Suvai nga, I accompanied my niece to hospital, who under went a small surgery.
I was sitting in the waiting room.
Oru mami came and sat by my side.
After talking to her for sometime, as usual,
I started the topic of food.
She narrated this recipe for me.
Kappunu pudichitu vanthu samachiten :lol:

Here friends I am posting a super colourful recipe by
our own Suvai nga. Try panni paarungga. Suvai O Suvai.
okay today i made this very very simple poriyal:
ithu veetila iruntha kaaigalai vaithu senjathu...Wink
.nalla 2" size ku vetikonga square square ah.....the following vegies:
2 capsicum/1 red bell pepper/ one yellow bell pepper/ one orange bell pepper/ hand ful of cut beans...one or two inch size/ mushroom cut into 4/carrot cut into cubes./onions cut into squares....
in a wok...pour 1 1/2 tsp oil & when hot add jeera to it...now add the onions & carrot & stir fry till carrot is almost cooked...now add all the bell peppers & then finally add mushrooms....stir fry add salt/plain chilli powder & mix it till it blends well....now add chopped kothamalli thandu & ilai...finally sprinkle little ( just a pinch) of garam masala...this goes well with more kuzhambu/ keerai kootu & also with plain rice.....try panni parunga.
(make sure the vegies are not watery) but moist yet dry Wink

kugan: It is ksheeraamrutham (ksheer + amrutham)
ksheer in sanskrit means milk. I am sure you heard of paarkkadal or ksheera saagaram ! :lol:

Suvai nga, my aunt told me that it is a dessert.
Made with milk, condensed milk, almonds. cashew nuts,
carrots and spices. She says it is the food for Gods.
How come carrots :roll: I do not understand.
Anyway I have asked for the recipe.
Tomorrow morning is semiya idli in our house.
So recipe and picture will be posted.
Imm , inum neraiya puthu, puthu recipe kandu pidinggal.

selvi.....u can surely add potatoes./ tofu/ panner..but cut the potatoes either small or boil them just right & u can add....u will really like the taste as it is very simple to make.....give it a try when u find the time....;-)

Friends, I accompanied my friend to go shopping.
I was surprized when she took about 4 to 5
bottles of the omma water. (Its about 250ml each bottle)
I asked her what she does with so many.
She told me that her children cannot go without the
omma water. For stomach pain, heart burn, acidity,
and even vommiting. She will give it to them.
Even her elderly parents need this omma water.
I asked her why don't you make your own.
I have heard that distilled omma water is the best.
It is very expensive. Commercially made ones,
use a type of chemical to do the water.
I told her how my grandma used to make her own.
OMMA WATER
Ingredients:
3 tsp omma seeds cleaned.
2 cups of water
Method:
Dry roast the ommam seeds, till you get a nice aroma.
add the roasted seeds to the water and bring to a slow boil. Boil well till the water reduces to 1 1/2 cups.
Cool and strain it.
You can give 1 tbs of this water when needed.

K, no functions this month...:) Kid is down with cold & mild stomach problem... So I don't come often... but I do read all the posts... just don't feel like posting anything...
BTW, how do we clean omam... I've heard tht it should be rubbed between the palms & blown some 7-8 times to remove the husk...is tht how u do it or is ur method diff?... & how long can we store this omam water?

Hmm .. i remember a time when i used to make the different types of agar-agar for birthdays and Deepavali and they used to sell special moulds too! kugan, thanks for giving the method of oma water. my mom use to clean the way how dev explained, after that she washes it. strain the water and dry it in the hot sun and store the seeds.

Dev, my grandmother used to put the ommam in a muram, rub with her hands, then she will remove the hushs and things by vinowing (pudaikkirathu)
Quick wash, srtain, dry and will be stored.
She normally will make only the amount that I have stated. You have to cool the omma water properly, then store in a dry bottle. Good for about 2 weeks.
You can now put it in the fridge, take out before 1/2 an hour and use it.
Take care of your little one. Aishu too was given a nebuliser to clear her chest cold.

I am having some problem with my pictures.
I will post every thing soon.
My aunty was worried after seeing my rolling eyes near the word carrot.
Only then she relaised that it is entirely a different recipe.
She has posted both the recipes and explanations.
I will post soon as soon as my picture problems are solved.

I was just joking, hope your kid gets well, soon, try this omam water, my mum still gives me when i get stomach :opps: :ashamed: upset and it does work :yes: and seeragam soaked overr night and eatetn in the morning with water also cools the stomach down.

[tscii]Suvai nga, semiya idli is made in many ways.
this is how we make. Very healthy because of the veges.
Its a good tiffin for the childrens.
It can be eaten plain or with any chutney of your choice.
SEMIYA IDLI
Ingredients:
1 ½ cups broken pieces of semiya
¼ cup rava
1 tbs ghee
1 ½ cups nicely beaten curds
A pinch of baking soda
Salt to taste
1 tbs minced coriander leaves
1 sprig curry leaves minced
2 green chillies chopped
2 tbs chopped onions
1 tsp grated ginger
2 tbs finely cut carrots
2 tbs finely sliced cabbage
Seasonings:
½ tsp mustard seeds
1 tsp urad dal
1 tsp channa dal
1 tbs oil
Method:
Roast the semiya and the rava separately in the ghee.
Keep aside.
Mix to gether the salt, soda and the curds.
Keep aside.
Heat a wok with the oil, add in the seasonings.
Sauté well, add in the onions, ginger, sauté for a moment.
Add in the rest of the chopped items.
Just stir fry for a moment and remove.
Let it cool a bit.
Now mix together the rava, semiya, the cooked veges.
Mix well, now add in the curd mixture.
The batter should be a little thick than our idli batter.
So be careful when you add the curds. Check for salt.
Leave it for about 10 minutes. Check again the consistency.
If it is very thick, then you can add little water.
Grease idli moulds well. Pour a ladle full of batter into each,
And steam for about 5 minutes, or till done.
It can be eaten as it is, or serve with any chutney.
I served with tomato chutney.

Here is the recipe for ksheeramurtham.
She said this is what she knows, sorry if it differs from others.

KSHEERAMURTHAM
Ingredients:
3 ripe bananas
1 tsp raisins
1 tsp chopped dates
¼ cup grated jiggery
1 tsp honey
1 tsp ghee
1 tsp broken kalkandu (rock sugar)
1 pinch of sukku powder
¾ cup of fresh cow’s milk , boiled till ¼ cup
Method:
Boil the milk in a low fire till it becomes ¼ cup.
Keep this aside.
Powder the grated jiggery.
In a bowl, mash the bananas, add in the raisins, jaggery,
dates, honey, sukku powder, ghee and kalkandu, mix well.
Add in the warm milk to this mixture.
Offer to the Gods.

Yes, it is the story when they used 'Vasuki' (snake) to churn out various AMirta's from the ocean, in the end what turned was poison, it started to leak from the ocean, this poison could have wiped out all living things on earth, hence the devas and asuras ran to Bhrama for help, he couldn't help. who in turn ran to vishnu for help, who couldnt help either . so all the asuras and devas along with vishnu and bhrama ran towards kailash to seek 'parameshwarar's help :notworthy:
who came to ocean, drank the poison, on hearing her pati (husband) drinking the poison, Parvathi ran to maheshwar and held his neck, hence the poison remained there. This is why Maheswar is also called as Neelakand(sanskrit) Thiru neelakantha peruman (tamil)
Moral of the story?
'Never be greedy for anything'

PANCHAMIRTHAM
Ingredients:
3 bananas
2 tsp honey
¼ cup powdered jiggery
2 tsp broken kalkandu
1 tbs ghee
Actually these are the main ingredients in the
Panchamirtham. Panch means five.
Special small sized viruppachi plantain is used.
They have very little water content.
The jiggery is from Kangeyam area called kandasari sugar.
Nowadays people add in, raisins, dates, cardamom powder
Almonds and so on.
Not only that, even chopped jack fruits, chopped mangoes,
fresh grapes and even apples are added.
These fresh fruits will soon ooze out liquid, and the
Panchmirtham will spoil fast.
So my aunt says, add what you like.
Mash up everything, offer to the Gods.

Our very own Suvai's Cauliflower Sambar.
Imm jor, jor. Thanks Suvai nga.
1) cauliflower sambar appropriate for idly/dosai/rava dosai & poori....hmmm never thought of making this!!!
Cauliflr - 1 break into small flowerlets
Onion - 1 chopped - 2 Tblspns (or more)
Boil the above two together with enough water...when tender add salt..& keep aside...do not over cook it.
small onions -2 Tblspns
Dhania - 1 Tblspn
Jeera - 1/2 Tblspn
Coconut grated - 1/2 or 3/4th kai alavu..
Red Chillies - 6 to 8
Karuvepilai - 1/2 kai or two sprigs
udaitha kadalai - 4 tspn (the recipe says fried channa dal i am assuming that it is udaicha kadalai)
Fry the above each seperately & then grind it to a paste & keep aside.
Now in a kadai add little oil / mustard seeds/ uluthamparupu/ red chilli/ when ulunthu brown add the boiled cauliflr & ground paste & mix it well & if its too thick add water & allow it to boil till raw smell goes....iraki.....add little lime & corriander/curry leaves...;-)

Thanks Mr. rajraj for the information about edible camphor.
my aunt has wriiten to me about the
pacha karpooram, also tulasi leaves.
Normally my M.I.Law will add this patcha karpooram
when she make sakkarai ponggal.
It has to be very very tiny pinch.
Otherwise the smell will be over powering.
For that reason we do not add that for cooking anything.
If anyone is interested , they can add the patchai karpooram
to the pancharmirtham.

Another of our Suvai's super thogaiyal.
Add it to steaming rice, topped with
pure ghee, aaha semma taste. Kugan98
3) Ulunthu Thogaiyal.
2 karandi ulunthu
2 or 3 red chillies
kayam oru katti
fry the above in oil & grind it with tamarind & coconut.
Hot rice la ghee or nallenai pottu/thogaiyalai pisainthu saapitaa aaaha aaha thaan ;-)

Here is another super dish by our Suvai.
Tomato Cashew Nut Gravy.
The name itself is so rich, so is the taste.

4) Tomato & cashewnut curry......... This one is superb my aunts recipe...;-)
1/4 kg tomatoes chopped
1/4 cup cashew nuts chopped fine
1 cup plain milk or coconut milk...i used plain milk...becoz coconut um heavy /cashew nut um heavy.
3 onions chopped
2 Tblspn or less sambar powder or any curry powder
1" piece cinnamon
1Tblspn ghee
1/2 lime (pptional)
salt to taste
In ghee add the cinamon/then brown the onions & then tomatoes when water has evaporated from the tomatoes add in the podi & chopped cashew nuts...fry this well in medium fire then add in the milk & cover & simmer...till the cashew nut gets cooked & then the raw smell of podi goes.....u can add lime to this ...if u want...goes well with poori & dosai.

[tscii]Friends another nice recipe from the Mami, whom I met in the hospital. Enjoy them. Kugan98
DAL AND VEGE KULI PANIYARAM
Ingredients:
1 cup rice rava
½ cup urad dal
¼ cup channa dal
¼ cup toor dal
2 tbs chopped carrots
2 tbs chopped cabbage
2 tbs finely chopped spinach leaves
1 tsp ginger paste
1 tsp chillie powder
1 tsp finely chopped coriander leaves
½ tsp cumin seeds
2 tsp of oil
Salt to taste
Method:
Soak all the dals for about 5 hours.
Grind the dals to a thick fine paste.
Wash the rice rava, drain the water.
Add it to the ground dals.
Mix well, and let it ferment for about 9 hours
or over night.
The next day, heat 1 tsp of oil in a wok.
Add the cumin seeds, and ginger paste.
Sauté a little, add in the spinach first.
Sauté a little, add in the cabbage and carrots.
Add in the salt, chillie powder. Mix well and remove.
Now add the veges and coriander leaves to the ground
mixture. Stir well once.
Heat a kuli paniyara chatty, add ¼ tsp of gingelly oil
into the compartments. Pour a ladle of the dal mixture.
Flip it over when it is cooked on one side.
Remove and serve with coconut chutney.

Friends, you all know how to make the basic china grass.
Well for 2 tsp of china grass powder, use 1 litre water and 250 grms sugar.
Well here is a China grass with lychee.
10 grms china grass powder
700 ml water
300 ml juice from the lychee fruit.
200 grms or less sugar to taste, as syrup has sugar.
cut the lychee fruits into long strips.
Boil the mixture, pour it into moulds or tray.
Scatter the lychee fruits, let it set.
Chill and cut into pieces.
You can do this method with any fruits.

grind everything to be thick & season with mustard/ulutham parupu/karuvepilai...

Dear friends, I came home late evening from Trichy.

Suvai nga, before I run off to Singapore,
here is the popiah recipe. Very simple.
Of course there are many ways, and different
ingredients people use. Mostly it is done as a
non-vege item. Mine is vegetarian. Kugan98
POPIAH
Ingredients:
10 spring roll skin, softened with little water
4 shallots
4 cloves garlic
1 tbs soya bean paste
1 tsp oil
250 grms jicama shredded
30 grms carrot shredded
50 grms beansprouts
10 grms beans shredded (optional )
1 hard tofu, fried and shredded
2ml dark soya sauce
2 tbs sugar
Hoisin sauce to taste
50 grms roasted peanuts, coarsely chopped
50 grms fried shallots
20 grms fresh red chillies sliced
Lettuce leaves
Hot chillie sauce
Sweet plum sauce
Method:
Pound the garlic, shallots and soya bean paste.
Heat oil in a wok, add in the pounded paste.
Fry this paste until it is fragrant.
Add in the jicama, and cook till it is translucent.
Add in the carrot, beansprouts and the fried tofu.
Stir well, add in the soya sauce, sugar, and hoisin sauce.
Remove and set aside.
Lay the popiah skin flat on a plate.
Smear with hot chillie sauce and plum sauce
In a large circle in the middle of the skin.
Lay a lettuce leaf on the top.
Put about 2 teaspoons of the cooked mixture.
Arrange some chopped peanuts , sliced red chillie fried shallots,
on the top of the mixture.
Tuck the sides of the popiah skin and roll up firmly.
You can serve as it is or cut into two pieces.
Serve immedieately or it will turn soggy.

[tscii]Suvai nga, this recipe is basically like our halwa.
Very tasty though. This picture is from my old file.
KOLEH KACANG
Ingredients:
2 cups roasted ground moong dal flour.
1 ½ cups palm sugar ( more if you like sweet)
5 cups thick coconut milk from 1 ½ coconut
2 screwpine leaves
Little salt
Coconut Residue Crisps:
1 cup thick coconut milk from 1 coconut
Method:
To make the coconut residue:
Put coconut milk in a wok and stir over low heat,
with a wooden spatula for about 35 minutes.
Oil will separate from coconut residue.
Continue stirring until coconut residue turns rich brown.
Remove from heat and keep aside.
(This is how I make coconut oil for special cooking)
To make the koleh:
Melt and strain the sugar in little water.
In a heavy deep wok, add in the roasted moong dal flour,
Sugar syrup, salt, coconut milk and the screwpine leaves.
Mix well without any lumps.
Put the mixture on a low flame, using a wooden spatula,
Keep on stirring the mixture until it becomes a thick paste.
Do not allow the mixture to stick to the bottom.
There will be enough oil from the coconut milk added.
Or you can add little oil from the coconut residue.
When the paste is thick enough, discard the leaf.
Spoon into a shallow tin and smoothen the surface,
while still hot. Sprinkle the coconut residue crisps on top.
Leave to cool well before slicing.

Back to work, Suvai nga you can use vellam and packet coconut milk to make the moong dal halwa or kacang koleh.
The dry fried moong dal powder will have a good aroma.
Try little and see. You need not make the coconut residue.

Welcome Crazy, if you really want a good tomato rice,
please visit Kugan's thread 1, page 79.
A very good recipe by my uncleji.
Or if you want a quick simple tomato rice, try this.
SIMPLE TOMATO RICE
Ingredients:
2 cups basmati rice
5 to 6 red ripe tomatoes (chopped)
2 big onions (sliced)
6 to 8 Green chilies (slit)
1 tsp Chilly powder
1/2 tsp Turmeric powder
1 piece Ginger (sliced)
4 pips Garlic (sliced)
4 Cloves
1 piece Cinnamon
3 Cardamons
1 sprig curry leaves
3 tbsp ghee
1 cup coconut milk
2 1/2 cups water
coriander leaves and mint leaves little to garnish.
How to make Tomato Rice:
Wash and soak rice for 15 minutes in water. Drain water and keep it aside.
In a frying pan, add cloves, cinnamon, cardamon , curry leaves and fry for a minute.
Add ginger & garlic to it, fry for a minute and add green chilies and onions.
Fry till onion turns light brown. Add tomato pieces to it.
Now add salt, chilly powder and turmeric to it.
After tomatoes are cooked for 3 to 4 minutes till mushy, add rice to it and stir.
Now pour down 3 to 3 1/2 cups of water and coconut milk cook on low flame till the rice is cooked properly.
add the mint leaves, and coriander leaves.
mix well, cover and keep for sometime before serving.
You can use a rice cooker, or cook by the absorbing method.

My version of Tomato rice:
Heat oil. Add a tsp of sombu aka perunjeerakam and a piece of pattai(optional). Once flavourful, add urad n channa dhal. Saute until golden. add in chopped curry leaves,onions,garlic. Saute until transparent. Add chopped tomatoes, red chilly powder, turmeric powder,salt. saute until the tomatoes turn pulpy and well cooked. Mix with rice. Garnish-cori leaves.
Note: U can add dry red chillies,green chillies instead of chilly powder. In that case, add it along with onions.[/b]

Question about tiffon sambar powder recipe,
Tiffon Sambar powder
---------------------
Kadalai paruppu - 1 cup
dry coriander seeds - 1 cup
Methi seeds - 1/4 cup
Dry red chilly - 25
In a pan put 2 tblsp of oil , in the slow fire fry the red chilly nicely. remove it and keep in a plate. Then in the same pan fry rest of the ingredients one by one nicely , remove it and let it comes to room temperature. Then grind coarsely in the mixier and store it in a air tight container to retain the freshness of the powder.
Is the quantity of methi seeds right? When I made using these measurements, it tasted quite bitter. Can you please clarify this?

welcome to kugan's thread. the measurements for tiffon sambar powder are correct only. i am following this measurements only, it is turning out nicely.
if u feel that it will be bitter, then u can reduce the quantity of methi seeds. also when u fry methi seeds, make sure that nice aroma should comes out of it. donot fry till it becomes brown. when u fry too much then it will be bitter only.
i think i cleared ur doubt. please feel free to ask if u have any more doubts regarding this.

i can effectively participate in the hub from tomorrow. gals today all leftover only. coz had some maintenance work athome today. so no cooking.

O.K well now to the menu.
Morning we served butter, mint vege sandwich,
with cow's milk filter coffee.
Lunch was soya, butterbeans pulao,
with our Suvai nga's super kurma.
We also had spicy fried brinjals,
onion raitha and mixed vege stir fried.
Fresh fruits were served.
Tea we had curry puffs, tapioca slices,
tapioca fried balls, chocolate agar agar,
moist chocolate cake and chocolate cookies.
Dinner was simple curry mee.

SOYA, BUTTER BEANS PULAO
Ingredients:
2 cups of basmati rice, soak for 20 minutes, drain
¼ cup small soya balls, boil nicely, squeeze out the water
¼ cup butter beans, boiled till cooked, drain and keep
2 big onions chopped
4 green chillies grind to a paste
¼ tsp aniseed powder
¼ tsp cumin seed powder
2 tbs curds
1 tsp garlic paste
1 tsp ginger paste
1 cup coconut milk
2 cups water
3 tbs mint leaves
3 tbs coriander leaves
3 tbs of ghee
2 cloves
2 cardamoms
1 “ cinnamon stick
1 bay leaf
6 fried cashew nuts for garnishing
Little coriander leaves for garnishing
1 tsp lime juice
Salt to taste.
Method:
Heat the ghee in a wok, add in the bay leaf, cloves
cinnamon and cardamoms.
Let it splutter, add in the chopped onions.
Sauté well till the onions turn slightly brown.
Add in the ginger garlic paste, sauté well.
Now add in the green chillie paste, cumin powder
aniseed powder and the curds. Sprinkle little water if the
mixture is very dry.
Now add in the squeezed soya small balls and the
butter beans, stir well.
Add in the drained basmati rice and lightly fry it.
Add in the mint and coriander leaves.
Transfer every thing to a rice cooker, add in the coconut
milk and the water. Add in enough salt.
On the cooker and let it cook.
(You can even cook it in a pressure cooker)
Once it is cooked, let it sit for a moment.
Now sprinkle the lime juice, and gently mix the rice.
Garnish with the fried cashew nuts and coriander leaves.
Serve with onion raitha or our Suvai's kurma.

In Oil/Ghee add cinnamon/cloves & onions & fry for a while then add tomatoes konjam neraiya iruntha nalla irukum...fry till the water sort of evaporates (surundu varanum) apo add the garlic ginger paste & fry for a few seconds...now add the boiled vegies & its water...add turmeric & allow it to boil for about 5 to 10 mins till dhania pachai vaasanai poganum...... now add the ground coconut kasa kasa mixture & stir well add salt....allow it to boil for another 5 to 7 mins......add kothamalli......& karuvepilai.....ipo kurma thick ah irukum u can switch off the stove.
iraki vaithu taste panni paarunga....the following are optional
u can add lemon juice to it.... athu oru taste...
u can add thayir....after the last boil....& stir & allow it to boil for another 3 mins not more.....ithu Moremasala aagidum Wink
This will go well with rice/chapathi/naan/any bread.....romba rusiya irukum intha kurma...try panni paarunga

Potatoes 4/ onions 2 / Grenn chillies 2 or to your taste/ Garlic Ginger paste accordingly / Tomatoes cut /
In oil add little kadugu/uluthamparupu/ once browned add the cut onions / green chillies/gg paste/ tomatoes....ellaam fry pannunga nallaa/ to this add sambar podi 1/2 to one tsp of it/ add 1/2 cup water let it boil till the water sort of evaporates ( not too dry ) add salt
ithukulla sambar podi pachai vaasanai poidum...now add the boiled cut potatoes & stir fry till its well coated with the masala....
omg kugan nga....ithu romba nalla irukum...with rasam or thayir sadam or even verum saathathila mix panni saapitaaa aahaaa ahaaa thaan..... Mr. Green

[tscii]Here is the recipe for the simple tapioca fried balls.
Normally it is served with tea. Kugan98
FRIED TAPIOCA BALLS
Ingredients:
2 cups cooked and mashed tapioca
1 cup grated coconut, white part only
½ cup sugar
A pinch of salt
Oil for frying
Batter:
½ cup all purpose flour
¼ cup corn flour
1 tbs rice flour
1 tsp baking powder
½ tsp salt
180ml water
Method:
Mix nicely the cooked tapioca, coconut, sugar,
and salt well.
Make the mixture into golf size balls. Keep aside
Prepare the batter by mixing all the ingredients together.
Heat a wok with oil.
When the oil is hot, dip the tapioca balls into the batter.
Put the balls into hot oil to deep fry.
Do not crowd the wok with the balls.
When the balls are golden brown, remove and drain
on a kitchen towels.
Serve as a snack with tea.

CHOCOLATE AGAR_ AGAR
Ingredients:
25 grms agar-agar strands (china grass)
1000 ml water
400 chocolate milk ( you get it in cartons)
100 grms sugar ( there will be sugar in the choco milk)
few drops of vanilla essence
Method:
Soak the strands of agar-agar in cold water for an hour.
Drain the agar-agar, put them in a pot.
Add 1000ml of water and stir constantly, while bringing
to the boil.
Add the sugar and keep stirring and simmering until all the strands
are completely dissolved.
Add in the chocolate milk and essence.let it boil once.
Remove and pour into a tray that has been rinsed in cold water.
Allow to set, cut into diamond shapes.
This will be a firm jelly.

Dev, chocolate milk is choco flavoured milk thaan.
If you like you can drop a cube of milk chocolate,
while adding the choco milk. It will be added taste.
Dev, 2 tsp of the agar agar powder is
equal to 10 grms of the china grass strands.

[tscii]Suvai nga here is my simple tomato rice.
Ennakku simple :lol:
SIMPLE TOMATO RICE
Ingredients:
200 grms rice
2 big onions sliced
250 grms red tomatoes chopped
1 tsp ginger paste
6 pips garlic smashed
2 green chillies chopped
¼ tsp chillie powder
¼ tsp mustard seeds
2 tsp roasted channa dal
2 tsp mint leaves
2 tsp coriander leaves
2 tbs thick coconut milk (optional)
2 tsp ghee or oil
Salt to taste
Method:
Cook the rice in a cooker, and let it cool.
Heat a wok with the ghee.
Add in the mustard seeds, let it splutter.
Now add in the smashed garlic, sauté for a minute.
Now add in the ginger paste, sliced onions.
Sauté well, now add in the roasted channa dal,
tomatoes, chillie powder, chopped green chillies.
Cook well for a moment, add in the coconut milk,
coriander leaves, mint leaves and salt.
The tomatoes must be thick and mushy by now.
Remove and add the cooked rice and mix well.
Your tomato rice is ready.

Suvai nga and Dev, potato chops na, is mashed potato made into patties, or they have fillings.
What you ate in Sudhama's house must be a
potato masala. They named it as potato chops I think
Well Suvai nga has given a recipe.
I too have one given by my North Indian friend.

[tscii]This dish was served in Singapore in my relative's house.
FRIED SPICY BRINJALS
Ingredients:
300 grms long brinjal
4 tsp all purpose flour
2 tsp besan flour
1 tsp red chillie powder
½ tsp turmeric powder
½ tsp garam masala
Salt to taste
Oil for frying
3 green chillies cut into lengths
1 tsp cumin seeds
2 tbs thick curds
½ tsp oil
Method:
Wash and cut the brinjals into long pieces.
In a bowl, mix all the other ingredients, except
the oil. Now add in the cut brinjals.
Sprinkle just enough water to get the flour
Stick to the brinjals.
Heat the oil in a wok, and deep fry the brinjals
till crispy. Remove. (It can be eaten as it is also)
Heat the ½ tsp oil in a pan.
Add in the cumin seeds, when they splutter,
add in the cut green chillies. Sauté well.
Now add in the curds and cook on low flame.
Cook till it thickens, add in the fried brinjals.
Cook till it becomes dry. Remove and serve.
You can cut the green chillies into small slices

[tscii]The cleaner woman in the ashramam told me about the goodness of sprouted beans :oops: and gave me two recipes. Thanks ANNAMA.
Here is one of them. Kugan98
SPROUTED GREEN PEAS KULAMBU
Ingredients:
2 cups of sprouted green peas.
To Grind:
½ cup grated coconut
½ cup onions chopped
4 dried chillies cut into pieces
1 tbs coriander seeds
1 tbs oil
½ tsp cumin seeds
½ tsp mustard seeds
A pinch of asafoetida
1 tsp tamarind paste
½ tsp turmeric powder
1 tsp brown sugar
2 tbs oil
Salt to taste
Little coriander leaves chopped
Method:
Heat the oil in a wok, add in the ingredients
“to grind” one by one and roast well.
Grind to a fine paste and keep aside.
In another wok, add the oil, cumin seeds, mustard seeds.
Let them splutter well, add in the asafoetida.
Now add in the ground paste and stir well.
Add in some water, the sprouted green peas,
tamarind paste, turmeric powder, sugar and salt.
Let the kulambu simmer for about 10 minutes.
Taste for salt, sweet and sour taste.
Remove and garnish with the coriander leaves.
Goes well with rice or roti.

K, I din't have lunch at Sudha's place. So ange enna maadhiri chops serve panninnanganu theriyalai. But generalaa inga serve pannura chops is something like sliced potato coated in a strong masala and onion mix. It is usually deep red or brown in color. Recipe therinja podunga. It is not the patties kindof thing.

yes. Dev did not have lunch. If only she was there for lunch, should would have easily clarified.
This was something like senaikizhangu masala curry.
It was thick slices of one inch with masala coated (with onion, garlic and other masalas) in brown colour. This only the caterer calls as potato chops.

i think they will deep fry potato strips which is already marinated with red chilly pdr, garam masala, garlic, rice flour .
then in a pan, pour oil, onions, basic masalas like red chilly pdr, coriander pdr, curry powder and the fried potato strips i think.
this can be done in potato, chenaikilagu, tapico, tender jackfruit.

Hmm, Selviem's recipe comes very close to my friend's recipe.
She has given me two recipes, one is good with chapathi.

friends, i checked with mom . she gave the receipe for jackfruit chops.(pilakai chops).
remove skin cut into cubes, boil it in water with salt and turmeric powder. once it is cooked strain water and keep aside.
to grind:
coconut - 1/2 cup, grated, pottukadalai - 1 tsp, green chilly -2, red chilly - 2, ginger - 1", garlic - 3 cloves, cashews - 4 . grind this to a fine paste.
now mix this paste to the vegetable.
in a heavy bottom pan, add oil, 4 big onion - finely sliced, fry nicely, add one tomato- fnely chopped fry till oil comes out of it, then add the vege mixture cook in slow fire, this will turn nice brown colour and the masala will be coated in the veges. surula surula varukkavum. this is called chops.
for potato as i said, fry in the oil and mix with the masala and follow the same procedure.
same for chenai and tapico she told.

[tscii]Nithi ma, here is a simple vathal kulambu.
Some people make it without any onions and garlic.
Some add little rice flour.
This is my method. Try it. Kugan98
SIMPLE VATHAL KULAMBU
Ingredients:
1 tbs kulambu podi
50 grms tamarind soaked in 1 cup of water
2 shallots sliced
5 pips garlic sliced
2 dried red chillies broken into pieces
¼ tsp mustard seeds
¼ tsp fenugreek seeds
1 tsp channa dal
1 sprig curry leaves
1 tbs oil
little vellam (optional)
Little vathals like sundakai, kothavarangkai, vendi.
Salt to taste
Method:
Soak the tamarind in the water.
Squeeze the juice and keep aside.
Wash the vathals and keep aside.
Heat a pot with the oil, add in the mustard seeds,
fenugreek seeds, and channa dal.
After it splutters, add in the sliced onions, garlic,
broken chillies and the washed vathals.
Sauté well till the onions turn lightly brown.
Now add in the tamarind juice , kulambu podi, vellam and salt.
Let it simmer and boil till oil seperates.
Add in the curry leaves and remove.
Roasted appalam is a good combination for this kulambu.

Ahaha, namma Suvai nga's version of Potato Chops is here.
Chops or no Chops, the potato dish was super tasty.
Something different from what I make.
Another way of cooking potato.
Thanks Suvai nga.
Potato Chops (Suvai's aunty's recipe)
500gms - cut potatoes boiled
peas konjam serthukonga
200 gms onions
200 gms tomatoes
200 gms yoghurt
1/2 tsp corriander powder
2 to 4 green chillies (as per your taste)
1" ginger & 6 garlic pods ground to paste
1/2 tsp red chilli powder
1/4 tsp sombu powdered
1" cinnamon powdered
1 clove powdered
4 milagu powdered
corriander leaves little & mint leaves little
jeeragam little
turmeric
Grind to paste :onions/ garlic ginger/ corriander/ mint /green chillies keep this aside.
In oil/ghee...add konjam cummin seeds....now add the ground paste...do this in medium fire only....nalla surundu varum apo add in the tomatoes...turmeric little..let this fry well also...till water evaporates...ipo veedu full ah gama gama nu vaasanai varum...Wink saapidaathavanga naaku oorikitu irukum.... now add in the ground powders.... fry for a bit till it blends well with the masalaa mothai.....now add in the curds.....keep stirring.....ipo add in the potatoes & peas....add salt & cover & cook for a bit then open it & stir it well...if u like it a little watery add little water & then ....add in more cut corriander leaves.....taa daaa....potato chops my version ready.......Wink

Suvai, arai puli kulambu is Iyer/iyengar special... I've just heard of names like arai puli kulambu, iru puli kulambu etc...but taste panninadhillai... Iru puli kulambu has both tamarind & curd for sourness and that is y the name iru puli kulambu...
