hi i am trying to make idiyappam but i dont hav here the idiyappam press/mould for making idiyappam.can anyone pls tell the any other way to make idiyappam than the instant one which we buy at shops.

Idiyapam press and idiyapam thaddus are essential to make idiyappam. You can get it from Indian and Srilankan spice shops or through some web sites. There is a special wood press just for idiyapam or you can use the smallest hole disk in the murruku press. Idiyapam thaddu is where you make the idiyapam and put it in the steamer to cook.

Making idiyapam is a bit hard for the first time once you have got the hang of it its easy. Here is a fool proof recipe I use.
2 cups of rice flour (Red, white or mixed)
1tsp salt
Boiling water
First microwave it for 30 secs on high and sieve the rice flour.
Add salt and mix well.
Boil the water in the kettle and pour it in another vessel and leave it to cool for exactly 3 minutes.
Slowly and the cooled water to the flour and make a dough using a wooden spoon handle.
Make the idiyapam and steam it for 10 minutes.

Other alternative is rice noodles from Chinese shops (fine ones). Soak it for 10 minutes in warm water and drain well. Fry onions, potatoes and veges. Add chillie powder and salt then add the noodles or eat with curries. It is like idyapam biriyani.

Keralites prepare idiyappams, with a different kind of press. These presses are very small, almost the size of murukku maker (murukku naazhi)... I think you might be able to find it in keralite grocery stores..
