Fresh , low-cal salad recipes, please. Thankyou!!!!! :D

MIXED PEPPER SALAD

1 each of green, yellow , red and orange bell peppers (capsicum) - deseeded and sliced into strips
white onion - 1, sliced
parsley - 3 tbsp, chopped
salt and pepper
fresh lemon juice as needed

toss together and serve chilled
the above salad must approximately be 150 cals...individual serving will obviouly be less. :)

TABBOULEH

fine bulgur wheat - 3 tbsp, soaked in water and drained well
parsley - 1/4 cup, chopped fine
mint - 1 tbsp, chopped
tomatoes - 2, deseeded and chopped fine
onion - 1/2 , chopped fine
spring onions - 2 tbsp, chopped
lemon juice - 2 nos.
salt

mix all together and serve immediately.
usually olive oil is drizzled on the tabbouleh.

Tabbouleh's main ingredient is seeded and diced cucumbers. The dish tastes bad without it.

Hi Alan,
You are in India and there are so many varieties of salads that can be made.

here are some

Salad - 1

chopped- onions, cucumbers, tomatoes, carrots, corriander

Mix all veggies together add salt, pepper, little lemon juice and its ready to eat. If you want it spicy add chopped green chillies.

Salad - 2

If you get baby spinach or lettuce here is another recipe

Roughly chopped - lettuce, onions, green bell pepper(capsicum)
Tomatoes if small cut into 4 pieces otherwise however you wish
Redwine Vinegar If available or can be substituted with lemon juice
Roasted Nuts( Any of your choice ) for garnishing
Honey 2 tsps, salt and pepper

In a skillet add little olive oil or vegetable oil, add onions and bellpeppers and just toss. Sauteed them for say 1 - 2 mins. Donot cook till it becomes tender. Then add 2 tsps of vinegar and toss. Shift it to a bowl add the chopped lettuce, tomatoes, salt, pepper and honey and mix well. Garnish with nuts or even bread croutons if you are worried about calories, its just for the crunch.

Note: If you are not using redwine vinegar then add lemon juice before garnishing.
If you are using baby spinach then donot chop them.

an authentic lebanese tabbouleh has no cucumbers added....

but yes we can add chopped cucumber....some people also add finely minced garlic...

The oriental chef Salah salha of Le Meridien here, doesnt add cucumbers and neither does Executive oriental chef Ali Ammar of Emirates Towers add cucumbers... :)

another salad I had recently and loved...

cauliflower, brocolli, soaked & boiled chick peas, orange, feta cheese & a small bit of olive oil.
