Dev, made the tayir kulambu today.

Ammadi peyar ellam maathathingga.
Different places have different names.
It's o.k, as long as the dish is super.

Here we add any one type of vege with the ground ingredients, tayir and taalippu and call it as that vege patchadi.

You can make with almost all vegetables.
Today in Malaysia the weather was very hot.
The tayir kulambu was very cool and refreshing.

Selviem it was nice of the officers to allow your sons

Otherwise they would have been very badly disappointed.

Your tayir avial name also suits Dev's tayir kulambu..

here is a red radish salad that I make:

take of the ends of the red radish...cut into half & then slice it veryyyyy thin....put it in a bowl....add chopped about 1/2 green chilli....small onion shallot...half or whole if u like more of raw onions.....chop it reallllll fine.....then add kothamalli & lemon juice & salt...serve after mixing.


kootu with chow chow & zucchini:

4 to 5 Tblspn masoor dal
3 Tblspn of moong dal
wash these well & add enough water to boil it...let it boil for about 4 mins now add cut washed chow chow / zucchini / one tomato/ green chillies chopped/curry leaves...now cover & cook on lower than medium heat...till the dals cook well....now add chopped coriander leaves.....to season it use one tsp oil...little mustard seeds & jeeragam...thalaila kotidunga.. yr dal is done.....this is very good with rice & chapathi....enjoy

Cauliflower with tomatoes enoda oru style ;-)

One onion chop well
two green or more chillies chop
One tomato cut finely
kothamali cut finely
karuvepilai cut finely
one cauliflr into flrlets

In a kadai....take about 1 Tablespoon oil..or yr desire...when hot add jeeragam 1/2 tsp. when it sizzles...add chopped onions & green chillies...fry them well till onions are limp..now add the chopped tomatoes.....let it cook till tomatoes become like dry now add turmeric & a little bit of red chilli powder...now fry this mothai...for about 1 minute & now add cut cauliflr....do all this in medium heat...now mix this well...& cover for about 2 or 3 mins only...then remove lid & cook till the cauliflr coats well with thakali....now add the kothamalli & curry leaves...& salt & cook for another 2 mins....u can eat it with rice/chapathi/or sandwich it.

NM. I have never baked a cake with fizzy drink.
Your recipe is something new to me.

You see now I have a new recipe to try.
I think that cake has too much sugar contents.
Condensed milk + fizzy drink.
When the cake has cooled it comes something like
sticky on the top.


dear mrs kugan .. that was the first time i baked a cake with fizzy drink and condesend milk too... and you're right, the top is sticky at the top.
I'll try yours and let you know :).

NM try pannungo,
Eggless cakes cannot be equal to cakes with eggs.
I know the difference because I have tasted both.
As time goes on we will get used to eggless cakes.
Just like how now, non-vegetarian dishes does not appeal
to me.
I made a vegetarian burger yesterday for the children.
I will post the recipe and picture soon.
Today evennig dinner is spaghetti bolognese.
Also the recipe will follow with pictures.

If you have any vegetarian or non vegetarian recipes
please do post them. Let us try them.

NM I know you might be a busy person and would not have the
time to log on every day.
It does not matter, please log on when ever time permits.

[tscii]Our children love this coleslaw which they serve in K.F.C
I used to make for them often before.
After becoming vegetarians I stopped making as there
is egg white in the mayonnaise.
Now I found out that they have vegetarian mayonnaise,
without egg white. o.K I made it for them today.

COLESLAW

Ingredients:
4 cups finely sliced cabbage
¼ cup finely sliced carrots
1 tbs minced onions
1 tsp sugar
¼ tsp salt
2 tbs of milk
¼ cup of mayonnaise
2 tbs of butter milk
1 tbs of tarragon vinegar or white vinegar
1 tbs of lemon juice

Method:

Put the cabbage and carrot mixture into a large bowl.
Add in the minced onions. Keep aside.

Mix all the other ingredients into a food processor.
Process until smooth.
Pour over the cabbage mixture and mix thoroughly.
Cover bowl and refrigerate for several hours
before serving.
Can be used as a sandwich filling also
P.S I got this recipe from a K.F.C manager.
Shh, not so loud.

Note: tarragon vinegar is a blend of malt and vinegar.
Flavoured with tarragon flavouring.

Eggless mayonnaise

Milk powder-5 tbsp, mustard pwd - 1/2 tsp, salt - 1/2 tsp, pepper powder - 1/2 tsp, cold water - 1/4 cup, vinegar( white) - 2 tbsp, olive oil - 10 tbsp or salad oil ( like sunflower oil etc).

Method:
Take the milk pwd, mustard pwd, salt, pepper pwd together in a bowl & beat it well. Now add the water & mix well till everything is well blended. Add the olive oil ,little by little, blending vigourously all the while . Now add the vinegar & keep stirring till the vinegar is well incorporated in the mixture. Keep it in the fridge for half an hour & it will thicken up like those commercially sold ones!

KUIH KERIA

Ingredients

1) 600 gm sweet potatoes – boil and mash

2) 1 cup of plain flour

3) A pinch of salt

For Coating:

2 cups of sugar

½ cups of plain water

oil for deep frying

Method:

Boil sweet potatoes until soft than put in a pinch of salt and mash the potatoes.

Put in plain flour bit by bit, add in salt and kneads ingredients until well mixed.

Scoop 2 tablespoon and roll on your palm to make a small ball.

Shape it like a methu vadai

Heat a wok with oil for deep frying .

Fry the vadai shaped donuts till golden in colour.

Drain and put a side.

FOR COATING:

1) Heat frying pan , add in water and sugar.

2) Cook until sugar dissolved and transform to white colour.

3) Di p in all the sweet potato donuts at one go and coat it well until all covered with white sugar.

4) Wait till cold then serve.

Note:

if your fingers are sticky while shaping out sweet potato donuts, you can dust your palm with little flour to avoid stickiness.

[tscii]Yesterday's dinner.


VEGETARIAN SPAGHETTI BOLOGNAISE

Ingredients:

100 grms spaghetti
1 cup mixed vegetables beans , peas, carrots corns
½ cup cubed capsicum
¼ cup spring onions cut
1 cup grated cheese
2 firm tofu crumbled ( seasoned with ginger garlic paste and pepper powder)
3 pips garlic chopped
2 tsp red chillie powder
2 tsp sugar
6 tbs tomato sauce
3 tbs chillie sauce
400 grms tomatoes cut into pieces
10 button mushroom sliced
Little pepper powder
Salt to taste
2 tbs butter

Method:
For Spaghetti:
Boil water in a pan, add 1 tbs of oil, ½ tbs salt and add spaghetti.
Cook till done, strain and keep aside.

For The Sauce:
Take 300 ml water in a pot, add in the cut tomatoes.
Add in the chopped garlic, 2 tsp of sugar, 1 tsp salt
and the 2 tsp of red chillie powder. Cook for 10 minutes.
Cool , and blend them in a mixie.
Then strain the mixture in a strainer. The gravy should be quite thick.

In a wok, add in 2 tbs of butter , add in the mixed veges and cubed capsicums. Sauté well, add in the crumbled tofu , spring onions,
Sliced mushroom, chillie sauce, tomato sauce, pepper powder
Mix well, add in the sauce and cook for about 10 minutes.
Taste for salt and remove.

To Assemble:
Spread the spaghetti in a oven proof plate.
Pour the sauce over the spaghetti, sprinkle grated cheese.
Grill or put in the oven till the cheese melts a little.
Serve hot.

Note: The crumbled tofu gives the resembles of minced meat.
We can make vegetable balls, fry them and serve along with
the spaghetti.

Dev and Selviem I have given the authentic way of preparing the ada. I have also given the short cut how I make.
Or you can buy the ready made in the shop.


ADA

Ingredients:

For Ada:
250 grms raw rice soaked drained and ground into fine powder.
Few banana leaves

Method:
Add water slowly and mix the rice powder to get the right
consistency. The batter should be smooth and thin, but thick enough to coat the back of a spoon.

Rinse the banana leaves and and toast over the stove for few seconds,
they become pliable.
Smear little ghee on each piece of leaf, and spread on a thin layer of rice batter. Roll the leaves into cylinders and tie with a string.

Bring water to a boil in a heavy saucepan, when the water starts boiling,
Add the rolled up leaf, reduce the heat and cook for about 10 minutes.
Remove from the water and drain, open the leaves and let it cool.
When it has cooled peel off the ada and cut into thin flakes.
approximately one- sixteenth of an inch in length and width.
You can dry them and keep for later use.
Note: This is how my grand ma makes. The banana leaves will give a good aroma.
I usually pour the flour into a greased tray and steam it

ADA PRADHAMAN

Ingredients:

200 grms ready made ada
2 scrapped coconuts
500 grms jaggery
½ cup ghee
¼ cup rasinis
¼ cup cashew nuts
4 cardamoms made into powder

Method:
Extract ½ cup of thick 1 st coconut milk.
Next extract 3 cups of 2nd coconut milk.
Fry the cashew nuts and raisins in ghee, keep aside.
Melt the jaggery in ½ cup of water, keep aside.

In a pot add the second coconut milk, add in the ada.
Simmer for about 15 minutes till the adas are cooked.
Keep stirring, add in the jaggery and continue stirring.

Add in the ghee, the raisins and cashew nuts.
Simmer for another 2 minutes, add in the first milk.
Add also the cardamom powder. Mix well and serve.
You can serve it hot or cold.

The payasam looks very thick in the picture because I removed the liquid so as to show the ada.

Kuganka,am having one doubt,can we use the spaghetti sauce for penne as well as other pastas?Will it be good.

Beacoz ,kuganka,everytime when i makes penne,my husband used to tell me that the pasta shud be immersed or else served along with a sauce.

On seeing the picture of ur spaghetti dish ,i suddenly remembered his words.Can u plz tell me kuganka.

Appadiye paal ada pradhaman recipe irundhaal koduthidunga pls... I tried some store bought ada but din't like it... I'm sure the authentic one will taste best & have a great texture...will try once the pongal sweets are over...:)

Suvai, kandippa try pannitu solren... mayo senju paarunga... the blog owner says it tastes just like store bought ones...& u can even used powdered mustard if u don't have ready ones...

Aarthii, I stopped mayo during pregnancy as it contains raw egg... aprom vegetarian mayo use pannitu irundhen... ippo ellam stopped...

Suja, thanks for you nice post.

Suja I have not made the kushboo idli.
I feel very bad, since I am not able to give you the recipe.
Anyway I called my aunty and see told me that
the measurement is just like our idli. 4 to 1.
Also they soak 2 tbs of sago with the rice + 1 tsp methi seeds.
Grind it well and ferment. The next day add 1 tsp of cooking soda

Aarthii if you are frying the penne like noodles, than it will be a bit dry. You can fry the penne a bit sotha sotha by sprinkling some water while frying. See that you have added enough chillie paste and tomato sauce.

I do not know how you do the penne, if like noodles than its the way.
Aarthi , you can make the sauce like I have made and use with any pasta. You can even buy ready made pasta sauce and use with the penne you are making. I do not buy ready made pasta sauce, since I make my own.

Suvai's kuotu


kootu with chow chow & zucchini:

4 to 5 Tblspn masoor dal
3 Tblspn of moong dal
wash these well & add enough water to boil it...let it boil for about 4 mins now add cut washed chow chow / zucchini / one tomato/ green chillies chopped/curry leaves...now cover & cook on lower than medium heat...till the dals cook well....now add chopped coriander leaves.....to season it use one tsp oil...little mustard seeds & jeeragam...thalaila kotidunga.. yr dal is done.....this is very good with rice & chapathi....enjoy

Suvai's cauliflower

Cauliflower with tomatoes enoda oru style Wink

One onion chop well
two green or more chillies chop
One tomato cut finely
kothamali cut finely
karuvepilai cut finely
one cauliflr into flrlets

In a kadai....take about 1 Tablespoon oil..or yr desire...when hot add jeeragam 1/2 tsp. when it sizzles...add chopped onions & green chillies...fry them well till onions are limp..now add the chopped tomatoes.....let it cook till tomatoes become like dry now add turmeric & a little bit of red chilli powder...now fry this mothai...for about 1 minute & now add cut cauliflr....do all this in medium heat...now mix this well...& cover for about 2 or 3 mins only...then remove lid & cook till the cauliflr coats well with thakali....now add the kothamalli & curry leaves...& salt & cook for another 2 mins....u can eat it with rice/chapathi/or sandwich it.

Suvai's salad.
I made with carrot.


here is a red radish salad that I make:

take of the ends of the red radish...cut into half & then slice it veryyyyy thin....put it in a bowl....add chopped about 1/2 green chilli....small onion shallot...half or whole if u like more of raw onions.....chop it reallllll fine.....then add kothamalli & lemon juice & salt...serve after mixing.

how r u? nice to read ur posts. yesterday my husband took laptop to office, so i was not able to post the feedback of kootu and salad immediately.

kugan raced me. no problem. suvai ur dishes are suvaiyoooo suvai.

kootu, frankly speaking i tasted little after i cooked, i packed for my husband, then kids had and they gave me a spoon of kootu.

amma, be happy that u got atleast a spoon of kootu. they liked it very much. one side i am sad, that i couldn''t enjoy. otherside, it was a super duper hit in my house.

Required Items :
Channa dal (Kondakadalai): 1 ½ cups
Potatoes: 3 to 4(Small size)
Onion: 1 to 2
Garlic: 2 pips

For Grinding:
Coconut: 4 tbsp
Red Chili : 3 to 4
Garlic: 3 pips
Cumin seeds: 1/2tsp
Tamarind Juice: 1 tbs

For Seasoning :
Mustard seeds,Urad dal : ½ tsp
Curry leaves

Method :
Soak tha channa overnight .
Pressure it along with salt in a cooker until it is done
Chop the potatoes into half and pressure it for 1 whistle.
Peel the skin of the boiled potatoes and cut it into small pieces
Grind the items for grinding into a fine paste.
Chop the onions into small pieces.
Chop the garlic too.
In a pan, pour the oil, add mustard and urad dal.
Once wen it splutters, add the onions and garlic pieces and fry it nicely, Till the aroma of garlic comes out.
Now add the grinded paste and add salt and fry it nicely.
Take about half cup of boiled channa and keep it aside.
After 5 mins, put the boiled potato and boiled channa along with some water(The potatoes and channa shud be fully immersed in the water) into the boiling pan.
Mix it well and close the lid .
Now mash the boiled ½ cup channa or grind it in a mixie.
After some 5 to 10 mins,open the pan and now add the grinded channa mixture into the gravy.
Allow it to boil for 2 mins. Taste for salt and remove.
Garnish it with coriander leaves.

Goes well with chappati and rice.

A radish chutney I tried yday... this recipe is from a book named
'tamilar samayal" by Subbulakshmi Sivamathi. So tasty that ppl won't believe it's made using radish.

Radish chutney:

grate 1 medium radish. Saute in 1 tsp oil till 3/4th done. Add 4 tbsp coconut & fry till radish is cooked well. Set aside to cool.

heat 1 tsp oil. fry small asafoetida piece, 2 red chillies, 1 tbsp urad-channa dhal & let it turn golden. Grind it along with small gooseberry sized tamrind(or less),salt to a coarse pwd. Add the radish-coconut mix & grind to a coarse paste adding lil water if req.

Heat 1 tsp oil. Splutter mustard. Add 1 chopped tomato, 1 tbsp chopped coriander leaves & fry till pulpy. Add a sprig of curry leaves torn & mix well. Add the chutney, mix well & take off flame imme.

Goes well with rice, dosai & chapathi.

Dev, today I made the Madurai drink.
There is no special jigar thanda juice.
You can use what ever flavour ice cream that you want.
The main ingredients are milk, ice cream, China grass,
nannari syrup and sabja seeds.

This is the original recipe from Madurai.
Thats what my aunt says.
I too never fail to slurp up this cooling drink,
when ever I visit Madurai. Now you get them everywhere.
Well vendors change here and there to suit them for selling.

I am posting a sweet recipe for our beloved Suvai,
as a send off present for her. Bon Voyage


GULAB JAMUN

Ingredients:

For the syrup:
2 cups of sugar
2 cups of water
¼ tsp cardamom powder
Few drops of rose essence
Few strands of saffron ( I did not use)

The Jamuns:
1 cup of dry powdered milk
4 tbs of all purpose flour
4 tbs curds (not very thick)
2 tbs melted butter
½ tsp baking soda

Oil for frying

Method:
Mix all the ingredients for the syrup in a pot.
Bring to a boil, reduce the flame very low and put it in a sim.

Sift the flour, milk powder and the baking soda 2 times.
Add them in a bowl, along with the melted butter.
Now slowly add in the curds and mix well.
Let the dough rest for few minutes.

Now use little oil on your hands and roll into balls.
Make sure they are smooth and do not have any creases.

Heat up the oil on to a low medium heat.
When you drop a ball in the oil, it should sit at the bottom
of the pan for a second before coming to the surface.

Drop few balls at a time and keep rotating them
till you get an even colour. Fry all the balls.
Bring the syrup to another quick boil.
Add in all the fried jamuns, turn off the flame.
Close and let it soak for about ½ an hour or more.
Serve cold.
The most important factor in jamun making is the temperature of the
oil.


Note: you can press the dough to form balls.

as u said, for diet purpose i am also doing the same. i will add salt, i mix some flax seeds powder to it. then some veges or kootu i will mix with that and i will drink.

here my friends(some mami's ) will add fenugreek powder, hing powder, pinch of salt and butter milk, coz of diabetics.

if we get wholemeal oats, then that is well and good.

if we drink hot hot then it is fine.

Selvi, I tried it with white radish... the recipe doesn't mention the type of radish...so u can use any I believe... also the recipe says the radish can be used whole without peeling the outer skin...

[tscii]Jigar means heart, thanda means cold.
This drink is meant to cool our hearts.
The milk consistency should be thick, then only the Jigarthanda
will be tasty.


JIGAR THANDA

Ingredients:

4 cups of fresh milk
½ cup sugar

5 grms of soaked china grass
200ml water
1 tbs sugar

2 tbs nannari syrup store bought
2 tbs soaked sabja seeds
1 big scoop of ice cream for each glass

Method:
Boil the milk with the sugar till it reduces to half the volume.
It will have a faint pink colour. Refridgerate till chilled

Add 200 ml of water, 1 tbs sugar and 50 ml milk and boil the china grass. Pour it into a flat container. When cold cut into cubes

Take a tall glass, pour 2 tbs of the nannari syrup.
Pour two big ladles of the cool milk.
Add in the 2 tbs of the soaked sabja seeds.
Add about 2 tbs of the jelly that you have cut into cubes.
Top it up with a scoop of any ice cream of your choice.


Note: Some like to add boiled sago instead of the sabja seeds.
Also some like to use rose syrup instead of the nannari syrup.

CHOLE OR CHICK PEAS CURRY

Ingredients:
2 cups chick peas (the white one ) washed and soaked over night
2 tomatoes chopped
1 big onion sliced
1 big onion made into paste
2 tsp ginger paste
2 tsp garlic paste
3 green chillies sliced
½ cup of coriander leaves
2 tsp chillie powder
1 tbs coriander powder
¼ tsp tumeric powder
½ tsp cumin powder
1 tsp garam masala powder
1 tsp tamarind paste mix in 1 tbs of water
Salt to taste
2 tea bags

To Season:
3 tbs of oil or ghee
2 inch cinnamon sticks
½ tsp cumin seeds
2 bay leaves
3 cloves


Method:
Pressure cook the chick peas with ½ tsp of salt and the 2 tea bags.
This gives a rich brown colour to the chick peas.
Cook for about 3 whistles, the chick peas should not be mushy.
Remove about ¼ cup of the chick peas, blend well and keep aside.
You can retain the liquid and add it for the gravy later.
That is if you want a darker gravy.
Discard the tea bags

Heat a wok with the ghee, add in the seasoning things.
When they crackle, add in the onion , ginger and garlic pastes.
Sauté well for about a minute.
Now add in the chopped tomatoes, sliced green chillies and the sliced onions. Stir and cook well till the tomatoes turn mushy.

Add in the chillie powder, coriander powder, cumin powder and the garam masala powder. Add also the salt and stir well for a minute.

Now add the blended chick peas, tamarind juice and mix well.
Now add the boiled chick peas and 1 cup of water.
Mix every thing well and let it come to a boil.
Taste for salt, chillie and etc.,
The gravy should have reached to a thick consistency.
Sprinkle the cut coriander leaves stir and remove.
Serve warm with rotis, chapathis.

In the jigar thanda jelly is added, that makes the difference.
Also nannari syrup. try panni paarungga.

In Malaysia we have a super cooler called ice kacang.
In a bowl, they will add a tbp of cooked red beans, 1 tbp of sweet corn kernels, 1 tbp of jelly strips, boiled sago. tender coconut strips, some cendol, one tbs of roasted peanuts then they will heap up the bowl with ice shavings.
On top of that they will drizzel with evaporated milk, again they will drizzel with either rose syrup or brown sugar syrup.
The last will be a scoop of ice cream.
Appadi vairu neranjidum.

Madhu, oats onnum recipe illain nga.

I just cook the oats with plain water, no salt as there will be wee bit salt in the oats. Then I will add little veges that I have cooked or pour in little kulambu that I have cooked , and take it for breakfast.
It will be nice to eat with puli kulambu and so on.
I take oats 3 times a week.

Madhu, every morning I will take a glass of juice, made up of green apple, capsicum, bitter gourd, celery and cucumber.

I will also swallow a tsp of cleaned fenugreek seeds with the juice.
It helps in my bowel system as well good for diabetic.

Suvai, we all pray to God that you must have a pleasant and safe journey. Enjoy every bit of time you get.

I am posting a sweet recipe for our beloved Suvai,
as a send off present for her. Bon Voyage


GULAB JAMUN

Ingredients:

For the syrup:
2 cups of sugar
2 cups of water
¼ tsp cardamom powder
Few drops of rose essence
Few strands of saffron ( I did not use)

The Jamuns:
1 cup of dry powdered milk
4 tbs of all purpose flour
4 tbs curds (not very thick)
2 tbs melted butter
½ tsp baking soda

Oil for frying

Method:
Mix all the ingredients for the syrup in a pot.
Bring to a boil, reduce the flame very low and put it in a sim.

Sift the flour, milk powder and the baking soda 2 times.
Add them in a bowl, along with the melted butter.
Now slowly add in the curds and mix well.
Let the dough rest for few minutes.

Now use little oil on your hands and roll into balls.
Make sure they are smooth and do not have any creases.

Heat up the oil on to a low medium heat.
When you drop a ball in the oil, it should sit at the bottom
of the pan for a second before coming to the surface.

Drop few balls at a time and keep rotating them
till you get an even colour. Fry all the balls.
Bring the syrup to another quick boil.
Add in all the fried jamuns, turn off the flame.
Close and let it soak for about ½ an hour or more.
Serve cold.
The most important factor in jamun making is the temperature of the
oil.


Note: you can press the dough to form balls.

Thanks Kugan for the lovely jamuns. Its great of you to have taken pics of it at different stages to give us a very clear view esp for those who are trying it for the first time. This is how a good cook shd do in his/her presentation - you have always proved yourself to be one ever since I know of your existence...!! :wink:

Btw...Jamuns have always been my favourite dessert.....to make it even more exciting I always top it with a scoop or two of vanila ice cream minus the syrup..... :P Saputtu parunggo....its truly heavenly coz the jamuns still has some of its juicy syrup intact.. :oops:

Madhu, oats onnum recipe illain nga.

I just cook the oats with plain water, no salt as there will be wee bit salt in the oats. Then I will add little veges that I have cooked or pour in little kulambu that I have cooked , and take it for breakfast.
It will be nice to eat with puli kulambu and so on.
I take oats 3 times a week.

Madhu, every morning I will take a glass of juice, made up of green apple, capsicum, bitter gourd, celery and cucumber.

I will also swallow a tsp of cleaned fenugreek seeds with the juice.
It helps in my bowel system as well good for diabetic.

I take oats with low fat milk minus sugar every morning. Kugan try blend a slice of beetroot to your juice mix. Its does a whole world of good too. Do you take your fenugreek seeds soaked in a glass of water over night? Thats wat I do.... :D

Sonu thanks for your tips.
You can use the fresh red chillie, if you are using the edible gum to make the chillie sauce.

If you visit a sauce making factory, you will never ever use the sauce again.

Vallarai chutney:

Vallarai leaves- around 30-35
5 baby onions peeled
1/4th coconut
lil tamarind & salt to taste
1 tbsp thuvar dhal
2 dry chillies

Dry roast the dhal & chilly until golden. Grind everything together. Goes well with lemon rice, coconut rice or with plain white rice.

I just cannot swallow soaked fenugreek seeds.
So I will pop in the seeds and gulp it down with the juice.

Dev, to day I made the radish chutney for dosai for today's dinner. Does it look like how you made?
I remember making this chutney and togayal with radish .
But while tempering there was no tomatoes used.

A radish chutney I tried yday... this recipe is from a
book named
'tamilar samayal" by Subbulakshmi Sivamathi. So tasty that ppl won't believe it's made using radish.

Radish chutney:

grate 1 medium radish. Saute in 1 tsp oil till 3/4th done. Add 4 tbsp coconut & fry till radish is cooked well. Set aside to cool.

heat 1 tsp oil. fry small asafoetida piece, 2 red chillies, 1 tbsp urad-channa dhal & let it turn golden. Grind it along with small gooseberry sized tamrind(or less),salt to a coarse pwd. Add the radish-coconut mix & grind to a coarse paste adding lil water if req.

Heat 1 tsp oil. Splutter mustard. Add 1 chopped tomato, 1 tbsp chopped coriander leaves & fry till pulpy. Add a sprig of curry leaves torn & mix well. Add the chutney, mix well & take off flame imme.

Goes well with rice, dosai & chapathi.

[tscii]Aarthii while I was in US, my sis-in-law used to buy this tomato salsa by jars. Its nice to dip in the corn tortilla chips and eat.
I told her that I will try and make my own sauce after eating it.
The sauce turned out so well that she too does not buy it anymore.
You can use little of this sauce for your pasta.

Aarthii the penne pasta will swell big after boiling.
Try buying the elbows, or small types of the pasta.
Here is the recipe:


TOMATO SALSA

Ingredients:
8 red ripe tomatoes
2 capsicum cut into cubes
5 green chillies chopped
4 garlic pips chopped
1 onion chopped
1 tsp lemon juice
½ tsp sugar
Salt to taste
Pepper to taste
1 tbs of olive oil
1 tsp fresh or dried parsley

Method:
Steam the tomatoes and make a coarse puree of it.
Heat a wok with the olive oil, add in chopped garlic,
onions, capsicum, green chillies and sauté well.

Now add in the pureed tomatoes, sugar, salt, pepper,
And stir nicely, once the raw smell goes, add in the lemon juice
and the parsley. Stir well and remove.
Now you can serve with nachos, tacos and corn tortilla chips.

[tscii]Here is Aarthi's Channa Kulambu:

Channa & Potato Gravy

Required Items :
Channa dal (Kondakadalai): 1 ½ cups
Potatoes: 3 to 4(Small size)
Onion: 1 to 2
Garlic: 2 pips

For Grinding:
Coconut: 4 tbsp
Red Chili : 3 to 4
Garlic: 3 pips
Cumin seeds: 1/2tsp
Tamarind Juice: 1 tbs

For Seasoning :
Mustard seeds,Urad dal : ½ tsp
Curry leaves

Method :
Soak tha channa overnight .
Pressure it along with salt in a cooker until it is done
Chop the potatoes into half and pressure it for 1 whistle.
Peel the skin of the boiled potatoes and cut it into small pieces
Grind the items for grinding into a fine paste.
Chop the onions into small pieces.
Chop the garlic too.
In a pan, pour the oil, add mustard and urad dal.
Once wen it splutters, add the onions and garlic pieces and fry it nicely, Till the aroma of garlic comes out.
Now add the grinded paste and add salt and fry it nicely.
Take about half cup of boiled channa and keep it aside.
After 5 mins, put the boiled potato and boiled channa along with some water(The potatoes and channa shud be fully immersed in the water) into the boiling pan.
Mix it well and close the lid .
Now mash the boiled ½ cup channa or grind it in a mixie.
After some 5 to 10 mins,open the pan and now add the grinded channa mixture into the gravy.
Allow it to boil for 2 mins. Taste for salt and remove.
Garnish it with coriander leaves.

Goes well with chappati and rice

SPICE REMEDIES FOR ALL DISEASES

COLDS

Mix a gram of dalchini/cinnamon powder with a teaspoon of honey to cure cold. Prepare a cup of tea to which you should add ginger, clove, bay leaf and black pepper. This should be consumed twice a day. Reduce the intake as the cold disappears.


GINGER FOR COLDS

Ginger tea is very good to cure cold. Preparation of tea: cut ginger into small pieces and boil it with water, boil it a few times and then add sugar to sweeten and milk to taste, and drink it hot


DRY COUGHS

Add a gram of turmeric (haldi) powder to a teaspoon of honey for curing dry cough. Also chew a cardamom for a long time


BLOCKED NOSE

For blocked nose or to relieve congestion, take a tablespoon of crushed carom seeds (ajwain) and tie it in a cloth and inhale it


SORE THROAT

Add a tea spoon of cumin seeds (jeera) and a few small pieces of dry ginger to a glass of boiling water. Simmer it for a few minutes, and then let it cool. Drink it twice daily. This will cure cold as well as sour throat


AJWAIN/AJMO FOR ASTHMA

Boil ajwain in water and inhale the steam


CURE FOR BACKACHE

Rub ginger paste on the backache to get relief


GARLIC FOR HIGH BLOOD PRESSURE

Have 1-2 pod garlic (lasan) first thing in the morning with water


HONEY AND GINGER FOR HIGH BLOOD PRESSURE

Mix 1 table spoon honey and 1 table spoon ginger (adrak) juice, 1 table spoon of crushed cumin seeds (jeera), and have it twice daily


MIGRAINE

For the cure of migraine or acute cold in the head; boil a tablespoon of pepper powder, and a pinch of turmeric in a cup of milk, and have it daily for a few couple of days




BITTER GOURD/KARELA IS GOOD

A tablespoon of amla juice mixed with a cup of fresh bitter gourd (karela) juice and taken daily for 2 months reduces blood sugar


TURMERIC/ ARAD CURE FOR INJURIES

For any cut or wound, apply turmeric powder to the injured portion to stop the bleeding. It also works as an antiseptic. You can tie a bandage after applying haldi/turmeric


CRAMPS
You must do a self-massage using mustard oil every morning. Just take a little oil between your palms and rub it all over your body. Then take a shower. This is especially beneficial during winter. You could also mix a little mustard powder with water to make a paste and apply this on your palms and soles of your feet.


HEADACHES.
If you have a regular migraine problem, include five almonds along with hot milk in your daily diet. You could also have a gram of black pepper along with honey or milk, twice or thrice a day. Make an almond paste by rubbing wet almonds against a stone. This can be applied to forehead.

Eat an apple with a little salt on an empty stomach everyday and see its wonderful effects. OR When headache is caused by cold winds, cinnamon works best in curing headache. Make a paste of cinnamon by mixing in water and apply it all over your forehead

GOOD FOR INDIGESTION

HONEY IS A GOOD CURE FOR ALL DISEASES

HIGH BLOOD CHOLESTEROL
In 1 glass of water, add 2 tbsps of coriander/dhania seeds and bring to a boil. Let the decoction cool for some time and then strain. Drink this mixture two times in a day. OR Sunflower seeds are extremely beneficial, as they contain linoleic acid that helps in reducing the cholesterol deposits on the walls of arteries..


PILES
Radish juice should be taken twice a day, once in the morning and then later in the night. Initially drink about ? cup of radish juice and then gradually increase it to ? cup. OR Soak 3-4 figs in a glass of water. Keep it overnight. Consume the figs on an empty stomach, the next day in the morning


VOMITING
Take 2 cardamoms/elachi and roast them on a dry pan (tava). Powder the cardamoms and thereafter add a tsp of honey in it. Consume it frequently. It serves as a fabulous home remedy for vomiting. OR In the mixture of 1 tsp of mint juice and 1 tsp limejuice, add ? tsp of ginger juice and 1 tsp honey. Drink this mixture to prevent vomiting. OR Limejuice is an effective remedy for vomiting. Take a glass of chilled
limejuice and sip slowly. To prevent vomiting, drink ginger tea. OR In 1 glass water, add some honey and drink sip by sip.


WARTS
Apply castor oil daily over the problematic area. Continue for several months. OR Apply milky juice of fresh and barely-ripe figs a number of times a day. Continue for two weeks. OR Rub cut raw potatoes on the affected area several times daily. Continue for at least two weeks. OR Rub cut onions on the warts to stimulate the circulation of blood.. OR Apply milk from the cut end of dandelion over the warts 2-3 times a day. OR Apply oil extracted from the shell of the cashew nut over the warts. OR Apply Papaya juice OR Apply Pineapple juice.


URINARY TRACT INFECTION
In 8 oz of water, put ? tsp of baking soda and drink it. OR Drink plenty of water, as it aids in flushing out the waste products from the body. OR Drink Cranberry juice. You can also add some apple juice for taste.


SINUSITIS
Mango serves as an effective home remedy for preventing the frequent attacks of sinus, as it is packed with loads of vitamin A. OR Another beneficial remedy consists of consuming pungent foods like onion and garlic, as a part of your daily meals. OR Fenugreek/methi leaves are considered valuable in curing sinusitis. In 250 ml water, boil 1 tsp of Fenugreek seeds and reduce it to half. This will help you to perspire, dispel toxicity and reduce the fever period. OR Tie a tsp of black cumin seeds in a thin cotton cloth and inhale.

TONSILLITIS
Take a fresh lemon and squeeze it in a glass of water. Add 4 tsp of honey and ? tsp of salt in it. Drink it slowly sip by sip. OR Milk has proved beneficial in treating tonsillitis. In 1 glass of pure boiled milk, add a pinch of turmeric powder and pepper powder. Drink it every night for about 3 days.

ok Kugan... I rembered seeing dried italian seasoning & some other spices in nilgiris here... I'll try there...if not, I'll substitute it with italian seasoning & see how we like it... We love steamed sweet corn kernels with italian seasoning... yum!!!

Barley being a grain, has soluble fibre that regulates our stomachs,prevents water retention and cleanse our urinary system by flushing out all toxins from our body.
Barley water is the best supplementary drink when our children are unwell. When they are down with fever, vomiting, and diarrhoea.

Its so hot in Malaysia now.
This is a very cooling drink.

BARLEY DRINK

Ingredients:

100 grms pearl barley
3 screw pine leaves for flavouring
1500 ml water
Rock sugar to taste

Method:
Wash the barley well to remove the white powder.
Bring the water to boil in a big pot.
Add in the washed barley and bring to boil again.
Simmer till the barley becomes soft and the water turns
slightly milky. It will take about 40 minutes.
Add in the pandan leaves and simmer for another 5 minutes.
Remove from the heat, and discard the pandan leaves.
Drain and keep the cooked barley separately.
( the cooked barley will make the drink slimy, if you do not
remove immediately)
Add rock sugar to taste. Add 1 tbs of the cooked barley into
a glass and pour the chilled or warm barley and serve with a straw.

BANANA BOAT SUNDAE

Ingredients:

1 banana split down the middle
3 scoops of vanilla ice cream
3 red cherry ( I used 3 raisins)
Little chocolate sauce
Little chocolate chips
Little 1001 small coloured balls.

Method:

Pour a layer of chocolate sauce into the banana split sundae dish.
Arrange the 3 scoops of ice cream in the dish.
Add the split bananas to the sides of the dish.
Drizzle the chocolate sauce over the scoops of ice cream.
Sprinkle the chocolate chips and the coloured balls,
over the ice cream.
Place the 3 red cherries on the scoops of the ice creams.
Serve immedieately. Children will love it.

VEGETARIAN BREAD PIZZA

BREAD PIZZA


Ingredients:

6 slices of bread
1 onion finely chopped
1 tomato ( remove seeds) finely chopped
1 piece of pineapple finely chopped
3 button mushrooms finely chopped
1 small capsicum finely chopped
Little butter
Pizza sauce or tomato salsa
Grated cheese
Pepper powder
Little salt

Method:
Mix all the vegetables with little salt.
Heat a dosai kal, add little butter.
Toast the slice of bread on one side till its crispy.

Remove and spread the pizza sauce on it.
Spread about 2 tbs of the mixed veges on the bread.
Sprinkle the grated cheese on it.
Put the slice of bread in an oven or microwave.
Cook till the cheese melts.
Remove sprinkle little pepper powder on it.
Squeeze some tomato sauce on it and serve.

Note: You can top with another slice and make it like a sandwich.

Dev, normally I will do the banana boat with 3 different flavours of ice creams. vanilla, chocolate and strawberry.
The sauces too, chocolate sauce, caramel sauce and peanut butter sauce.
This is if you are having a children's party.
Just for the house you can use one flavour and do.

FLAVOURED YOGURT

Ingredients:

1 litre whole milk
1/3 cup of maple syrup
2 tbs of plain yogurt
Fruits of your choice.

Method:

Scald 1 litre of milk, stir in the maple syrup.
Pour it into a glass bowl with a lid.
The milk should be warm not hot.
Add in the plain yogurt, mix.
Cover and let it sit undisturbed for about 8 hours,
in a warm place.

Once the milk is curdled , you can put it in the fridge.
Cut the fruits of your choice into small pieces.
Serve in small cups with the added fruits.

Note: you can add, mangoes, pineapples, plums, strawberries,
bananas, and so on.

K, my bread pizza is very similar to urs... I don't use pineapple... also I saute the vegs a bit... maththapadi same... I also like to use pasta sauce (tomato base)whenever I have it on hand... My preferred brands were Leggos & prego...

we stayed in our friends place. she made sandwich and saved the corner of the bread. with that she made bread pakoda, it was very nice and she served with basil leaves chutney.

she sprinkle some water on the bread corners and crumbled with hand, add lots of chopped onions, grated ginger, coriander leaves, curry leaves, green chillies chopped finely, hing, besan flour little. mix all the above ingredients to a batter and just fried in the oil like pakoda. it was very tasty. instead of making vada, for a bigger crowd, this is easy to prepare.

Basil leaves chutney, she took 2 tblsp of coconut grated, 1 tsp grated ginger, pottukadalai 4 tblsp, basil leaves - handful grind in the mixier nicely, this chutney is watery. very tasty with pakoda, idli and dosas. she also told me that we can try with coriander , pudhina.

Its a nice way of using up the bread corners.

I usually do not trim the bread edges while making sandwiches.
I know the sandwiches will look neat with the edges trimmed.

Some people will make bread pudding with the bread corners.
Your friends idea is a good one.

[tscii]Friends I have seen my friends, will open a can of baked beans, just warm them in a microwave and eat with bread and things.

Well here is a different way of using the baked beans with a Indian twist. try it friends.


TOFU WITH BAKED BEANS

Ingredients:

2 pcs of hard tofu cut into cubes
2 tsp soya sauce
½ tsp sugar
2 tbs corn flour.
Oil for frying
Marinate the tofu with the above ingredients for 30 minutes

1 onion chopped
2 pips garlic smashed
2 green chillies sliced
½ tsp of chillie powder
6 cherry tomatoes cut into halves
2 potatoes cut into cubes
1 can of baked beans

2 tbs tomato sauce
Little sugar (optional)
Little salt
2 tsp of oil
Water

Method:
Heat up oil in a wok, stir fry the tofu cubes lightly.
Remove and keep aside.

Heat 2 tsp of oil in a wok, add in the smashed garlic and onions.
Sauté them well till the onions are lightly brown.
Add in the potatoes, chillie powder and little water.
Cover and cook till the potatoes are cooked.
Open the lid and add in the tomatoes, green chillies, baked beans,
tomato sauce, sugar and salt.
Cook for another 5 minutes.
Add in the fried tofu cubes, mix well and remove.
Can be served as a side dish or with bread.

This is a very common dish cooked in Malaysian homes normally for tea. A good dish for a rainy day.


Green Peas Porridge

1.5 cups green peas
2 tbs of glutinous rice
1 cup thick coconut milk/fresh milk
pandan leaves torn and tied (or essence)
1 cup brown sugar (or palm sugar)
500 ml water
a pinch of salt

Wash and soak green peas for 2 hours. In a pot, add green peas, water, salt, pandan leaves and a pinch of salt. Bring to boil, when green peas are 3/4 cooked, wash and drain the rice and add to the pot. (water should be added if needed as you know water will get reduced). When you see the that the rice is cooked , add sugar. Once sugar is melted, add coconut milk. Taste and add more sugar if you want it to be sweet. Serve on its own. No need accompainment for this.

If you want thick consistency, add less water and more coconut milk. AGain, all ingredients to your discretion. But the porridge must have a consistency of tomato soup.

If you are using palm sugar, cook the palm sugar, remove the dirt/stones, before adding to green peas.

You can subsitute green peas for red beans or red glutinous rice.

[tscii]Suja, my aunty asked me if I am not interested in Malligai poo idli.
This is the recipe that she gave me.


MALLIGAI POO IDLI

Ingredients:

1 cup raw rice
2 cups par boiled rice
1 cup urad dal if grinding in a MIXIE
( ¾ cup of urad if grinding in a GRINDER )

Method;
Wash and soak the rices .
Wash and put the urad dal in the fridge to soak.
After soaking for about 5 hours.

Grind the urad dal till it looks like soft butter.
Grind the two rice to a coarse batter.
You know little kora, kora or like sooji.
Add enough salt mix well with your hands
and let it ferment for about 6 hours.
The flour should really rise up in the container.

Get the idli maker ready.
Do not mix the flour.
Just scoop the flour from the top and pour in the idli moulds.
You will have malligai poo idli.
If you mix the flour and do you will get ordinary soft idlis.

The Flour Should Ponggu Like This:

Aarthii, gulab jamun recipe is very easy... u can try either Kugan's or Mrs.Mano... just follow the measurements & method exactly like what is said in the recipe & u will get fantastic jamuns... I made small batch of both the recipes & liked both...:)

Sure dev,kanidpa try panni pakaren.Innum ten daysla mostly amma,appa inge varatha plan iruku,so idhu ellam panni aastaheeda vendiyathu thaan

Measurement spoon means,proper tbs use pannina pothuma,or else specifica vangava.Clear me in this point dev.

Please see the mail that I have written for you.

Aarthii it does not matter how many hours you keep.
The batter needs warmth to ferment.
So they will say on the oven light and keep it in the oven.
Wrap the container with thick cloth to keep warm.
Or off your stove and keep on top for the heat.
Or add about 2 tbs of the old dosa batter and mix well

I have no experince in all this.
In Malaysia, due to the heat you grind in the morning,
You can make idli in the evening.

Try the above methods and see

VEGETARIAN BURGER

Ingredients:

For the burger:
¼ cup mashed potato
1 onion chopped
½ tsp ginger paste
½ tsp garlic paste
¼ tsp cumin seeds
1 tsp dried parsely
¼ cup fresh mushroom and stems chopped fine
¼ cup soya meal maker flakes (soaked and squeezed)
¼ cup flour
Pepper powder
Salt to taste
oil

Method:
Heat a wok with 2 tsp of oil, add in the onion, ginger garlic
paste and sauté well.
Add in the cumin seeds, mushroom and the squeezed
soya flakes. Cook for about 5 minutes till the mushrooms
are cooked. Set aside to cool.

Now in the cooled mixture, add in the mashed potato, flour,
salt , pepper and parsely. Mix well until combined.
Shape the mixture into patties. Heat about 2 tbs of oil,
And cook each patty until the burgers are done.
It should be browned on both the sides.

Ingredients
To Assemble The Burger:

4 burger buns, split into two apply butter and toast
4 slices of tomatoes
4 slices of cucumber
4 slices of onion
4 pieces of lettuce leaves
4 slices of cheese (optional)
Little mayonnaise
Little tomato sauce
Little pepper

To Assemble:
Take on half of the toasted burger bun.
Apply little mayonnaise on it.
Put a lettuce leaf on the bun.
Spread little tomato sauce on the leaf.
Now put the vege burger on the leaf.
Sprinkle little pepper powder.
Put the onion, tomato and cucumber slice on the burger.
Squeeze a little tomato sauce on them.
Lastly put the slice of cheese.
Cover with the other half of the bun and serve

Note: You can assemble as you wish.

to ferment idli maavu,u can keep it inside thermocol box(igloo box). if u feel the inside of the box is not warmm enough, just keep something hot(a bowl of hot water or ur normmal meals) inside the box for sometimme & then take them out. keep the idli batter vessel & close. u can also use it as hot pack for other food stuffs that u cook everyday.

To set curd in cold places, place the container inside a hotpack. superaa set aagum.

Aarthii, I would suggest u to buy a measuring spoon set. I tried it with our everyday spoon it din't comme out perfectly... mmeasuring spoon use pannina attakasama vandhichu... I only had to change the water meaurement to get a soft dough. maththadhu ellamm appadiye follow panninen.

OATS COOKIES

Ingredients
125g plain flour, sifted
150g castor sugar
1 cup rolled oats ( run it in a mixie a little)
90g desiccated coconut ( run it in a mixie little )
125g butter
1/4 cup golden syrup
1/2 tsp bicarbonate of soda
1 tbsp water
Method
Preheat oven to 180°C. Lightly grease baking trays with butter.

Put flour and sugar into a mixing bowl. Add in oats and desiccated coconut. Stir the mixture so that it’s well-mixed.

Combine butter and golden syrup in a saucepan and stir over a gentle heat until butter has melted and the mixture turns smooth. Remove from the heat. Dissolve bicarbonate of soda into water, then add to the butter mixture. (mixture will foam up instantly.)

Add this mixture to the flour mixture and stir well to combine all the ingredients. Take out about a tablespoon of the resulting mixture. Roll lightly into a ball and place on the prepared trays.

Flatten with a fork to create a pattern. Bake in preheated oven for 18–20 minutes or until golden brown.

Leave cookies in the tray for two to three minutes before transferring them on to a wire rack to cool.

K & Aarthii, my problem is not being disciplined in my diet... anyway...I have to be strict with myself this time... just few months of effort & I can be healthy & happy for years to come. let me see.:)

dishes can be made tasty by adding spices of ur liking. Afterall it's the spices which add majority of flavour & taste to the dish. not oil.so make sure to use less oil for cooking. steam veggies & add to the gravy at last rather than frying/cooking it in oil.

Hmmmm... the diet I'm planning for is roughly as follows:

Early morning: a cup of warm water with honey & lemon juice. This is optional & I skip it most of the time.

Breakfast: 2-3 slices of wholewheat bread with some sandwich filling cooked using less oil. Avoid potatoes, cheese(can use low fat cheese in moderation if u want to).
AND
A cup of fruit juice with very less sugar or a whole fruit or a cup of tea with low fat or skimmed milk. I prefer tea.
OR
wheat/corn flakes with lowfat milk.

Those who like oats can have it for BF. But I just hate oats.

Mid-morning: a fruit(preferably watery fruits). try to avoid mangoes,banana & such high calorie ones.
OR
steamed vegs with lowfat dip(like yogurt dip with spices of ur liking)
OR
an egg white chaat
OR
Soup

Lunch: 1 roti, a small serving of rice. a bowl of dhal, rasam & lotsa veggies/greens, curd/buttermilk made from lowfat milk. all dishes cooked with minimal oil. Salad of choice with lowfat dressing(optional).
If u don't mind U can take 2-3 rotis(depending on the size of the roti) & avoid rice altogether.

Snack: tea with a slice of bread(wholegrain) OR 2 marie bscuits OR hommemade savory biscuits or small serving of sundal without coconut OR soya+veg cutlet(pan fried)-small size OR soya manchurian(withou frying soya-add less oil for cooking) OR steamed sweet corn with chaa masala/italian seasoning/just salt n pepper - no butter pls. OR a piece of grilled/tandoori chicken without basting with butter/oil OR Soup

Dinner(take before 8 pm): 2 rotis with a small bowl of dhal, vegs subzi & salad.
OR
wheat rava upma(brown variety) with lotsa vegs . curd.
OR
wheat noodles with lotsa veggies in it
OR
wheat pasta,elbows,macaroni etc with homemade tomato based sauce, steamed veggies. avoid cheese or just add a tsp of grated cheese.
or
Arisiyumm paruppu sadham/kitchidi/bisibele bhat/sambar sadham/veg biriyani & such. Use broken wheat instead of rice. dhal in moderation & lotsa vegs.

OR
Wheat Dosai with lots of veggie chutney

Thumbrule:
use less oil for cooking. max 2 tbsp per person per day.
avoid starchy vegs & fruits
Avoid coconut
Go for a walk(30 mins to 1 hr) or do yoga everyday.
Take rice/wheat/dhal in moderation.
Use lotsa vegs.
Strictly no sweets,deep fried items.
no eating out & partying. or eat sensibly even when u party.

Dinnerku kudithirukira list can be used for BF also.

serving size depends on one's height , weight & activity level. the serving size I've given here is for my body type & activity level. So this diest won't suit everyone.

As for recipes - U can use the same recipe which u use now. Just cut back on oil,coconut, nuts & dried fruits as these are all high in calorie. Use lowfat milk/curd if u want to prepare slight gravy type dishes. Tomato based gravey,green gravey(like palak base,cori-mint base) is also ok.

[tscii]Aarthii neenga kaara kulambu recipe poda soneega.
Devum Selviemum oru peria sticka vatchitu, ennai
moraikiraanga. Amma Kugan neenga oru simple kulambukku,
ethanai peru vaippingga nu meraturaangga.
puli kulamba, vengaya kulamba, venthya kulamba,
ippa athu kaara kulamba nu kekkuraanga.

Anyway Aarthii here is your kaara kulambu.


KAARA KULAMBU

100 grms small onions slice into halves
10 pips of garlic slice into halves
3 tomatoes chopped
1 lime sized tamarind soaked in 2 cups of water
2 tsp chillie powder
¼ tsp tumeric powder
Salt to taste

To Dry Roast And Grind:
1 tsp black pepper corns
1 tsp cumin seeds
1 tsp channa dal
1 tsp urad dal
½ tsp fenugreek seeds
2 tsp coriander seeds

To season:
¼ tsp mustard seeds
¼ tsp fenugreek seeds
¼ tsp cumin seeds
1 sprig curry leaves
2 tbs of oil
Little coriander leaves to garnish

Method:

Strain the tamarind juice, add in the chillie, salt and tumeric
powder in the juice and mix well. Keep aside

Heat a wok with the oil, add in the seasonings.
Let them splutter, now add in the garlic and small onions.
Sauté well till they are a bit brown.
Add in the chopped tomatoes and fry till they are cooked.

Add in the tamarind mixture and bring to a boil.
Let it simmer till the gravy becomes a bit thick.
Add in the ground ingredients, mix well.
Let it boil for another 3 minutes..remove from the heat and garnish with the coriander leaves.

You can have the kulambu a bit watery if you like.

This recipe was given by my friend.


ONE POT MEAL

Ingredients:

50 grms dried noodles, boiled and keep aside
¼ cup of carrots cut into cubes
5 button mushrooms sliced
¼ cup cauliflower cut into florets
¼ cup capsicum cut into squares

1 tbs of scallions sliced only the white part
1 tsp of lemon grass finely minced
2 tsp of oil
2 tsp of Thai red curry paste
3 cups of vegetable broth
1 tsp soy sauce
Salt if needed

To Garnish:
Little coriander leaves chopped
Little scallions the green part sliced
Little lime juice

Method:
Heat the oil in a pot, add in the white part of the scallion.
Sauté well, add in the minced lemon grass.
Add in the red curry paste and stir well.
Add in the carrots, mushrooms and cauliflower.
Add about 3 cups of vegetable broth.

Let the soup simmer for about 10 minutes.
Add in the soy sauce, salt if needed and the boiled noodles.
Let it cook for about 5 minutes.
Remove and garnish with the green scallions, coriander leaves
and lime juice. Serve piping hot.

Apart frm that am eating everything which has high calories only.(Peanut Butter for breads,snacks during evening)

Another imporatant point is that we used to take late night dinners at home.My husband used to come late frm office .so dinner time also gets late.
walking poga sariya time amaiya mattenguthu.Since No one is there to help me for taking care of pranay.I can't take him along with me for walking .But i can think of doing yoga as u suggested.

But frm Feb am also going to join in ur diet club and going to follow it.Lets see.

Aarthii, add little tumeric powder, ginger, garlic , little curd and little salt and boil your mutton first till cooked.
Then grind kas kas , small onions, aniseeds, to a fine paste.
heat a wok with oil and season with all the whole spices, sliced onions, little ginger and garlic , 2 red tomatoes finely chopped and the , curry leaves.
add in the ground paste, add in chillie powder and coriander powder.
The coriander powder should be less than the chillie powder.

mix well in the oil, add in the cooked mutton with the juice.
Cook on slow fire till all the masalas are well coated with the mutton. The gravy should look like the kaara kulambu gravy.
Taste for salt, squeeze some lime juice into the gravy and serve with steaming rice or iddli. Thanks. Kugan98

The ground small onions give the body and taste to the gravy.

K, if u eat the kara kuzhambu with oats then it's fine... but if u have it with lotsa rice, it's a no no...i think it'll taste good with chapathi too. appadi saapitaalum ok thaan...:)

Aarthii, early dinner is a must... most houses it's the same...husb comes late,so dinner is late... idhula venumna ennai inspiration aakikonga... i take early dinner unmindful of who joins me for dinner or not... not only when on diet... maththa naalilumm appadi thaan...:)

peanut butter is ok if it's homemade(using less oil-i've posted some tip on it earlier) & had once or twice a week...but qty should be moderated... 1 tbsp saapidalaam... but weight reduction plan pannum podhu adhayumm avoid pannidalaam... after weight reduction, when we r on maintenance mode we can add nuts, dry fruits in small quantities for ther nutritional benefit...no harm..

As for exercise, u cal also try pilates at home... quite effective they say... but yoga & walking/swimming are safe for ppl of all ages... so I prefer those... also when we r overweight, we need to be careful not to injure our joints when exercising...

Actually 2010 janla dietingnu solli,ippa vara aarmbikala(expect that taking rotis for lunch),but today unga plan partha appo,really i feel a good motivation.I really got impressed towards ur plan.Hopefully i have to follow it.I will.

I think ,the first thing which i have to do in our diet plan is i have to change my dinner time.
It is quite difficult also.But am going to change it soon.

Pilates ,i have heard of it,I have to browse some more regarding it.But frankly speaking dev,ellam pudusa oru nalla illa rendu nalla upto the maximum one week pannuven athoda sari appurram apidye vittudaren adhu thaan ennoda drawback. :cry:

dev,

nice to see the diet plan. i am following diet as for i can. more or less i am following as per ur diet plan. as u said, less oil , less salt in cooking. no deep fry. no sweets. i will control myself. once in a week one meal i will relax. That means bryani stuffs.
i dont take red meat. fish and chicken i do grilling.

apart from dieting , exercise is must. then u can see good effect.

intially when i was dieting after the delivery of 2 kids, i reduced 13 kgs in 3 months.

I followed diet and 2 hours of exercise( aerobics 1 hour), cycling - 15 min, walking - 15 min, stepper - 15 min


diet means - no junk food, no sweet.

dinner is by 7.30 pm

always before ur lunch and before ur dinner it is advisable to have salad. after that have a glass of water. after 10 min we have to eat our food.

also 2 green teas per day. drink 8 glasses of water.
