Gobi manchurian is essentially Cauliflower bajji made into a north indian style gravy curry.
As Ram says its recipe is floating around in a lot of places. You can also do mushroom manchurian.
Infact Mushroom Manchurian is the first one that made it to the menus of popular restaraunts.
For a long time the most expensive dish in many Bangalore restaraunt menus used to be
Mushroom Manchurian. When Alu Gobi was going at 6 Rs a plate, Mushroom Manchurian used to
be 25Rs at Ullas. Bluefox, Oasis etc used to charge upto 50Rs for Mushroom Manchurian in 1985-87.
