Suja, I have to think hard for things to be made in advance.
Well you can make china grass pudding the first day.
Its a dessert, you can put it in the fridge and serve.
You can serve fresh cut fruits with ice cream, or fresh cream.
You can make the soft jelly with custard sauce as a dessert.
You can make moong dal payasam for dessert, if you are serving a vegetarian meal.
You can make masala cashew nuts before and serve as appetizer.
Fresh vege sticks with dips as starters
Steam veges sprinkle with salt and pepper, with tooth pick on each vege too will look nice.
You can even make mini curry puffs, semi fry them, keep them in the fridge and refry again to serve as starters.
I have even made thattais and served as starters.
I presume you are having a vegetarian party.
All the items are vegetarian.
You see Suja if you are doing on that day there are many varieties
to make.
My dear friends can you all suggest some items that can be made the day befoe for the party?
Let us all help our friend Suja, to make the party a success.
Thanks. Kugan98

Friends,
thanks a lot for the compliment. coz of some treatment i gained weight then i got kids, after my younger one completed one year, then i joined gym. there i reduced nearly 15kgs 600 gms. then i became tooo weak. my instructor told me to gain 2 kgs.
then from that i will gain 2 to 3 kgs. during vacation i will put on 2 to 3 kgs, then coming back reducing. so this cycle is going on.
so my diet program will continue like this. regular exercise and walking is there.
once in a week i will take break for everything.
once we r strict then we will follow. first we should tell our mind, that we r not starving. we r eating very very healthy food for our future. then definitely it will work out.
this is my policy.
now at home only i am doing little yoga and floor exercise for the inches.
i am not doing anything vigourously.
when we start for the first, definitely we can loose weight very fast. but that is not correct as dev said. max 2 kgs per month is really good.
once u reached ur ideal weight, then it is very important u have to maintain it. otherwise we will gain very fast.
Selviem
27th January 2010, 01:40 PM

but once u reached ur ideal weight, donot try to reduce more.
Selviem

Aarthi,
first fix timings for all the meals. u follow that regularly. slowly start ur schedule. donot jump into it. step by step implement, then definitely u will succeed.

Suja, u can try corn tortilla with salsa. the chips can be made in advance... salsa I'm not sure if homemade ones will refridgerate well...
Onion pakodas can be made in advance...
chaats should be easy too... make the sauces,chips/poori in advance & assemble on the day of the party...or u can ask the guests to mix & match according to their preference... even more easier tht way...
corn chaat, peanut chaat, potato chaa, channa chaat are all easy to make... assemmbling need to be done just before party time...
or maybe something like this...

u r right Selvi... losing the 10 kgs was just a breeze,,, & din't need much effort from my side... But the last few kgs are really hard to lose... Thanks for the encouraging words Selvi...:)
I actully put on too much weight towards the end of pregnancy coz eating of too much sweets after coming to India... & the 'eating sweets after meal' is still continuing... my first goal is to get rid of it... I've already reduced it from 3-4 sweets a day(yes, I was eating tht many sweets..:( ) to hardly 1 a day... these days when I feel like having a sweet, I'll have just a 1/4 or 1/2 of it instead of a whole sweet... I've to stop that too in the next couple of days... Aprom should start regular exercise... hmmm...
K, as Sevi said U r not looking like kushboo in size... longgg way to go to reach her size...;)

Suja,
kugan and dev gave some ideas. as dev said chat varieties are best. deep fry u have to do at that time. also non grilling u can do. that is not big job. grilling can be done in big lot.
Also for the starters u can make salad. sweet corn nibblets, coloured capsicum (chopped finely), white onion, olives, cucumber, grated radish, grated zucchini, jalpeno, grated low fat cheese, sprouts. this will be filling. if the people are health conscious, then prepare this.
desert u can prepare previous day and cool it. where do u stay. if the climate is cold , plz serve hot it is very nice to drink.
payasam, kheer (carrot, potato kheer which is very healthy)
etc.
frame the menu so that we can help us.

Dev, ungga sathu maavu recipe vanthudichi.
My aunt was a bit busy with her son's 60th birthday.
Here it is.
SATHU MAAVU
Ingredients:
(A)
100 grms green gram dal
100 grms ragi
100 grms kambu
100 grms whole black urad dal
(B)
100 grms soya beans
100 grms whole wheat
100 grms par boiled rice
100 grms channa dal
100 grms groundnuts
50 grms cashew nuts
50 grms almonds
10 caradamom pods
Method:
Soak the ingredients in (A) for a night.
Next day drain them and allow them to sprout.
It might take 2 days.
Then dry toast the sprouted grms without moisture.
Dry roast all the ingredients in (B) except the cardamom pods.
Now mix the caradom pods to all the above ingredients.
Grind them in a kitchen dry mill or send it to a mill.
Store it in a air tight container.
You can make this sathu maavu even without sprouting the grams.
To Serve:
1 cup of water or milk, boil.
Add in 3 tsp of the powder.
Mix nicely so that no lumps are formed.
It will thicken lightly.
Add in sugar, remove.
Serve in a bowl with fruits or just like that.
You can make thick kali with this powder.
You can make a healthy drink with this powder.
You can add sugar syrup and make laddu too with this powder.

Selviem, White chili is a type chili cooked with chicken rather than red-meat. I tasted it at a friend's house and she passed along her recipe. She made it using a slow cooker. You can also make it on the stove top. Recipe is as follows
Chicken Chili
1 cup cooked and shredded chicken breast
1 15 oz can of northern beans
1 onion choppend
2-3 jalapenos sliced
2 cloves garlic crusHed
2 tsp cumin seeds
2 cups chicken broth
water 1-2 cups
2 tbsp of country gravy mix(I normally use corn-starch or maida mixed with 1/4 of water. It is mainly a thickening agent)
Cilantro and green onions to garnish.
Can also add 1/2-1 tsp of powdered pepper
Combine all the ingredients and put it in a slow cooker on low for about 4-5 hours.
Serve with shredded cheddar cheese and tortilla chips.
Alternatively you can brow the onions lightly and cook on a large pot for 1 hour on sim. Tastes good.
Try it and let me know.

Dev, I forgot to mention something.
In the urappu adai if you want more heat,
you can add chillie flakes or birds eye chillie.
Too much of chillie powder will not taste good.
Also you can add 2 tbs of rava, some finely sliced cabbage.
Make the dough a bit softer, dropping consistency,
and fry them in oil as raagi pakoda
Thanks. Kugan 98.
Tomorrow I am making moor kali.

Thanks Selviem, raagi is good for us.
Some people make raagi adai with raagi alone.
I have tried, but it gives a taste like sand feeling.
You have to mix little flour.
Try pannungoh.
Thanks Kugan98.

[tscii]Aarthii how are you?
I am posting a detailed recipe for the Mutton In Thick Gravy.
Cook for Subra.
MUTTON IN THICK GRAVY
Ingredients:
1 kg boneless mutton
¼ tsp tumeric powder
1 tbs ginger paste
1 tbs garlic paste
1 tbs curds
1 cup of water more if needed
Salt to taste
50 grms ghee
1 onion chopped
3 tbs onion paste
1 tsp aniseed paste
2 tbs of chillie powder
2 tsp of coriander powder
1 tbs of kas kas paste
250 grms tomato made into puree
Little coriander leaves for garnishing
Little lime juice
For seasonings:
Cinnamon stick, cloves, bay leaf , cardamoms curry leaves.
Method:
Add 1 cup of water and boil the mutton with the tumeric powder, little salt, little ginger , garlic paste and the curds.
When the mutton is cooked remove and keep aside.
You will have little gravy with the mutton.
Heat a thick bottomed pot.
Add in the ghee, add in the seasonings.
Sauté well. Add in the chopped onion and let it become
little brown. Add in the ginger garlic paste.
Stir nicely. Now add in the onion paste, aniseed paste.
Stir well again, now add in the chillie powder, coriander powder,
Keep the flame low and stir well.
Now add in the kas-kas paste and the tomato puree.
Stir well so that all the spices get mixed well.
Add in the boiled mutton with the gravy
Cook on low fire so that all the raw smell goes and the gravy becomes thick. You can see the oil separating in the gravy
Remove and garnish with coriander leaves, and lime juice

Here is a healthy snack.
CHOLA PORI
Ingredients:
1/3 cup pop corn kernels
3 tbs canola oil
1 tbs of butter
Salt to taste
Method:
Take a 3 quart saucepan with a cover.
Add in the oil, butter and salt.
Heat the sauce pan on medium heat.
Now remove the sauce pan and add the corn
kernels in an even layer.
Return the pan to the heat.
The pop corn should begin popping soon.
Once the popping starts, gently shake the pan by
moving it back and forth over the burner.
Try to keep the lid slightly ajar to let the steam from the
pop corn to release.
Once the popping slows to several seconds between pops,
remove the pan from the heat.
Remove the lid and pour the pop corn into a big bowl.
Sprinkle some pepper powder on it for added aroma.
You can even make caramelized pop corn
for the children

Selvi, hows ur son now?... getting better?...
kugan98
1st February 2010, 11:34 AM
Yes Dev, we have to use a special variety of corn kernal to make pop corn. You can buy it in the supermarkets.
They sell in packets or cans.
Popcorn, a type of flint corn, has a soft starchy center surrounded by a very hard exterior shell. When popcorn is heated the natural moisture inside the kernal turns to steam that builds up enough pressure for the kernal to explode. When the kernal explodes the white starchy mass that you like to eat forms. All types of corn will pop to some degree, but they won't necessarily have enough starch to turn inside out, or an outside layer that will create enough pressure to explode .
Thanks Kugan98

3 cups moor
Salt to taste
To Season:
½ tsp mustard seeds
1 tbs urad dal
1 tbs channa dal
3 moor milagai cut into pieces
1 tsp oil

In a non stick pot, mix the flour, salt and the moor.
See that there are no lumps.
Take a small pan , heat the oil.

It will stick to your mouth if not properly cooked.
Remove it to a oiled plate. You can scoop and serve,
or cut into cubes and serve.
It goes well with any kulambu.
Note: If you do not have the moor milagai,
You can use dry red chillie.

Is nata de coco & coconut jelly the same?... I'mm not sure of the namem...but it's a chewy jelly tht's kept in water(or some liq)... usually sold in big plastic containers... I've tasted it once in a friend's place in malaysia & liked it...it was white/transparent... Never happened to buy it coz it was always sold in big containers in Sg & it was too much for a single person(hubby is not a fan of it)...

9th February 2010, 04:44 PM
Here is the definition for nata de coco.
You can get it in small cups too
Nata de coco is a chewy, translucent, jelly-like food product produced by the bacterial fermentation of coconut water. Nata de coco is most commonly sweetened as a candy or dessert, and can accompany many things including pickles, drinks, ice cream, puddings and fruit mixes. The product originates from the Philippines.
Nata de coco is highly regarded for its high dietary fiber, and its low fat and cholesterol content. No preservatives or other chemicals are added to Nata de coco. A researched by Japanese Food Scientists has proven Nata De Coco is an excellent deterrent of intestinal cancer and many other gastrointestinal disorders.
Beside the original flavor, there are other taste in a mixture of various fruit/flower juices like mango, lychee, pineapple, kiwi, orange, syrup and rose
Nata de coco, you can get in different colours
and different flavours.

Dev, pajeri nenas is a Malay dish, made with pineapples
I know you are allergic to pineapple.
This can also be made with long brinjals.
Dev, in Malaysia if there is a Malay wedding, they will have
yellow colour ghee rice and this pajeri nenas.
It is a very good combination.
The fried coconut paste that we add gives it a good aroma.
I will post the recipe for you.

[tscii]Dev, this dish has a aroma and unique taste of its own.
PAJERI NANAS
Ingredients:
300 grms sweet fresh pineapple pieces cut into small chunks
3 shallots sliced
2 pips garlic chopped
2 green chillies sliced into two
1 sprig curry leaves
2 tbs of meat curry powder mix with water to make into a paste.
1 tbs finely grated ginger
1 ½ tbs of kerisik ( fried coconut paste)
2 cups of thin coconut milk
Salt to taste
To Season;
2 tsp oil
3 star anise
3 cardamom pods
2 inch cinnamon sticks
½ tsp of aniseeds
Little brown sugar
Method:
Heat the oil in a cooking pot. Add in the spices to season.
Let them splutter, add in the sliced shallots, garlic, curry leaves
and grated ginger. Sauté until they are aromatic.
Add in the curry paste, stir vigorously, let it cook for 5 minutes.
Add little water if needed.
Now add in the pineapple, green chillies and the coconut milk.
Stir , cover and cook for about 10 minutes, until the pineapple softness.
When the pineapple is soft add in the kerisik, the brown sugar.
Stir until it dissolves, cover and let it simmer until the curry thickens
on low heat. Remove and serve with ghee rice or white rice.
To Make Coconut Paste:
Take about 5 tbs of desiccated coconut.
Fry it on low heat stirring from time to time.
The coconut will become dark brown in colour.
Transfer the coconut to a mortar.
Take a pestle and grind the the kerisik till it becomes
a smooth paste.

P.Shivan I think you have a misconception about coconut milk.
What ever used moderately will do no harm.
There are some dishes which you cannot cook without coconut.
Paal aapam, coconut candy, thenga paal rice and so on.
In Malaysia , Kerala Thailand, Sri langka and many countries have numerous recipes with coconut milk.
I will post a clipping which I took from the net. Thanks to the net.
Please read it.
If you are concerned about the saturated fat content in coconut milk, know that this saturated fat has been shown in many independent studies to be a good saturated fat, easily metabolized to give your body quick energy. Contrary to popular myth, it does not transform into bad cholesterol to clog up arteries. In fact, cultures around the world that depend on coconut as their main source of fat have been found to be free of heart disease. The principle fatty acid in coconut milk is lauric acid, which is the same fat found in abundance in mother's milk and is known to promote normal brain development and contribute to healthy bones. It also has important anti-carcinogenic and anti-pathogenic properties and is less likely to cause weight gain than polyunsaturated oils. The potent anti-viral, anti-fungal and anti-microbial effects of coconut oil have implicated it in the treatment of both AIDS and candida. Whatever bad things you may have heard or read about coconut milk have not stood up to scrutiny by unbiased food scientists; however, the goodness of coconut milk has not been given equal press because of intensive lobbying against it by the powerful vegetable oil industry. Southeast Asians, meanwhile, have been staying healthy for generations with coconut an integral part of their diet .
P.Shivan tamby, I am just pointing out about coconut milk.
Please do not feel hurt or anything.
Thanks. Kugan98

Today my topic is kambu.
This again brings back thoughts of my dear Suvai. :cry2: :cry2:
She was asking me all the recipes for kambu.
First you have to clean the kambu of its skin.
You can get cleaned kambu in the shops.
Then grind coarsely the kambu in your blender.
Now the kambu Kali and kool
Ingredients:
1 cup coarsely ground kambu.
4 cups of water
little salt.
Method:
Take 2 cups of water and mix the kambu and keep aside.
Boil the other 2 cups of water in a deep pot.
When the water boils, add the mixed kambu little by little,
and keep on stirring. Make the flame very low.
keep on strring until the kambu kali is cooked.
It will not stick to your finger when you touch it.
Remove and let it cool.
you can add any kulambu and eat it as kali.
or you can cut one small onion, little green chillie,
little curry leaves, add enough mooru, salt and mix
it into kool.
A very refreshing and filling drink.
The remainder kali can be made into a ball and
put in a container of water, to be used the next day.
Later I will post how to make dosai and idli with the kambu.

Shivan tamby, another little information about coconut oil.
Konjam padichu paarungga.
Coconut Oil Bad For You? Hardly
CoconutThere is widespread misconception that coconut oil is bad for you because it is said to raise blood cholesterol and cause heart disease. The only "proof" is one four-decades old study. The study used hydrogenated coconut oil.
It is now known that the process of hydrogenation creates "trans fatty acids" (TFAs), which are toxic entities that enter cell membranes, block utilization of essential fatty acids (EFAs) and impede cell functionality. TFAs also cause a rise in blood cholesterol. These substances are not present in natural coconut oil.
In other words, a study based on hydrogenated coconut oil has no relevance to the non-hydrogenated coconut milk or coconut oil that you eat.
Widespread studies of coconut-consuming populations such as those found in Polynesia and Sri Lanka, show that "dietary coconut oil does not lead to high serum cholesterol nor to high coronary heart disease mortality or morbidity."(See endnote 1.) Other studies show no change in serum cholesterol level from coconut oil. (See endnote 2.) And if it is true that the herpes virus and cytomegalovirus have a causative role in the initial formation of atherosclerotic plaques (See endnote 3.), coconut oil may be beneficial in preventing heart disease. (See Benefits below.)
Coconut Oil as Saturated Fat
Another reason people believe coconut oil must be bad for you is misguided association: it is a saturated fat and "saturated fats are bad for you." Dietary guidelines inevitably fail to distinguish between different kinds of saturated fats and insist that saturated fats (meaning all saturated fats) are harmful.
This is not just misleading. It is bad science. Leading scientists now recognize that just as there is good cholesterol, there are also good saturated fats.
Fats are classified as short-, medium- or long-chain based on the number of carbon molecules they contain. Nearly two-thirds of the saturated fat in coconut oil consists of medium-chain fatty acids.
When we eat long-chain fatty acids, they must be emulsified by bile salts in the small intestine before they can be absorbed into our body. Short- and medium-chain fatty acids, such as those in coconut milk, are absorbed directly through the portal vein to the liver, where they are immediately available to the body.
In other words, most of the saturated fat in coconut oil is easily digestible and converted into quick energy. And these types of fatty acids are less likely to cause obesity because they are immediately used by the body and have no opportunity to be stored.
Thanks. Kugan98.
Note: To morrow is Shiva rathiri.
I will be very busy with prayers.
Would not be able to hop from one temple
to another, as I have to keep an eye on Aishu.

[tscii]Dev, here is the first recipe.
The sweet sour chillie sauce.
You can use it as a dip for anything.
Thanks. Kugan98
SWEET SOUR CHILLIE SAUCE
Ingredients:
20 fresh red chillies
6 cloves garlic
¾ cup of water
200 grms sugar
½ cup white vinegar
½ tsp salt
Method:
Deseed the chillies, cut them fine.
Cut also the garlic fine.
Using ½ cup of water, blend all the above ingredients
very fine. Add more water if only necessary to blend.
Using a very coarse sieve rub down the ground ingredients.
This is to get a smooth sauce.
Using a wide based pot boil the mixture on medium heat.
Give it a stir every now and then.
It will take about 7 minutes.
There will be no separation of chilli and liquid if it is boiled to the right consistency. You will be able to know the consistency after few tries.
Cool and pour into clean dry bottle and refrigerate.
The Chillie Sauce:

Dev, your second request.
THAI AJAAD SALAD
Ingredients:
1 young cucumber
2 shallot sliced
1 fresh red chilli sliced
2 tbs sugar
2 tbs vinegar
Little coriander leaves.
salt
Method:
Quarter the cucumber length wise.
Slice the cucumber crosswise thinly.
Add little salt and keep aside.
In a bowl, add in the vinegar, sliced shallots,
sugar and little salt. Mix well and keep aside.
Now take the cucumber and drain out part
of the liquid.
Now add in the shallot mixture, sliced fresh red chillie,
and the coriander leaves. Mix well.
Taste again for sweet, sour and salt.
The taste improves with keeping longer.
Chill before serving.

Selviem,
Here's the potato dill fry
Potatoes-5-6 big ones
Onions-2 large chopped
Tomatoes-2 small
Ginger garlic paste-1 tsp
Chili powder-2 tsp
Dhania powder-1 1/2 tsp
Mustard, Urad dhal and cumin seeds to season
Sagu Masala (1Tbsp-available in packets-optional)
Dill/Soy keerai one buch-Pick from thick stems-chop roughly
Boil the potatoes till they are 3/4th done. Remove skin and chop them into medium even pieces. In a heavy bottom pan season with mustard, urad dhal, cumin seeds. Add onions and fry. Now add the chopped tomatoes and fry till the tomatoes become mushy. Add ginger and garlic paste and all the powders except the sagu masala. Add salt to taste and mix well. Add the potatoes and mix well for the masala to coat evenly. Fry for about 5 min and then add dill leaves. Continue frying till everything turns golden brown in medium heat. Add sagu masala and continue frying. Normally about 30 mins or so. If we add a little more oil(!!) than normal it comes out crispy . Can add green peas also. Tastes good by it self or with sambhar and rasam rice.
I have added dill to masala vadai, mutton and chana dhal and dill fry. Hope you like it Selviem.

Shivan, after reading your pm and all your posts in the different section of this forum, I consider myself dust compared to you.
I am amazed at your knowledge. I bow to you Shiva.
Shivan, what I am today is all after getting married to this family.
I was noughts in everything (except my degeree)
We are a joint family, all happy.
We have become vegetarians after my F.I.Laws death.
My daughter who is 5 too is very careful as to what she eats.
All the children can recite Siva Puranam by heart, and also all the other mantras.
We donate essential food stuffs to about 5 hard core famalies.
Also anathanam to about 30 poor people every month.
Our principal is not to gossip about others, not to do anything bad to hurt others, not to get angry.
Other than that I am not that well versed in Vedas and things.
We lead a simple life.
I am glad that I found a brother who is so knowledgeable.
God bless you Shiva.

I had my morning prayers.
Had to cook for the family, I fasted.
Evening I had milk and fruits, stayed awake the whole night.
Watching Shivan's youthtube about his guru.
Learnt many new things. also recited mantras.
Early morning went to the nearest Sivan temple.
Came home, today is Ammavasai.
Cooked the meals and waiting for the elders to come

Selviem the link that Dev send, the salsa can be kept for about a week in the fridge.
I have even kept it longer, it was nice.
The other two salsas that I posted will not keep .
One you have to use it that day, the other can be kept
for 2 days in the fridge.
Thanks. Kugan98

[tscii]Aarthii while I was in US, my sis-in-law used to buy this tomato salsa by jars. Its nice to dip in the corn tortilla chips and eat.
I told her that I will try and make my own sauce after eating it.
The sauce turned out so well that she too does not buy it anymore.
You can use little of this sauce for your pasta.
Aarthii the penne pasta will swell big after boiling.
Try buying the elbows, or small types of the pasta.
Here is the recipe:
TOMATO SALSA
Ingredients:
8 red ripe tomatoes
2 capsicum cut into cubes
5 green chillies chopped
4 garlic pips chopped
1 onion chopped
1 tsp lemon juice
½ tsp sugar
Salt to taste
Pepper to taste
1 tbs of olive oil
1 tsp fresh or dried parsley
Method:
Steam the tomatoes and make a coarse puree of it.
Heat a wok with the olive oil, add in chopped garlic,
onions, capsicum, green chillies and sauté well.
Now add in the pureed tomatoes, sugar, salt, pepper,
And stir nicely, once the raw smell goes, add in the lemon juice
and the parsley. Stir well and remove.
Now you can serve with nachos, tacos and corn tortilla chips.
Thanks Kugan for this Tomato Salsa recipe - my daughter loves this very much coz I often see her eating corn tortilla chips with the ready-made salsa from the Mall. I would surely try out this recipe and I bet its going to hit off as her fancy from now onwards..!! :D

Sonu, what happened to you?
Long time you are missing.
I just thought of you today, so long life for you.
Try the salsa and see, sometimes it will not be as tasty
as the store bought one. Since she is used to the salsa.
We all liked it, even my friend Selviem liked it.
So try Sonu and see.
Please come often, at times I miss you all very much :(
Take care. Kugan98
