Here's my recipe for Podimas:
Ingredients:
Potatoes
Onions
Green chillies
Ginger - small piece
Turmeric (optional)
Curry leaves, mustard seeds and kadalai paruppu for tempering.
Method:
Place potatoes in a pan of water. Make sure the water covers the potatoes. Add salt and boil till potatoes are cooked. Be sure to add enough salt as you will be draining the water when the potatoes are cooked. Prick with a fork to see whether they are done. When they are cooked, drain away the water and peel the potatoes. It is so easy and fun peeling boiled potatoes. More fun for bystanders if you peel them while they are hot as you will be doing a juggling act!
After peeling, mash them a little so they are in small pieces. Do not mash them completely. They should be in small bits and pieces.
Slice onions, chillies and ginger fine.
Heat pan and pour some oil in it. When oil is hot, add curry leaves, mustard seeds and kadalai paruppu. When mustard seeds have stopped spluttering, add sliced ingredients and a little turmeric(if used). Saute for a few seconds or about a minute or so, then remove from heat and pour over potatoes and mix thoroughly. You may also add chopped coriander leaves at this stage.
Note: Some people do not add mustard seeds and kadalai peruppu. They prefer just onions, chillies and ginger. The choice is yours. I prefer the works!

Adding a bit of lemon juice before serving also tastes good
