Muslim briyani

Just wondering if any one had the recipe for the muslim style biriyani usually made at weddings. It does not taste like normal biriyani. Can anyone provide the recipe for this? Cheers

Muslim Biryani is 'katchi Briyani', meaning the meat is not cooked before hand. Try this recipe.
1 chicken ( make sure you cut it in small pieces - it tastes better)
1 cup plain yogurt ( low fat )
Salt to taste
2-3 tbs blended jalapeno & cilantro (2 jalapenos and a small bunch of cilantro - jalapeno can also be replaced by 1 ts cayenne pepper)
2 tbs ginger garlic paste
3 onions chopped and fried golden brown
some saffron (a pinch)
1 ts garam masala
two tbs lemon juice
1/3 cup oil
2 1//2 cups basmati rice
Mix all the ingredients with the chicken and marinate for about 2 hours ( this is optional - I've done it both ways). Wash and soak rice until it looks milky white ( about 1/2 hour). The grains come out long and slender if you soak it. Cook the rice with some salt until it's almost done, but not all the way. The trick is not to over cook it because it has to go in the oven for about 40-45 mins. You take it off the stove when it looks long but its still not done. Strain the water. In an al.foil pan (the big one), layer the marinated chicken on the bottom, and then spread the rice on the top. Take half a stick of butter and cut it in pieces and stick 'em in the rice. Also, take about 1/2 cup of milk and sprinkle all over and around the pan. Color is optional too. if you want, mix a pinch of orange color in two tbs of lemon juice and sprinkle on top. Cover tightly with Al. foil and bake it for about 40 min at 450. Then check to see if its done. First see if the rice is cooked. Then stick a spoon inside and see if there's liquid. If you do, let it bake for some more time (10 min). It should be done by then. If you think the rice is over cooked, next time don't add as much milk.
I've never cooked biryani with one chicken, I've done it with two. So its hard to know how long it takes to bake. Actually, if you need to cook one pan ( al. foil), it's perfect to serve 15 people. I use 2 chickens and 5 cups rice. If you prefer lamb, 4lbs of lamb can be used with 5 cups of rice.
