Recipe for making bundi

Can someone please give the recipe (with measurements) for making bundi (laddu). Thanks

Try this one out Mano
Gram flour 2 cups
Sugar 2 cups
Baking soda ½ tsp.
Cashewnuts 50 gms.
Raisins 50 gms.
Cardamom 15 nos.
Saffron A few strands
Milk A few drops
Ghee ½ kg.
1.Shell and powder cardamom. Add ¼ cup water to sugar, heat until sugar melts.
2. To check if the sugar solution is ready, take a drop of the solution and drop it in water-if it remains intact and does not dissolve right away in water, the sugar solution is ready.
3. Add saffron and cardamom powder to it. (While preparing the sugar solution, add a few drops of milk. Impurities will collect on the surface in a layer - remove it.)
4. Add soda and water to gram flour, and make a paste, without lumps.
5. Heat ½ kg. of ghee. Put gram flour in boondi maker and fry boondi. Remove when light yellow.
6. Fry cashew and raisins. Add boondi, cashew and raisins to sugar solution and mix. Cool.
7. Rub some ghee on your palms. Make laddus by squeezing the boondi in your hands.

I supposed the baking powder is optional and the paste consistency should be like dosa mixture ?

Whenever I make Boondhi, I end up with "Comet Boondhi" - the name given at home as there is tail to the Boondhi. It does not come spherical which should be one of the essentials for the Bhoondi. Is it peculiar to me or there are many in the same boat? Can someone give me some practical tips to get the right quality so that I can surprise my folks during this Diwali?

This is a common problem. Add a bit of rice flour ( say 1 tsp) to the batter & you will get the sherical shape. Happy cooking. Bye

Hello Janaka,
Comet Bundi is comet shaped due to two reasons.
The first is that you are using the Bundi sieve too close to oil surface.This results in drops with tails.They need a little distance to become spherical.
Second cause is that your dough is thicker.You need to add a little more water.
Ideal height from oil surface is about 10 to 11 inches.Try it out and let me know.

Dear mrs.mano&suba
Here is south indian laddu recipe.
Kadalaimavu -2cups sugar -21/2cups water -1/2cups soda -1pinch
cardamon -1/2tsp pachakarpooram-1/4pinch
cashew&raisins oil ghee -little.
1.mix kadalaimavu&sodawith water like bajji consistency.keep it for 30minutes.
2.fry bundi in a oil.
3.make sugar syrup.that is when the entire syrup starts boiling ,keeping on heat it for a minute&switche off the stove.
4.now you add bundhi,cardomon powder,pachakarpooramto the syrup.and mix thoroughly.
5.after few minutes slightly beat the mix by mathu or any flat surface with handle.
6.touch ghee&make laddu.

you get sherical bhoondis by making the batter very loose, more runny than dosa batter and holding the bhoondi maker as close to oil as you possibly can so that as it falls it does not have time to get elongated
