Hi All,
The black sticky rice is available in thai and chinese shops and used in making desserts.it is a sweet rice variety. it is called "kaounu arisi" in tamil and is a "Chettinadu" special sweet.

soak 1 cup rice for 6 to 8 hrs or over night. the water soaked would turn to purple or dark colour. just rinse the rice as u would normally do and add 4 cups of water and pressure cook. the rice should be cooked well and mashed and sticky.
now add sugar, grated coconut 3tbsp, ghee and powdered cardamom mix well. u can omit coconut if u want. sugar as per ur taste. mix well and serve hot. It would be sticky and blackish ordark purple color. dont get scared by looking at the color , just taste it. enjoy!

I had the kavunu arisi in one of my friends marriage in chettinad . I liked it very much . Once i had been to her place here and she prepared it for me . I asked about the rice and she told that her mom sends that special rice from india . I was disappointed .. Now that u have told abt the black rice i will try using that . Is kavunu arisi and black rice exactly the same ?? Take ur time to clarify me .

Hi Pr,
Kavunu arisi is the same black rice. first time i too got it from india, but then came to know that we get it here from thai or chinese shops. it is more better quality.i was so excited to see it here.

Hello rsankar,
In chennai u will get it in food world, nilgiris and other big supermarkets,u can also try some small grocery shops. but u get the same rice here in thai and chinese shops which i find to be more good quality.

Hi Kz,
Thank u for sharing this absolutely simple yet delicious dessert with us. Tried it, came out good. I had used only half cup rice thinking that 1 cup raw rice will turn into a lot of cooked rice. But I see that this black rice does not actually increase in volume upon cooking.
I had eaten this at a dessert stall here in singapore, but I never knew that this black sticky rice was used in Indian cooking. In the dessert stall they just serve us this rice, boiled with palm sugar(I think, not sure) with a dollop of coconut cream. But your version is much more tastier.
Do u have any other recipes using this black rice?

Thankyou! when i was in india i thought that this rice is only an indian dish and after coming here i came to know that even thai ppl use it. another recipe using black rice is black rice payasam. my friends have tried and said it was good but i haven't tried it yet. will try it sooner and let u know.

Black rice payasam:
black rice 1 cup soaked overnight.
jaggery 3/4 cup (according to ur taste)
little cardamom powder, coconut gratings optional. milk or water.

cook rice as usual but cook it for more time so it gets mashed up , add more water and cook for a while , add jaggery, cardamom powder, coconut gratings, and water and make it to payasam consistency, if u want u can add milk too. dont make it too thin, let it be thicker.

this sticky black rice is also called karuppu puttarisi in india.infact there r 2 types of putarisi .that is vellai putarisi & karuupu putarsi .both r equally good.the black sticky rice bought in chinese shops r of better quality than those available in india

Shreya, have u tried puttu with this rice, if so how is it? any difference with the normal white puttu?

there is one more rice, red rice which we can use for puttu, we get that in madras in all shops, it is used for kolakattai too. it is more tasty than the white puttu.( sikapu arisi)

the name of the rice is called putarisi & not puttu arisi.infact putarisi is the tamil name for sticky rice & no i have never tried making puttu with this rice but my mom makes delicious coconut milk based rice pudding with this rice.

this is my mom's recipe for coconut milk based black puttarisi pudding
first wash & soak the black puttarisi (black sticky rice) in water overnight. the next day pressure cook it with 1:2 proportion of rice & water,a pinch of salt ,1tsp of sugar & 2 tsp coconut milk.cook it for about 20 minutes after having put on the weight.when cooked add some more thick coconut milk, sugar(according to the sweetness desired)& mix well till u get the consistency of thick payasam & serve hot.if u want u can also add a tsp of ghee just before serving
btw can u use the black puttarisi to make puttu .?if so how do u do it?for i have never tried preparing puttu with black sticky rice

Thanks Shreya for the recipe. I haven't tried puttu with this rice, since u mentioned it is called as puttarisi i thought may be we can use it for making puttu. I have tried puttu with white rice flour and red rice and ragi flour. they all are good. kolakattai made with red rice is yummy.
