KATHIRIKKAA KOOZH PANCHARAM
Ingredients :
Brinjal : 250 gms.
Tomatoes : 2 large ones
Tamarind : a small ball - lemon-sized.
Onion : 1 big
Green chillies : 5-6
Garlic : 4-5
Kashmiri chilli : 1 tbspn (for colour)
Wash the brinjals and boil them. Mash them till you get a smooth brinjal paste. Heat a pan, pour oil. When oil is heated, add mustard. When mustard seeds splutter, add curry leaves, chillies and garlic, and cook till the raw smell is gone. Add chopped onions and cook till transparent. Then add tomatoes and cook for 5 minutes. Brinjal paste, tamarind juice and kashmiri chilli should be added later and cooked.
This is called Koozh Pancharam. It can be prepared with Potatoes, Yam, Cabbages, etc.
One can make it with ripe bananas or mangoes too, to give it a sweet taste.
