Suvai nga, vadagams are used for seasoning in the gravy, poriyal,
kutoo and chutneys. vadagams give a special aroma and flavour for the dishes.
The dal are raw and ground into coarse powder.
Suvai nga when we want to cook a gravy, normally we will pour oil in the pot, then break up the vadagam into pieces, and use little or more according to the amount of gravy or poriyal you want to do.
these vadagams are only seasonings.

Suvai I will get the recipe from my aunt and post it for everyone.
you can mix the chutney into rice like puli saatham.
You can take the rice in a tiffin box for lunch to office.
Thanks. Kugan98

[tscii:2d382f5174]Vanilla-lemon cake:

2 eggs
1 1/4 cup plain flour (maida)
1 level teaspoon baking powder
1/2 teaspoon soda bi-carb
1/2 cup butter
1 teaspoon vanilla essence
Method
1. Sieve the flour, baking powder and soda bi-carb together.
2. Mix eggs, melted butter, essence.beat well. Add 3 tbsp lemon juice & lemon zest grated from 1 lemon. mix. Add the flour & fold in.
3. Pour the mixture into a greased and dusted 150 mm. (6") diameter tin.
4. Bake in a hot oven at 180C for 30 mins
5. The cake is ready when it leaves the sides of the tin and is springy to touch. When ready, take out from the oven and leave for 1 minute and unmould.

This is Tarla Dalal recipe which I tweaked a bit adding lemon juice etc. Actuall I intended to make it into a lemon cake but since the flavour of lemon was too mild, I named it as vanilla cake... hehehe...[/tscii:2d382f5174]

Dev, thanks for your potato sandwich.
I need recipes like this to make for my children to take to school.

I think I will make the paste, butter a bread slice, add the potato fillings, cover with another slice of bread.
Then give one press in a sandwich maker. It will be easy for them to handle.
Thanks Dev for the nice recipe.

I will also try the lemon vanilla cake.
Thanks too for the recipe.

[tscii]School starts today for the new year after a long break.
Its a practice in our home to have a special pooja before
the children go to school for the new term.
I decided to make motchai sundal for a change with ponggal.
Here is the recipe.

MOTCHAI SUNDAL

Ingredients:
1 ½ cups of motchai
A pinch of tumeric powder
Enough salt
3 tbs grated coconut
2 small shallots sliced fine
½ tsp mustard seeds
½ tsp urad dal
2 dry red chillies cut into pieces
1 sprig curry leaves
A pinch of asafetida
1 tsp oil

Method:
Soak the motchai over night to prepare the sundal the next day.
Wash the soaked motchai, and cook in water
with the tumeric powder and little salt.
Do not over cook the motchai. Decant the water.

Heat up the oil and add the mustard seeds, urad dal, asafetida,
dry red chillie, sliced shallots and curry leaves. Sauté well.
Now add the coconut, very little salt and mix well.
Add in the cooked motchai and stir until well mixed.
Remove and serve.

[tscii]Nowadays seldom people make this curry vadagam.
Its easier to buy than to make. I make my own so that I use all clean ingredients and make it clean. I do it 6 months once.
My aunt makes a very tasty chutney using the ridgegourd skin and the vadagam. I will get the recipe soon.

CURRY VADAGAM

Ingredients:
250 grms small red onions
200 grms garlic pips
125 grms toor dal
20 grms urad dal
20 grms cumin seeds
20 grms mustard seeds
20 grms curry leaves
15 grms tumeric powder
¼ cup of oil
2 tbs of salt

Method:
Skin the onions and garlic, wipe them dry.
Chop both the onions and garlic into fine pieces
Chop also the curry leaves also into fine pieces
Grind the toor dal and urad dal into coarse powder.
Add all the other ingredients except the oil.
Crush them lightly so that they can be moulded into balls.
Dry them in the hot sun.

In the evening break all of them, add half of the oil and mix well.
Make them into balls again. Next morning dry them in the sun again.
Again in the evening do the same process using the other half portion of the oil.
Now dry the balls in the hot sun for about 15 days, till it becomes hard.
Store them in a air tight container.

NOTE: Normally castor oil is used. Since this oil is banned in Malaysia,
I use gingelly oil.

Glad that you are active in asking questions.

I doubt you can buy it in Brickfields, as Malaysians mostly
do not use this vadagam. I use as I am from India

Motchai is not channa dal.
Channa dal is chick peas, we call the big ones sudesi kachang,
and the smaller ones as kondakadalai.

Motchai in englis is called vaal beans or field beans.
I will post a picture of it for you.

K, the sandwich filling won't fall off from the bread coz it'll be a tight filling due the use of flour. U can cut it into 4 small triangles so tht kids can handle it easily.... Or yes, u can make it into a sandwich using 2 bread slices... :) U can also add chopped cucumber to the filling...it'll give a nice crunch to the sandwich here & there...

I have posted a carrot sandwich loooong back...it's my fav sandwich... I'll locate the recipe for u if u want...

Another easy, tasty sandwich is capscicum-onion-cheese sandwich... Just saute the veggies for a min... let cool... Add grated cheese & make a sandwich using 2 bread slices & toast in a sandwich maker.... If u want it spicy, can add green chillies too...yum yum...

Here is the recipe.

SOOJI TOAST

Ingredients:

½ cup sooji pan fried
½ cup curds
2 tbs onion chopped fine
½ tomato remove the seeds, chop fine
1 green chillie chop fine
1 tbs coriander leaves chop fine
Salt to taste
Little water if needed
Little oil

Slices of bread cut into triangles.

Method:
Mix all the ingredients, sooji, curds, onion, tomato,
Green chillie coriander leaves and salt.
Add very little water and make into a thick batter.

Heat a dosai kal, dip each piece of bread in the batter.
Coat both the sides, see that the veges are sticking on the sides.
Or you can place a teaspoon of the mixture on top after dipping and placing the bread on the dosai kal.

Add ½ tsp of oil, place the bread slices gently.
You can add few drops of oil along the edges.
Cook on medium heat till the bread is a bit brown under.
Flip the bread and toast the other side for few minutes.
Serve with tomato ketchup.

Aarthii, glad to know u r all recovering well... Kutti will be ok soon...:) We all missed u...

As U & K have said, it's very difficult to give medicines to the kids... I've put my lil one on homeopathy especially to evade from this problem...also no side-effects...:)

Sandwiches... I have very limited sandwich recipes... I just put in whatever dhal/veggies I cook into the sandwich...;) the potato sandwich is a recipe I took from my cousin's cookery book...she has cookery class in her skol & all their recipes r easy & yummy... I'll chk my books & let u know If I have any tried & tested sandwich recipes...

Peas Sandwich:

My hubby makes this sandwich using frozen peas...yum!!!...

Just cook the frozen green peas in the mw for 3-4 mins, adding lil water...Heat oil...add chopped onions...cook for 2 mins... add turmeric, chilly pwd, pepper pwd, garam masala...mix well... add chopped tomatoes & fry till pulpy... Add the peas, salt & cook till it becomes a lil dry... mash the peas a bit if u wish to. Use it as a filling for sandwich...

This filling is good for sandwiches tht we eat immediately...but for lunch box, I think the bread will become soggy...

[tscii]Well my new found friend has a treasure of recipes.
I will try my best to extract all from her.
She is a busy lawyer, so she has no time for our forum.
At least she has agreed to give her recipes.

Here is her avasara onion kulambu.

AVASARA ONION KULAMBU

Ingredients:
2 big onions sliced lengthwise a bit thick.
1 lime sizes tamarind soaked in 1 cup of water
3 tsp red chillie powder
¼ tsp tumeric powder
2 pips of garlic chopped fine
1 tsp ginger chopped fine
½ tsp mustard seeds
2 tbs oil
1 tsp sugar
Salt to taste.

Method:
Squeeze out the tamarind juice and keep aside.
Heat oil in a wok, add in the mustard seeds.
Let them splutter, add in the garlic and ginger.
Sauté well, add in the sliced onions, add salt.
Fry till the onions are limp, add in the tamarind juice.

Add also the chillie powder, and tumeric powder
Let the mixture cook for about 10 minutes.
There will not be the raw smell of the tamarind.
The oil will float on top. Add in the sugar, mix well.
Serve hot with rotis , dosai or idli.

We cook keerai about 4 times in a week,

Keerai is a valuable source of nutrients

PONNANGANNI KEERAI PORIYAL

Ingredients:
1 bunch of ponnanganni keerai
2 red chillies broken
1 tsp urad dal
1 tsp channa dal
½ tsp mustard seeds

Remove the leaves from the stem.
Wash and drain and keep aside
Heat a wok with the oil,
Add in the mustard seeds, urad dal and channa dal.
Fry well, add in the broken red chillies, fry again.

Now add in the cleaned keerai and salt.
Stir well, cover with the lid and reduce the heat to low.
Stir now and then and cook till the keerai is cooked well.
Add in the coconut and mix well. Remove and serve.

[tscii]Something different from our usual dosai.

TOMATO DOSAI

Ingredients:
1 cup raw rice
1 cup boiled rice (pulungal arisi)
¼ cup urad dal

3 ripe red tomatoes
5 dry red chillies
½ tsp asafetida powder
¼ tsp oil
Salt to taste.

Method:
Wash and soak both the rice and urad dal for about 3 hours.
Clean and cut the tomatoes.
Cut the red chillies into small pieces.
Heat the oil in a pan, add the tomatoes and the red chillies.
Sauté well till the raw smell of the tomatoes goes.
Remove and cool.

Now drain the rice and the urad dal.
In a blender add the soaked rice, urad dal,
cooked tomatoes and the red chillies.
Grind to a smooth paste. The consistency should be like dosa batter
Add salt and the asafetida powder.
Let it ferment for about 6 hours.
Now make dosai the usual way.
Serve with tomato, onion or coconut chutney.

Note: My friend’s recipe was to add the chillies and tomatoes raw and grind with the rice.
I found that the raw smell of the tomatoes and chillies were over powering, when I made the dosai
This way you have a very good tomato dosai.

[tscii]Suvai nga, I am posting what NOV anneh had for breakfast.
It is done in two methods.
The Chinese will use only the glutinous rice flour and their
filling will be always sweet black bean paste.
this kuih will be a bit chewy.

The Malays will always make with steamed mashed sweet potato,
plain flour, and some use little glutinous flour.
Their filling will always be sweet coconut filling.

This kuih is called kuih bom.
You are right bomb, as this kuih has the tendency to explode while cooking. The temperature should not be too high and do not fry them too long. The end result will be sweet

Here is the recipe:
STUFFED SESAME BALLS OR KUIH BOM

Ingredients:

For the sweet coconut filling:
150 grms sugar
150 grms palm or brown sugar
125 ml water
½ coconut only the white flesh scrapped
2 screwpine leaves
1 tsp corn flour + 1 tbs water

Method:
Combine both the sugars, knotted screwpine leaves and water,
in a pan. On low heat leave it to simmer until the sugars dissolve.
Add the grated coconut and stir well. Stir at all times and do not
leave the mixture to dry out.
While the mixture is still wet, add the cornflour, water mixture.
The filling will slightly be thick, turn off the heat and let the
filling to cool down completely. Shape into small balls and keep

For The Dough:
80 grms sweet potato steamed and mashed well
120 grms glutinous rice flour
20 grms all purpose flour
35 grms castor sugar
100 ml water
A pinch of salt

Sesame seeds for coating
Oil for frying

Method:
Mix all the ingredients to form a soft dough.
Divide into 12 balls.
Flatten each ball, place a ball of the sweet mixture filling.
Wrap it into a ball, now roll the ball onto the sesame seeds.
See that the ball is well coated with the seeds.
Deep fry over medium heat until golden brown .
Its best to deep fry the kuih immediately.
Remove and enjoy.

I'll try ur vallarai recipe next time I buy the keerai...it's becoming hard to find valaarai here these days... :(

Potato toast looks perfect... yes, it'll stick on well to the bread as it'll be a tight mixture coz of the kadalai maavu used...:)

Dev, thanks for all the nice feed backs.

I do not know why I found the raw smell of tomato.
May be the tomatoes in India are different, sweet smelling.

Every one in my house enjoyed the tomato dosai.
Everyone is missing, may be busy preparing for Ponggal.

Suvai nga send me a kadamba kulambu recipe.
I am posting the recipe and the picture.
We do a kadamba kulambu, a bit different for Ponggal.
Using motchai and mixed veges.
No seasoning is done for the kulambu.

Suvai's Kadamba Kulambu:

here is another superrrr recipe from my kitchen.
it is called "Kadhamba Kuzhambu"
basically u can use all vegies like
murungai/poosani/chow chow/kathirikai/green peas/carrot/potato.
chop these into big pieces (1 1/2 inch alavu) ellam serthu two handful nu vachikongalen.

in the mean time in 1/2 tsp ghee fry....kadalai parupu 1 Tblspn, Dhania 1 Tblspn, 5 red chillies....fry these in low fire & allow it to cool

u will need about one handful of varutha coconut brownish color ( just as we use for coconut rice)

now mix this with kadalai parupu/dhania/milagai & add water & grind it nicely & keep aside.

In a paathiram....add little oil....add little mustard seeds/little venthayam/ little jeera & once the mustard splutters.....add chopped onions & 3 slit green chillies ( kaaram use as per yr wish) & mashed up riped tomatoes (this should be like 1 handful).

add turmeric & keep stirring after 3 minutes add all the vegies & coat it well in the tomato mix. Now add about 2 teaspoon full of rasam powder..(u can use MTR). mix this well & now add water & allow it to boil & let the raw smell of rasam powder goes...add salt.
& boil for about 10 mins. Now add the ground coconut paste & mix it & allow it boil & nalla kuzhamba sernthu varum....apo add chopped kothamalli to it & bring it down.

kathamba kuzhambu ready...Wink enjoy!! i am sure u will like the taste....its usually made for Thiruvadirai !!!

kugan98
9th January 2010, 08:16 PM
Dev, I think all dry yeasts are the same.
They will look like tiny granules.
To test wheather your yeast is active or not.
In a container, put some yeast, little sugar and warm water.
The water should not be hot, it will kill the yeast.
If the yeast mixture froths, then your yeast is fresh.
Happy baking. Kugan98

Dev, normally high protein flour is used for making yeast based products. All purpose flour for cakes pastries and cookies.

A high percentage of protein means a harder (stronger) flour best suited to chewy, crusty breads and other yeast-risen products. Less protein means a softer flour, best for tender and chemically leavened baked goods, like pie crusts, cakes, cookies, and biscuits.

You can try with all purpose flour, still you will get good coconut buns.
Thanks. Kugan98

Its coustomary in our house to cook the paal ponggal, sakkarai ponggal and the ponggal kulambu.
All our relatives cook the ponggal kulambu the same way.
We normally do it in our front yard.
This year its a quiet one and cooked in the kitchen.

Here is the sakkarai ponggal.

SAKKARAI PONGGAL

Ingredients:

1 cup raw rice
¼ cup moong dal roasted until you get a good aroma
¼ cup of ghee
3 cups of water
2 cups of milk
1 cup jaggery more if you like
6 cashew nuts roasted in ghee
1 tbs of raisins roasted in ghee
2 cardamom pods crushed

Method;
Wash the rice and the moong dal, soak them for about 30 minutes.
Put the rice and the dal in a thick bottomed pot.
Add the milk and the water. On a low fire cook the rice and dal.
You have to keep on stirring in between so that it does burn.
(Or you can cook it in a pressure cooker for 4 whistles)
The rice and dal have to be cooked well, then mash it .

Put the jaggery in a pan add water to cover it.
Boil in a low flame till it melts, then filter the syrup.
Now boil again for about 5 minutes.

Now add the hot syrup to the hot cooked rice.
Add in the crushed cardamom pods, let them boil .
Keep stirring it, allow them to boil, now add in the ghee little by little.
The mixture must come together, add in the roasted nuts and raisins.
Mix well, and remove. The ponggal will thicken when it gets cold.

Note: The rice will stop cooking once you add the jaggery.
So your rice dal mixture must be well cooked before adding the jaggery. Also do not skimp on ghee and jaggery

PAAL PONGGAL

Ingredients:

1 cup raw rice
2 ½ cups of milk
2 ½ cups of water
Little salt

Method:
Wash and soak the rice for about 30 minutes.
In a thick bottomed pot, add in the milk and water.
Let it simmer for a minute.
Add in the drained rice, salt and cook on low heat.
You have to keep on stirring so that the rice does not burn.
The rice should have cooked to a ponggal consistency.
Remove and serve with the ponggal kulambu.

PONGGAL KULAMBU

Ingredients:
½ cup of toor dal soaked and boiled till cooked
1 orange size tamarind soaked in water

To roast and grind into powder:
2 tsp channa dal
2 tsp raw rice
2 tbs coconut scrapings
1 tsp cumin seeds
1 tsp black pepper

½ tsp tumeric powder
3 tbs chillie powder
Salt to taste
1 sprig of curry leaves

Veges:
2 plantains cut into cubes
2 cups of yellow pumpkin cut into cubes
1 cup broad beans cut into 1 inch pieces
1 cup of brinjals cut into cubes
1 cup of yam cut into cubes
1 cup of tomatoes cut
2 cups of motchai soaked and boiled till cooked
( Its customary to use fresh green motchai)

Method:
Squeeze about 2 cups of tamarind juice.
In a heavy bottomed big pot, add in all the vegetables, and cooked motchai.
Add enough water to cover the vegetables.
Add in the tumeric powder and salt, let the vegetables cook.
Cook on medium heat, when the veges are half cooked, add in the
tamarind juice and the chillie powder. Let it boil.

Now add in the cooked toor dal, mix well and boil again.
By now the vegetables would have fully cooked.
The pumkin and yam all should look a little smashed.
Add in water if you feel the gravy is very thick.
Normally the gravy should be neither watery nor very thick.
Add in the ground powder, mix nicely and let it boil once.
Remove and garnish with the curry leaves.
This kulambu has kaaram, pulippu and ennippu.
No oil and no seasonings. Tastes heaven with the paal ponggal.

[tscii] I made this spiral curry puff for tea.
Its very simple to make.

SPIRAL CURRY PUFF

Ingredients:

Fillings:
200 grms potatoes cut into cubes
100 grms sweet potatos cut into cubes
150 grms big onion sliced
½ tsp garlic and ginger paste
1 tbs meat curry powder
1 tbs chillie paste
1 green chillie sliced
Little coriander leaves chopped
2 tbs oil
Little lime juice
Salt to taste

Method:
Heat the oil, add in the sliced onions, and ginger garlic paste.
Sauté well, add in the chillie paste mix well.
Now add in the cut potatoes , sweet potatoes and the curry powder.
Sprinkle little water and mix well, cover and cook on low flame.

Stir now and then, add in the green chillie and salt.
Fry every thing till fragrant. Add in the coriander leaves,
fry till dry, remove and add the lime juice. Leave aside to cool.

Water Dough:
400 grms all purpose flour
225 ml water
¼ tsp salt
2 tbs margarine

Place flour in a mixing bowl, add the salt to the water.
Now rub the margarine into the flour.
Slowly add in the water little by little and knead to a smooth dough.
Keep aside for about 10 minutes. Divide the dough into 24 equal portions, shaping into a ball. Keep aside.

Oil Dough:
200 grms plain flour
100 grms margarine

Rub the margarine into the flour to form an oily dough.
Knead and leave aside for 10 minutes.
Divide the dough into 24 portions shaping into a ball.

Making the pastry:
Flatten one water dough, and wrap one oil dough into the water dough.
Do this to all the doughs. You will get 24 balls.

Now take one dough and flatten it length wise with a rolling pin.
Now roll it up like a swiss roll.
Repeat the process one more time.
Roll it again into a swiss roll, then cut the roll into 2 equal parts.
You can see the circles in the cut halves.

With the cut side on the table, roll the dough into a circle and fill
with a spoonful of the fillings.
Wet the outer rimr of the circle and fold into half.
Flute the edges. Deep fry the spiral puffs in medium hot oil.
Drain and serve.

Dear Aarthii ma, thanks for all your kind compliments,
and also for your nice feed backs.

Aarthii I would say you are very lucky to have made nice
badushas for the first time , even though they were a bit hard.
These sweets all need a bit of practise several times.
By trial an error only you can make perfect sweets.
May be your curds were very thick?
You should not also knead it a lot.
The syrup too should not be very thick, or it won't absorb.
Aarthii after mixing the dough you have to rest the dough for about 1/2 an hour.
Anyway I must congratulate you on your success.

Aarthii I had to make mysore pak so many times to get the perfect patham, the same with athirasam.
Now I make perfect mysore pak gulab jamun and also athirasam.

So cheer up aarthii, success will come soon.
Take care. Kugan98

[tscii]This is how I make my own chillie sauce.
Economical, clean and tasty.

HOMEMADE CHILLIE SAUCE

Ingredients:

100 grms of dried red chillies
3 small shallots chopped
1 red tomato chopped
2 pips garlic chopped
1 small piece of ginger chopped

2 tbs oil
Sugar to taste
Salt to taste
Enough vinegar

Method:
Cut the red chillies and soak them for ½ an hour.
Wash nicely , removing seeds as much as you can.

Now in a blender add the red chillie, shallots, tomatoes,
garlic and ginger.
Using some water grind everything to a smooth paste.

In a deep pan add in the oil and the ground chillie paste.
Add ½ cup of water, on a low flame sauté the chillie paste
till the raw smell goes. You can add more water if you feel
the sauce is very thick.

Now add in enough sugar, salt and vinegar.
Stir nicely, let the sugar melt and mix nicely with the chillie.
Taste for salt, sugar and sourness of the vinegar.
Remove cool and bottle when cold.

This sauce goes well with fried meats, chapattis,
pakoras or any thing that needs chillie sauce.

Mushroom using KMP:

Clean & tear 1 pkt sippi kalaan(oyster mushroom) into strips... Add some water & cook till 3/4th done... Add salt,KMP & turmeric pwd & cook till done... make sure u have some water left even after all the cooking... eat it on its own...

This is best done with wild mushrooms tht we find in the farms after rain... next best alternative is oyster mushroom aka sippi kaalan...

Suvai nga do not be scared, the chillie sauce is not hot.
You will be removing the seeds while you wash the soaked chillie.
You are also adding tomatoes so it will not be hot.

Commercially made chillie sauces use stabiliser and edible gum.
I have no idea for what to use instead of vinegar.
I do not know if lemon juice will be o.k
I have not tried Suvai nga.

Peanut Butter:

I make peanut butter at home just coz I can control the amt of oil that goes into it...

Just grind & scrape sides & scrape sides & grind & grind enough roasted groundnuts, karumbu sakkarai & salt(all ingre to taste) until the groundnut starts to leave oil... U can add lil oil to help in grinding... what I do is I make a smooth but tight paste(can't spread on the bread easily) ... I store the PB in the fridge & when needed, I take out just the req qty of PB & add lil warm water to it & mix it with a spoon... tht way I get PB of spreading consistency... aprom enna...spread the PB & jam/banana slices onto bread slices & eat...Yum...

Another added benefit is groundnut + brown sugar is said to help increase good cholesterol... storebought ones use white sugar & lotsa preservatives... max time taken to prepare the PB is 5 mins or so...

Thanks Mrs Kugan :).
Naan 1 post-ku appuram kaanaa pOyidelaamnu thaan nenechchen :)..

here's the recipe i used which i found in an old cutting i kept :
125 g butter
1 can condensed milk (397g)
225 g self-raising flour
1/2 tsp baking powder
125 ml coke, 7up or any gassy drinks
1 tsp vanilla essence

Preheat oven to 160 deg
Cream butter, condensed milk and essence until fluffy and creamy.
Sift dry ingredients into the mixture and beat until just mixed. Gradually add cola while stirring slowly. Beat until just combined.
Put the mixture in a cake pan (21 cm square / diam round) and bake in a pre-heated oven for 50-55 mins or until the surface is firm.

Ippadithaan senjengga, nalla irunthathu sooda irukkumbOthu. Next day or the day after, top surface konjam moist-a irunthathu. Otherwise, the cake was very spongy and yummy!

Try pannunggo!

NM. I have never baked a cake with fizzy drink.
Your recipe is something new to me.

You see now I have a new recipe to try.
I think that cake has too much sugar contents.
Condensed milk + fizzy drink.
When the cake has cooled it comes something like
sticky on the top.

NM I will post a simple cake for you soon.
Please try it out and see.

And please do not disappear after this.
Come often, share with us what ever you know.
Thanks. Kugan98.

You are right Dev, Ammavasai today.
Had to get up early morning to cook the lunch.
Few types of vege poriyal, pachadis, sambar, rasam,
payasam and vadai. Very tired.

Semma lunchu thaan unggal veetil

Dev, as for the kulambu, our Malaysian tamarind will have lots
of seeds and the juice will not be that sour.
Moreover this kulambu has, pulippu, urappu and little innippu from the pumpkins.

Dev, as I have said before the recipes are only guidelines.
Pulippu, kaaram and things you can adjust according to your family's needs.
Only in baking you must strictly follow the recipe.
Thanks, Dev Kugan98

EGGLESS PLAIN BUTTER CAKE

Ingredients:
2 cups self raising flour
2 tsp baking powder
A pinch of salt
1 cup fine sugar
½ cup melted butter
3/4 cup evaporated milk (little more if needed)
1 tsp vanilla essence
1 tsp butter emulsion if available
1 tsp vinegar

Method:

Preheat the oven to 180 degress C
Grease a cake tin with parchment paper

Sieve the flour with the baking powder twice.
Mix the sugar with the flour and salt.

Add in the milk, butter emulsion, melted butter mix well.
Add in the vanilla essence and mix well.
Lastly add in the vinegar and mix well.

The mixture should be of pouring consistency.
Add more milk if needed.
Bake the cake for about 40 minutes or till cooked.
Pierce a tooth pick at centre of the cake.
If it comes out clean, the cake is cooked.

Remove and cool. You can slice the cake when it is

& as u've said, I always tweak the recipes to suit our taste...but since the qty of tamarind in pongal kulambu was huge, I was bit skeptical to try it with my measures...I can add a max of a gooseberry size tamarind only for tht qty... so thought it would change the taste of the kuzhambu totally... adhaan seiyalai...

Hello friends,
Hope all of you had a fabuous pongal time.
Suvai avargale...... nyabagama en fun times pathi ketrukeenga...... thanks

It was a real fun time in our campus. There was a small village set up with 3 small houses with thinnai and odu. there was a kangeyan kaalai brought and tied up. Pakkave it was so gambeeram and so different from normal kaalai maadu.
There were some goats and Hens (all fully grown) and cute chicks. A 5 mins Naattu kozhi sandai was demonstrated.
We had uri-adi game. The uri was tied up and the person was blind folded and asked to hit. Except 2 guys, all were going in some direction and aiming at the watching crowd. This was real fun.
There was a rangoli competition just 8 entries, but the presentation was awesome.
Food items were very few with Kambukoozh, neer mor and panagam and sakkarai and ven pongal. Later dinner was served from a hotel, a combo of godumai ravai upma, sambar sadam and parotta (enna combinationnu kekka koodadhu !) Oru paani poori stall was an added flavour.
Some music and dance and a short skit on katta panjayathu with one nattaamai. Thiruvilaiyaadal cinema on 35mm projector and a lucky dip draw. Dharumi episode mudinjadhum most of the people left and the place was nearly empty. So we stopped the movie and went home.

5 pm to 10 pm was a real time. Apram angeye konjama pongal seidhu, pasu maadukku poojai pottanga around 9.00 p.m.
Ippadiyaaga pongal celebrate pannom..

[tscii]This is how I make my own peanut butter.

HOMEMADE PEANUT BUTTER

Ingredients:
4 cups shelled roasted peanuts
½ tsp salt
¼ cup brown sugar
1/3 cup canola oil

Method:
In a dry grinder powder the peanuts first.
Then in a food processor, mix the ground peanuts,
salt sugar and oil.
Process the mixture until very smooth.
You will have to stop and scrap the mixture few times.
Remove and store in an airtight container.
You can store it in the fridge for about 2 months.
( That is if you still have them)

Note: It will harden a bit if kept in the fridge.
Remove it for about 20 minutes and you will have
A spreadable consistency.

Suvai, idho thayir kuzhambu recipe... this kuzhambu is usually made when u have lotsa curd leftover from teh previous day. If u don't like sour curd, u can use fresh curd. But I like slight sourness from the curd.

Thayir kuzhambu:

Grind 4 tbsp coconut,2 garlic, 1"gin,1tsp jeera & 1/4 tsp mustard seeds with req green chilly, lil salt to a paste adding very lil water if req.

cook 1/4 kg ashgourd( vellai pooshanikai), cut into fingers, with salt & water. Once cooked drain any excess water & let it cool.

Add the veg & the paste to 1 cup of slightly sour curd(beat slightly so tht the curry is not lumpy). Adjust salt.

Season with mustard, urad, dry r.chilly & curry leaves. You can also add chopped baby onions fried until pinkish but I don't. The onions give a nice crunch to the kuzhambu.

In India, the front portion of ground near our gate will be all sand.
So it will be nice to make kolam early morning.

In Malaysia, normally all will be tarred.
I still follow the practise of sprinkling water early in the morning
and making a kolam in front of my house.
One kolam I made today.

You are right Suvai nga, kolams are meant for ants and insects.
Nowadays the kola maavu is made of fine white powdered sand.
I used to carry back kilos of the powder.

During the last month, my sister gave a bag to my worker who was coming from India to give it to me.
She had put a kilo of the kola podi in the bag, which my worker did not know.
After scanning the bag, the officer pulled him aside and question him as to what he was carrying in the bag.
That boy simply tiru tiru muli and said that the bag belonged to his boss. They opened the bag threw out all the things, after examining the podi many times only they allowed him to board the plane. Poor boy he was very badly shaken.
So please do not carry kola podi in your luggage.

Thanks. Kugan98

Oh my god, big story for the kolam podi. poor guy, i feel pity for him. two years back i went to india in the month of january. my kids stayed with my parents, everyday my mom drew kolam (margali masam) and did colouring too. so my sons packed kolam powder, colour too. we were caught in the airport. i explained the custom people. they checked and they refused. my sons told, uncle that is drawing powder we dont get in our place. we want to carry it with us. then they allowed to carry. so i drew only on the function days. i keep the kolam for a week.
