the mixture.
Bake in a preheated oven @ 180 degrees C till the top browns a little.
Remove and let it rest for about 10 minutes.
Serve with toasted buttered bread.

ROASTED BRINJAL CHUTNEY

Ingredients:

2 big brinjals,
Little oil

8 red chillies, roasted
2 tbs grated coconut, roasted
1 tsp tamarind paste
Salt to taste

2 tsp oil
Little asafoetida powder
1 sprig curry leaves

2 tsp mustard seeds, roasted and ground very coarsely.

Method:
Apply oil all over the brinjals. Piecre a rod to the brinjal and roast in direct flame. The skin will be charred, and see that the brinjal is fully cooked.
Cool and remove the skins. Keep aside.

In a mixie grind the red chillies with the tamarind paste and little warm water.
Now add in the coconut, roasted brinjal, and salt.
Give a quick grind to mix everything well. It should be in chutney consistency.
Remove to a bowl.

Heat the oil and add in the asafoetida powder and the curry leaves.
Add in the coarsely ground mustard seeds. Pour the seasonings on the chutney.
Mix well and serve with idli or dosai.

Try this tasty dish. Kugan98


BITTERGOURD PEPPER FRY

Ingredients:

1 tbs oil
1 tsp aniseeds
2 sprigs curry leaves
200 grms big onion chopped
2 tsp ginger and garlic paste
2 green chillies sliced

250 grms bitter gourd cut into rounds ( I used the big type )
1 tsp chillie powder
2 tsp coriander powder
¼ tsp tumeric powder
Salt to taste
Little water
3 tsp of coarsely ground black pepper
1 tbs of thick tamarind juice

Method:

Heat the oil in a wok. Add in the aniseeds and let them splutter.
Add in the curry leaves and chopped onions, saute until lightly brown.
Add in the ginger, garlic paste. Saute well.
Add in the green chillies and stir fry well.

Now add in the cut bittergourds, stir fry well.
Now add in the chillie, coriander, and tumeric powders.
Stir fry well, add in the salt and sprinkle little water.
Cover and cook on medium heat for about 5 minutes.

Remove the cover and stir well.
Sprinkle the pepper powder and add in the tamarind juice.
Mix well and stir fry a minute. Remove and serve.

My dear friends, I have something to tell you all.
Every time I will blabber about my health. Well my health is not that good.:roll:
I will be away from the 16th of October for about 4 months.
I had to make this painful decision. I am going for my treatment as well as for my inner peace. It will be a undisclosed destination.
I will be back, if God willing, and resume the thread again.

I feel very sad to leave this forum as well as my family.
Festival is just around the corner, I cannot help it.
My niece in US Meerra, has promised to contribute recipes occasionally.
I have asked her to register in the forum. Hope she has done.

I have lot of work to complete before I leave. Time is running fast.
I hope you all will understand, if I am not around for few days.
Anyhow I will try my best to come to the forum daily before I leave.

I am very grateful to all my friends for their help in keeping the thread alive.
DEV, who has been very very helpful, in making the blog.
A person who is always there to post something.

Dear friends, it has been raining daily here.
So I wanted to try out this famous minstrone soup.
It was yummy, a wholesome food. Thanks. Kugan98


MINSTRONE SOUP

Ingredients:

1 tbs olive oil
1 bay leaf
2 pips of garlic finely chopped
1 big onion finely chopped
¼ tsp dried oregano
½ tsp dried basil
1 tsp freshly chopped parsely
1 tsp chillie powder

3 large tomatoes finely chopped
6 cups of vegetable stock or water
1 carrot cut into cubes
1 ½ cups of cooked chick peas or kidney beans
1 red capsicum cut into bite sized cubes
1 green capsicum cut into bite sized cubes
½ cup french beans cut into ½ inch in length
1 cup pasta, ( I used swirls )
1 cup quartered button mushrooms

1 cup tomato puree
1 cup spinach leaves shredded
Salt to taste
Coarsely ground pepper powder to taste
1 tsp chillie flakes
Little grated cheese ( optional )

Method:
Heat oil in a pot, add in the bay leaf, chopped garlic, onions and saute well.
Add in the oregano, basil , parsely and the chillie powder. Give a stir.
Add in the chopped tomatoes, and cook till mushy.
Add in the vegetable stock, add in all the ingredients till the mushroom.

Cook on medium heat till the pasta is cooked well.
Add in the tomato puree and the shredded spinach leaves.
Add salt and pepper to taste. Cook on medium heat for about 3 minutes.
Sprinkle the chillie flakes and remove.
Serve hot with toasted bread.

NOTE: There is no fast and hard rules as what veges to use.
You can add, celery, potato, cauliflower, babycorn, or anything you fancy.

Kugan the soup looks yummy. Will try it out soon, but I might remove the button mushroom, as I don't like button mushrooms.

Btw, Kugan, I have tried the Bittergourd pepper fry, really tasty. Goes well with sambar.

Kugan super soup. Very good as a wholesome meal. Kugan I will look very cruel, but I have to ask you.
I tasted a dish with spinach and chickpeas, in a friends house. I felt shy to ask the recipe.
Do you by any chance know the recipe? Please do not take the trouble to post the picture.
That too if you have the time, otherwise I am willing to wait 4 months for you.

CHOW CHOW SUBJI

Ingredients:

1 tbs oil
¼ tsp cumin seeds
Little tumeric powder
Little asafoetida powder
3 big tomatoes pureed

500 grms chow chow cut into ¾ inch in length
½ tsp sambar powder
½ tsp coriander powder
¼ tsp cumin powder
1 tsp chillie powder

½ cup water
Salt to taste

Method:

Heat oil in a wok, add in the cumin seeds, let it splutter.
Add in the tumeric powder and asafoetida powder.
Add in the pureed tomatoes, stir fry and cook till oil separates.

Now add in the cut chow chow, give a good stir.
Add in all the powders, stir fry nicely.
Now add in the water and salt. Mix well.

Cover and cook on medium heat till the chow chow is cooked.
Let the gravy become little thick, remove.
Serve as a side dish or with roti.

Cook and enjoy. Kugan98


SPINACH AND CHICK PEAS CURRY

Ingredients:

1 tbs oil
1 tsp cumin seeds
2 onions sliced
2 tsp ginger and garlic paste
2 green chillies sliced
1 tbs chopped coriander leaves
2 tomatoes chopped
Salt to taste

1 tsp chillie powder
½ tsp tumeric powder
1 tsp coriander powder


1 cup soaked and cooked chickpeas
2 cups chopped spinach leaves
2 tbs mashed cooked chickpeas

Method:

Heat a wok with the oil. Add in the cumin seeds, let it splutter.
Add in the sliced onions, and saute till lightly brown.
Add in the ginger garlic paste, fry well. add in the green chillies.
Add also the chopped coriander leaves , salt and the tomatoes.

Cook till the tomatoes are mushy. Add in the chillie, tumeric and coriander.
Stir fry well, add 1 cup of water, and let it come to a boil.
Add in the chickpeas, and cook for a minute.
Now add in the spinach leaves, boil till the spinach is cooked, not over boiled.

See the consistency of the gravy, add in mashed chickpeas.
Add little water if needed, the gravy should be a little thick.
Taste and remove, goes well with rice or roti.

Another type of okra dish. Try it friends. Kugan98


SPICY CREAMY OKRA

Ingredients:
15 okra cut into 1 ½ inches in length
2 onions chopped
2 red tomatoes chopped
1 capsicum cubed
2 tsp ginger garlic paste
1 tsp chillie powder
2 tsp coriander powder
¼ tsp tumeric powder
¼ tsp garam masala powder
10 cashew nuts grind to a paste

2 tbs oil
1 tsp coarsely crushed coriander seeds
1 tsp cumin seeds
1 sprig curry leaves
Salt to taste
Chopped coriander leaves.

Method:
Heat little oil and shallow fry the cut okra. Remove.
Heat a wok with 2 tbs of oil.add in the cumin seeds, and curry leaves.
Now add in the crushed coriander seeds, stir for a second.
Add in the onions and saute till just transparent.

Add in the ginger garlic paste and fry till the raw smell goes.
Add in the chopped tomatoes and salt. Cook till mushy.
Add in the coriander , chillie, tumeric, and garam masala powders.
Stir well and cook. Add in the ground cashew nut paste.

Stir fry till the oil separates. Add in the capsicum cubes and fry.
Add in the shallow fried okra, mix well.
Add little water and let the okra cook. Do not over cook the okra.
Remove and garnish with the cut coriander leaves.

I was in the mood for noodles today but no sauces at home... Not even tomato sauce...:cry: So I did some mix n match and ended up with a spicy noodles that tasted almost like the ones u get in kai yendhi bhavans/hawker stalls...;)

Spicy Stir fried Noodles- Indian Ishtyle

cut 1 m. carrot into matchsticks.
cut 7-8 beans fine.
slice 1/2 a capsicum.
Shredded cabbage-1 cup
1 onion- sliced
Spring onion greens- a handful- roughly chopped

2 packet noodles- cook till done(in salted water) and immediately dip in cold water. Drain n keep aside.

Grind to a paste- 1 or 2 green chilly, 3 garlic cloves, 1 inch ginger
Grind separately- 1 tomato

Oil- 1 tbsp
ghee- 1 tbsp
salt
sugar- 1 tsp
pepper powder- 1/2 tsp
Aachi curry powder- 1/2 tsp or more depending on how spicy u want.

How to:
1. Heat a cast iron wok on high flame to smoking point and add the oil n ghee. Let it smoke.
2. Add the onions n g-g-g paste. Let the onions turn limp.
3. Add the beans n cabbage. Saute for 2 mins.
4. Add tomato paste and saute for a min.
5. Add capsicum, carrot n saute for 2 mins.
6. Add salt, sugar, pepper pwd and saute for another minute on high flame.
7. Add curry masala and saute for another 1/2 minute on medium flame. Don't burn the masala.
8. Add the noodles, spring onions and stir fry for another 2 mins or until the noodles is steaming hot.Take off flame.
9. You can add some lemon juice but it's purely optional.
10. Dish out.

Match fixing:
Tomato sauce
Curd(lol). Yes, I like to have noodles with curd towards the end. Indian Ishtyle again...:rotfl:

Sorry, no pics this time. But trust me, it tastes really good. Nice n spicy n hot...mmmm...;) Go ahead n try it if u have aachi curry masala on hand. I've tried with few other masala powders but this I feel is the best for noodles.

You can add tomato sauce instead of tomato paste. In that case, add it towards the end(along with the noodles).

Friends try this tofu dish and see. Kugan98



TOFU JALFREZI

Ingredients:

1 tbs oil
½ tsp cumin seeds
1 big onion sliced
1 tsp ginger paste
1 tsp garlic paste

1 red tomato made into puree
¼ tsp tumeric powder
1 tsp chillie powder
½ tsp garam masala powder
1 tbs tomato sauce
Salt to taste

100 grms carrot cut into sticks
4 tbs of water
100 grms capsicum cut into strips
300 grms firm tofu cut into strips and fried

Method:
Hear oil in a wok, add in the cumin and let it splutter.
Add in the sliced onions, saute for a minit.
Add in the ginger and garlic paste, stir fry well.

Add in the tomato puree, fry till there is no raw smell.
Add in the tumeric, chillie, garam masala, tomato sauce and salt.
Give a good stir, add in the carrot and about 4 tbs of water.

Cook for a minute, the carrots must be still crunchy.
Add in the capsicum, and give a quick stir.
Lastly add in the tofu slices, toss well till all the tofu pieces,
are well coated with the sauce. Cook for about 3 minutes and remove.

NOTE: You can use panner slices if you cannot find tofu.

K, do post the ther vendakkai dish when u find time... I prepare one dish using vendakkai almost everyday... vendakkai has lots of fiber n it helps empty the bowel without much efforts...;)

Do try the noodles... it was good... adjust spice to ur liking coz I know ur family likes much more spice than what we like... Indha noodles konjam kaara saarama irundhaal nalla irukku...

It's best suited for curries...bet it veg or egg or chicken... This aachi curry pwd is good for noodles and also for tomato rice...it gives a biriyani kind of flavor when added to tomato rice... neenga verai edhil ellam use pannuveenga indha curry pwd?...

i made ur noodles, with aachi mutton masala, with little bit of soya granules, it was super. in my house, if i use the flavour of mutton or chicken to noodles, pasta and macroni kids will love it. also my son will pack for his friends too.
i normally use aachi chicken or mutton masala for noodels, macroni, pasta, kadalai curry, ofcourse for chicken and mutton curry, instead of garam masala powder for veg kuruma i use a bit of aachi either of these two masalas, cauliflower and potato dry masala.Download: eType1.com/f.php?FJNv0e

Makes 3 cups

Ingredients:
3 cups biodynamic organic whole milk yogurt
5 cloves garlic (less if large cloves), peeled and minced
Salt to taste
3 tsp. Raita Mix 2

Method:
Blend all ingredients.

SIMPLE VENDI MASALA


Ingredients:
2 tsp oil
1 tsp mustard seeds
½ tsp cumin seeds
1 tsp urad dal
1 sprig curry leaves

1 tsp ginger chopped fine
2 green chillies sliced
2 onions cubed
2 tomatoes cubed
Salt to taste

2 tsp coriander powder
½ tsp tumeric powder
500 grms vendi, clean and dry, and cut into 1 ½ inches in length

Method:

Heat oil in a wok, add in the mustard seeds and let it splutter.
Add in the cumin, urad dal and curry leaves.
Add in the chopped ginger and the green chillies.
Saute for a minute, add in the cubed onions.

Stir fry the onions, let the onions be crisp.
Add in the cut tomatoes, and salt. Stir fry untill the tomatoes are soft.
Add in the coriander and tumeric powders.
Sprinkle little water, add in the cut vendi, give a good mix.

Cover and cook on medium heat till the vendi is cooked.
Stir fry nicely and remove.

I do make simple vegetable dressings.
One of it is buttermilk coriander dressing.
Creamy Vinaigrette, and also balsamic honey vinaigrette

Butter milk Coriander Dressing:

1/2 cup beaten buttermilk
1/3 cup vegetarian mayonnaise
3 tbs fresh coriander leaves chopped
1 tbs shallot minced.
salt and pepper to taste

Whisk together the buttermilk and the mayonnaise.
Stir in the coriander leaves and shallots.
Season with salt and pepper to taste.


Creamy Vinaigrette:
3 tbs whisked cream
1 tbs lemon juice
1 tsp sugar
1 tsp Dijon mustard

Combine everything well to use


Balsamic Vinaigrette:

1/2 tbs balsamic vinegar
1 tbs lemon juice
1/4 tsp honey
1/4 tsp coarsely ground pepper
2 tbs olive oil
1/2 tsp salt.

In a blender mix all the ingredients for vinaigrette, except the olive oil.
Pluse once or twice, add the olive oil while mixing gradually.

Method:
Heat the oil in a wok. Add in the onions and saute till light brown.
Add in the carrots , beans and salt. Stir fry for a second.
Add in the ginger , garlic paste, capsicum and green chillies.
Stir fry well, add in the chillie, coriander and the sauces.

Stir well, add in the water and salt. Let it come to a boil.
You will get a thick gravy or sauce.
Now add in the cooked macaroni and srir fry well.
Remove and serve the spicy macaroni.

Balaji, here's how to make paneer...

1. extract juice from 1 lemon n mix with a tbsp of water...you can use vinegar or sour curd/buttermilk instead...
2. bring abt a ltr of milk to a boil... reduce flame to low
3. slowly add in the lemon juice/vinegar/buttermilk...keep mixing...once u see the milk start curdling ,stop adding the juice and see if the milk is fully curdles...else add some more juice...
Let cook for a minute and then switch off flame...
4. line a wide strainer with a clean cloth and pour the curdled mixture...the curds will now be collected in the cloth... you can also collect the whey water and use it to knead chapathi dough...
now pour some cold water over the curds and then make it into a bundle n strain out as much water from the curd as possible ...
5. hang this cheese bundle for about 1/2 hr or so... (if u want to make rasgulla,rasmalai etc,stop at this step)
6. then place on a flat surface and place a heavy weight on it and leave for ab out an hr...
7. take off the weight and remove the cloth in which it was bundles... cut into desired shapes...

Hi Dev.. nalla irukkaen.. neenga eppadi? I am in Kabul. I prefer the dressing with minimal masala and I mostly like the Eurpoean style dressing. The 3rd option in Kuhan's recipe looks perfect for me. For fruit salad I prefer plain yoghurt without spices,sugar or salt.

Bitter gourd in Coconut Milk

Ingredients:

1 medium bitter gourd, trimmed, cut into half, deseeded and sliced thinly
1 tablespoon ghee
1 tsp brown mustard seed
1 tsp urad dhal
1/2 tsp ground turmeric
1/2 tsp ground cumin
1/2 cup thick coconut milk mixed with 1/2 cup pure water
Rock salt to taste
6-8 curry leaves
Blanch the sliced bitter gourd in boiling salted water for 3-4 minutes, drain.

Method:
Heat ghee in a heavy-bottomed pot till it looks clear.
Add the brown mustard seed and urad dhal.
When the mustard seed starts to pop and the urad dhal turns golden brown,
add the bitter gourd, turmeric, cumin and salt, and mix well.
Add the thinned coconut milk and crushed curry leaves and simmer until
heated through. Serve hot with rice.

Okra in Spicy Gravy (Kuganka)

Ingredients:

10 tender okra washed and dried and cut length wise
1 large onion, chopped finely
1 medium tomato diced
1 tsp. ginger-garlic paste
1 tsp. red chilli powder or to taste
1/2 tsp. turmeric powder
1 tsp. garam masala powder
2 tbsp. oil
Salt to taste

Other Seasoning
1 tbsp. fried onions
4 cloves garlic, minced
1 tbsp. coconut powder
1 green chilli minced
Salt to taste

Method:
Heat oil in a pan and add the chopped onion and fry till it's brown in colour. Add ginger garlic, turmeric, garam masala, chilli powder and salt to taste and okra. Saute and fry the okra till coated with the onions. Add other seasonings and tomato and stir them in.
Cover and steam till the okra changes color and becomes soft. Serve hot.

2 tablespoons minced celery
2 tablespoons tomato ketchup
4 teaspoons soy sauce
2 teaspoons sugar
2 teaspoons fresh lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper

1. Place all ingredients in blender; blend on high speed for 30
seconds or until the ginger is well-pureed and mixture is well
blended.

2. Store in covered container in refrigerator.

I am rare participant in this forum. I was last here almost a year back when I was pregnant and wanted some recipe
I find this very useful and best forum for Indian esp tamil food. So am back here, hoping to visit it more often from now on.

I have a son who is one year old now. As I am working and have been unable to find any other option , I have started putting him in day care from last month.
I have to pack food for him for the whole day, atleast 3 good meals, breakfast, lunch and tiffenitem/snackld for evening.

Since he is growing up and getting aware of things, he is not eating the same mashed plain food that I give him.
So am planning to give him different foods everyday from now on. For which I am here.

I know you people here are experts in cooking. I would need your guidance, suggestions m,tips and good recipes for my 1 year old son.

Expecting a good response from you all.

FRENzz i hav tried this vegetable briyani receipe which i found in a magazine...it turns out well....try it n drop ur comments..... :)


Ingredients

10 types from a choice of cauliflower, potato, carrots, asparagus, broccoli cut into bite size pieces, washed and drained
2 tbs. ghee
1 onion, peeled and thinly sliced
1 clove of garlic minced
1/2 inch piece ginger minced
1 green chillie minced
Package of Aachi Biryani
1 tsp. salt (adjust to taste)
1/2 cup thick yoghurt
1 tomato, chopped
1/4 bunch of cilantro leaves, minced
1/2 lemon, juice

Method:
Heat ghee in a large pan and fry onions, until quite dark brown. Now add ginger and garlic. Fry for a minute or two.
Add veggies, spices from the package, salt, green chilli. Stir fry until veggies is nicely coated with the spices.
Add yoghurt, tomatoes, cilantro, lime juice. Cook, stirring frequently, until veggies are soft and only a little gravy is left.

While veggies are cooking, wash rice , rinse a few times till rice water is somewhat clear. Drain.

Add rice to the veggies and 2 1/4 cups of water and bring to a rolling boil. Then turn heat to medium-low and cover the pot with a tight lid. Cook for 10 minutes and turn the heat off. Do not lift the lid. Let the rice steam in its own heat for another 5 minutes.

The rice is ready to serve. Serve hot......yummmyyyyy

Dear Rose here is the recipe as I promised.
Enjoy. Kugan98

MULUGAWATANY SOUP

Ingredients:

2 tbs toor dal
2 tbs moong dal
Little tumeric powder
4 pips of garlic
4 cups of water

1 tbs butter or oil
½ tsp aniseeds
½ tsp cumin seeds
1 bay leaf
1 sprig curry leaves
2 green chillies sliced
1 tsp pepper corns
1 medium chopped onion
1 small tomato chopped
2 tbs of chopped carrot
2 tsp grated coconut

2 tbs of cooked rice ( optional )

Method:
Cook the dals with garlic, and tumeric powder till well cooked.
Heat a wok with the butter or oil.
Add in all the ingredients till the coconut.
Saute well till the raw smell goes.

Add the sauteed ingredients to the dal mixture.
Let it boil for for about 5 minutes.
Remove from the heat. Fish out the bay leaves and the curry leaves.
Let the mixture cool. Use a blender and blend the mixture.

Add in more boiled water if needed.
Strain the mixture, garnish with coriander leaves.
Add in the cooked rice and serve.

today i did Bread Uppuma for breakfast.....my own receipe.....hahahaha
my MIL enjoy it....am so happy....
hope all my frens in KK tried n drop ur comments......

Ingredients for Bread Uppuma

8 Bread slices
1 chopped Onion
2 or 3 red chillies
1 tsp pepper
1 tsp garam masala powder
1 tsp mustard seeds
1 tsp urad dhal
1 tsp bengal gram dhal
lemon juice ( for taste )
little cashew nuts
Salt to taste
Oil

Method:

Wet the bread squeezing dry, crumble between palm, keep aside.
Heat oil in a pan, add mustard seeds, curry leaves, and the chillies made into halves for the sharp taste.
Add blanched dhals.Add the crushed and crumbled bread, cashew nuts, salt/pepper/garam masala to taste, stir for 2 minutes.
Add lemon juice. Sprinkle coriander leaves and cook for a few minutes…finally enjoy the Bread Upma - Yummy

A parting recipe for all my friends.

BRINJAL CURRY WITH VINEGAR

Ingredients:

2 big brinjals, slit into 4 and cut into thick slices
Little tumeric powder
Little salt
Oil for frying

1 tbs oil
1 inch of cinnamon stick
1 tsp funugreek seeds
1 sprig curry leaves
1 big onion chopped
¼ cup capsicum sliced
1 tbs grated ginger
3 pips grated garlic

1 tbs curry powder
1 tsp red chillie powder
¼ tsp tumeric powder
1 tsp sugar
1 tbs vinegar
Salt to taste
½ cup coconut milk

Method:
Rub the tumeric and salt to the sliced brinjals.
Deep fry and remove.

Heat 1 tbs of oil in a wok. Add in the cinnamon, funugreek and curry leaves.
Let them splutter, add in the onions, capsicum and ginger.
Saute well till the onions are tender. Add in the grated garlic fry for a minute.

Now add in the curry powder , chillie powder and tumeric powder.
Stir fry well for a minute. Add in the sugar, vinegar and salt to taste.
Mix well, add in the coconut milk. Cook for a minute.

Add in the fried brinjals, give a good stir, cook for a minute.
Remove and serve with rice or chapathi.

SORAKKAI CURRY

Ingredients:

2 tbs oil
1 onion chopped
1 tsp ginger paste
1 tsp garlic paste
2 tomatoes chopped

¼ tsp turmeric powder
½ tsp cumin powder
2 tbs coriander powder
1 tbs chillie powder

300 grms of sorakkai cut into cubes
¼ cup of channa dal boiled until soft
Salt to taste

2 tbs of tomato ketchup

Method:
Heat oil in a kadai, add in the onions and sauté till lightly brown.
Add in the ginger, garlic paste. Stir fry well.
Add in the chopped tomatoes and cook till mushy.

Add in the dry spices, and cook till oil rises.
Add in the cut sorakkai cubes , salt and the boiled dal.
Add in ¼ cup of water if needed.

Cook till the veges are soft and the gravy a bit thick.
Add in the tomato ketchup, stir well and remove.
Serve with rice or chapathi.

Frienz, this recipe and picture were sent to me by Kugan before she left.




CAULIFLOWER PEPPER FRY

Ingredients:

500 grms cauliflower florets
Little tumeric powder
Little salt

1 tbs butter or oil
½ tsp cumin seeds
1 medium onion sliced
Little salt
3 green chillies sliced
1 tsp ginger paste
1 tsp garlic paste
1 sprig curry leaves
1 ½ tsp coarsely ground black pepper
Little chopped coriander leaves

Method:
Clean the cauliflower florets. Apply in the tumeric and salt.
Steam the cauliflower florets till ½ cooked. Remove.

Heat the butter in a wok. Add in the cumin seeds, let them splutter.
Add in the onions and salt. Saute well.
Add in the green chillies, ginger, garlic paste.
Add also the curry leaves. Stir fry well.

Add in the steamed cauliflowers, stir fry well.
Lastly add in the coarsely ground blackpepper.
Give a very good stir fry , garnish with coriander leaves.
Remove and serve hot as a side dish.

cauliflower pepper fry looks delicious... I've tried a similar recipe from one of Chef Damu's show... only the seasoning was bit diff with mustard, red chillies, cumin,urad dhal n fennel seeds in it...very tasty with curd rice...tastes best if made spicy...:)

Well frienz, this sweet goes by many names.
We call it sweet somas. Here is the recipe. Enjoy.


SWEET SOMAS

Ingredients:

The dough:
300 grms all purpose flour
1 tbs sooji
2 tbs ghee
1 tsp baking soda
Salt to taste
Warm water as needed

Fillings:
1 cup sweetened khoya
2 tbs chopped almonds and cashews
2 tbs chopped raisins and sultanas
½ tsp cardamom powder

Sealing:
1 tbs all purpose flour
2 tbs water

Syrup:
1 cup sugar
½ cup water

Oil for frying

Method:
Take the flour, sooji, ghee baking soda and salt in a bowl.
Add water slowly and knead it into a soft dough.
Knead this dough for 5 minutes till it gets soft and manageable.
Apply some ghee, cover with a damp cloth and let it rest for 30 minutes.

Mix all the ingredients for the fillings well and set aside.
Mix the all purpose flour with the water, keep aside the sealing

Make a syrup with the sugar and water.
It should be a one string consistency. Keep it warm.
Heat the oil in a kadai.

Now take the dough and divide into equal portions depending how big you want.
Take one portion and roll it into a thin puri
Put some of the fillings into one side of the puri.
Apply little sealing around the edges. Now fold it into a semi circle.
Now press the edges together with your fingers, while making the pattern.

Now fry the sweet somas on low heat till it gets light golden and crispy.
Lift them out of the oil with a slotted spoon.
Dip the somas into the syrup making sure they are coated with syrup all around.
Place the somas on a wire rack to allow the extra syrup to drain.
Somas will dry in an hour. Store in airtight containers

Frienz here we get the fresh lima beans.
i made it into a thick curry. Enjoy.



LIMA BEANS CURRY

Ingredients:

1 tbs oil
½ tsp mustard seeds
½ tsp cumin seeds
1 big onion cut fine
2 tomatoes chopped

2 cups of fresh lima beans
½ tsp cumin powder
2 tsp coriander powder
Little water
Salt to taste

To Grind:
1 tbs ginger
2 tbs fresh coconut
½ tsp aniseeds
2 tsp chillie powder

Little coriander leaves to garnish

Method:
Heat oil in a kadai, add in the mustard seeds and cumin seeds.
Let them splutter. Add in the onions and sauté till light brown.
Add in the chopped tomatoes and cook till mushy.

Add in the cumin powder and coriander powder.
Add in also the ground ingredients, mix well.
Add in the lima beans, salt and also some water.

Cook till the beans are cooked but not mushy.
Let the gravy become little thick.
Add in the coriander leaves and remove.

VEGETARIAN CHILLIE

Ingredients;

1 tbs oil
1 big onion chopped
1 red capsicum chopped
1 tbs chopped garlic
2 green chillies chopped

1 small zucchini cubed
½ a cup corn kernels
500 grms button mushroom quartered

1 tbs chillie powder
1 tsp cumin powder
Salt to taste
2 big tomatoes chopped
1 cup cooked beans, ( white cannellini, lima or black beans
1 can of crushed tomatoes
1 cup vegetable stock
2 tbs chopped coriander leaves
2 tsp hot sauce
Little freshly ground pepper

Method:
In a large pot, heat the oil, add in the onions, capsicum, garlic and green chillies.
Cook stirring for 2 minutes. Add in the zucchini, corn and mushrooms.
Keep stirring for about 6 minutes. Add in the chillie powder, cumin and salt.
Keep stirring for about 1 minute, add in the cut tomatoes, stir well.

Add in the cooked beans crushed tomatoes, and vegetable stock.
Bring to boil, reduce the heat and simmer for about 10 minutes.
Add in the black pepper, hot sauce and the coriander leaves.
Stir once and remove.

I usually serve this chillie with cooked brown rice.
Top it with sour cream and serve.

Frienz, try this simple green tomato curry.



GREEN TOMATOES IN SPICY SAUCE

Ingredients:
1 tbs oil
½ tsp cumin seeds
½ tsp funugreek seeds
300 grms green tomatoes quartered
2 green chillies chopped
1 tsp chillie powder
2 tsp coriander powder
¼ tsp turmeric powder
Salt to taste
½ tsp sugar
2 pips garlic smashed
1 tsp lime juice if needed

Method:

Heat the oil in a kadai. Add in the cumin and funugreek seeds.
Let them splutter, add in the green chillies and the green tomatoes.
Stir fry for a minute. Add in chillie, coriander, turmeric powderes.

Stir fry again for a minute. Add in the salt, and let it cook well.
Once the tomatoes are cooked, add in the sugar and the smashed garlic.
Give a good stir, taste, if your tomatoes taste sour, leave out the lime juice.
If not add in the lime juice and dish out.
A very tasty dish for rice, chapathis.

Hi Meera,
Ohhhh yaaa i am long timer here & we always have plenty of fun when we all get into one silly mood.
I am not sure if i will be able to come often. But will surely try.

The other day I tried this vegie cutlet in the oven & it came out pretty good.

Potato - 1 - boiled & mashed
carrot - 1 - boiled & mashed
peas - a little - boiled mashed
beans - 4 strings. - boiled mashed

onion - 1 - cut fine
ginger a little piece. grated
G. Chillie - 1 or red chillie powder according to yr taste.
1 slice bread - crumble & keep aside.

2 cloves
1 inch cinnamon
powder the above two & keep aside.

In a kadai...add little oil & add little jeera to this add the cut onions / chopped green chillie / ginger fry for a bit & add the powder....now quickly add in the mashed vegies...give it a good stir...add salt & a little lemon juice......once this cools....add crumbled bread...depending one or two slices ( this helps in binding).

Now take a baking sheet & smear some oil on it. Divide the mashed vegies into portions & shape them like a cutlet....i did small rounds....now smear some oil on both sides of these cutlets & put them on to a preheated oven (between 350 & 400 degrs). Allow it the sides to become slightly brown...then flip & do the same.
U can add garam masala too if u like.
This can be eaten with yogurt / ketchup / mint or corriander chutney....or even plain.
Enjoy!!!

i suggest you shallow fry instead of deep....it will still be crispy nga.....deep fry senja thappilai...initial recipe is deep fried thaanga...kandipa suvaiya irukum.

its a modified version of sindhi aloo tikki

Steamed aapams (recipe from off the internet)

2 cups cooked rice
2 cups maidha
2 cups rice flour
1 cup brown sugar
3/4 cup sugar
2 1/2 cup water
2 tsp yeast (sorry edited) :noteeth:

Blend rice and water till fine (add water bit by bit
Add brown sugar dan white sugar and continue blending
In another container mix flours and yeast...(edited :noteeth:
Add the blended items to it
Leave it to rise for three hours
Steam in little cups or tray

TARO ROOT ROAST

Ingredients:

300 grms taro root

½ tsp ginger paste
½ tsp garlic paste
1 ½ tbs besan flour
2 tsp rice flour
1 tsp red chillie powder
¼ tsp coriander powder
¼ tsp garam masala powder
Little asafetida powder
Salt to taste

Oil for shallow fry

Method:

Boil the taro root. See that it does not over cook.
Cool , skin and cut into ¼ inch in thickness.

Mix all the ingredients together, except the oil.
The cut taro roots will be sticky.
Now toss the cut taro root in the ingredients.
The dry ingredients will stick to the taro roots.

Now heat very little oil in a non-stick saucepan.
Arrange the slices of taro roots, and shallow fry them.
The slices should be roasted to a nice golden colour on both sides.
Remove and serve with rasam rice, or curd rice.

My dear frienz, thanks for all the posts, and wishes for Kugan.

In my house we do not cook rice, instead we cook cracked wheat.
Yesterday I tried making cracked wheat pongal.
It turned out awesome. same method like rice pongal.

Today I am making brown lentil soup.
You know winter is around and hot soup will be a great welcome.
I will post the recipe and picture soon.
