Hello Geetha!
I presume you probably have the recipes for sponge cakes.
Generally there are two types one with fat and the other fatless.
The fatless sponge tends to be more softer, in that a lot of air is incorporated in the cake mix. One way of doing this is to break whole eggs and whip them with sugar over a pot of hot water (not over the stove of course). Do not let the egg bowl get in contact with the water, this may coagulate the eggs in no time.
Fatless sponges tend to be dry and have a shorter shelf life.
The sponge with fat is made with margerine/butter, whole eggs, sugar and flour with an additive raising agent and some kind of flavoring.
The process of incorporating air in this type is by whisking fat and sugar together till light and fluffy, gradually add broken eggs, and whisk vigorously.
In both types, the flour is folded in gently with a flat non-metallic spatula, until all flour is mixed well. This process does release some air thus flattening the product a little.
In case the sponge would be used to make iced cakes, the sandwich ones need to be moistened with light sugar syrup, normally flavored. Cakes tend to get dry in storage, moistening with a syrup helps. You may also used syrup from canned fruits especially the pineapple one, where you could use the pineapple as a topping fruit.
Baking temperatures affect the cake texture too.
