kuttu,poriyal plz help me

Hi Simran.
for all the kuttu poriyal there is a simple masala powder,that if you can make & store will be very helpful in making anyof the above.mostly all the kuttu & poriyal have the same preparation style using this powder.
POWDER FOR PULLI KUTTU & PORIYAL.
daniya seeds
udad dal
channa dal
red chillies
hing
salt
coconut grated.
fry all the above ingredients except salt & coconut in just a tsp of oil ,till the dal gets golden brown.always keep the flame in low.
cool the above mixture & dry grind it with salt & coconut.remember no water should be added if u have to preserve this for a long time,store it in a moisture free air tight container.
now the procedure to make poriyal /kuttu
vegetables
(brinjal,banana,white pumpkin,yam,or any indian vegetable you want)
for poriyal,
,cut & par boil the vegetable of your choice.
just heat oil
splatter mustard curry leaves & hing.
add the boiled vegetables.
cover & cook for 5mins.
add the masala powder for poriyal.
cover & cook until done.
for kuttu with the same masala.
cut & pressure cook the vegetables with tumeric powder.
in kadai splatter mustard,curry leaves & hing.
add tamrind water upto 2cups
now allow it to boil.then add the vegetables along with some sambhar powder & the masala powder for kuttu.
boil it & cook until done.
this is recipe for pulli kuttu.
for coconut kuttu.
pressure cook the vegetable of your choice with moong dal.the ratio of vegetable to dal should be equal.now grind coconut,jeera & red chilli into a fine paste.
in a kadai heat some ghee,splatter jeera ,curry leaves & some red chilli.add the boiled vegetables & the coconut paste.
just give it a boil for once.
its ready to serve.
