Hi All,
I am trying to learn to make idlis for my husband, who is tamilian. No success yet, but I will try every recipe here until I get it right. Anyway, at some restaurants we have gone to, idlis and dosas are served with a powder of chilli and roasted dal (?), you add vegetable oil to this to make a paste and use like a chutney. Does anyone know what this is called and how to make? Thanks!

Hi Kim,
The powder that you are asking about is called Molaga POdi (literally Chilly Powder) or dosai podi or idly podi. You can find some recipes for the same at the following link. Though I have not tried any of them, I am sure that u will find them useful. Also, the preferred oil for making the paste is usually gingelly oil (Also known as til, yellu or sesame oil), though in a pinch, other oils can also be used.

You get this ready-made. The MTR brand is very good. It's called IDLY PODI
good luck cooking.
