Kugan, this is nothing compared to ur work...:)

& thanks for posting the mushrom recipe...it's one of my fav... I add more fresh curds than tht mentioned in the recipe & it tastes yum with phulkas...:)

Superb selvika.We enjoyed it.I did as like ur first method and we had it with vendaikka pulikulambu.It is good.First time i tired this poriyal,but the taste doesnt looks like i am trying it for the first time.thank u slevika.Thanks for ur accurate gudiance.

A friend asked me as to why her upma is always very
kola-kola. She wants it to be uthir uthir.
I told her that we can make the upma in two consistency.
The very soft upma is normally served with kara chutney, or any hot chutney. I think it is also called bath.
The uthir uthir one is normally served with a sprinkling of sugar, banana or even with some gravy.
The trick in getting a good upma is to roast the rava with little ghee
until you get a very good aroma.




Kuganka,Plz add me also in ur friends(Kola -kola Upma) list.Ennakum upma uthiriava varathu. :cry: Engaiyo etho thappu pannidven. :?

Even my husband used to tease me u r making all each and every new recipes perfectly,but eno intha upma mattum prichanai pannuthunu. :?:

Suvaika,by looking kuganka's Rajma pulav itslef i decided it to make it by weekend

But unga feedabck padikarache,ennaku innum enthuva udana prepare panna vendumnu thonuthu.

kuganka,how my friend told me abt this caramel recipe was,she told me that
1.cut the bananas into halves .
2.fry them slighlty on both the sides with lil butter
3.Then roll the slightly fried banana pieces in two to three teaspoons of brown sugan powder.
4.With rest of the sugar needs to make the caramel.
5.then rest the process same as like how u have stated kuganka.
6.Finally wants to dip or serve it along with vanilla extract or heavy whipped cream(Chilled).

She has omitted this pandan leaves .

kuganka,i dunno how it will come.

But she told me that it is good.So plz forgive me if its not going to come properly.

red rice flakes is good for health. even u can make in white rice flakes, but donot use the thin variety. use the thicker variety.

Please try the method for uthir uthir upma.
You can make upma even with arisi rava.

Thanks for the method for making the caramalized bananas.
Well you can use vanilla essence for pandan leaves.
As you will not get it there.
Can try your method also, it will be a bit different.

Friends once in a way, I like to relax with a cup of steaming
masala tea. What about you all?


MASALA TEA

Ingredients:

2 cups of water
1 cup whole milk
3 tsp tea leaves
1 small piece of dry ginger mashed a bit
2 cardamom pods crushed
2 cloves
1 piece cinnamon stick crushed
4 pepper corns
Sugar as desired

Method:

Put the water on the stove and add the spices.
Bring to boil, cover and simmer for few minutes.
Add tea leaves, cover pot, remove from heat.
Steep for 5 minutes.
Strain and pour the tea to 3 cups equally.
Add milk and sugar as desired.
Your masala tea is ready to serve.

A simple cabbage, potato combo to try.


POTATO AND CABBAGE SUBZI

Ingredients:

300 grms cabbage sliced
200 grms potato cut into small cubes
1 big onion sliced
1 green chillie sliced
tsp tumeric powder
1 tsp chillie powder
tsp mustard seeds
1 tsp lime juice
1 tbs oil
Salt to taste

Method:

Heat the oil in a wok, add the mustard seeds.
Now add the sliced onions and the green chillie.
Stir fry the onion for half a minute.
Now add the cabbage and potato cubes.
Give a thorough rollover to the veges once or twice.
Add little water and cover the wok and reduce the heat
to a medium cook slow. Turn the veges once or twice
In 15 minutes time. When three fourth done, add the
chillie and tumeric powder and salt to taste.
Stir fry nicely and add the lime juice.
There should be no water content left in the subzi.
Remove and serve with rice or roti.

Today I had some 7-8 chapathis leftover from breakfast... so here is what I did & it vanished in no time...;)

Chilly chapathi or masala chapathi:


cut the chapathis into small pieces... add 1 tbsp of tomato sauce & 1 tsp soy sauce...mix well & keep aside for 15 mins...

Cut 1 large onion & chop 3 tomatoes(naatu thakkalai tastes best for this)

Heat 1 tbsp of oil until smoky... add a sprig of curry leaves,1 green chilly & the onions...fry for a min... add 3 cloves of garlic & 1 inch gin crushed... reduce flame & saute well... add chilly pwd & 1/4 tsp garam masala pwd... mix... add the tomates,salt & cook until pulpy...don't let the tomatoes dry out... now add the chapathis...increase the flame & keep mixing for a min... Garnish with cori laves...

This dish tastes best if made hot & sour...if the tomatoes r not sour enough, u can add some lime juice...

ur cabbage, potato combo is different. i normally prepare cabbage with carrot, beans.
cabbage and peas
cabbage and pasiparuppu
cabbage and kadalai paruppu
only cabbage

but ur is a different combination. i will try and come back to u.

Suvai, naan nalla iruken... mushroom try pannunga...very quick & easy recipe...:)

Masala chapathi should be dry... but not vara vara...hmmm... something like chilly parotta... tht's y I have mentioned in the recipe not to let the tomatoes dry out...

Selvi, glad u all liked it... I make veggie chapathis out of the leftover chapathis... very simple... grate carrots, cabbage, finely chop beans,capsicum... thinly slice onions... chop some tomatoes...

heat oil... add some jeera(optional)...then the onions-fry till translucent... then goes in chilly pwd & garam masala pwd...at last add the vegs, tomatoes ^ salt... saute well till the veggies r done but still retain some crunch...don't add any water... aprom, add in chapathis cut into small squares or thin strips... mix well... serve with boondhi raita or plain curds or as such...:) this is a good lunchbox item too... the more he veggies, the better it tastes... this again is a dry dish...

note: if the chapaths r too dry, u can sprinkle lil water towards the end...

For masala chapathis, if u have leftover kurma, u can add a lil of it & it'll taste diff and nice...

Also, u can add scrambled eggs to the masala chapathis...

the kids r right... it's a fusion food...;) actually it was an attempt to recreate chilly parotta but in a healthier fashion and it clicked...:) but I liked it when I used naatu thakkalai only... the apple thakkalai or bangalore thakkalai version was ok but not tongue tickling...

Enna paduthama,avan sapittathu nethu thaan.Illati kuganka believe me,i have to run behind him in order to make him finish the plate.

But yesterday, venum venumnu kettu sapittan.Am very happy abt it. :)

We had it along with tomoato thokku.Wow,such a nice combination.its superb.

thanks for the another of receipe of masala veg chappathi, i will this one too. my kids chilli parotta very much. but it is not healthy too. so i can make them satisfy by doing this. always some chappathi will be left after lunch, so i can make masala chapathi for dinner.
With out tension, i made it for breakfast. kids happily ate it, they too told to keep it for lunch box.

Thanks Dev for the nice recipe, I too at times recycle my chappathis. Mine is a little different style. Hope to try your way too.
Here is how I do.

FRIED CHAPPATHI

Ingredients:
4 chappathis keep in the fridge for ½ an hour
2 cups of mixed vegetables cut into small pieces.
(cabbage, carrot, green peas, potato etc )
1 onion chopped
½ tsp cumin seeds
1 tsp chillie powder
½ tsp coriander powder
A pinch of garam masala
Salt to taste
1 tsp oil
Little coriander leaves for garnishing.

Method:
Cut the chappathis in long strands.
Heat a wok with the oil. Add in the cumin seeds.
Add in the onion, veges, chillie powder,coriander powder,
a pinch of garam masala powder and salt to taste.

Fry in a low flame and make sure that the veges are just done.
Stir fry type where the crispiness stays.
Now add in the cut chappathis and mix thoroughly.
( I do not add tomatoes as the whole thing becomes soggy)
Garnish with the cut coriander leaves and serve hot.

[tscii]Try this mini idlis


MINI IDLIS IN SAMBAR

Ingredients:
Idli flour to make mini idlis.

Idli Sambar:
1 cup moong dal
20 shallots or small onions
2 tomatoes sliced
4 green chillies slit and cut across
1 sprig curry leaves
½ tsp mustard seeds
½ tsp cumin seeds
1 tsp sambar powder
Salt per taste
2 tsp oil
Chopped coriander leaves to garnish.

Method:
Dry roast the moong dal until there is a nice aroma.
Boil or pressure cook the moong dal till cooked well,
with enough water to make watery sambar.

Heat a pan with the oil, add in the mustard seeds and cumin seeds.
After they splutter, add in green chillies, tomatoes, curry leaves,
and the shallots. Sauté well till the tomatoes are mushy.
Add in the sambar powder and salt.
Also add in the cooked moong dal and let it boil for few minutes,
till the raw smell of the powder goes.
Add the chopped coriander leaves, remove.
Arrange few mini idlis in a bowl pour in the sambar.
The idlis should swim in the sambar.
Serve hot.

[tscii]I have been looking out for more adai recipes.
My aunt told me this is how it is done.
You have to eat it suda suda so as to be crispy.
I tried it out and it was.nice. Good avail combo for adai.


RESTAURANT STYLE ADAI & AVIAL

Ingredients:

1 cup rice flour
½ cup toor dal
½ cup channa dal
15 dried chillies less if you want
1 sprig curry leaves
Little asafetida
Little salt

Method:
Soak the rice, toor dal and channa dal for 1 ½ hours.
Add the dry chillies , curry leaves and grind to a coarse batter.
Add in the asafetida powder and salt.
Mix well and make the adais. Drizzle little gingelly oil around the adais. Cook on both sides. They will be crispy.
Serve with avial

Kugan, edhukku sorry ellam... ur is a bit diff with vegs chopped & cori pwd, no tomatoes... so it should taste a bit diff... I'll try it sometime...:)

Does anyone here have a recipe for mini pepper idli & mini masala idli... I had it in a wedding function here & liked it a lot...

Selvi, i'm not able to recollet any good lunchbox recipes for kids... niyabagam varumpodhu inge post pannuren...

If kids like pasta, u can make it the same way as u make the vegetable chapathis... it'll be good...

Idlis can be cut into pieces(u can toss in lil oil & cook it in the oven until crispy if u want to) & cooked in the same fashion as we do the masala chapathis...but for idlis no need of marinating in the sauces...also, u can omit gin-gar paste... add lil tomato sauce to the gravy just before adding idlis...

podi idlis can be made with idli podi/curryleaves podi/murungaikeerai podi etc... just season with mustard,urad dhals & fry some onions...then add in the podi of ur choice & at last the idlis cut into strips or sq pieces...

Selviem I too go through the trouble of preparing
lunch for the children to take to school.
The eldest leaves around 6.20 a.m,comes home at 5.00 p.m
The others by 6.40 a.m, they will be back by 1.30 p.m
Different schools.
I will prepare the cutting and things the previous evening.
I will also cook the rice for fried rice that evening.
My morning starts at about 4.30. a.m
Prayers and start cooking, luckily I have a maid to help.

I do things like, pasta, noodles, sandwiches, fried rice.
coconut rice with sambal and veges (famous in Malaysia)
Kalantha rices, fried chappathi, kothu partha, sweet buns.
bread upma. thalica kolukattai and so on.

I also add few cherry tomatoes, cut fruits, grapes , sliced cucumber at times.
Sometimes they will request for fried potato fingers with sauce.

It was very easy when we were non-vegetarians.

[tscii]My family loves caramel pudding.
I found in the net a recipe for eggless caramel pudding.
I was over joyed and made it at once.
It was a disaster for me. The whole thing was like soft porridge.
It collapsed when inverted on a plate.
The recipe gave me some idea as to how to make it.
I tweaked the recipe making changes here and there.
Finally I made the caramel pudding.
Taste appadi onnum ahh haa ohh ohh illai.
Something is better than nothing.

EGGLESS CARAMEL PUDDING


Ingredients:
3 cups - milk
4 level tsp - custard powder
15 tsp - sugar
1/2 tsp - vanilla essence
7 gms - china grass or 11/2 tbsp – gelatin

Method
1. Soak the china grass in 3/4th cup water for 1 hour.
2. Put to cook on a slow flame until it dissolves.
3. You can use gelatin (with 1/4 cup water) instead of china grass.
4. In a pan add 4 teaspoons of sugar for caramelising and 1 teaspoon of water and go on cooking until it becomes brown.
5. Spread it all over the mould,rotating the mould to spread the sugar evenly. Keep aside for 10 mins.
6. Mix the custard in 1/2 cup cold milk.
7. Boil the remaining milk with rest of the sugar.
8. When milk starts boiling add the custard and go on cooking until it becomes thick.
9. Add the china grass(or gelatin mixture) to the custurd.
10. Boil again for 2 mins.Strain the mixture into a container.
11. Add the vanilla essence. Mix well.
12. Pour this mixture over the prepared mould.
13. Put it to set in the refrigerator for 1 hour.
14. Before serving loosen the sides with a sharp knife and invert on a plate.

CARROT TOMATO CHUTNE Y

Ingredients:

Dry roast: A
1 tsp urad dal
tsp cumin seeds
5 red chillies
6 pepper corns

Saute in oil: B
1 cup carrot diced
1 cup tomatoes chopped
1 big onion chopped
2 pips garlic
1 small piece ginger
1 sprig curry leaves
Salt to taste
Oil

To temper: C
2 red chillies cut into small pieces
1 sprig curry leaves
tsp mustard seeds
tsp urad dal
oil

Method:
Powder the dry roast items in A
Saute in oil the items in B
Let it cool, then grind it to a paste.
Add the powder to the ground paste.
Heat oil and temper the items in C
Pour the tempered item on the ground paste.
Stir nicely and serve with dosa or idli.

Here is a healthy wholesome subzi...It's Spinach veg subzi...

Ingredients:

Yellow moong dhal : 50 gms
Spinach : 1 medium bunch or 1 cup( 1.5 litres cup)
garlic : 2
ginger : 1' piece
green chillies : 1
vegetables(carrot,cauliflower,yellow(sweet) corn) :500 gms
salt & chilli powder : to taste


Boil the veg in water seperately...there should not be any water left after cooking the veg...so add minimal water...

cook the moong dhal,coarsely chopped spinach,garlic,ginger & g.chilles in a cooker for 1 whistle...let cool & churn in a mixie to make a coarse paste(needn't be very smooth)...

add the spinach paste,salt & chilli powder to the veg & let it simmer for a minute...Serve hot with chapathis... the final product must be thick & not watery...So take care in adding water to the veg...

Variations:

1.can add tomatoes while cooking the dhal & add a bit of garam masala for a more spicier version...
2. can do the same using boiled eggs instead of vegetables...
3.spinach chicken will also be good...in this case make it a bit spicier to make it tastier...


Tip:

The bitterness of spinach varies...I've added dhal to mitigate the sourness...The traditional recipe uses cream instead of dhal & paneer instead of vegetables...In order to make it healthy,I've made these modifications...
The sweetness of the carrot & corn also helps in mitigating the sourness of spinach to some extent...U can vary the amount of spinach if u find it's bitter using the measurements given above...

nice to see so much of receipes. for me morning starts at 4.30 am. i prefer to give fresh food. i am breaking my head what to give everyday. they dont take rice. kids leaves by 6.15 and comes back home by 1.15. They need breakfast dry type. i make podi idli, onion utthapam, veg utthapam, stuffed chappathi, noodles/pasta/macroni and the nuggets.

Selviem I think you miss understood me.
I too cook every thing in the morning.
For fried rice we need cold rice.
So I will will cook it in a cooker, the last thing in the night.
I will cut all veges for the dishes and leave them in the fridge.
I too make chappathi rolls, dosai, spread with chutney,
rolled up and cut into thick slices.
Their favourites are noodles, pastas, sandwiches,
and (nasi lemak) coconut rice with sambal.

For non-vege I had lot of things to cook.
nuggets, burgers, boiled sausages and things like that.
Please post any other items that you know.

I have a doubt in it.While it is hot,it is soft kuganka,but after sometime,it has become harden(not too harder).Could u plz tell me where i might have went wrong?

Thanks Aarthii for your feed back and comments.

Aarthii, I normally use steamed flour to make the coconut rice balls.
That is, you soak the rice for about 2 hors.
Then drain it completely, spread it on a cloth and let it semi dry,
indoors. Then using your mixie grind it to a powder.
Sieve it, then using a steamer steam the flour while it is still damp.

You can use this flour to make iddiyappam, kolukattai puttu and things.
The palagarams you make with steamed flour will be soft.

If you roast the flour in a wok, then the palagarams will be hard.

i didnot miss understand u. u r also preparing everything in the morning. as u told for some receipes, previous day evening we need some basic preparations, so that there is no rush in the morning. I give nuggets/burger once a week. rest of the days is dosa, uthappam, podi idli, uppuma, (macroni/noodles), stuffed chapathi. one day is bread sandwich. this is will come in a cycle.
now new addition is ur/dev's masala chappathi.

ARISI UPMA

Ingredients:
For Cracked Rice:
Rice – 1 cup
Toor dal – 2 tsp
Peppercorns – 1 tsp
Cumin seeds – 1 tsp
Wash raw rice and dry it in the shade for about 20 minutes.
Add the other ingredients and grind it in a mixie to a coarse
powder. This is rice rava.


5 green chillies sliced
2 tbs fresh coconut (optional )
2 tbs green peas ( optional) I did not use
1 tbs chopped coriander leaves
2 cups water
2 tbs oil or ghee
Salt to taste

For seasonings:
tsp mustard seeds
1 tsp urad dal 2 tsp
1 tsp cumin seeds
2 tsp bengal gram dal
1 pinch of asafotida
1 sprig curry leaves
1 tbs cashew nuts (optional )
1 dried red chillie cut into small pieces.

Method:
Heat a wok, and pour in the oil or ghee.
Add in the seasonings one by one and fry till the dals
turn slightly brown. Add in the sliced chillies .
Stir for a moment, add in the water, and salt.
You can add in the green peas now if you are using.
Bring to a boil, reduce the heat and add in the rava little by little,
while stirring it slowly. Stir well so that all the spices
are mixed well. Close with a lid and let it cook ,
on a very, very slow flame. Stir now and then cook till all the
water is absorbed. Now add in the fresh coconut and stir well.
Remove from the stove and garnish with coriander leaves.
Serve with the chutney of your choice.
I have tomato thokku with the uppuma.

DEV'S Healthy Recipe.
This was our lunch with onion raitha and tofu butter masala.

South Indian style veg Pulao:

Rice- 250 gms or 1 cup
water- 2 to 2 1/4 cups
Mixed veg(carrot, beans, peas, cabbage potatoes etc) - 500 gms. Cut into big pieces(any shape as U wish)
Ginger- an inch piece(chopped)
Garlic- 2 (chopped)
onion- 1/2 (chopped or sliced)
Green chillies- 1 or 2(slit)
turmeric & chilli powder
Methi seeds(venthiyam)- 1/2 tsp or less
salt- to taste

1.Heat 2 tsp oil in the cooker. Add venthiyam & let it turn golden. This will take just a few seconds. Take care not to brown it.
2. Add the onions, gin & garlic, green chillies & fry till onions turn transparent.
3. Add the vegetables, salt, chilli powder & turmeric powder. Mix well.
4. Add water. Let it become hot. Taste for salt & chillies. Add if required.(should taste a bit salty & hot. Only then the end product will have normal salt & chillies)
5. Add the rice. Close the pressure cooker 7 cook for 2 or 3 whistles. I usually allow 3 whistles if rice is not soaked & 2 whistles if rice is soaked.

Serve with the above coriander chutney & curd or pickle, pappad.

If you do not like you can use ordinary fermented idli batter.
Dev, I do not know if these idlis are like what you ate in the wedding.

Note: It seems you can use cinnamon, cardamom in the seasonings if you like.


MASALA MINI IDLIS

Ingredients:
For the mini idlis

1 cup rice
1/3 cup channa dal
1/3 cup moong dal
1/3 cup toor dal
3 red chillies
½ tsp cumin seeds
½ tsp aniseeds
Salt to taste


Masala:
1 medium onion chopped
1 medium tomato chopped
½ tsp ginger paste
½ tsp garlic paste
1 tsp chillie powder
1 tsp coriander powder
Little tumeric powder
Little salt

Seasonings:
2 tsp oil
½ tsp mustard seeds
1 sprig curry leaves
Little coriander leaves.

Method;
Soak the dals and rice for about 2 hours.
Add in the chillies, cumin seeds, aniseeds and grind
all to a little coarse batter . Add little salt mix well.
Pour the batter into mini idly plates and steam.
Remove and keep aside

Heat oil in a wok, add in the mustard seeds, let it splutter.
Add in the chopped onions, curry leaves and sauté well.
Add in the tomatoes, ginger garlic paste, chillie powder,
tumeric powder and coriander powder. Sauté well, add little salt.
Cook till the tomatoes turn mushy, and the there is no raw smell.

Now add in the steamed idlis and stir gently so that the
masals coat the idlis well. Remove and garnish with the cut coriander leaves.

kugan i make wheat dosa like this.
wheat flour - 1 cup
powdered oats - 1 cup
rice flour - 1/2cup
besan (kadalai maavu) - 1 1/2 tblsp
grated carrot - 1/4 cup
then crushed ginger - 1 tsp
pepper, jeera - coarsely ground - 1 tsp
green chilly - 1 finely chopped
curry leaves - 1 tblsp finely chopped
coriander leaves - 2 tblsp finely chopped

mix with reqd salt and make like rawa dosa, it will be very crispy and very tasty.
same can done with ragi flour instead of wheat flour.
Also for rawa dosa also u can add oats powder. so it is very healthy.

White khorma:

Today my dear mom prepared this for chappathi, wowwww it was sooooooooo yummmyyyyyyy... :slurp:

Ingredients:

Carrot - 1
Potato - 1
Green Peas - 1 cup
Onion - 3 medium sized
Cocunut - Finely Ground
Ginger
Garlic
Kasa kasa
Pottukadalai maavu/Chick peas flour - 1/2 cup
Green chillies - 4
Oil
Salt

To temper:

Mustard seeds.

Method:

Chop the veggies.

Grind Onion nicely and keep it aside.

Make ginger, garlic and kasa kasa into a fine paste.

Now heat a pan, add oil and temper mustard seeds, add ginger+garlic+kasa kasa paste and fry well.

Add ground onion n cocunut and mix well.

Add chopped carrot and potato. Add salt. Now Pour water till the mixture submerges to about 75%. Close the pad with a lid and cook in low fire.

Meanwhile, take chickpeas flour and make as a paste with water. Now check whether the khorma is cooked well, check the veggies are well cooked. Ensure tht the mixture is watery.

Add the chickpeas paste to the mixture, stir continuously. Now the khorma will start to become thick. (If khorma didnt come as a thick mixture, try adding little chickpeas paste). Thts it remove from fire.

Goes well with Chappathi/Roti/Fried Rice... :thumbsup:

Preparation time: Nearly 30 - 40 mins

Alteration: Instead of green peas, we can add boiled rajma.

wheat dosa can be made like rawa dosa, mix the batter, watery and u can make. normally i make this in the iron proper dosa kallu. initially, kallu should be very hot, then slow the fire, then u have to prepare the dosa, we need so much of patience to prepare this. taste is too good.

According to my aunty.
The mini idlis will become soft, when you add it in the masala.
The tomatoes will be mushy and there will be liquid.
If you find your masala very dry, sprinkle little water,
before you add in the mini idlis.

Suvai nga you can even do mini idlis with normal idli batter.
The pepper mini idlis are made with normal idli batter.

We will wait for dev's comments.
She has to tell if it is the same dish, or entirely different.

SWEET POTATO CHUTNEY

Ingredients:
1 cup grated sweet potato
6 dried chillies or more
1 tsp tamarind paste less or more to taste

1 tsp fenugreek seeds
Little asafetida powder
2 tsp oil
Salt to taste

Seasonings:
½ tsp oil
1 sprig curry leaves
¼ tsp urad dal
¼ tsp mustard seeds
1 dry red chillie broken

Method:
Heat oil in a pan add in the mustard seeds, urad dal, fenugreek.
Asafetida, and the dried chillies. Sauté well.
Add in the grated sweet potato and stir well,
Add enough salt and remove. Let it cool.
Grind to a fine paste.

Heat oil in a pan and add the seasonings.
Pour on the chutney and serve.

Note: since the sweet potato will be sweet, the chillie, tamarind,
and salt should balance well. The chutney will be yummy.
You can add little liquid if the chutney is very thick.

u r most welcome, i just got it from the net. many of us are thinking that sweet potato will put on weight. for that only i posted the information. it is very very good for ur health.it is not advisable to have sweet potato/beetroot/potato in the night meal. If we have it for morning breakfast, through we will burn the calories.

Kugan, I prepared the mini idlis foe BF today.. used the normal idli batter...since th idli were already spongy & soft, I made the gravy a bit thick & dry so tht the idlis don't become soggy... also used cinnamon & cardamom in the seasoning.... & the idlies were ver tasty... quite similar to what I had in the wedding.... but the ones I had din't have any tomato in it... it was just something dry with some powdered spices I guess... But yes, we did like ur aunt's version too... yummy!!!...:slurp:

Try this Malaysian dish.

FRIED OR GRILLED BRINJALS WITH SAUCE

Ingredients:

2 long brinjals

For Sauce:
10 large red chillies chopped
1 large pip of garlic chopped
2 cm ginger chopped
2 tsp vege stock more if needed
1/2 tsp of sugar
Salt to taste
1 tsp of oil

Method:
Slit the brinjal lengthwise. Then cut into about 2 inches in length.
Rub salt on it and let it rest for few minutes.
Now fry the brinjals in oil, or grill them. Arrange on a plate

Grind all the sauce ingredients, except the oil.
Now heat the oil, add in the ground ingredients.
Saute nicely and pour over the fried or grilled brinjals.
Serve with steaming white rice .

Dev, I called my aunt in Madurai, she told me that,
some people, just add chillie powder, coriander powder,
garam masala, the rest like hers, omitting the tomatoes.
She says the tomatoes gives added taste.
Those who do not have the mini idli mould, could just
cube the normal idli and cook it this way.


By the way Dev, her pepper idli was super for us.
She used green chillie paste, so no red colour.
recipe poda bayama irrukku.
Will it be like what you ate :roll:

Here Comes my first recipe


Stuffed Brinjals

Required Items :

Brinjals 1/2kg(Smaller in size)
Grated Coconut : 1 tbs
Sambar Powder :4 tspn
Tamarind Juice : 1 tbs
Sliced Onions(Very small slices) : 3tbs
Oil : 2 tbs

Seasonings: Mustard seeds,Channa dhal,Urad dhal ,curry leaves.

Method:

Remove the stems frm the brinjals.
Reverse the brinjals.
Frm the base,slightly cut the brinjal in its 4 sides,make sure that the brinjal still retain its shape.U must not cut it fully.In order to make the filling inside ,we have to split the brinjal into four parts
In a bowl mix the sliced Onions ,Sambar powder,Coconut,Tamarind juice and salt.
Add the seasoning items also.
Now stuff this mixture with a butter spoon into the splitted brinajls one by one.
In a kadai,pour the oil,and place the brinjals by it reverse position ie)stuffed part shud be facing u.
Put the remaning left masala mixture over the brinjals.
Pour abt ½ to ¾ cup of water,and close the kadai with the lid.
Let it boil in the sim state.once in 2 to 3mins just stir it well with a spoon.

Switch off the stove once wen the brinjals are cooked.
Goes well with plain white rice along with ghee combination.As well as u can serve as a side dish also.

here is the receipe for sweet potato adai.


SWEET POTATO ADAI:
-----------------

Idli rice - 1 cup soaked for 4 hours
Sweet potato - 150 g boiled , peel and grate it nicely.

Grind the rice nicely in the mixier, batter should be thick. with this add 2 tblsp of grated coconut, onion -1 finely chopped, green chillies - 2 chopped,
curry leaves, coriander leaves - 1 tblsp each finely chopped.
salt - reqd.
Mix all the above nicely, then make flat shape and deep fry in oil.

Also we can shallow fry in dosa kallu also.

Kara chutney will be the side dish for this adai.

Venthaya Dosai:
---------------

Idli rice - 4 cups
urad dhal - 3/4 cup
venthayam - 1/4 cup

soak rice separately for 4 hours. urad dhal and venthayam together for 1 hour. then grind in the mixier venthayam and urad dhal together till it comes soft. then grind rice like idli consistency.
now mix both dhal and rice , reqd salt. keep it for fermentation. once it is done, make dosa.
Dosa will be vry soft and good for health also.
vella poondu chutney will be the side dish for this dosa.

Vellapoondu chutney:
-------------------

coconut grated - 1 cup
red chilly - 6
urad dhal - 1 tblsp
tamarind - 1 1/2 " piece
garlic - 6 pips
salt - reqd
pottu kadalai - 3 tblsp

seasoning:
----------

oil - 2 tsp
kadukku - 1 tsp
urad dhal - 3/4 tsp
curry leaves - few
shallots - 3 tblsp , finely chopped

In a pan add 1/2 tsp of oil, fry red chilly and remove. then fry urad dhal, garlic, coconut for 3 minutes. then grind this with red chilly, salt, pottu kadalai,tamarind to chutney consistency.

then do the seasoning with the ingredients mentioned. fry shallots nicely, for about 2 to 3 minutes. then transfer this to chutney, mix nicely and serve with venthaya dosa.

Varition:
---------

we can even add fresh corainder leaves for this chutney. Once we grind the chutney, just fry handful of fresh coriander leaves, add this to the chutney which in the mixier, just grind for 2 seconds and remove. so that the leaves will not become like a paste, it will be coarsely ground. taste will be too good. Rest is same.

Slevika,we r supposed to be vegetarians. :( After marriage only am taking Non-veg. :) Ippakooda amma,appaku(in laws also) veetla panrenu therincha :wink: avalo thaan,en veetuku vantha enga amma sapida kooda mattanga. :cry:

After marriage along with him i started taking those stuffs.So initally i used to have only,i dont like to do cooking and all.But for the very first time i did non veg cooking on that day.My husband likes non veg a lot.Do post me some non veg recipes in ur free time.

PEPPER MINI IDLIS

Ingredients:
3 cups of mini idlis, normal idli batter
5 green chillies made into paste
1 tomato chopped very fine
1 onion chopped very fine
1 tsp ginger paste
1 tsp garlic paste
1 tsp coriander powder
1 tsp black pepper freshly coarsely ground (more or less)
½ tsp aniseeds
1 sprig curry leaves
2 tsp oil
Salt to taste
Little cut coriander leaves.

Method:
Heat the oil in a wok, add in the aniseeds,
When they splutter, add in the curry leaves, and onions.
Sauté well, add in the tomatoes, green chillie paste,
ginger garlic paste, and coriander powder.
Stir nicely on a low flame till the tomatoes are mushy,
and there is no raw smell of the spices. (sprinkle little water if very thick)
Add in enough salt and mix well.
Now add in the mini idlis and mix gently so that the spices are well mixed.
Now sprinkle the coarsely ground black pepper and mix the idlis again.
The pepper smell should be prominent in this dish.
Dish out and garnish with cut coriander leaves.

White khorma:

Today my dear mom prepared this for chappathi, wowwww it was sooooooooo yummmyyyyyyy... :slurp:

Ingredients:

Carrot - 1
Potato - 1
Green Peas - 1 cup
Onion - 3 medium sized
Cocunut - Finely Ground
Ginger
Garlic
Kasa kasa
Pottukadalai maavu/Chick peas flour - 1/2 cup
Green chillies - 4
Oil
Salt

To temper:

Mustard seeds.

Method:

Chop the veggies.

Grind Onion nicely and keep it aside.

Make ginger, garlic and kasa kasa into a fine paste.

Now heat a pan, add oil and temper mustard seeds, add ginger+garlic+kasa kasa paste and fry well.

Add ground onion n cocunut and mix well.

Add chopped carrot and potato. Add salt. Now Pour water till the mixture submerges to about 75%. Close the pad with a lid and cook in low fire.

Meanwhile, take chickpeas flour and make as a paste with water. Now check whether the khorma is cooked well, check the veggies are well cooked. Ensure tht the mixture is watery.

Add the chickpeas paste to the mixture, stir continuously. Now the khorma will start to become thick. (If khorma didnt come as a thick mixture, try adding little chickpeas paste). Thts it remove from fire.

Goes well with Chappathi/Roti/Fried Rice... :thumbsup:

Preparation time: Nearly 30 - 40 mins

Alteration: Instead of green peas, we can add boiled rajma.

Kugan, this recipe is lil diff...pepper idli also din't have any tomatoes or g.chilly paste....only some dry spices...but am sure this will taste much yummier than that due to the ingredients used... will try it out soon... BTW, aniseed is perunjeeragam aka sombu,right?

TOFU AND CAPSICUM

Ingredients:
500 grms tofu cut into cubes semi fried in oil
2 tbs ginger chopped
6 pips garlic chopped
1 big onion diced
1 green capsicum diced
3 tomatoes chopped fine
¼ tsp tumeric powder
2 tsp chillie powder
1 sprig curry leaves
½ cup low fat milk or coconut milk
2 tbs coriander leaves chopped
2 tsp oil
Salt to taste
Lime juice to taste

Method:
Heat oil in a wok, add in the garlic, ginger and onions.
Sauté for a minute, add in the curry leaves.
Now add in the tumeric powder, chillie powder fry for a second.

Add in the chopped tomatoes and cook til lthey turn mushy.
Add in the capsicum, salt stir for a second.
Add in the milk, and 1 cup of water, add in the fried tofu.
Boil on a medium flame for about 5 minutes.
Taste for salt, add in the lime juice.
Remove and garnish with cut coriander leaves.

WHITE KURMA

250 grms veges cut into small pieces
(cauliflower, beans,carrot, potato etc )
1 sprig curry leaves
1 tbs mint leaves
1 tbs coriander leaves
1 bay leaf
1 tbs ghee or oil
1 tsp aniseeds
½ cup curds well beaten
Salt to taste
Little lime juice

(A) grind to a fine paste
2 medium onions
1 inch ginger
4 garlic pips

(B) grind to a fine paste
5 green chillies
1 tbs poppy seeds
½ tsp cumin seeds
1 tsp aniseeds
5 cashew nuts
3 tbs scrapped coconut
2 cardamom pods
3 cloves
1 small piece cinnamon stick

Method:
Heat ghee or oil in a wok, add in the aniseeds and bay leaf.
Now add in the curry leaves, mint leaves and coriander leaves.
Stir nicely, add in the paste (A).
Sauté well, till the oil rises, add in the veges.
Add salt and 2 or more cups of water. Mix well.
Cover and allow to boil, the veges should be ¾ cooked.

Now add in the paste(B) stir nicely and allow to boil well for a minute.
Now add in the curds and mix well.
Taste for salt, add in the lime juice if needed.
Serve kurma with iddiappam, chapathi and things.

Note: I have to admit that this is not a very healthy recipe.

Kugan, here is the kitchadi rice recipe...

Kitchadi rice:

1 cup rice
1/2 cup yellow moong dhal dry roasted until fragrant
g.chillies slit- to taste
onion- 1 big cut lengthwise
patta,lavang
ginger- 1 inch piece minced
mint leaves- a handful
mixed veg (optional)
tomatoe-1 (optional)
turmeric pwd, chilly pwd & salt.

Heat oil & add in the pattai & lavang... then add the onions, g.chillies,gin & saute ti;lll onions become transparent. Add veg if using & fry for a min.add the turmeric pwd, chilly pwd, salt. mix. Add the rice, dhal, pudina & water. cook till done(approx 3-4 whistles).

U can vary the consistency of this dish(either dry or lil gooey) as u wish. I personally prefer the dry version.

This dish tastes good with finger potatoes. Just cut some potatoes into fingers. add in salt & chilly pwd - mix. Shallow fry till done.

If u prefer a healthier version, u can have it with onion or cucumber raitha.

This is a simple style.


BUTTER PRAWNS

Ingredients:
500 grms large prawns feelers and legs trimmed
1 tsp salt
1 tsp sugar
tsp pepper
1 tsp sesame oil
3 tbs cornflour
Marinate all the above items for 30 minutes.

Oil for frying.
2 tbs evaporated milk
4 egg yolks
1 tsp sugar
tsp pepper
tsp chicken granules or chicken cube
Unsalted butter
4 pips garlic chopped finely
5 birds eye chillies chopped
2 sprigs curry leaves
1 tsp fish sauce

Method:
Fry the marinated prawns and remove.
Combine the egg yolk, milk, salt, pepper and
chicken granules in a bowl and beat .

Heat about 3 tbs of butter in a wok.
Pour the yolk mixture from a height and stir
very quickly with a pair of chopsticks to get
crispy strips of eggs. Remove from wok.

Heat another 2 tbs of butter in a clean wok.
Fry the chopped chillies, garlic and curry leaves.
Now stir in the fried prawns fish sauce and the
fried strips of eggs. Stir well and serve immediately.

apapppa so many conversation within few hours, very happy to see that. kugan, as dev said u post the receipes, we will modify according to us.

i have a doubt, in most of ur tofu receipes, ur advice is to semi fry or deep fry. can we use it like that only without frying.

Frying only is not allowed in our house. once i bought tofu and had it with salad. it was nice. after 2 days , tofu got spoiled.

can u plz tell me how to store tofu. coz here we get in 1/2 kg packets.

it is very good for our health. my husband says, substitute tofu instead of paneer. I do prepare paneer butter masala in a healthy style once in a month, and palak paneer once in a month. he wants me to make tofu butter masala. i am afraid to try. plz give ur suggestion and advice reg tofu.

Thank you very much Selviem for your comments.
I cook many types of tofu in our house.

To keep tofu, immerse the tofu in a container of water.
Change the water daily. Keep it in your fridge.

Selviem, I shallow fry the tofu a little before adding to any dish.
There will be a little raw taste if you add it fresh like that.
Only for tofu burgi I add it fresh without shallow frying.
For tofu burji we will crumble the tofu.

You can try using very very minimal olive oil to just
semi shallow fry in a non-stick pan.
Or you can try adding fresh tofu in your dishes.
If you all like the taste, than no problem.

Selviem to day evening is your funugreek dosai and garlic
chutney. Let me do and post the picture.

i can understand ur position, u have to plan three separate menus for a day. that is too difficult,coz u have to cook for too many people.if they enjoy ur food, then u can try different dishes.

Selvi, I have had tofu + panner butter masala in a restaurant ... it did taste yummy...so u can try without any fear.... also the tofu & paneer were not fried... firm tofu added to gravy as such...

I'm not sure how u make the butter masala... I prepare it adding low fat evaporated milk in place of cream & it tastes yum...Same goes in for my kadahi dishes...

Kashmiri chicken:

Mix in kashmiri red chilly pwd, salt, turmeric pwd, gin-gar paste,lil curd & tomato puree to chicken with bones. transfer it to a pan & add haalf a tsp oil & cook timm 90% done.

In another wide pan add a tsp oil. add curry leaves & slit green chillies & then the chicken pieces only. Discard the gravy if any(u can add it to ur soup). cook till dry on a low to medium flame. you can sprinkle a tsp of corn flour towards the end which is purely optional. If u do add, cook till the aw smell of flour disappears.
This dish is supposed to taste like chicken 65. It is years since I prepared it. So i don't remember the exact taste.

my butter masala , i will boil onion and grind it to a paste. olive margarine i use instead of oil, for cream, i used 3% fat content cream.

next time let me try with low fat evaporated milk.

I need a small help frm all of u.Sorry for disturbing u all.My Friend she is now under her 6 months of preganancy.she has got gestational diabetes frm her 4th month.She is under dieting now.The only thing she can add more in her food is protein.

Can u all plz lemme know some menu which will be very helpul for her.She is in US.Living for aprt frm her parents.The fetus inside her also has some kidney pblm.So she is higly worried .Already i have send her all the healthy salad recipes of devka,which was posted by kuganka,as well as other salad recipes given by kuganka also.

She is a vegetarian.Only egg she is taking.

So if u all suggest me some more,it will be very helpful for her.

The chutney came out super.
The taste was very good.

I do not know where I went wrong in the dosai.
I followed your measurements.
The dosai was too soft. I mean kola kola.
I managed to make one for the picture.
I had to make it thick.
Later I added some rice flour and was able to do the dosai.
Selviem please check the recipe, or tell me where I went wrong.
May be the funugreek was too much.

Hmmmmm. what i can say. did doctor prescribe any diet for ur friend. Tell her to take less of carbohydrate. She can take one boiled egg everyday(not the yellow one),oats, lots of leafy vegetables. I think this is fine. Tell her not to worry and not to be tensed. this diabetics will go after the delivery. we will pray for her definitely.

i think ur ulundhu maavu is more than rice, some urad dhal will come more pluffy, in that case u can increase ur rice quantity.
actual proportion is 4 cups rice, 1 urad dhal we will normally do for idli.
for venthaya dosa 4 cups rice , 1/4 venthayam,3/4 urad dhal.

like this i am preparing the batter everytime.

ragi dosa/ragi idli:

while grinding for idli batter, if urad dhal batter is more ,with that we can prepare batter for ragi dosa/idli.

ragi flour - 1 cup
urad dhal batter - 1 cup
mix nicely and add require salt and keep this for fermentation. then we can make ragi dosa/idli.

the consistency of the batter will be like our normal idli batter. accordingly we have to take the urad dhal batter.
while making dosa, we can even add chopped onion, green chilly, curry leaves, coriander leaves.
taste will be good.

bittergourd masala grill:
=================

bittergourd cut in to half , remove seeds and boil it in water with little salt and turmeric powder.

bitter gourd - 2 medium size

shallots - 8
coriander leaves - few
chilly powder - 1 tsp
salt - reqd
ginger garlic paste - 1 tsp
besan flour - 2 tsp

grind all the above,mix it with 1tsp of olive oil and apply on the vegetable. grill it for 30 minutes in medium temp.

this will come very crispy, we will not realise the bitter taste in that.

Venthaya Dosai:
---------------

Idli rice - 4 cups
urad dhal - 3/4 cup
venthayam - 1 cup

soak rice separately for 4 hours. urad dhal and venthayam together for 1 hour. then grind in the mixier venthayam and urad dhal together till it comes soft. then grind rice like idli consistency.
now mix both dhal and rice , reqd salt. keep it for fermentation. once it is done, make dosa.
Dosa will be vry soft and good for health also.
vella poondu chutney will be the side dish for this dosa.


Selviem, now I understand, you have typed the venthyam as 1 cup.
Typing error. I too followed the recipe blindly.

A simple kuruma for Idly/Chappati

[tscii:4ca2f379b5]Required Items :

Big Onion: 2
Tomato: 1 (if it is big) or 2
Coconut: 2 to 3 tbs
Chilly Powder : ½ to 1 tsp
Coriander Powder : ½ tsp
Turmeric Powder : 1/4 tsp
Cinnamon stick : ½ inch
Aniseeds (Sombu) : ¼ tsp
Kasakasa : ¼ tsp

For Seasoning:
Half big onion: chopped finely
Mustard seeds,Urad dhal: 1tsp


Method:
Chop the onion into small pieces.
Chop the tomato into small pieces.
In a kadai,pour oil and add the three masala items and allow them to fry.
Once wen it is done, add the onions and allow it to fry nicely(Till the raw smell of the onion goes)
Then add the tomato pieces and fry till the skin of the tomato leaves it
Now add the three powders and mix it well with the onion and tomato contents.
Fry them for ½ to 1 min
Now add the coconut threads and fry it till it turns light brown.
Switch off the stove.
Allow the mixture to cool ,add salt and then grind it.
Now in a kadai ,add the seasonings,and then add the sliced onions.
Let it fry.
Pour the grinded mixture into the kadai.
Allow it to boil till the kuruma becomes thick.

It is a very simple kuruma,which u can make very easily without any vegetables.The taste will also be very nice.It goes well with soft idlies and chappaties.

Kugan, here is the kitchadi rice recipe...

Kitchadi rice:

1 cup rice
1/2 cup yellow moong dhal dry roasted until fragrant
g.chillies slit- to taste
onion- 1 big cut lengthwise
patta,lavang
ginger- 1 inch piece minced
mint leaves- a handful
mixed veg (optional)
tomatoe-1 (optional)
turmeric pwd, chilly pwd & salt.

Heat oil & add in the pattai & lavang... then add the onions, g.chillies,gin & saute ti;lll onions become transparent. Add veg if using & fry for a min.add the turmeric pwd, chilly pwd, salt. mix. Add the rice, dhal, pudina & water. cook till done(approx 3-4 whistles).

U can vary the consistency of this dish(either dry or lil gooey) as u wish. I personally prefer the dry version.

This dish tastes good with finger potatoes. Just cut some potatoes into fingers. add in salt & chilly pwd - mix. Shallow fry till done.

If u prefer a healthier version, u can have it with onion or cucumber raitha.

Hmm, not so healthy


RICE PARUPPU KICHADI

Ingredients:
100 grm ghee
2 small sticks of cinnamon sticks
3 cloves
4 cardamoms
2 pieces of mace

To powder coarsely
1 tbs coriander seeds
½ tsp aniseeds
½ tsp cumin seeds
4 dried chillies
1 tsp black pepper

Soak for ½ an hour:
500 grms seeraga samba rice (or basmati)
150 grms green peas (moong dal)
150 grms toor dal

To garnish:
50 grms ghee
50 grms raisins
50 grms cashew nuts

Method:
Heat ghee in a pressure cooker, add in the spices.
Stir well, add in a cup of water, let it boil.
Now add in the coarsely ground powder.
Add enough water, and salt. Let it come to a good boil.
You will have a very good aroma by now.

Now add in the soaked rice, moong dal and toor dal.
See that you have enough water to cook the rice and dals.
Close the lid and cook for 2 whistles.
Let the steam subside by itself.
In a pan, add the ghee and roast the cashew nuts and raisins.
Open the cooker, add in the roasted nuts and raisins.

PARUPPU URUNDAI KULAMBU

Ingredients:
To make the urundai:
1 cup toor dal soaked for an hour
3 dry red chillies
Little asafetida powder
Little aniseeds
1 small onion chopped very fine
Little coriander leaves chopped very fine
Little salt.
Method:
Drain the dal, add in the dry chillies, aniseeds and salt.
Grind to a thick paste, add in the onions, coriander leaves,
asafetida powder, mix well. Shape into balls . keep aside.

Ingredients:
To make the kulambu:
1 lime size tamarind soaked in a cup of water
1 onion chopped
1 tomato chopped
1 tsp sambar powder
1 tsp chillie powder
2 tsp coriander powder
Little tumeric powder
1 tbs oil
½ tsp mustard seeds
½ tsp cumin seeds
½ tsp fenugreek seeds
1 sprig curry leaves
2 cups of water
Salt to taste
Method:
Heat oil in a FLAT BOTTOMED PAN
Add in the mustard seeds, cumin seeds, fenugreek seeds,
curry leaves and asafetida powder.
Now add in the chopped onions and sauté well.
Add in the chopped tomatoes and cook till mushy.
Now add in the tamarind extract, and let it boil.

When it boils add in another 1 cup of water
Add in the chillie, coriander,sambar, and tumeric powders.
Add salt and let it boil till the raw smell goes.
The gravy should be a bit watery at this stage.
Add more water if needed.

Now drop the balls one by one.
Do not stir the kulambu after you add the balls.
Otherwise the balls will break. Cook until the balls are well cooked.
The gravy would have become a bit thick now.
Now you can stir gently once the balls are cooked.
You can garnish with cut coriander leaves.

Ingredients

2 cups raw rice
½ a tsp methi seeds
½ cup scraped coconut
½ cup cooked rice
coconut water if you have
1 tsp salt
1 tsp yeast granules
1 tbs sugar
1cup of thick coconut milk made from 1 coconut
3 cups of thin coconut milk or as needed
3 tbs sugar or more

Method:
Wash the rice and soak the rice with the methi seeds for 5 to 6 hours.
Then grind the rice with the methi seeds, cooked rice, and scrapped coconut, using coconut water if you have, or use the water in which you soaked the rice, to a thick fine paste.
Now add the salt , yeast, and sugar and mix well.
Leave it to ferment for about 7 hours.
Next morning, slowly add the thick milk, thin milk ,and the sugar to taste.
The flour should be a bit watery and coat the ladle. Do not stir a lot.

Heat the aapa chatti,
Wipe it with a oil cloth.
When the pan is hot, take a small ladleful of the batter and pour it in the chatti. Swirl it around once in a clock wise motion.
( If you swirl it more than once , you will not get a thin frilly layer)
Cover the chatti and let it cook on a slow fire.
(If your ladle is big, the center part will not cook)
Serve it hot with sweet thick coconut milk.

This recipe comes handy on days when u have lots of leftover rice from lunch...Give this a try & U'll be hooked...

Tamarind rice(using leftover rice)


Extract tamarind juice(to tase) & mix it with the rice. Add salt aswell & leave it overnight or for atleast 8 hrs.

The next morning: heat oil, splutter some mustard seeds followed by channa & urad dhal...once they trun golden, add curry leaves, red chillies(broken) & green chillies(slit) to taste , asafoetida & fry for a few secs. Add onions cut into thin strips & saute just until it starts to turn slightly brown...I like to saute onions just until they trun transparent as I like the crunch of onions in the rice. Now add the rice & stir fry on medium flame until the rice is thorughly heated & the raw smell of tamarind goes off. Serve as such or with coconut chutney on the side. Yum!!!.

today for breakfast i made ur kuruma, it was so nice. we all enjoyed. we had it with rice. slight variation i did in ur receipe. i added 1/2" ginger , 3 pips of garlic, pinch of garam masala powder, 3 cashews.(coz we dont get khus khus here). while seasoning i added few pudhina, few coriander leaves too.
It is very easy to prepare. Smell was too good, taste is superb. Thanks aarthi.

thats true. ur kitchadi rice is very good. i will change according to my family. like reducing ghee and cashews. i have to try this. coz in our family, everybody like the wholesome rice. instead of curry, vegetable etc.

Another idea for left over rice ....

VADAGAM

Grind onion, green chilli, salt and perungaayam (all...thevaiyaana alavu) in a mixie and finally add the left over rice and give just one whip.

Now dry the above in small round balls under the sun, for two days (it should be very very dry) and store in dry containers.

Fry them in oil - any time ... It goes well with the dhideer tamrind rice (Dev's recipe)

Thanks for ur feedback selvika.Am happy that u all liked it. :D Am going to try one day with the changes what u have added and will tell u abt the outcome.

As u have stated the smell will be very good.My chitti used to prepare this very often.I learned frm her only.

Sudha, very true... I'm one among those who cook more rice to prepare this pulisaadham the next day...:)
& I guess this recipe is a speciality of our region... I've not seen it prepared by ppl from other than kongu region...

This discussion reminds me of kongu specialities like arisiyumparuppu saadham, thanni thaalicha saadham, green gram paruppu etc... will post it sometime soon...
