You can try this recipe, very tasty...but must eat is when it is still hot.
1 medium chicken - cut it to small pieces
4 big onion (cut it in big squares)
10 pieces of dried chili - cut it to small pieces - (an inch a piece)
4 cm ginger
5 pieces of garlic (peel skin and grind together with ginger - very fine)
1 tablespoon Oyster sauce
2 tablespoon Soya sauce (thick black sauce)
1 teaspoon sugar
1/2 cup of plain water
Salt to taste
Unskin the chicken and marinate the chicken with the grind ginger, garlic and salt for 10 minutes and fry it (half cook) take it out. Add dried chili into the same oil and fry it for a minute and take it out.
Reduce oil to 2 tablespoon (you can add more oil) and fry onion 5 minutes add Soya sauce, oyster sauce and of water and salt to taste. Let the sauce for 5 minutes add fried dried chili, sugar and add the fried chicken into the sauce and let the chicken nicely blend with the sauce and take it out once it is dry.
Eat it hot with rice.

nov, what is kuih?
Oldposts
22nd November 2004, 11:49 AM
ROTFL!
Kuih is Malay for ????
OK, you need to add two deep fried items: One is flour, onions, bean sprouts, beancake, kuchai leaves combination; the other is flour, coconut, chilly powder combination. They are fried and then sliced and served.
But these items are optional.

Hello Rasheeth,
I am posting Boneless Chicken Curry (you can add cream/butter )here. This is from my old posting.
Cook and see I am sure you will like it .Let me know the result.
BONELESS CHICKEN CURRY
INGREDIENTS
250 Gms of chicken breast and boneless meat
Three fairly medium sized onions,
Four tea spoons of Ginger Garlic paste for marinating
One spoon of Paste of Nutmeg and three to four cloves and five cardamoms
Two to three spoons of paste made out of six to seven Cashewnuts or Peanuts and Poppy seeds for the gravy
One spoon of Cinnamon powder
Half a spoon of Turmeric powder
Two spoons of chilli powder (small)
One cube of papaya fruit mashed ( This will make the chicken very soft)
Two tomatoes finely diced
One spoon of Lime Juice
Two spoons of Ghee/Oil
Salt to taste
Two sticks of Cinnamon
Four to five cloves
METHOD OF PREPARATION
Make the paste of onions and keep aside
Make paste of Ginger and Garlic about four Tea spoons add a little salt
Now gently smear the ginger and garlic paste on the pieces of chicken.
Now rub the pieces of chicken in the Nutmeg ,clove and cardamom paste
Keep it in the fridge for about 45 minutes to one hour.
When the marination is over , take the chicken out and let it be at the room temparature for another ten minutes or so.
Take a Kadai and put Ghee /oil ,Add a piece or two of cinnamon and four cloves for tempering.
Take the onion paste and put it in Kadai when the oil is hot.
Turn the paste in kadai till the raw smell of onions goes off and oil /ghee starts to separate.
Add salt to taste.Take into consideration the need of salt for gravy also
Now add diced tomatoes and One cube of papaya and saute till Tomatoes become tender.
Now add the Chicken pieces in the kadai,
Add two spoons of Chilli powder, half a spoon of Turmeric powder and one cup of water
Cover the Kadai with a lid and allow the chicken to cook on a medium flame
.
From time to time check for water and keep adding small quantities of water.
When the cooking is 3/4 th over, add Cashewnuts paste with little water.Mix thoroughly
This is to avoid sticking of gravy at the bottom during cooking
The chicken will take about fifteen minutes to get cooked.
When the chicken if perfectly cooked, add little lime juice to taste.
Ganish with silver foil and cream if you want and serve hot.
NOTE.
In my experience, if you are serving for dinner, it is better to cook the chicken or any spiced dish atleast two hours before the dinner or lunch time. This brings out the best of the taste.

I have my own recipe for all chinese foods...Try it and mail me back for more.
The basic preparation of chicken is a must for all chinese chicken recipes.Do it as follows....
1.Cut 1/2kg of boneless chicken into small pieces.Add two teaspoons of maida and two teaspoons of cornflour to it.
2.Beat one egg in a vessel and add half of its content to the chicken mixture.
3.Mix all the above contents and then deep fry it in refined oil.
This is the basic preparation for all chicken dishes in chinese recipes. This chicken base is then used to prepare whatever dish you want, like chilli chicken, garlic chicken, honey chicken etc.,
For chilli chicken.......
Ingredients..
1.1/2 kg of the above prepared chicken.
2.2 large onions(slice into thin long pieces)
3.Green chillies-5(slit open it lengthwise)
4.Capsicum-1(cut into medium sized pieces)
5.Garlic-3 cloves(cut into very tiny micro pieces)
6.Ginger-A small piece(1 inch size)(cut it as the same size as garlic)
7.Vinegar-3 teaspoons
8.Ajinomoto-1/2 teaspoon
9.corn flour 1/2 teaspoon(mix it in 2 teaspns water to form a paste.
10.sugar-1 teaspoon
11.refined oil for frying(approx. 2 teaspoons)
12.salt-to taste
13.Soya sauce-1/4 teaspoon
Method-
1.Heat oil in an iron vessel( always use iron vessels for chinese cooking you will feel the difference in taste)
2.Add garlic and ginger and fry it till brown.
3.Add green chillies and fry for just 30 seconds.
4.Add onions and fry till golden brown.
5.Add capsicum and fry for 30 secs.
6.Now add 1/2 a cup water and also the vinegar and boil for 20 secs.
7.Add the corn flour paste and when the mixture thickens add salt, ajinomoto, soya sauce and sugar and boil for 1 minute.
8.Finally add the chicken to the mixture and boil it for about 3 minutes.
Garnish and serve hot.
If you want the chicken to taste more hot then add a little red chilli sauce or if u want it to taste more sweet, add a little more sugar.

hai jay,
Here is a very tasty and simple receipe for u.
Chicken 65.
Ingridents
Chicken Breast (skinless) 2 pounds
2 Chili Powder (Red Chili Powder) 1 teaspoon
3 Black pepper powder 1/2 teaspoon 2
4 Salt 1 to taste 1
5 Egg white 2 whites 90
6 Corn flour 2 tablespoons
7 mida 15.5
8 curd 1 cup 200
9 Ginger Paste 1 tablespoon 21
10 Garlic Paste 1 tablespoon 21
11 Food colour (orange) 1/4 teaspoon
12 Salt 1 to taste 1
13 Vegetable Oil 2 tablespoons
14 Lemon juice 11/2 tablespoon
15 Oil for deep frying 1
Cooking procedure:
Cut chicken breast into bite sized pieces. To this, add chili powder, pepper powder and salt to taste. Keep aside for half an hour.
At the end of half an hour, in a deep bowl, mix all the following thoroughly: the above chicken pieces, corn flour, egg whites and refined wheat flour/maida/all-purpose flour.
In a deep skillet, heat oil (enough to deep fry the chicken pieces) and when oil is hot, fry the chicken pieces until they are light brown on all sides (you may wish to fry the chicken pieces in a couple of batches and do not over crowd the skillet with them). Also, fry the chicken pieces on medium heat so that they are well done inside also, instead of turning brown right away, which can happen at very high heat. Remove from oil and keep aside.
Heat the two tablespoons of oil in a wide skillet and when oil is hot, add garlic and ginger pastes and fry until it turns brown. Now, lower the heat to medium-low and add butter milk, food colour, salt to taste. After two or three minutes raise the heat to medium and cook until the butter milk mixture comes to a boil. Now add the chicken pieces from step 3 and stir. Raise heat to high and cook, while stirring periodically, until the liquid is absorbed/evaporated and the meat looks dry.
Remove the skillet from heat and add lemon juice. Stir well.
Serve with plain white rice, rasam or sambhar or with tomato dal. It is occasionally served as a snack too.

Chilly Chicken is not a Chinese Dish, The first thing I did after coming to Hong Kong is looking for Chillie Chicken, But they didn't know what it was.
So dears-Chilly Chicken is an Indian dish with a good taste. If you don't beleieve me come to China or Hong Kong and ask for chilly Chicken and if you can find it " I Bet you will not".

contd.......Andhra chillie chicken
Take a kilo of chicken and cut into bite sized pieces, clean and dry. you will need a handful of green chilly which should be crisp and smash this coarsely ,till they break up into two to three pieces. add these chilly to the chicken with about 4 spoon of green chilly sauce, one egg beaten,a little salt and a cup of water. mix the ingredients and cook on a very low flame in a heavy bottom vessel stirring constantly.otherwise the egg will scramble and that is not how it should be.keep turning the chichken till the chichken is cooked.you may add a little oil if necessary.

cntd........Andhra chillie chicken recipe method 2
Apply this yogurt mixture liberally on the chicken pieces and leave to marinate for four to six hours, preferably in the refrigerator. Clean, wash and finely chop fresh coriander leaves.
Heat oil in a pan, roll the marinated chicken in refined flour, shake the excess flour and shallow fry. Cook for one minute, turn over the chicken pieces and cook for another minute.
Reduce heat and cook for five to six minutes, turning the chicken pieces frequently for uniform cooking. Remove and drain the chicken.
Transfer the chicken to a shallow pan and keep on medium heat. Sprinkle chopped coriander leaves, two tablespoons water and cover with a fitting lid. Reduce heat and cook for five minutes on low heat or until the chicken is completely cooked.
Serve hot.

Dont add tomatoes. Add green chillies, pudina and coriander leaves. You can make these into a paste too. If you want dark green colour, add more of these.
