How to prepare muttai kolambu?

Boil muttai, get rid of the shells and keep aside.
Ingredients
Green chilli slit longitudinally
mustard
red onions slit longitudinally
ginger pieces
tomato chopped in squares
curry leaves
mint leaves
coconut milk
corriander leaves
sombu
cumin
Method
Split mustard seeds in oil
add cumin and sombu seeds
wait till they brown
add onions until brown
then add tomatoes
curry leaves
mint leaves
and saute till you get a nice thick gravy
add boiled eggs (you can cut them in 1/2 per your taste)
after all is done ...add some coconut milk
garnish on top w/ corriander leaves.

after you get a thick gravy .....add garam masala, chilli powder and some curry powder...
then do the rest as i said

Recipe for chettinad style mochai payaru kuzhambu
Mochai Payaru 200 gms
2 Tomatoes
2 onions
5 cloves garlic
2 spn coconut gratings
3 spn shambar powder
lemon size tamarind
Soak the Mochai Payaru the previous evening. The next day half cook the mochai seperately with little turmeric powder.
Finely slice the tomatoes and onions and girnd the coconut. In a vessel take some water and add the mochai,tomatoes,onions and the shambar powder and boil.When the contents are cooked add tamarind(dissoled in water) and the cocount paste and allow it to boil well. Remove from fire. Heat a pan with little oil and add mustard seeds, urad dal, cummin seeds and curry leaves. When mustard seeds splutter add this to the kuzhambu and bring to a boil and then add crushed garlic and remove from fire. This is a very tasty kuzhambu. The mochai can be substitued for vegetables also. It tastes equally good.

This is how I make Muttai kozhambu
Ingredients
2 finely chopped onions ( medium size)
2 chopped Tomatoes
4-5 chopped garlic coves
2 tsp chilli powder and dhaniya powder( or sambar powder)
salt to taste
tumeric 1 tsp.
tamarind juice 3 table spoon
coconut milk or groung coconur paste 3-4 table spoon
for seasoning- mustard seeds, cumin seeds and urad dhal
curry leaves to garnish
3 eggs
method-
heat the pan with 2-3 table spoon of oil and add mustard seeds cumin seeds and urad dhal. after the mustard seed splutters fry onion till golden brown and add tomatoes , tumeric, and sambar powder. fry all in oil for 2 minutes and add garlic . add water to this and cook well atleast 5-8 minutes. then and tamarind juice cook in medium flame for 5 minutes till raw taste of chilli and tamarind dissappear and add salt to taste .Add coconut now and boil kozhambu for 1 minute and bring it to very low heat.finally at this stage break the raw eggs and pour them in different places into the mixture in the pan.It is important to cook them in very low heat for 8-10 minutes.add curries leaves and remove from fire.this is a very tasty dish .the white yolk of egg will disperse a little bit but it add taste.
do not cook the eggs in high flame, it will stick to the pan .
