Raita is basically lightly whipped yoghurt with seasonings and any vegetables, fruits or boondi. There could be more variations too.
One Raita that goes well with mint is the Potato and Mint raita:
Finely dice cooked potatoes. Chop fresh mint leaves. Wash and pat dry before chopping. Do not rechop, using a bigger knife- this can make the mint leaves appear blackish. You got to chop it fine and right the first time. Mix potatoes and mint with a little salt. Lightly whip yoghurt in a bowl, add the potato mix. Add a pinch of crushed roasted cumin seeds. Serve chilled in a glass bowl, garnished with a sprig of fresh mint and sprinkle some paprika over.
