chicken and coriander soup
boneless chicken - 1/2 cup, chopped into tiny pieces
white pepper, salt, a dash of lemon juice
oil - 1 tsp
chicken stock - 2 cups
coriander leaves - 1 tbsp, finely chopped
plain flour/ corn flour - 2 tbsp with 4 tbsp water.
1. marinate chicken in salt, pepper and lemon juice for 1/2 an hour.
2. heat oil, add chicken and saute. Do not let it brown.
3. Add the rest of the ingredients and simmer till chicken is done.
4. serve hot.

HARIRA
lamb and lentil soup
red lentils(masoor) - 1 cup
boneless meat, cubed into small pieces - 1 cup
chopped onion - 1 cup
chopped tomato - 1 cup
green chilli, chopped - 2 nos
mixed arabic spices - 1 tsp
coriander leaves - 1 tbsp, finely chopped
salt
saffron - a pinch
water/ stock - 1 litre
1. mix all and cook together till meat is done.
2. serve hot.

SPINACH AND YOGURT SOUP
spinach, shredded - 1 cup
leeks, chopped - 1/4 cup
olive oil - 2 tsp
onion, chopped - 1
cooked rice - 1/4 cup
vegetable stock - 2 cups
salt, pepper
yogurt - 1 cup
turmeric - a pinch
garlic - 1 clove , minced fine
1. in a bowl, mix yogurt with turmeric, garlic and salt.
2. heat oil and fry onion; add spinach, leeks, rice and fry till wilted.
3. add stock and seasoning ;cook till done.
4. when cool , add with the yogurt mixture.
5. serve chilled.

BARLEY AND LAMB BROTH
lamb - 500 gms
olive oil - 1 tbsp
garlic paste - 1 tbsp
chilli powder - 1 tsp
pearl barley - 1/2 cup
water/stock - 2 ltres
leeks - 3, chopped
carrots - 1 , chopped
turnip - 1, chopped
celery - 2 tbsp, chopped
parsley - 1 tbsp, chopped
salt
1. heat oil and fry lamb till brown along with garlic and chilli.
2. add water/stock and barley. simmer till barley and meat is done.
3. add all the other items except parsley and cook till done.
4. serve hot garnished with parsley.

BORSCHT
(a clear version of classic russian soup)
beetroot, peeled, grated - 1 cup
onion - 1, chopped
lamb/beef stock - 3 cups
bay leaf - 1
tomato puree - 1 tbsp
lemon juice - 1 tsp
salt, pepper
sour cream - 2 tbsp
1. boil stock , beet and onion with bay leaf for 20 to 30 minutes.
2. add salt and pepper, tomato puree and lemon juice. simmer for a few minutes more.
3. strain the soup.
4. chill in individual bowls.
5. spoon in sour cream before serving.

I love cauliflower , .......not just soup , i try to make different recipes using cauliflower.....this is one of my favourite soups...
creamed cauliflower soup
butter/oil - 2 tsp
onion - 1, chopped
garlic - 1 clove , chopped
celery - 1 tbsp, chopped
small cauliflower - 1, cut into florets
potato - 1 ,chopped
chicken/vegetable stock - 4 cups
salt, pepper
boiled milk - 1/4 cup
1. heat fat and fry onion , garlic and celery.
2. add cauliflower, potato, seasoning and stock. simmer till done.
3. puree the soup and adjust consistency and seosoning.
4. add milk and serve hot.
note: garnish with parsley/ spring onion/ coriander leaves.

LOUZ SHORBA
almond soup
2 tsp butter
1 large chopped onion
2 Tbsp plain flour
4 cups chicken stock
1/2 cup ground blanched almonds
2 tbsp cream
Salt and freshly ground white pepper
1. Melt the butter in a saucepan, add the onions, and cook until soft but not browned. Stir in the flour.
2. When blended add the stock, stirring briskly. Allow to simmer a few minutes. Stir in the ground almonds. simmer. Remove from heat.
3. Stir in the cream . Season with salt and pepper to taste. Serve hot.

Chinese Egg Soup
butter - 1 tsp
garlic-ginger paste - 1/2 tsp
cooked green peas - 1 tbsp
julienned carrot - 1 tbsp
julienned mushroom - 1 tbsp
chicken stock - 2 cups
egg - 1, beaten
salt, pepper
spring onions, chopped - garnish
1. saute veggies in butter and add stock.
2. add salt and pepper, reduce heat.
3. add the beaten eggs continuously stirring, taking care not to curdle the egg.
4. remove from heat.
5. serve garnished with spring onions.
note:
using the same base , u can add cooked chicken pieces or shrimps/prawns, etc.

pumpkin soup
butter - 1 tbsp
onion - 1, chopped
pumpkin - 1 cup, peeled, deseeded, chopped
green apple - 1, cubed
turmeric - a pinch
chilli powder - 1/2 tsp
cumin powder - 1/2 tsp
coriander powder - 1/2 tsp
salt, pepper
chicken/ vegetable stock - 3 cups
milk - 1/2 cup (optional)
1. heat butter and fry onion. add pumpkin and apple;fry.
2. add spices and stock. simmer till cooked.
3. puree and strain.
4. add milk and adjust seasoning and consistency.
5. serve garnished with coriander leaves and sprinkle a tsp of toasted white sesame seeds.

MINESTRONE
canned beans - 1 can (any beans of ur choice)
4 cups chicken stock
2 tomatoes, peeled and seeded , chopped
2 tbsp cabbage, shredded
1 carrot, scraped, sliced into long pieces
1 large potato, peeled and diced
1/4 cup string beans, cut in pieces
1 Tbsp chopped fresh parsley
salt, pepper to taste
3 Tbsp extra virgin olive oil
1 onion, coarsely chopped
1 clove garlic, chopped
1 tbsp celery, chopped
1 small zucchini, sliced thin
1 large ripe tomato, peeled, seeded, and coarsely chopped
1/4 cup cooked rice/ cooked small size pasta
freshly grated Parmesan cheese
parsley, chopped
1. Bring stock to a boil . add the beans .
2. Puree the tomatoes in a blender.
Add to the beans, along with cabbage, carrots, potato, string beans , and parsley.
3. add salt to taste.Cook for 30 minutes/ till done.
4. Heat the 3 tablespoons oil in a saucepan and cook the onion and garlic on low heat until golden.
5. add the celery, zucchini, and chopped tomato and cook .
6. Add the bean mixture and simmer .
To serve hot, bring soup to a boil, add the rice / pasta and serve garnished with freshly grated Parmesan and chopped parsley.

COCONUT MILK AND CHICKEN SOUP
vegetable stock - 500 ml
ginger - 1 small piece
coconut milk - 300 ml
lemon leaves - 2
onion - 1 ,cut into 4
tomato - 1 , cut into 2
lemon juice - 2 tsp
salt, pepper
combine all the above and simmer for 20 minutes.
strain.
To the strained soup, add chicken strips and thinly sliced button mushrooms and simmer till done.
garnish with fresh chopped coriander leaves.

poppy seeds (khus khus) kasakasa...is used in India, but it is banned in the Arab countries....u can substitute the paste with cashew or badam paste or a combination of both !! :)

VEGETABLE STOCK
5 cups water (1 litre)
2 onions , cut into half
2 carrots , cut into half lengthwise
1 bulb leek, slit into half
1 turnip, cut into half
10 whole garlic cloves
1 bay leaf
4 celery sticks
3 whole parsley sprigs
simmer everything together till the vegetables are well cooked but not mashed up to discolour the stock.
strain and store in refrigerator for future use.

MOONG DAL SOUP WITH PANEER
moong dal - 1/2 cup, soaked
green chilli - 1
turmeric - 1 pinch
oil - 1/2 tsp
cumin seeds - 1/2 tsp
a pinch asafoetida
1 tsp grated ginger
salt
paneer crumbled - 3 tbsp
1. cook dal with chilli and turmeric; blend well and strain.
2. temper with the ingredients and serve garnished with crumbled paneer, and coriander leaves.

vegetarians can always substitute the non veg stuffs with veg. :)
only if a nonvegetarian tastes the dishes made with veggie stuff instead of NV , will he/she find out... :) veggie lovers anyways wudnt have tasted the original dish, and so it will not make any difference to them...... i hope :hammer: , something like that..

CREAMY ASPARAGUS SOUP
fresh asparagus - a bundle
butter - 3 tbsp
plain flour - 3 tbsp
1 cup water
1 cup milk
1 egg yolk (vegetarians, just leave this one item :) )
sour cream - 3 tbsp
corn flour - 2 tbsp
chopped parsley
salt and ground white pepper
1.Boil asparagus in 3 cups of water until tender. Drain and set aside, reserve the water.
2. grind to a paste, reserving a few heads for garnish.
3. Melt butter, add flour and cook until golden. Add the cold water and milk, mix well and add the reserved asparagus water and mashed asparagus. add seasoning; simmer.
4. mix sour cream, 2 teaspoons corn flour, egg yolk, with 5 tablespoons cold water until smooth.
5. Turn down heat, and add cream mixture to soup, stir and simmer very slowly but do not boil. adjust seasoning.
6. garnish with chopped parsley and asparagus heads.
7. serve.

MODIFIED INSTANT SOUP :)
knorr's cream of vegetable soup - 1 pk
(the dehydrated veggies in this drive me mad, but i like the taste of this soup)
sieve the soup powder, so that u remove all the dehydrated veggies;
To the powder add 4 cups of water + 1 cup of milk + 1 boiled, mashed up potato + needed amount of salt + 1/4 tsp chilli powder + any fresh , cooked chopped veggies of ur choice
simmer till thickened; serve.

RAMADAN KANJI
i usually bring the broken basmati from india.
broken raw rice - 1 cup
(to make it , soak basmati for an hour and knead/crush it well )
moong dal - 3/4 cup (roasted till golden)
chopped mixed vegatables (peas, carrots and beans) - 1/2 cup
minced lamb - 1/2 cup
ghee/ oil - 1 tbsp
whole cumin seeds - 1/2 tsp
whole fenugreek seeds - 1/2 tsp
green cardamom whole - 2 nos.
cinnamon stick - a small piece
cloves - 4 nos.
onion - 1 large, finely sliced /chopped
tomato - 1 small, chopped (optional)
ground ginger - 1 tbsp
ground garlic - 1/2 tbsp
green chillies - 4 to 5 nos.
chopped coriander leaves - 2 tbsp
chopped mint leaves - 2 tbsp(can use whole too)
turmeric powder - 2 pinches
chilli powder - 1/2 tsp (optional)if u dont want ur kanji to change colour cut chilli powder, instead increase green chilli
coconut milk - 3 tbsp( can increase if u like)
grated fresh coconut - 2 tbsp
salt - to taste
lemon juice (optional)
1. heat ghee and add the cumin, methi, and whole garam masala.
2. add the onion and fry till it is colourless; add tomato, ginger garlic, green chilli and minced meat. fry till it is dry (dont brown)
3. add the mint and coriander, then the spices and salt.
4. add rice, dal and veggies. fry.
5. add about 5 cups of water and pressure cook.
6. add the coconut milk and the grated coconut.
7. serve hot with hot pakoras/bajhiyas accompanied with mint chutney.

this ramadan kanji is a must for breaking the fast in all muslims homes in tamil nadu..

butter - 1 tbsp
fresh mushroom - 1 cup, chopped (save some sliced ones for garnish)
flour - 1 tbsp
salt, pepper
vegetable/chicken stock - 500 ml
milk - 1 cup
1. heat butter and saute mushroom.
2. add the flour and cook without discolouring; add stock and seasoning.
3. stir to avoid lumps and simmer for a few minutes. cool and blend.
4. return to heat, add milk and bring to boil.
5. check the seasoning and serve garnished with sauteed mushroom slices.

FRENCH ONION SOUP
butter - 1 tbsp
onion - 1, thinly sliced
sugar - 2 pinches
flour - 1/2 tbsp
brown stock - 500 ml (the classic soup uses beef stock)
salt, pepper
toasted french bread
parmesan/ gruyere cheese - 1/2 cup grated
1. heat butter and fry onion sprinkled with sugar till golden.
2. add in flour and saute; add the stock and simmer. season.
3. to serve:
place soup in bowls, top with toasted bread and then grated cheese; grill till melted and serve.

PROVENCALE SOUP
oil/butter - 1 tbsp
garlic - 2 cloves, minced
onion - 1, chopped
potatoes - 1 large, peeled and chopped
tomato - 1, chopped
chicken stock - 1 litre

mixed herbs - 2 tbsp chopped (basil, thyme, tarragon, rosemary, parsley, etc)
1. saute garlic, onion in oil. add potato.
2. add in tomato and cook till mashed; add stock and season.
3. simmer till done.
4. add all the herbs and serve.

GULYAS SOUP (hungarian)
boneless meat - 200 gms, cubed (the original recipe uses beef )
oil /animal fat - 2 tbsp
onion - 1, chopped
paprika - 2 tsp
salt to taste
fresh ground pepper
marjoram - 1/4 tsp
caraway seeds -1 tsp
garlic - 3 cloves, minced
tomato - 1, finely chopped
potato - 1, diced
green pepper -1 , big chunks
stock - 1 litre
1. heat fat and saute onion; add meat.
2. add the garlic and spices and season.
3. add 1/4 cup of hot water and simmer.
4. add in tomato, green pepper , potato and stock :cook till done.
5. add flour dumplings using a spoon into the soup; cover and simmer till done. serve.
dumplings:
combine together 4 tbsp of flour, 1 tbsp of butter, a little milk , a pinch baking powder and salt to make thick batter like dough.

Made mushroom soup today... it was sooooooooooo delicious... just like what we get in the restaurents here... I subsituted wheat flour for plain flour & didn't add cream... but a bit of sour cream would make a huge diff,I guess... will try it out next time... Thanks a lot for the recipe...:)

GAZPACHO (spanish)
ripe tomatoes - 2 , skinned and chopped
green capsicum - 1/2 small, deseeded and chopped
cucumber - 1, peeled and chopped
garlic - 1 clove
stale bread - 1 slice, crust removed
onion - 1 tbsp, chopped
salt, pepper
olive oil - 2 tbsp
lemon juice - 1 tbsp
tabasco sauce - a few drops
cumin powder - a pinch
1. blend all the ingredients together.
2. chill and serve garnished with finely chopped onion, tomato, capsicum and coriander leaves.

CHICKEN AND SPINACH CLEAR SOUP (chinese)
chicken stock - 1 litre
garlic and ginger - 1 tsp, minced
onion - 1, chopped
green chilli - 1, chopped
simmer the above for 10 minutes and strain.
return the soup to the flame and add the following:
cooked chicken cubes
chopped spinach/ whole baby spinach
1 tsp cornflour diluted with 1 tbsp water
keep stirring to avoid lumps.
when spinach is done, remove from heat.
serve piping hot.

MIXED VEGETABLE SOUP

courgette - 1, chopped
peas - 1/2 cup, frozen
salt
freshly ground pepper
parsley/coriander - 1 tbsp, chopped
1. heat oil and saute onion for a minute; add the potatoes and saute 3 minutes.
2. add the stock and simmer 5 minutes.
3. add the rest of the items and simmer till done.
4. adjust seasoning and serve garnished with parsley or coriander.

Does anyone have the "GM diet's wonder soup" recipe, there are some recipes on the web that don't really suit the indian tongue, if anyone got their version, would be great.
