Hi friends,
my baby is turning a year old next month and i wanted to make a cake for her birthday but so far havent got a good recipe for a cake thats already tried out. I was wondering if anyone with good baking skills could give me a great recipe for a birthday cake !!

I have baked this cake several times for kids, and they love it. I used a different topping though. The one given with this recipe is also good, I have tried it.

Hot Milk Cake
Cake:
1 tablespoon butter
1/2 cup milk
2 eggs
1 cup sugar
1 teaspoon vanilla
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder


Topping:
5 tablespoons butter
5 tablespoons brown or white sugar
3 tablespoons milk or cream
3/4 cup coconut

Directions:
Cake:
Preheat oven to 350 degrees F. Heat milk and butter together until milk is hot but not boiling, and butter is melted.


In mixer bowl, beat eggs and sugar together until very light. Stir in vanilla.


Mix flour, salt and baking powder together. Remove beaters and add flour mixture to egg mixture alternately with milk-butter mixture. Fold until smooth.


Spread batter in a greased 9 inch square pan. Bake for 20 minutes, until top of cake springs back when touched lightly.


Topping:
Melt butter. Add sugar, milk and coconut.


While cake is hot, carefully spread topping over. Place under hot broiler and watch until bubbly and golden.

Edit: Well, I didn;t do that last step of putting under hot broiler.

hello
I want to know how to make some cookies and cakes. We r a pure vegeterian even not taking egg, so please any body help with me to baking cakes and cookies without egg.

Even though you don't use eggs, I think you can try all the recipes using egg substitutes. A google search gave the following info.

What is a good substitute for eggs?

Ener-G Egg Replacer - follow directions on box.
2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.

Ingredients (use vegan versions):

2 oz of soft tofu can be blended with some water and substituted for an egg to add consistency. Or try the same quantity of: mashed beans, mashed potatoes, or nut butters.
1/2 mashed banana
1/4 cup applesauce or pureed fruit
One tablespoon flax seeds (found in natural food stores) with 3 tablespoon water can be blended for 2 to 3 minutes, or boiled for 10 minutes or until desired consistency is achieved to substitute for one egg.
1 teaspoon soy flour plus 1 tablespoon water to substitute for one egg.

Does anyone know how to bake in a Pressure cooker? I do not have an oven/microwave. I've heard that you can put the cake batter in a vessel inside the pressure cooker, filled with water & steam it. has anyone tried this?

I've seen my friend make cakes in pressure cooker... She keeps a stand inside the cooker. Pour the cake batter in a vessel & keep it on this stand. Close the cooker but son't use the weight... she usually bakes it for 30-40 mins... No water is used in the cooker...

You can use any stainless steel stand that is used as vessel rest...ie, the round stand used to keep hot vessels on the serving table etc...

Years ago, I had a neighbor who always made delicious and nice looking cakes in the pressure cooker. She didn't have an oven. Since I had an oven, I didn't ask her the details of making cakes in the pressure cooker. She told that it took her 5 or 6 trials to get the right method of doing it. When you make the first time, you may need to open the pressure cooker and check for the doneness a few times. Then you will know how many minutes your cooker takes to bake a cake. You will get the hold of it very soon. I think you can use any round dish that fits inside a pressure cooker. Remember you should not add any water in the pressure cooker.

My friend used a dish like this inside her pressure cooker.

Thanks again REd Pepper. My baking has taken a back seat. I'm too busy these days. So, I get the ready-to-eat Ashirwaad meals. Not really a fan of those but no choice. I'll be baking soon.
