Does anyone know of the easiest way to make thattai (a deep fried snack)? I would like a recipe that involves no soaking or grinding. Preferably one that uses rice flour or something....

Hi,
I came across this recipe, though I have not tried it yet. Hope you will find it useful.
Karam Thattai
Ingredients:
Processed rice flour - 4 cups
Roasted urad flour - 4 tsp (heaped)
White butter - 100 gms
Powdered salt - 5 tsp
Bengal gram dhal - 3 tsp (level)
Red gram dhal (Thuar dhal) - 3 tsp (level)
Oil - to deep fry
Asafoetida - a pinch
Method:
Soak bengal gram dhal and red gram dhal in water for ½ an hour.
Mix all the dry ingredients in a bowl.
Blend soft, fresh butter with this using finger tips so that it mixes evenly with the flour.
Add soaked dhals and mix well.
Divide flour into 4 or 5 parts.
Sprinkle water to one portion and mix to a thick dough. (do not knead).
Prepare lemon sized balls and pat it on top of a polythene sheet or wet cloth like a thin chappathi.
Deep fry in hot oil few at a time till crisp and golden brown colour.
After deep frying, keep on top of absorbent paper till it attains room temperature.
Store in air-tight and dry container.
Regards,
Aarti
