Medu Vada

When I make Medu Vada, the inside becomes hard and it is not sopongy as it should be ? What is the Secret ?

WELL, I ALSO MAKE MEDU VADA THE INSIDE BECOMES VERY HARD. SO PLEASE GIVE US SOME CLUES.

Hi,
I usually make vada like this.
Soak Udad dhall and 2 tspns rice for 1.5 hours. I soak the dhall in a casserole. This is supposed to reduce the time we need to soak the dhall.
then grind it and mix salt. I add chopped onions, curry leaves and crushed pepper also.
When you are mixing these ingredients, whisk the batter with an egg beater or a fork so that the maavu gets aerated. This will make vadas lighter.
Now make vadas and be sure to drop them in hot oil.
This should come out well.
