Dear All,
can somebody please tell me how to make puttu the tamil style.ie when a girlattains maturity it is specially made for that occassions. at least i can remember it that way. it ismade with rice flour fresh ground with jagegery. it is powderyin consistancy and i haveheard tht it is very difficult to make also

Hi Susan,
My mother's aunt used to make this wonderfully delicious puttu that you're asking about. It is not that difficult to make provided you have loads of time to spare & a lot of patience too... Here's the recipe for it; hope you enjoy it.

SWEET PUTTU
Ingredients:
Rice flour - 1 cup
Grated jaggery - 1 cup
Grated fresh coconut - 1/2 cup
Cardamom powder - little
Water (for flour) - 1/3 cup
Salt - 1/4tsp.
Method:
Dry roast rice flour in a kadai in medium flame till golden coloured. Remove from fire & allow to cool. Heat the water with salt till it becomes lukewarm. Sprinkle this little by little, to the roasted flour & mix well till it resembles fine bread crumbs. Sieve this using a coarse sieve & wrap the flour in a clean cloth like a bundle. Place the bundle in a vessel; keep the vessel in a pressure cooker & steam cook for 10 minutes. Remove from fire & crumble the flour without any lumps. Again pass this steamed flour through the sieve. Mix grated coconut & cardamom powder to this flour & place in a broad vessel. Set aside. Mix jaggery with just enough water to cover it & heat till it melts completely. Strain to remove dirt & heat again till it reaches 3 string consistency, stirring in between. Remove from fire & pour the hot syrup over the flour while mixing gently all the time, till the syrup is blended properly with the flour. Allow to cool & then serve.
