Hi,
Wanted to know some simple ,tasty, south Indian breakfast recipes. like some simple dosas,chutneys etc.

Try this simple, yet tasty dosa..
Rice Flour - 1 cup
Maida - 1/2 cup
Sooji - 1/2 cup
Whole Pepper - few
green chillies - 2 finely chopped
curry leaves - few
jeera - 1/4 spoon
mustard - 1/4 spoon
hing - pinch
salt to taste
oil
.Mix Rice flour and maida with water, salt. Batter can be made little more watery than regular dosa batter and set it aside for sometime.
.Heat a little oil add mustard and allow it to splatter, add green chillies, pepper, curry leaves, hing, fry for a 1/2 minute and pour it over the rice flour/maida batter. Crush jeera by hands a couple of times and add that too.
.5 minutes before you are ready to add sooji and check consistency of batter. If it turns too thick add more water so that batter is loose.
.Heat tawa and pour around the sides first and then fill the insides. Add few drops oil to the ends as well as the centre of dosa.
.Once one side of dosa is done turn it over and add few more drops of oil.
.If you like onion can be finely chopped and added to dosa batter.
.Similar kind of dosa can be made with just raji flour or just maida flour.

hi deepa try this out. it will take some time but its worth.
palak 1 bunch (chopped finely)
grind to a rough paste
1 cup white rice (soaked for 1 hr)
red chillies 6 (or depending on how much spicy you need)
corriender seeds 1 tbsp
jeera 1/2 tbsp
methi seeds 10
mustard seeds 1/2 tsp
1/2 lemon size tamrind
salt
method:
mix the chopped palak leaves/calocosia leaves with the grinded masala. all the leaves should be coated with the masala.check for salt and spice. iyou can add chilli powder or salt or tamrind extract if needed.
put this mixture in a foil and cover.
then steam this mixture for 30 mts or more.cool and cut this into squares.or cop this mixture and season it with ghee,mustard ,red chillies and curry leaves.

Hi,
I would like to know the recipe for dosai. I have a 14 speed hamilton mixie and Iam not sure of how the batter might turn out..so I would like to know the recipe in terms of the flours, and in case of mixing the flours should I fermit it before using and can I keep the leftovers in the fridge?
