Perfect Pav bhaji

What are the vegtables that we can put in Pav bhaji?
I ususally add Potato, Tomato, onion, carrot and beans.
But the taste does not come out so well.
Any inputs?

Delicious Pav Bhaji recipe
Ingredients
50 gms butter
1 tsp jeera
1/2 capsicum, chopped
1/2 onion, chopped
2 tomatoes, chopped
1 potato, boiled
A handful of peas
2-3 garlic flakes
1/2-inch ginger
A handful of cashewnuts
2-3 dry red Kashmiri chillis
Dhania leaves
1 tbsp pav bhaji masala
1 tbsp dhania powder
Salt to taste
For the ginger-garlic and red chilli chutney:
Blend garlic flakes, cashewnuts and ginger into a paste. Similarly blend red chillies and water into paste and set aside.
Method
1. Heat two tablespoons of butter in a tava.
2. Temper jeera, once it starts crackling, add capsicums and onions.
3. Add tomatoes and potato and mash well.
4. Heat some more butter on the tava.
5. Add ginger-garlic and red chilli chutney and mix well.
6. Add mashed bhaji and stir.
7. Add dhania leaves, pav bhaji masala, dhania powder and salt and mix well.
8. Mash the bhaji well and serve hot with pav.

Other variants of Pav Bhaji
• Jain pav bhaji — pav bhaji without potatoes, onion and garlic
• Kada pav bhaji — cook the same way but don't mash the vegetables
• Paneer pav bhaji — regular pav bhaji garnished with loads of paneer
• Cheese pav bhaji — regular pav bhaji garnished with cheese
• Sadguru special pav bhaji — garnished with cheese and dry fruits

Masala Pav
Ingredients
Pav
2 tbsp butter
1/2 onions, chopped
1 tbsp, chopped capsicum
Dhania leaves
1 tbsp ginger-garlic paste
1 tbsp red chilli paste
1.2 tsp dhania powder
1/2 tsp pav bhaji masala
Salt to taste
Method
1. Heat butter on a tava.
2. Add ginger-garlic paste, red chilli paste and saute well.
3. Add onions and capsicum and mix well.
4. Add pav bhaji masala, dhania powder and mix it well.
5. Stuff this mixture in pav and cook for two more minutes.

If I add cauliflower and carrots, do I have to cook the vegetables separately?

Just grate the cauliflower and carrots and add them along with the other vegetables. Don't forget to mash them though. Anyway it's easier for them all to become one fine paste and nicely cooked since they're finely grated!

I am surprised that an Indian Lady(using the term loosely) would combine the words eat and s#$% in the same sentence. Shame on you. I love Pav Baji by the way.
