Or you can use fish slices about 5
Marinate:
3 tsp soy sauce
1 tsp chillie powder

Little salt.
Mix all the marinate items.
Apply the marinate on the fish and allow to stand for about
2 hours in a fridge.

4 pips of garlic chopped
½ cup chopped tomatoes
1 tsp grated ginger
1 tsp chilli powder
¼ cup tomato sauce
2 tbs chillie sauce

1 tsp vinegar
¼ tsp aji-no-motto (optional)
1 tsp corn flour
2 tbs diced capsicum
2 tsp celery
1 tbs scallions
Salt to taste
Oil/
Method:
Deep fry the fish and arrange it in a serving plate.
Heat little oil in a wok, add in the onions, ginger and garlic.
When the onion turns little soft, add in the tomatoes, chilli powder,
tomato and chilli sauce.
Sauté well till the oil separates, add in the aji-no-motto, vinegar, salt,

[tscii]NOV anneh, here is a sweet for you, for giving a very good tip to Selivem.
JUJUBES
Ingredients:
500 grms sugar
300 ml water
2 tbs of milk
50 grms gelatine
1 cup of water
Red colour
Strawberry essence
Green colour
Lime essence
A tiny pinch of citric acid
Caster sugar
Method:
Soak the gealtine in 1 cup of water in a pot, keep aside
In a heavy bottomed pan, add in the sugar and water.
Stir till the sugar dissolves a little.
Now on the stove and on low flame, let the sugar come to a boil.
Add in the 2 tbs of milk, let it simmer a bit.
You can see the dirt separating from the syrup.
Use a muslin cloth and strain the syrup.
Simmer the syrup again till you get a sticky patham.
NOT KAMBI PATHAM. Keep the pot aside
By now the gelatine would have swelled up.
Put the pot on the stove, using a whisk,
Keep on whisking the gelatine, till it dissolves completely
The gelatine will froth up by your whisking.
Now pour the sugar syrup into the dissolved gelatine.
Keep on stirring and cooking on a low flame.
When you lift the spoon high, you must see that the syrup
dripping like a small sheet. That’s the patham.
Off the flame and cool a bit.
Now you can divide the mixture into two parts and add
The colour and the essence of your choice.
Or you can just do it in one colour.
Rinse an aluminium tray, do not wipe it.
Pour the mixture in it, when it is a bit cool, put it in the fridge.
NOT THE FREEZER for about 3 to 4 hours.
Then remove and cut it into any shape, roll it in the caster sugar.
Your jujubes are ready.
It will be sticky when you cut, do not worry.
It will be o,k once you roll in the caster sugar.
Use a aluminium tray, not ever silver.

Hi
Urine infection in children is very common, nothing to worry about.. some ... the following symptoms could indicate a urine infection.. it is better to get a urine test
•Fever
•Vomiting and/or diarrhoea
•Drowsiness
•Cloudy /smelly urine
If you see any of these then time for some antibiotics. Don't worry he will be fine soon

Kugan - not all jellies use gelatin. I usually buy Weikfield, which says it contains no gelatin, and is 100% vegetarian. I haven't thought about this while buying jujupes
The same is the case with cheese, where rennet is used. But, most Indian cheese mfrs do not use rennet,- Amul for sure. But unless specifically stated, most foreign cheeses are made with rennet. Worcestershire sauce, silver warq used on sweets, chammandhi podi in Kerala hotels(it is fish chammandhi in many places)... the list goes on, though we don't give it a thought

1 tsp coriander seeds, pound a little
½ tsp cumin seeds
1 tsp ginger grated
1 tsp tulasi leaves.
2 litres of water
Method:
Boil 2 litres of water in a pot.

Close the pot with a thick cover.
Off the fire, and let the spices infuse
in the boiling water for about 10 minutes.
Later strain the water and use it to drink the whole day.
You can even keep it in a flask to keep it warm if you like.
Try it for a month and see.

Selviem, I am very glad that your children liked the spinach omelette.
Selviiem, I am still not over the shock of gelatine.
You know they have the jelly crystals, in different flavours, they too use the gelatine to set the jelly.
I have made different types of jellies, for the children
I feel very ashamed. Thanks. Kugan98
Correct not all use gelatin, here in UK u have veggie jellies ...

1) The brighter, deeper colored fruits and vegetables contain higher concentrations of vitamins, minerals and antioxidants
such as Brocolli, spinach these are high in Iron which helps the production of red blood cells
2) Good carbs, include whole grains, beans, fruits, and vegetables. Healthy carbs are digested slowly helping you feel full longer and keeping blood sugar and insulin levels stable
3)unhealthy carb includes our culprits (white rice / white flour) white rice that have been stripped of all bran, fiber and nutrients. Unhealthy carbs digest quickly and cause spikes in blood sugar levels and energy.
Diabetic ppl should try and avoid much white rice or flour as possible.

Thiru, you have jumped a very big hurdle by not liking sweets.

The next you have to hate little rice, tubers, and mutton.
Thats it, you can have all your favourite foods in moderation.
Since you exercise, you have nothing to worry.
Enjoy the food and life, Thiru.

PUMPKIN PULI MANDI
300 grms cubes of pumpkin with skin (good ripe one)
1 lime size tamarind soaked in about 3 cups of mandi
½ tsp tumeric
1 tbls chillie powder ( more if you like hot )
½ tsp mustard seeds
2 red chillie broken into pieces
4 small shallots sliced
1 sprig curry leaves
a pinch of pergayam (hing)
1 tsp fenugreek roasted and powdered
sugar to taste
oil about 2 tbs
salt to taste
little coriander leaves
Method:
Put a wok on fire, pour the oil, when it is hot
Add the mustard seeds, when they splutter, add the onions,
Fry for a minute, add the curry leaves and the dried chillies.
Now add the pumpkin pieces and fry nicely.
Now add the tamarind juice, tumeric powder, chillie powder ,salt and
Cook till the pumpkin pieces are cooked, but not completely mashed.
Now add the fenugreek powder, sugar, pergayam powder.
Little oil should float on the thick gravy.
Taste for sugar and salt and dish out.
Garnish with coriander leaves.
Note: If you like you can chop into rounds 2 green chillies
And add after adding the pumpkin pieces
To Make Arisi Mandi:
Mandi means the water collected while washing the rice.
This mandi is used in many Chettinad cookings.
Take a cup of rice, after a first quick wash, add about 2 cups of water to the rice and mix throughly , while you rub the rice through with your fingers.
After few minutes, drain this water and keep aside to use in the cookings.
The rice can be used for normal cooking.
Thanks. Kugan98

K, u can extract arisi mandi when u soak rice for grinding idli batter...that way, u can get a thickish mandi as the qty of rice used is more... I've had mixed veg arisi mandi in my friend's place...t it was yumm!!!... when u add the rice water to puli mandi, u get arisi mandi(I mean the watery version of mandi), right?
This recipe is very similar to the kathirikkai/vendakkai/vendakkai-pavakkai puli kulambu made in kongu region...we use KMP in the curry...I'll post the recipe later...

Thanks Dev, I still remember my grandma, she will never waste the arisi mandi. She will use it instead of water in her gravies.
Sigh! those were olden days.
Thanks, Dev. Kugan98

Thiru, you have jumped a very big hurdle by not liking sweets.
(That's my weakness)
The next you have to hate little rice, tubers, and mutton.
Thats it, you can have all your favourite foods in moderation.
Since you exercise, you have nothing to worry.
Enjoy the food and life, Thiru.
Take care. Kugan98

Friends, my aunt who is 80 years old, invited me to the occasion of motaifying her 3 great, great grandsons, in her kula theivam temple in Thiruvaaroor in May.
She said they are sacrificing 3 goats.
She asked me to bring along my camera, so that I can take snaps of their cooking

3 Blood poriyal
4 Intestine toddy shop curry
5 mutton dry varuval
6 bones thalca

I nearly fainted after she finished her conversation.
I told her that I have planned to visit ONGARAKUDIL in

She laughed out loudly.
If anyone is interested in the above recipes, I can get it from her.

[tscii]Tamby, I have posted sago vadagam in Kugan's Kitchen3
Page 10. I have also posted onion vadavam in Kugan's Kitchen 3
in page 17.
To day I am posting the rice vadagam for you.
RICE VADAGAM
Ingredients:
500 grms cooked rice, preferably yesterday’s rice
5 green chillies more if you like
1 tsp cumin seeds
¼ tsp asafetida powder
1 sprig curry leaves (optional)
Salt to taste
Method:
Mix every thing together and blend in a mixie.
Do not add water, if needed sprinkle little.
Spread a clean thick plastic sheet in the sunlight.
Use a murukku press with “one star hole plate.
Fill the ground dough into the press.
Press straight lines on the plastic sheet.
Finish all the dough.
Allow to dry in the hot sun for the whole day.
In the evening you can gather and break into desired lengths.
Dry it for a another day if not fully dried.
Another way is to make a hole in a piece of cloth.
Put in the dough and press dots on the plastic sheet.
Or use your hands to dish out small small rounds.
Note: modern times, I have seen people cooking the rice
flour with water and all the ground ingredients into a kool.
Then they press it on the sheet to dry.
This is how my old folks taught me

Aarthi,
coz of lil pranay, u became active, coz of that thread is also very active.
so back to ur routine, i hope aarthi. thats really good.
Yes selvika, almost we r back to our routine life.as well as by now only am enjoying with my parents also.Last one month fully we were not in a mood to enjoy at all.
Selvika,I made ur milagu roti for yestrday's dinner. Both mom n dad loved it.I told them abt ur urappu aadai recipe too.Dad requested me to make that.
Once i tried that before selvika but by that time it came hard.I forgot to ask u abt it.Cud u plz tell me where i might have went wrong.
Here is the recipe which u have posted
-----------
Idli - 1 cup
Toor dhal - 1/4 cup
Soak separately for 4 hours. Wash dhal ,rice and keep aside to remove the excess water.
Grind dhal with Ginger - 1/2", dry red chilly -3 , hing- 1/4 tsp, saunf - 1/2 tsp with out water. If it is difficult to grind without just sprinkle water whenever it is needed.Do not grind like a paste. Grind coarsely like how we grind batter for masal/thavalai vada . Then grind rice coarsely, sprinkle water whenever needed.
Mix both dhal and rice batter together, add required salt, turmeric powder, chopped curry leaves, chopped coriander leaves, chopped onions(from 2 medium size onions), 3 tblsp of fresh grated coconut. Mix the batter nicely. Keep a kadai in the gas, pour cooking oil, to fry the adai. Take a lime size ball, flatten it in the greased plastic sheet , spread it thickly. When the oil is hot, fry like puris one by one, drop the flatten adai in the hot oil, it will come pluffy and then try for the otherside, when it is cooked remove it from the fire. Very fast it will cook, fire should not be very high. All the adai will come fluffy like puri, This adai is very diferrent in taste. Everybody likes it. We can coconut chutney as side dish for the adai.
We can keep this as a starter for the party.
Selvika, plz calrify me in this.waiting for ur soya patties recipe too selvika.Plz post it in ur free time.
