Sweet Potato fry for a change identical to our good old Potato fry rather simple concept
1. Just sweet potatoes (big 3) or (small 5)
2. Dice the sweet potatoes tiny and thin for easy frying ( any shape but ensure that it is thin, tiny sliced)
3. MTR Rasam powder half teaspoon sprinkle
4. Skati Sambar powder half teaspoon sprinkle
5. Turmeric powder just sprinkle
6. (Red pepper powder) or (Hot Chile powder for real hot fry ) a pinch or two would be satisfying
procedure:
1. heat a fry pan
2. 1 tablespoon corn oil or bean oil or olive oil
3. sprinkle mustards and let it sprout
4. just add the diced sweet potatoes handful at a time to the hot oil
5. keep deep frying the sweet potatoes in high flame
6. after adding all the sweet potatoes to the pan bring the flame down
7. Now sprinkle the MTR Rasam powder ,Skati Sambar powder and Turmeric powder , Red pepper powder (just sprinkle and keep tilting)
8. Add salt to taste (sprinkle and tilt)
9. By the time you are done with all these sprinkling the sweet potato will be done
10. Remove the pan from the cooking range
11. Now toss it to the china bowl
12. Garnish with round slices of onion ,capsicum, coriander leaves and a mint popping upward to the center
It has good nutritive values and it's yummy as a side dish too
