South Indian Wedding foods

In October my daughter (from a western European heritage) will be marrying a young man originally from Bombay, India. His family is orginally from Southern India and is Hindu. We are attempting to combine western and Indian traditions for the wedding. We live in a very small town where Indian food is not available. Particularly since his parents, brother, and other relatives will be coming to the wedding we would like to include some traditional Indian foods (more in the area of appetizers and sweets). I've looked at some cookbooks and am still lost. Can someone help me with some recipes or places to order foods online? I should appreciate some help.

Oh, KH! Thanks so much. I've made a copy for myself, and will talk with the Indian restaurant owner and send a copy to my other caterer. Looking forward to seeing more recipes.

for desert u can hav rice payasam
it's very easy too
smash nicely the cooked rice-1 cup
grind 11/2 cup milk & jaggery 11/2 cup seperately
( u can add the above acco to u'r sweet taste)
first boil the grinded ingredients for few mints(in simmer)
then add the smashed rice & stir continuously
that's it
then seperately in a kadai add ghee cardomom & nuts fry it
& add to the above payasam
instead of rice
u can also use aval

Jill,
One of my friends married an American. They got an Indian friend (who cooks well) to prepare some Indian appetizers and dessert. I just thought that this might work for you, if you can spot a helpful Indian friend nearby.

Sorry for my late response, i was caught up with my friend's baby shower ceremony. Anyway i'm posting some of my recipes for you. BTW, did u decide about dessert and appetizers? I feel that RS has given a good idea!
Rava kesari:
Take a cup of rava and dry fry them for few minutes. Remove from fire and keep aside. In a pan heat 3 cups of water, add very little kesari powder(orange food color) and bring to boil. Then add the rava litlle by little, keep on stirring continously with out forming any lumps. When the rava is cooked, add 2 cups of sugar and mix well. When the mixture separates from the pan, add fried cashew nuts, a pinch of powdered cardamom and ¼ cup ghee. Mix well again and put off fire. This sweet is very easy and very tasty. It will be in deep orange color.

Here's a recipe for rice kheer which i got it from a friend. I have prepared it many times for my guests and it's always a hit.
Rice Kheer:
Rice - ¼ cup
Sugar - ½ cup
Milk - 5 cups
Powdered cardamom- ¼ tsp
Almonds – 7
Pistachios – 7
Saffron thread- 10 nos
(Serves 2 persons)
Method:
Take a tsp of ghee in a pan and fry the rice with cardamom for 2 or 3 mins. When it is cooled, put in mixer grinder and run it in high for a min, so that rice is broken like rava. Then pressure cook the rice with milk for 4 to 5 whistles and reduce the fire and keep it low for about 20 – 25 mins. Then transfer the contents to another heavy bottom pan, then add the sugar and let it simmer for about 20 mins or till done. Now add the nuts and finally add the saffron thread mixed with a tbsp of milk to the kheer. Put off fire, serve hot or cold. Generally kheer will be little bit thick than payasam.

Rice kheer:
Ingredients:
1 litre whole milk
1/2 cup sugar
1/3 cup small grain rice
5-7 almonds, blanched
5-7 pistachios
1/4 tsp. cardamom powder
8-10 threads saffron
1. Wash rice, soak in plenty of water for 20 minutes.
2. Drain water, keep rice aside.
3. Chop almonds and pistas, or crush coarsely,keep aside.
4. Dissolve saffron by rubbing it in 2 tsp. hot milk keep aside.
5. Heat half the milk, add rice, stir till it boils.
6. Reduce heat, allow rice to cook in milk, till almost done.
7. Add remaining milk, sugar, cardamom, saffron, pistachios, almonds.
8. Bring back to boil, stirring gently, but continuously.
9. Reduce heat, simmer for 2-3 minutes.
10.Serve hot.

Semiya payasam:
Semiya(vermicelli): 1 cup
Milk - 1 cup
Water- 1 cup
Sugar- 2 cups
cardamom powder - 1/4 tsp
Cashews - 10 nos
Raisins - 1 tbsp
saffron - 3-5 threads(optional)
(serves 3- 4 persons)
Method:
In a tbsp of ghee frythe vermicelli with cardamom and keep aside. Boil milk and water, when it comes to boling point reduce tha falme and add the vermicelli. When the vermicelli is cooked add sugar and simmer for few minutes. When the payasam starts becomming thick add the cashew and raisins, then add saffron threads soaked in a tbsp of milk to it. Allow it to simmer for few mins and put off fire. You can add more warm milk while serving to enrich the taste. It tastes more or less like kheer!
I prepared semiya payasam and Mysore pak( which i posted earlier) for my friend's ceremony, both was a mega hit.

Hi every1 im new here. u all have good dishes yaa. i was thinking if u could plz give recipes like some derserts and main dishes. BUT BUT plzzzzzzz tell me the ingredients in english coz i do speak hindi but just few words i cant understand like i dont know wht a RAVA is and more.

oh right i know wht sooji is. thankx alot i couldnt understand. anways do u have any good recipes which r easy and i could learn more about them coz now i am seriously learning to cook. and i hope u all can help me.
