Hi!

pls posts recipes of various pulav and fried rice varieties.

CABBAGE FRIED RICE

boiled basmati - 2 cups,grains separate and cooled
cabbage - 2 cups, shredded

oil - 2 tbsp
1 tsp each of mustard seeds, cumin seeds, urad dal and chana dal
whole red chillies - 2
curry leaves - a few
onion - 2 chopped

grind:
coconut - 2 tbsp grated
green chilli - 2
ginger - a small piece

salt
puffed bengal gram powder/ or roasted peanut powder - 2 tbsp

1. heat oil and add the temperings; when it crackles add onion and fry.
2. add cabbage and fry on slow flame for a few minutes more.
3. add the ground mixture and needed salt.
4. add rice and mix well; take care not to mash it up. sprinkle the gram or peanut powder and mix.
5. garnish with coriander leaves and serve.

in the same way instead of cabbage, u can add carrot/ mushroom/ spinach, etc.

Vegetable briyani:

Vegetables:
peas
butterbeans
beans
turnip
carrot
potato
cauliflower
(all of these or some of these diced)

masala to grind:
garlic
ginger
small onion
thaniya
green chilli
red chilli
clove
cinnamon
anasipoo
sOmbu
kalpaasi

coconut milk prepared

Heat pressure cooker, pour equal quantity of oil & ghee & saute chopped big onion, green chilli, clove, cinnamon, anaasipoo, sOmbu & when brown add diced vegetables & saute. When a little fried add a diced tomato, coriander leaves & puthina leaves. Add two times amount of coconut milk to the amount of rice to be cooked. When it comes to boil add basmati rice/seeraga samba(soaked for 10 to 15 minutes) & salt. Mix the ingredients. Close the lid & put off the stove after 2 whistles. Can open after 10 minutes. Add roasted bread cubes & stir slowly to blend uniformly. YUMMY briyani ready! Goes well with puthina thuvaiyal & onion raitha.

2 cups basmati rice
2 cups milk
2 1/2 cups water
1 onion chopped
1 carrot chopped into small squares
3 tsps peas
1 green chilly cut into 4 pieces
2 dried red chillies
2 tsps cumin powder
1 tsps garam masala
1 tsp ginger garlic paste
1/2 tsp turmeric powder
Little amount of cumin, bay leaf, cinnamon, elaichi, cloves
1/4 cup mixed fruits (Chopped pineapple and pomogranate seeds)
1/4 cup fried nuts ( cashews, badam and pistachios)
Pinch of saffron( kumkum poo )
Salt to taste
Pepper powder to taste(optional)
Oil per your requirement
Ghee 1 tsp
Chopped coriander leaves for garnishing
1 tbsp lime juice

Method,

1. Soak basmati rice in water for 15 mins. Drain and fry with 1 tsp of ghee and set aside.

2. Heat oil in a heavy pan or biryani pot or a pressure pan and add cumin, bayleaf, cinnamon, elaichi, cloves and red chilles. Then add the chopped onions, green chilly, ginger garlic paste and fry till onions become transparent.

3. Add the peas, carrot, turmeric, garam masala and sautéed a few seconds

4. Add milk, cumin powder, pepper powder, kumkum poo, water and finally the fried basmati rice and mix well. Cover and cook till rice is tender.

5. Once the rice is done add salt, lime juice and mix well. Then garnish with fruits, nuts and coriander leaves

This dish is tastes sweet and sour. If you like your food spicy then add red chilly powder when sautéed the veggies.

Vegetable fried rice


Basmati rice - 1 cup
Spring onions - 1 small bunch (chopped)
Capsicum - 1 (chopped)
Carrot, Beans. Cabbage - (chopped) 1 cup
White Pepper powder - 1 tsp
Soya sauce - 1 tsp
Salt
Oil - 1-2 tbsp

Pressure cook (or boil) rice with 1 1/2 cups water and 1/2 tsp salt for three whistles. Cool and separate with a fork.

Heat oil in a non-stick pan, add spring onions and saute for a minute on high heat. Add capsicum and other vegetables and 1/2 tsp salt and saute for two minutes. Reduce heat, add pepper, soya sauce and mix. Add rice and mix well. Cover and keep on low heat for a minute.

You can use normal pepper powder and normal onion if spring onions are not available. Add a pinch of ajinomoto, if you like the taste. Parboil or microwave vegetables for a minute, if you like them softer. This is a very quick recipe for kids lunch-box, especially if you are making in small quantities. You can add crumbled paneer with the vegetables to make paneer fried rice.

It is good to know that you are going to try. Let me know how it comes out.

I will try to find what is the difference between pulav and fried rice. I will surely write as soon as get an answer.
