Can someone give me recipe for some vegetable curries to do every day. Cause other than sambar & potato curries, iam not finding any. If someone could help me out in giving some recipes to make everyday, it would be very useful for me. Thanx..!

Try this recipe. It is easy, tasty and healthy (less oil)..
1 - chayote/beans/cabbage/spinach/dudhi/mango(avoid tomato when using mango)/capsicum/potato
1 1/2 hand full of thoor dhal
1/2 hand full of channa dhal
1 medium sized onion
1 medium sized tomato
3-4 spoons of oil
1 - red chilli (varies)
curry leaves
mustard
1/2 spoon - jeera
1 spoon - sambhar powder
Remove chow chow skin and cut into medium sized cubes. Pressure cook cut pieces with some thoor dhal, half hand full of channa dhal and a pinch of turmeric.
Heat about 3 or 4 spoons of oil in a pan, add mustard seeds allow it to splatter, add a spoon of jeera, add one red chilli (varies depending on how hot/spicy u need), add few curry leaves, add finely chopped onion, cood it for few minutes, add finely chopped tomato cook it for few minutes, add cooked chow chow/dhAl, add sambhar powder, sald and allow it to boil for 5 minutes. Garnish with coriander leaves/cilantro.
It goes well with rice/chapathi.
Try cooking and enjoy eating it! Let me know how it comes out.
