There are many different erisseri's and the name goes as "so-and-so erissery". For example "Maththan erissery" is made of red-pumpkins. The funda is always the same though the vegetables
used differ. For Pumpkin-erissery: Cut pumpkin into dicey cubes. Cook with enough water along with haldi (turmeric powder) and salt. Grate coconut (half coconut for a kg of pumpkin) and grind the coconut with two-teaspoon jeera and 4 teaspoons of red chilli powder. Add this ground masala to the cooked pumpkin and bring to boil.
In a frying pan, pour three teaspoons of oil and warm. Put mustard seeds and when they splutter, reduce heat and add grated coconut and fry until coconut becomes pink. Add curry leaves and mix this with the cooked pumpkin mixture. Ready to serve. Instead of pumpkins use yam, raw plantain,
ribbed goard, snake goard etc.

can we substitute jackfruit in this, and do we have to prepare the jackfruit before placing in?

My MIL is from T'veli and Erisseri is their traditional one.
Take Yam and plantain, cook them with turmeric, salt and water. Keep yam on the top and plantain at the bottom.
Dry fry pepper, red chilli and coconut in a pan. Grind them nicely. Season with coconut oil, mustard, curry leaves and urad dhal, add the boiled veg., and ground paste. Let them boil well.
Ready to serve!!

oh no. That is the erisseri that crossed the (tirunel)veli. Across the state they add urad dal while seasoning to make it 'their traditional' erisseri. avoid the urad daal and stick to the first recipe by Ramdas.
