Avocada-squash recipe: serves 2. Low spicy. Healthy. Keep in mind that Avocado is slightly bitter in taste.
Ripe Butternut or Acorn squash - 1 small or medium sized.
Ripe Avocado - 1. Ripe ones will be soft when pressed and have dark skin.
Spinach - 1 cup. chopped into fine pieces.
Onion - 1/2 cup chopped
Green or red chillies - 1 or 2
Coarse black pepper powder - 1/2 tsp
Salt - 1 tsp
Turmeric - 1/2 tsp
Oil - 1 tbsp
Mustad seeds - 1 tsp
Curry leaves - 1 sprig
Water - 1 cup
Cook the squash in a pressure cooker, then peel the skin away and mash the flesh into a smooth paste.
Cut the avocado from one end, discard the seed, skin and mash the flesh into a smooth paste.
Heat oil in a pan. Let the mustard seeds splutter. Add onions and fry for a few minutes.
Then add 1 cup water and the rest of the ingredients except curry leaves. Mix them well. Cook for about 8 minutes. Add curry leaves, mix well and remove from fire.
This is a creamy vegetable dish and can be eaten with chappathis, rice, idli/dosai.
You can also cut brinjals into small pieces, fry in oil until cooked, mash them lightly , though not into a smooth paste and then use it instead of squash.
