ADA PRADHAMAN

Ada 50g
Jaggery 150g
Coconut milk 250ml
Sultanas 25g
Cashew nuts 25g
Ghee 50ml
Cardamom powder 5g
Coconut 10g
Method of preparation
1 Parboil the ada and drain the water thoroughly.
2 Make syrup with jaggery, water and strain through a muslin cloth.
3 Add the ada to the syrup and cook it well.
4 Add the coconut milk , cardamom powder and just heat but do not boil.
5 Finish with fried sultanas, cashew nuts and coconut.

The traditional way of adapradhaman is: Grind raw rice after soaking it for an hour or two into fine paste..add water to make it dosa batter consistency..spread this batter on a piece of plantain leaf, roll and tie these rolls and boil them in a pan of water, when done, take the rolls out, take the ada from those leaves, cut into small pieces, and cook with coconut milk taken with adding water...when done add jaggery syrup, and cook for a few minutes, add the first coconut milk and cardamom powder, stir well and switch the flame off. Fry dry grapes and cashew in a table spoon full ghee and add to this and serve hot.

For palada pradhaman, substitute coconut milk with condensed milk or bioled milk, and jaggery with sugar.

Now the easy method:
Take one packet of ada available in the market and wash well. For 2 cups of ada, add 3 cups of water and pressure cook for 8-10 minutes. Add condensed milk to this cooked ada and cook for a few minutes in low flame with continued stirring. lower the flame and add somemore sugar if u want, as condensed milk is already sweet. Fry kismis and cashews in ghee and add to the delicius palada pradhaman. other way, cook the palada in diluted coconut milk, when done, add coconut creamy milk, jaggery syrup, and stir on a low flame.
