Does anybody got recipe of AVAKAYA pickle that we get in andhra restaurant with mustard powder, gingely oil/mustar oil, lots of chilli and..........

MANGO PICKLE
Raw sour Mangoes - 5, large
Turmeric - 10 gms
Red chilli powder - 100 gms
Salt - 1/2 cup
Fenugreek powder - 1 tbsp
Mustard powder - 1/4 cup
Gingely oil - 2 cups
Fenugreekseeds - 1tbsp
1. cut mangoes into chunks.remove seed/pith.
2.Wipe each piece with a cotton cloth, should be completely dry .
3. in a dry bowl mix all items along with half the oil.
4. Store them in an air tight jar and pour remaining oil; close with a tight lid.
5. Mix thoroughly on the third day and pour more oil if needed.

I never that avakaya pickle is such a simple one to make.
how long should the pickle be stored in jar?
Do you suggest any particular variety of mango?

variety is no problem...just see to that it is sour enough for pickles!!
once it is in the air tight jar, store in it....this method, u can keep for nearly two months, provided u have dried the chunks properly
if u want longer shelf life then mix mango with salt and turmeric alone and keep it in the sun...water oozes out in to the stored jar..remove mangoes without using hand directly and dry them in the sun
in the evening u can put them back into the jar ...the next day put again in the sun...do this repeatedly till the mango is dry.
now mix all the ingredients needed and store in airtight jar
this one keeps for almost a year!!

I dont know the exact recipe for avakkai pickle can ask my mom and let you know it though.Its different from the usual mango pickle.You do not add chilli powder but grind chillies along with methi and mustard and lots of other stuff.The main thing to be noted is the mango itself has to be cut with a little bit of the seed's outer layer sticking with it.In chennai there are vendors who do the cutting for you.

thanks a lot for the recipe, description and explaination. I sure this is very well tried a sucessful recipe.........I am really tempted to try this out.
should i increase the qty of chilli and other ingredients depending on the nos of mangoes as well
I also see mango pickle recipe with G&G. Please tell me which one gives more taste and longer shelf life.

Hi all,
I made avakaya pickle........turned out yummy. pickle looks great and tastes GREAT.. Even my neighbors appreciated, few asked for a recipe too.
Thanks for all the contributions, I just followed the recipe of mr.trivedi, with ginger and garlic...and other things.
My concern is about excess oil that floats of top of pickle.
